The purpose of the present study was to determine the changes in non-starch polysaccharide and lignin contents of potato during French fries production and also the relationship between the texture of the finished product and half-products, as a result of processing at each stage under investigation. The samples for laboratory studies were taken from potato tubers, strips and French fries collected from nine locations of a technological line. The greatest changes in non-starch polysaccharide content and texture of potatoes resulted from blanching and frying. The texture of French fries was mainly affected by pectin and cellulose. The texture of French fries can be predicted from the measurements of the texture of potato strips after blanching.  相似文献

French fries made from coloured-fleshed potatoes may be interesting alternative to the traditional snacks for consumers. However, potatoes contain glycoalkaloids (TGA), so potato tubers and obtained fried snacks should be subjected to comprehensive examination. The aim of this study was to determine the effect of different stages of French fries processing on the content of TGA (α-solanine and α-chaconine) in the red- and blue-fleshed potatoes, in semi-products and ready-to-eat products. It was stated that during the processing of French fries prepared from coloured-flesh potato varieties significantly decreased the content of TGA (α-solanine and α-chaconine) in the samples obtained at different stages of the process compared to the raw material. Potatoes with blue-fleshed of Vitelotte variety and red-fleshed of Highland Burgundy Red variety can be used to French fries processing due to their low content of TGA (in unpeeled and peeled potatoes). However, Blue Congo variety with blue-fleshed should not be applied to French fries processing, because of high TGA content in raw material and first of all in peeled potatoes flesh. The peeling process of coloured-fleshed potatoes decreased in TGA content on average by about 50 %, cutting process on average by about 53 %, whereas blanching on average by about 58 % compared with the raw material. The highest decrease in TGA content was caused by frying process. The mean values were about 97.5 % in ready-to-eat French fries. In French fries after I and II steps of frying, the ratio α-solanine to α-chaconine was lower (1.0:2.0) than in unpeeled potatoes (1.0:2.3).  相似文献

Potato products made from potato varieties with coloured flesh (red and blue-fleshed potatoes) may be an interesting alternative to traditional products. The purpose of this study was to determine the influence of peeling, cooking and frying of red and blue-fleshed potato tubers on the content of glycoalkaloids (α-solanine and α-chaconine) in processed potato products. The material taken for the study consisted of seven coloured potato varieties. French fries and crisps were prepared from two potato variety: Rosalinde and Blue Congo. The content of total glycoalkaloids (TGA) in raw material before and after peeling, in cooked unpeeled and peeled potatoes and also in fried potato products have been determined by HPLC method.  相似文献

ABSTRACT:  A kinetic model based on 2 irreversible serial chemical reactions has been proposed to fit experimental data of texture changes during thermal processing of potato products. The model links dimensionless maximum force F*MAX with processing time. Experimental texture changes were obtained during frying of French fries and potato chips at different temperatures, while literature data for blanching/cooking of potato cubes have been considered. A satisfactory agreement between experimental and predicted values was observed, with root mean square values (RMSs) in the range of 4.7% to 16.4% for French fries and 16.7% to 29.3% for potato chips. In the case of blanching/cooking, the proposed model gave RMSs in the range of 1.2% to 17.6%, much better than the 6.2% to 44.0% obtained with the traditional 1st-order kinetics. The model is able to predict likewise the transition from softening to hardening of the tissue during frying.  相似文献

The purpose of this investigation was to determine the influence of various stages of French fries processing on the contents of glycoalkaloids and nitrates in potatoes. The material for the study comprised samples of two potato varieties, Santana and Innowator, collected from nine stages of a French fries production line. Based on the results of the research carried out, it was found that the processes applied during French fries production had a significant influence on the decrease in glycoalkaloid (chaconine and solanine) and nitrate contents in both intermediate products and the final product in comparison with the raw material. The highest amounts of glycoalkaloids and nitrates were removed during peeling, blanching and frying. In the processed potatoes the ratio of chaconine to solanine decreased. French fries ready for consumption contained only 3–8% of the glycoalkaloids and 5–6% of the nitrates found in the raw material. Copyright © 2004 Society of Chemical Industry  相似文献

