Buffalo meat was subjected to two cooking methods viz. broiling and pressure cooking and two storage procedures viz. refrigerated (4 °C) storage for six days and frozen (-10 °C) storage for 90 days. Changes in lipid oxidation and development of cholesterol oxidation products were studied in raw as well as cooked meat samples. Total lipid, phospholipid, cholesterol, free fatty acid, glycolipid and glyceride contents increased significantly on cooking of meat but did not show any significant changes during either refrigerated or frozen storage except for free fatty acid content which showed an increase. The TBA values also increased during storage but not to the extent of indicating rancidity. Cholesterol oxidation products separated by thin layer chromatography were: cholestanetriol, 7-α-hydroxycholesterol, 19-hydroxycholesterol, 7-ketocholesterol, cholesterol-α-epoxide, cholesterol-β-epoxide and an unidentified fraction. All these fractions, except for the unidentified fraction, increased on cooking and storage. The cholesterol-β-epoxide fraction was resistant to changes. Changes in broiled meat were more pronounced compared to pressure cooked meat. Frozen storage did not prevent the development of cholesterol oxidation products in buffalo meat.  相似文献

The effects of cooking viz. pressure-cooking and broiling and storage at 4 °C for six days and -10 °C for 90 days on lipid oxidation and development of cholesterol oxidation products in mutton were studied. Results revealed that cooking of meat significantly increased the total lipids, phospholipids, cholesterol, glycolipids, free fatty acids and glycerides, but they did not change during refrigerated and frozen storage. The TBA values increased on cooking and during storage. However, the values were below the threshold level for rancidity development. The following cholesterol oxidation products were separated by thin layer chromatography cholestanetriol, 7-α-hydroxy cholesterol, 19-hydroxycholesterol, 7-ketocholesterol, cholesterol-α-epoxide, cholesterol-β-epoxide and an unidentified fraction. All these fractions except the unidentified fraction increased on cooking. On refrigerated and even on frozen storage all these fractions increased except the unidentified fraction, which showed a concomitant reduction. The changes in broiled meat were more pronounced compared to pressure-cooked meat. Results clearly indicated that even frozen storage of cooked meat did not prevent the development of cholesterol oxidation products.  相似文献

The effects of the addition of sage and garlic in chicken meat on lipid and cholesterol oxidation, having as prooxidant factors the addition of salt, thermal treatment, and frozen storage, were evaluated. The content of unsaturated fatty acids did not change in the presence of sage; on the contrary, with garlic, the content of these fatty acids decreased after cooking and storage. Hexanal and pentanal contents were lower in patties containing sage, and higher in those with garlic. The 7-ketocholesterol was the cholesterol oxide found in higher amount in raw chicken on day 0, while the formation of 7β- and 7α-hydroxycholesterol was verified only from day 30 on. Cooking and storage resulted in increase of total cholesterol oxides and decrease of α- and γ-tocopherol. Sage was effective in controlling lipid and cholesterol oxidation, minimizing the prooxidant effects of salt, cooking, and storage. However, garlic presented no effect as antioxidant and accelerated lipid oxidation. PRACTICAL APPLICATION: The addition of sage to chicken meat (0.1 g/100 g) is a good alternative to prevent and delay the formation of compounds derived from lipid oxidation that are responsible for off-flavors and loss of nutritional quality during long-term frozen storage. Care must be taken when using garlic to seasoning chicken meat products, such as hamburgers and meatballs, especially cooked or precooked due to its potential to promote lipid oxidation and consequently raising the risk of having the product rejected by the consumer.  相似文献

The effect of processing technology on the quality and composition of lipids of raw meat and precooked ready-to-eat fried chicken patties was studied. Chicken cutlets were obtained by two processing technologies, which mainly differed by the order of the applied thermal treatments (flash-frying and humid steam-convection oven cooking). In the traditional technology, samples were flash-fried and then subjected to oven-cooking, whereas these two processing phases were inverted for the innovative one. Lipid hydrolysis (total fatty acids, free fatty acids, diacylglycerols, free cholesterol) and oxidation [peroxide value (POV) and cholesterol oxidation products (COP)] were evaluated in the raw meat, prefinal and final products. Lipid hydrolysis was significantly more intense in the final products obtained by the innovative technology, whereas no significant differences were found in the oxidation parameters between the products obtained by the two processing lines.  相似文献

