Starch and protein are important components of food, the mixed system formed between them (complexes, gels, mixtures, etc.) can improve the physical and chemical properties of starch and protein, and its potential application in the food industry has also attracted widespread attention. In this study, indica rice flour and soybean 7S protein (β-Conglycinin) were used as the experimental materials to explore the effect of soybean 7S protein addition on the quality and digestibility of rice noodles. Aims to develop rice noodles with high protein and low GI, so that people can take care of their health while satisfying their appetites. The results showed that with the increase of soybean 7S protein addition, the starch digestibility decreased, resulting in the estimated glycaemic index (eGI) and glycaemic load (GL) decreasing. However, the cooking loss rate and breakage rate of rice noodles gradually increased, the water absorption first increased and then decreased, and the taste of rice noodles is acceptable when the 7S protein addition amount is within 9%. The interaction between starch and soybean 7S protein was mediated by weak interactions such as hydrogen bonds and hydrophobic forces indicated by Fourier transform infrared spectroscopy (FTIR) and X-ray diffraction (XRD). 相似文献

以大米粉蛋白质含量、米粉断条率、感官评分为指标,研究发酵温度、发酵时间、菌液添加量、磨粉粒度、加水量、糊化温度和糊化时间对发酵型半干米粉品质的影响,确定发酵型半干米粉的加工工艺参数为:发酵温度35 ℃、发酵时间18 h、菌液添加量4%、粒度120目、加水量60%、糊化温度95 ℃、糊化时间4 min。在此条件下,发酵大米粉的蛋白质质量分数为6.37%,发酵型半干米粉断条率为4.94%,感官评分为86.43。大米发酵后基本成分发生改变,蛋白质和脂肪含量下降,淀粉含量增加。糊化特性和热特性分析结果表明:大米发酵后最低粘度、最终黏度、回生值、糊化温度显著降低,说明发酵处理有利于大米粉的糊化,并能延缓米粉制品的老化。 相似文献

目的建立超高效液相色谱-串联质谱法(ultra performance liquid chromatography-tandem mass spectrometry, UPLC-MS/MS)测定河粉和米粉中米酵菌酸(bongkrekic acid, BA)的含量。方法试样经提取、净化、浓缩及过滤后,以0.1%甲酸水和乙腈作为流动相进行梯度洗脱,采用电喷雾离子源负模式检测,外标法定量。基于米酵菌酸色谱和质谱行为的研究,对其仪器测定条件进行优化,并对优化后的方法进行方法学验证。结果米酵菌酸在1~100μg/L浓度范围内线性良好,相关系数大于0.999。在2种基质不同加标浓度下,回收率80.6%~104.8%,相对标准偏差小于5%。米酵菌酸在2种基质中的检出限为0.1μg/kg,定量限为0.2μg/kg。结论方法灵敏度高、专属性好、准确可靠,适用于米粉和河粉基质中米酵菌酸的测定。 相似文献

研究新型鲜湿方便米粉二级挤压工艺,考察生产过程中挤压关键参数(进料水分、喂料速度、一级机筒温度、二级机筒温度、模板孔径)对米粉品质的影响。实验以籼米(川种优3877)与粳米(隆两优534)为原料,利用响应面实验优化二级挤压工艺关键参数。结果表明,挤压参数能在一定范围内提高鲜湿方便米粉的品质。通过最佳二级挤压参数(进料水分41%、喂料速度0.50 kg/min、一级机筒温度179℃、二级机筒温度58℃、模板孔径1.0 mm)制作鲜湿方便米粉产品米香浓郁、富有弹性,综合品质较好。本研究可为鲜湿方便米粉连续化工业化生产提供参考。 相似文献