Blanching pretreatment is necessary for preparing French fries, but it causes water consumption and nutrient outflow. This work was aimed to investigate the effects of microwave (MW) pretreatment instead of blanching on the quality of fries, evaluated via changes to microstructure and crust characteristics. First, MW pretreatment could inactivate polyphenol oxidase in fresh-cut potato strips to inhibit enzymatic browning. Subsequently, the fries after proper MW pretreatment (60 s) had a golden appearance and better texture. As compared with the blanching process, the oil content of the fries obtained by MW pretreatment was decreased sharply from 41.3% to 18.1%. The results of scanning electron microscopy showed that MW pretreatment significantly altered the crust and internal microstructure of fries. Specially, it was found that the MW pretreatment made the fries form a thicker “protective crust” (1.81 μm), which was crucial to prevent oil adsorption during the frying and improve texture.Industrial relevanceBlanching is a traditional thermal processing technique that was once widely used in French fries around the world. However, blanching has some drawbacks, such as slow heat conduction, long processing time, substantial loss of soluble nutrients, massive water wastage, and even increased oil content of the fries. Meanwhile, MW heating is known for its high efficiency. The fries obtained with proper MW pretreatment are of good quality, but the oil content is drastically reduced compared to conventional blanching pretreatment. So, the above findings may provide helpful information to guide effective strategies for applying MW heating instead of blanching in the preparation of fried potato foods.  相似文献

A central composite design was used to study the effect of blanching time and temperature on the extraction of reducing sugars from potato strips and slices. After frying, the impact of both factors on the acrylamide content in French fries and potato crisps was evaluated. Acrylamide could be lowered more efficiently in potato crisps compared to French fries, due to a more pronounced extraction of sugars from potato slices upon blanching. In both products, blanching temperature was the main influencing factor for sugar extraction and subsequent acrylamide mitigation. Blanching at temperatures of about 70 °C for a short period of time (about 10 min) was more efficient compared to blanching at lower temperatures, which appeared more time-consuming. However, the extraction efficiency of reducing sugars was over 10% lower when the potato cuts were blanched in water which was previously used for blanching, leading to over 10% less reduction in the final acrylamide content.  相似文献

The purpose of the present study was to determine the effects of the frying medium and temperatures on fat content and texture of French fries. The material taken for the study consisted of seven types of vegetable oil: refined sunflower, rape, soy, olive oil, palm, partially hydrogenated rape oil (modified oil I) and a blend of vegetable oils (modified oil II). The French fries prepared from Asterix potato variety were fried at oils heated to 150, 160, 170, 180 and 190 °C. The length of frying (12, 10, 8, 6.5 and 4.5 min, respectively) depended on oil temperature. Fat content and the texture of French fries were determined. The type of frying medium significantly affects the texture of French fries. Temperature influenced both the fat content and texture of product. The increase of frying temperature decreased fat uptake and hardness of French fries. French fries fried in rape oil exhibited the most delicate texture and the lowest oil absorption when compared with French fries fried in other types of oil under investigation. Potato strips of 8 mm × 8 mm and 10 mm × 10 mm after blanching were pre-dried using two methods: convective and vacuum-microwave (VM). A two-stage frying in rapeseed oil was applied to prepare French fries from pre-dried potato strips. The quality of French fries in terms of texture, oil content and color was analyzed based on the results from instrumental tests and sensory evaluation. Using vacuum-microwave instead of hot air resulted in substantial shortening of the potato strips’ pre-drying time and decreasing the fat content in French fries. Pre-drying of potato strips, particularly by VM method, improved color and increased maximum cutting force as well as maximum cutting work estimated for French fries. French fries prepared from potato strips of 10 mm × 10 mm exhibited lower lightness, higher fat content and higher cutting strength compared with those made from potato strips of 8 mm × 8 mm. Based on the sensory results, it was found that the best French fries were those from pre-dried potato strips of 8 mm × 8 mm, independently of the pre-drying method used, and the worse were those from potato strips of 10 mm × 10 mm pre-dried with the convective method. Fried products impose a health concerns due to considerable amount of oil they contain. Production of snack foods with minimal oil content and good management of oil during frying to minimize the production of toxic compounds continue to be challenging aims. This paper aims to investigate the possibility of producing a fat‐free food snack by replacing frying oil with a nonfat medium. Glucose was melted and its temperature was then brought to 185 °C and used to fry potato strips, to obtain a product referred here as glucose fries. The resulting product was compared with French fries prepared conventionally under conditions that resulted in similar final moisture content. The resulting products were also examined for crust formation, texture parameters, color development and glucose content. Stereo microscope images showed that similar crusts were formed in the glucose fries and French fries. Texture parameters were found to be similar for both products at 5 and 2 mm penetration depth. The maximum hardness at 2 mm penetration depth was also similar for both products, but different from cooked potato. The color development that characterized French fries was also observed in glucose fries. The glucose content in glucose fries was found to be twice the content of French fries, which is to be expected because glucose absorbed or adhered to the surface. In conclusion, glucose fries, with similar texture and color characteristics to that of French fries, can be prepared by using a nonfat frying medium.  相似文献