The effect of feeding fat sources on the quality and composition of lipids of raw meat and precooked ready-to-eat fried chicken patties was studied. Two homogeneous groups of broilers were fed with animal fats and vegetable oils, respectively. A traditional technology (flash-frying and humid steam-convection oven cooking) was employed to produce the patties. Lipid hydrolysis (total fatty acids, free fatty acids and diacylglycerols) and oxidation (peroxide value (POV) and cholesterol oxidation products (COPs)) were evaluated in the initial, intermediate and final products. Lipid hydrolysis and oxidation were more intense in ground raw meat obtained with animal and vegetable fat integration, respectively. However, these differences tended to decrease along the technological process, due to the addition of other ingredients and the oil absorption. Although flash-frying and humid steam-convection oven cooking promoted lipid degradation, the overall quality of the precooked chicken cutlets was acceptable (low POV and COPS values) and greatly depended on the quality of the raw meat and the frying oil.  相似文献

The effect of irradiation and packaging conditions on the content of cholesterol oxidation products (COPs) and lipid oxidation in cooked turkey, beef, and pork during storage was studied. Ground turkey leg, beef, and pork were cooked, packaged either in oxygen-permeable or oxygen-impermeable bags, and irradiated at 0 or 4.5 kGy. Lipid oxidation and COPs were determined after 0 and 7 days of storage at 4°C. Packaging of cooked meat was more important than irradiation in developing COPs and lipid oxidation in cooked meats during storage. 7-Hydroxycholesterol, 7β-hydroxycholesterol, β-epoxide, and 7-ketocholesterol were among the major COPs formed in cooked turkey, beef, and pork after storage, and their amounts increased dramatically during the 7-day storage in aerobic conditions. Irradiation had no significant effect on the amounts of any of the COPs found in cooked turkey and beef, but increased (P<0.05) the amounts of - plus 7β-hydroxycholesterol, β-epoxide, 7-ketocholesterol, and total COPs in aerobically packaged cooked pork. The amounts of COPs and lipid oxidation products (TBARS) closely related to the proportion of polyunsaturated fatty acids in meat. The results indicated that the composition of fats in meat is important on the oxidation rates of lipids and cholesterol, and packaging is far more important than irradiation in the formation of COPs and lipid oxidation in cooked meat.  相似文献

The aim of this work was to study the influence of different cooking methods (grilled (GR), fried (FP), microwave (MW) and roasted (RO)) on lipid oxidation and formation of free cholesterol oxidation products (COPs) of meat from Iberian pigs that have been fed on an intensive system. Moisture and total lipid content, TBARs, hexanal and COPs were measured in Latissimus dorsi muscle samples. Cooking did not produce changes in total lipid content in meat but induced significantly higher lipid oxidation (TBARs and hexanal values) (p < 0.001) and cholesterol oxidation (COPs) (p < 0.01). When the different cooking methods were studied, the grilled method was the least affected by lipid oxidation (TBARs and hexanal) compared to the others. There were no significant differences among different cooking methods on COPs values. The most abundant cholesterol oxides were both 7α-hydroxycholesterol and 7β-hydroxycholesterol in all groups studied.  相似文献

Raw-meat patties were prepared from three pork muscles, irradiated in different packaging environments, and stored for 0 or 3 days before cooking. Lipid oxidation by-products were formed in the raw meat during storage and the baseline lipid oxidation data of raw meat was used to measure the progression of lipid oxidation after cooking. Thiobarbituric acid-reactive substances (TBARS) and volatiles data indicated that preventing oxygen exposure after cooking was more important for cooked meat quality than packaging, irradiation, or storage conditions of raw meat. Propanal, pentanal, hexanal, 1 -pentanol, and total volatiles correlated highly (P < 0.01) with TBARS values of cooked meat. Hexanal and total volatiles represented the lipid oxidation status better than any other individual volatile components.  相似文献

The oxidation of lipid and cholesterol in Chinese-style sausage in vacuum packaging (VP) and modified atmosphere packaging (MAP) stored at 4°C and 15°C, respectively, for 5 months was investigated. The 2-thiobarbitaric acid reactive substance (TBARS) and peroxide value (POV) of sausage were variable with packaging treatments during storage. TBARS and POV in sausage stored at 15°C were significantly greater (p < 0·05) than at 4°C, and the MAP treatment was more stable than the VP treatment. In addition, the polyunsaturated fatty acids (PUFA) in sausage decreased with storage for both treatments. The content of cholesterol decreased significantly after 3 months of storage. 7-β-hydroxycholesterol, 7-ketocholesterol and 22-ketocholesterol were the major cholesterol oxidation products (COPs), but there was no detectable (< 1 μg/100 g) 25-hydroxycholesterol or cholestanetriol with either treatment.  相似文献

The aim of this work was to investigate the use of rainbow trout (Oncorhynchus mykiss) in ready to eat döner kebab production and determine the effects of marination, cooking and storage conditions (4 and ?18 °C) on physico-chemical and microbiological properties of döner kebab. The raw trout meat, raw, cooked and stored döner kebab samples were subjected to moisture, protein, fat, ash, color, pH, cholesterol, biogenic amines, lipid oxidation, fatty acids profile, texture, microbiological and sensory analysis. The results indicated that the major fatty acids in trout döner kebab were palmitic, stearic, oleic, omega-3 and omega-6 fatty acids and unsaturated fatty acids were higher than saturated fatty acids (p < 0.05). Low biogenic amine and cholesterol contents were determined in döner kebab. It was found that ?18 °C of storage temperature was more effective than 4 °C for inhibition of lipid oxidation and microbial growth in trout döner kebab (p < 0.05). While cooking affected parameters evaluated (p < 0.05), marination did not have any significant effect. The study results indicated that using rainbow trout meat in döner kebab production could be beneficial to provide healthy meat products without posing any acceptability problems in terms of quality factors. This is the first paper to be reported on physico-chemical and microbiological properties of döner kebab produced with rainbow trout and effects of marination, cooking and different storage temperatures on these physico-chemical and microbiological properties.  相似文献

The effect of irradiation and packaging conditions on the formation of cholesterol oxidation products (COPs) as well as lipid oxidation products was determined in raw turkey leg, beef, and pork loin meat during 7 days of storage. Ground turkey leg, beef, and pork loin muscles were prepared as patties. The patties were individually packaged either in oxygen-permeable or impermeable bags, irradiated at 0 or 4.5 kGy using a Linear Accelerator, and stored at 4°C. The COPs such as 7-hydroxycholesterol, 7β-hydroxycholesterol, and 7-ketocholesterol were detected in fresh raw meats at 0 day at the level of 10.9 to 49.2 μg/g lipid. After 7 days of storage, other COPs such as epoxides, 20-hyroxycholesterol, and choletanetriol were formed in mainly aerobically packaged and irradiated raw meats. Packaging effect was more crucial on the cholesterol and lipid oxidation than irradiation. In aerobically packaged and irradiated meats, turkey leg muscles had higher COPs value than beef or pork did. COPs and thiobarbituric acid reactive substances (TBARS) values had a strongly positive correlation in turkey leg and pork. But, cholesterol oxidation in beef proceeded in irradiated and aerobically stored samples despite of its low level of TBARS value.  相似文献

Oxygen-enriched modified atmosphere packaging (MAP) represents an important means to stabilize meat colour but may lead to an increase in lipid oxidation, influencing the acceptability and safety of the product. In this work, the effect on cholesterol and lipid susceptibility to oxidation was investigated in commercial minced beef held under MAP (80% O(2)/20% CO(2)). Cholesterol oxidation products (COPs), peroxide value (PV) and thiobarbituric acid reactive substances (TBARS) were determined, before and after pan frying, at 1, 8 and 15 days since packaging under refrigerated storage (3-4°C). 7α-Hydroxycholesterol, 7β-hydroxycholesterol and 7-ketocholesterol were the more abundant COPs identified. COPs significantly increased in raw beef during storage: after 1, 8 and 15 days since packaging COPs were at the levels of 10.4, 30.7 and 60.5μg/g of fat, respectively. Cooking did not affect cholesterol oxidation in freshly packaged minced beef but led to a rise in COPs amount with respect to raw muscle after 8 and 15 days of storage. The trend in cholesterol oxidation reflected the progressive increase in lipid peroxidation rate brought by MAP conditions.  相似文献