The purpose of the present investigation was to study the influence of the degree of degradation of different kinds of oils used as a frying medium on fat uptake and texture of frozen pre‐fried French fries. As has been found, the degradation degree of the frying medium depends on the kind of oil and processing time. Liquid hydrogenated rapeseed oil exhibited the best thermo‐oxidative stability among the oils under investigation. The kind of oil influenced fat uptake and the texture of French fries. The lowest fat uptake was observed with French fries fried in solid oil. Some correlations between fat uptake and changes in fatty acid content were found in the frying medium during frying. Fat absorption increased with increasing unsaturated fatty acids and decreasing saturated fatty acid content. The texture of French fries fried in hydrogenated oils was harder than that exhibited by French fries fried in liquid rapeseed oil. The hardness of French fries fried in liquid oils decreased during frying while the hardness of French fries fried in solid oil increased. Some correlations between the texture of French fries and iodine value and fatty acids content of frying media were found. The hardness of French fries increased with increasing content of saturated fatty acids and decreasing unsaturated fatty acids and trans isomer fatty acid content. In the last ten or so years, potatoes with purple or blue‐flesh and derivative products, for example chips, have appeared on the European markets. The interest in this raw material and these products is increasing among both producers and consumers searching for novel and attractive choices. The anthocyanin content of the analysed potato varieties differed; a higher content of these pigments was determined in Blaue Elise var. potatoes. In blue‐flesh varieties, the prevailing anthocyanins were acylated glycosides: petunidin and malvidin. The production process of French fries, chips and puree caused a decrease in the content of glycoalkaloids in semi‐products and finished products, compared to the raw material. The greatest losses of α‐chaconine and α‐solanine were observed after tuber peeling (ca. 70%) and after frying (ca. 90%). French fries contained 3%, chips 16% and puree 17% of the initial amount of total glycoalkaloids. The losses of α‐chaconine and α‐solanine in the analysed semi‐products and finished products were at the same level, regardless of the processing technology applied.  相似文献

ABSTRACT Two rice flour mixtures, 2 extruding temperatures, and 2 insert sizes were used to develop rice fries. The extruded material was cut into pieces 7 to 8‐cm long, prefried in rice oil at 180°C for 20 s, and kept frozen until final frying for another 70 s. The rice fries were evaluated 5 min and 10 min after final frying for their lipid, moisture, and instrumental texture characteristics. Extruding temperature, rice cultivar, and insert size were significantly related to fat content, moisture, hardness, and fracturability values. A mixture consisting of 80:20 (waxy:long‐grain), and extruded at 70 °C using a 6 mm insert, 5 min after frying, gave a texture profile analysis value for hardness, cohesive‐ness, and gumminess values comparable to commercial potato French fries. The rice fries made by the process also had less than 50% fat than potato fries.  相似文献

The aim of this work was to explore the effect of combining pulsed electric field (PEF) with blanching pretreatment on the physiochemical properties of French fries. The effects of PEF plus blanching pretreatment on the color parameters, texture, content and spatial distribution of moisture and oil, microstructure, colony count and acrylamide content of French fries were investigated. Results showed that the pretreated French fries were brighter (L value was 60.44) and golden yellow, with lower hardness (312.27 g), higher springiness (0.81) and higher chewiness (119.71). In addition, moisture and oil contents of the fries were reduced, with more uniform distributions. The cross-section microstructure of these French fries also showed near-complete gelatinization of starch particles, and the internal structure of fries was fluffy. Finally, French fries obtained by the combined pretreatment had an improved food safety profile, with a lower colony count (13 CFU/g) and acrylamide content (1533.75 ng/g).Industrial relevanceBlanching is a traditional thermal processing technology widely used in the field of fried potatoes. However, blanching has some disadvantages such as slow heat conduction, long processing time, substantial loss of soluble nutrients, and huge water wastage. PEF is an emerging technology in the 21st century that can maintain the original flavor, color, taste, and nutritional value of foods treated by it. The French fries obtained by combining PEF and blanching pretreatment were brighter and golden yellow, and were also softer, and more springy and chewy – an overall net improvement in aesthetic appeal and organoleptic profile. The above findings may provide useful information to guide effective strategies for the practical application of PEF combined with blanching in the preparation of fried potato foods.  相似文献

The objective of this work was to evaluate the effect of microwave power on acrylamide generation, as well as moisture and oil fluxes and quality attributes of microwave-fried potatoes. Concretely, 25 g of potato strips, in 250 mL of fresh oil (at room temperature), were subjected to three different microwave powers (315, 430, and 600 W) in a conventional microwave oven. Microwave frying resulted in an acrylamide reduction ranged from 37 to 83% compared to deep-oil frying. Microwave-fried French fries presented lower moisture and higher fat content than deep-oil fried potatoes. Concretely, microwave-fried potatoes presented values of moisture and texture more similar to potato chips than French fries, nonetheless with lower fat levels (less than 20 g/100 g wb) and acrylamide content (lower than 100 μg/kg wb) at the reference time. This study presents an alternative way of frying to address the production of healthier potato chips.  相似文献

Acrylamide formation in French fries was investigated in relation to blanching and asparaginase soaking treatments before final frying. Par-fried potatoes of Bintje variety were prepared by cutting strips (0.8 × 0.8 × 5 cm) which were blanched at 75 °C for 10 min. Unblanched strips were used as the control. Control or blanched strips were then dried at 85 °C for 10 min and immediately partially fried at 175 °C for 1 min. Finally, frozen par-fried potatoes were fried at 175 °C for 3 min to obtain French fries. Pre-drying of raw or blanched potato strips did not generate acrylamide formation as expected. Partial frying of pre-dried control potato strips generated 370 μg/kg of acrylamide and the final frying determined French fries with 2075 μg/kg of acrylamide. When control potato strips were treated with a 10000 ASNU/l asparaginase solution at 40 °C for 20 min, the acrylamide formation in French fries was reduced by 30%. When blanched potato strips were treated in the same way, the produced French fries have 60% less acrylamide content than blanched strips without the enzyme treatment. Soaking of blanched potato strips (75 °C, 10 min) in an 10000 ASNU/l asparaginase solution at 40 °C for 20 min is an effective way to reduce acrylamide formation after frying by reducing the amount of one of its important precursors such as asparagine.  相似文献

目的以从美国引进的薯条加工型品种或品系为实验对象,比较漂烫预油炸加工法和直接油炸加工法2种加工方法对其感官品质的影响。方法采用漂烫预油炸加工法和直接油炸加工法对其加工,采用感官评价的方法比较2种加工方法对薯条感官品质的影响。结果漂烫预油炸法与直接油炸法相比,在外观指标和总体评分上均有显著性差异(P0.05),而在其他指标均无显著性差异,且2种方法对外观、湿度、外壳和内部表现4个指标的影响趋势大致相同。结论漂烫预油炸方法与直接油炸方法相比,改进了外观色泽,但并未改变薯条的其他加工性状,在加工薯条品种筛选的过程中推荐使用该方法。  相似文献

Air frying is being projected as an alternative to deep fat frying for producing snacks such as French fries. In air frying, the raw potato sections are essentially heated in hot air containing fine oil droplets, which dehydrates the potato and attempts to impart the characteristics of traditionally produced French fries, but with a substantially lower level of fat absorbed in the product. The aim of this research is to compare: (1) the process dynamics of air frying with conventional deep fat frying under otherwise similar operating conditions, and (2) the products formed by the 2 processes in terms of color, texture, microstructure, calorimetric properties, and sensory characteristics. Although, air frying produced products with a substantially lower fat content but with similar moisture contents and color characteristics, it required much longer processing times, typically 21 min in relation to 9 min in the case of deep fat frying. The slower evolution of temperature also resulted in lower rates of moisture loss and color development reactions. Differential scanning calorimetry (DSC) studies revealed that the extent of starch gelatinization was also lower in the case of air fried product. In addition, the 2 types of frying also resulted in products having significantly different texture and sensory characteristics.  相似文献

ABSTRACT: The uptake of lipid into French fries was investigated using two varieties of potato ('Russet Burbank' and 'Agria') and the New Zealand sweet potato, Ipomoea batatas , (kumara). The variety of potato used had a significant effect on lipid uptake, with 'Agria' having the lowest lipid content. The different cellular structures may have affected the fat uptake in the French fries by influencing either the loss of moisture during finish-frying or the damage done to the original anatomy during processing before pre-frying. The French fries that had undergone frozen storage had a higher amount of lipid contained in their inner core than did those that had been either chilled or prepared freshly for frying.  相似文献