The inhibitory effect of dietary α-tocopherol supplementation (100 and 500 mg α-tocopheryl acetate/kg diet) and an oleoresin rosemary dip on lipid and cholesterol oxidation in cooked rainbow trout ( Oncorhynchus mykiss ) during storage at 4C for 48 h was investigated. The 2-thiobarbituric acid-reactive substances (TBARS) values of cooked fish muscle increased during storage for all treatments. Dietary α-tocopherol supplementation partially inhibited lipid oxidation. Surface application of oleoresin rosemary further enhanced this protective effect. Cholesterol oxides were formed in all the samples following cooking and storage. The major cholesterol oxidation products (COPS) were identified as 7 β-hydroxycholesterol, α- and β-epoxides, and 7-ketocholesterol. Formation of COPS was reduced by dietary supplementation with α-tocopherol and surface application of oleoresin rosemary. Statistical analysis revealed a highly significant (p < 0.01) inhibitory effect of oleoresin rosemary on COPS formation.  相似文献

Thiobarbituric acid (TBA) values and 7-ketocholesterol were determined on raw and cooked ground beef patties after 0, 2, and 4 days of storage at 4°C. The mean 7-ketocholesterol at days 0, 2, and 4 was 9.65, 23.8, and 42.3 μg for 100g raw patties and 6.33, 277.9, and 484.7 kg for 100g cooked patties. The TBA values increased after 2 and 4 days for the raw and cooked patties. TBA values and 7-ketocholesterol were correlated with each other for raw (r2= 0.82) and cooked (r2= 0.98) patties. The peak suspected to be 7-ketocholesterol was confirmed by mass spectral analysis. The 7-ketocholesterol in the cooked patties stored two days represented a 0.3% oxidation of the free cholesterol.  相似文献

The effect of combinations of sage, oregano and honey on lipid oxidation in cooked chicken meat during refrigeration at 4°C for 96h was determined. Chicken samples (thigh and breast) were then separated into five groups: control; butylated hydroxytoluene; oregano+sage; oregano+sage+5%honey and oregano+sage+10%honey. Quantitative measurements of thiobarbituric acid reactive substances, conjugated dienes, hexanal, fatty acids, cholesterol and cholesterol oxides were used as indicators of lipid oxidation. Acceptability and preference were also evaluated. The effectiveness of the natural antioxidants for reducing the velocity of lipid oxidation in cooked chicken thigh and breast was demonstrated after 48 and 96h of refrigeration at 4°C. The treatments that presented the lowest hexanal values after 96h of refrigeration were oregano+sage+5%honey and oregano+sage+10%honey. Only traces of free cholesterol oxides were found (25-OH, 7-k, 7α-OH and 7β-OH). The natural antioxidants protected cooked chicken meat from oxidation processes and resulted in great acceptability.  相似文献

Lipolysis and lipid oxidation in Mediterranean and North Europe type sausages were studied in relation to raw material, processing conditions and additives. In particular the effect of ascorbic acid, nitrites and spices was evaluated. Lipolysis was measured by the determination of total and free fatty acids of fresh minces and matured products and lipid oxidation was evaluated by thiobarbituric acid reactive substances and cholesterol oxidation products. The increase of free fatty acids during maturation appears to be independent from processing conditions and the differences in polyunsaturated fatty acids increment found among the formulations appear to be due to inherent variations of raw materials. The presence of ascorbic acid and/or nitrite seems important for cholesterol protection and, as a consequence, for the safety of fermented meat products while spices at doses up to 0.1% do not seem to have a remarkable effect. The effect on fatty acid oxidation of the same additives and of the different processing technologies is not significantly different and the variations linked to raw material may play the greatest role.  相似文献

Slices of chicken breast were subjected to microwave heating (750 W, 3 min) and further storage in different conditions (refrigeration at 4 °C and freezing at −18 °C combined with aerobic, vacuum, and modified atmosphere packaging). Evaluation of the intensity of the oxidation process was carried out. A 16-fold increment in the amount of cholesterol oxidation products (COP) was found as a consequence of microwave cooking (45.86 μg/g lipid after microwave and 2.88 μg/g lipid in raw samples). 7-ketocholesterol was the most affected COP by microwave, accounting for a 25% of the total COP. Storage of microwaved samples under aerobic refrigeration led to the highest oxidation status with the following values: peroxide 19.41 meqO2/kg lipid, TBA 0.32 ppm and COP 123.50 μg/g lipid. MAP refrigerated samples showed 50.94 μg/g lipid of total COP, an amount slightly higher than in vacuum conditions (46.81 μg/g lipid). Under frozen storage MAP and vacuum samples showed the lowest amounts of total COP (29.76 and 39.28 μg/g lipid, respectively).  相似文献

Cholesterol oxidation products were estimated in some meat products by capillary gas chromatography after trimethylsilylation. Peak identities were confirmed by mass spectrometry. Freeze-dried pork, stored in contact with air at 22°C for ca. 3 yr, revealed 7α- and 7β-hydroxycholesterol, 7-ketocholesterol, α- and β-epoxide and cholestane-triol. The total concentration of oxidation products reached almost half of the remaining cholesterol content with 7-ketocholesterol as the predominant species. Some oxidation products were noted at a few ppm levels in broiled beef steaks, but not in precooked beef products. As rancidity development advanced in comminuted and cooked meats during storage, the oxidation of cholesterol became apparent.  相似文献

Aerobic packaging significantly increased cholesterol oxidation products (COPs) and thiobarbituric acid reactive substances (TBARS) in cooked turkey, pork, and beef patties after 7‐d storage, but vacuum packaging was very effective in preventing cholesterol and lipid oxidation. Packaging of meat after cooking had a much stronger effect on COPs formation than before cooking, and irradiation had only a minor effect. The amount of total COPs correlated well with TBARS in cooked meat. Turkey had the highest rates of COPs and TBARS formation and beef had the lowest rates after 7‐d storage, which were closely related to the fatty acid composition of meats. 7a‐hydroxycholesterol, 7p‐hydroxycholesterol, and 7‐ketocholesterol were the major COPs detected in all 3 cooked meat patties.  相似文献

为探究风味差异的形成机制,以凡纳滨对虾为研究对象,研究蒸制和微波加热2种烹饪方式对脂质组成、脂质氧化水解程度及挥发性物质的影响。结果表明,凡纳滨对虾在烹饪后总脂和脂质组成(磷脂、甘油三脂及游离脂肪酸)含量均显著降低(P<0.05)。蒸制和微波加热的对虾,其脂质组成也有所差别,与蒸制相比,微波加热虾肉中的磷脂含量偏高,而游离脂肪酸含量偏低。鲜虾烹饪后饱和脂肪酸含量显著下降,不饱和脂肪酸含量显著上升(P<0.05),可能与磷脂的水解有关。蒸制和微波加热加速了脂质的氧化水解,酸价和硫代巴比妥酸反应物值均显著升高(P<0.05)。电子鼻分析结果显示鲜虾、蒸制和微波加热虾肉的气味特征有明显不同,且微波加热气味变化更大。采用气相色谱-离子迁移谱从虾肉中分离鉴定出25种挥发性物质,其中2,3-戊二酮、2-丁酮、2-甲基丁醛、己醛、1-辛烯-3-酮和戊醛等是熟虾肉主要的风味物质,且在微波加热的样品中含量更高。Pearson相关性分析结果表明,脂质的氧化水解对风味形成有重要贡献,游离脂肪酸中的C14:0、C15:0、C16:1  相似文献
