Drying is a widely used technique in sub-Saharan Africa which allows food conservation, weight reduction and added value for some products. However, the technique is quite complex, making the rational concept of drying devices challenging. A rational method for the design and the construction of a fruit and vegetable solar dryer is presented. A prototype was designed and constructed at the Université Libre de Bruxelles (Belgium) to test the concept and was found to be capable of drying more than 40 kg of fresh tomatoes in 10 h. A second prototype was constructed in Bandiagara (Mali) by both local craftsmen and students from the Université Libre de Bruxelles, using local materials. Speed of drying and prevention of food spoilage was far superior to that of traditional solar dryers. Based on these prototypes, a dryer industry is being constructed in Bandiagara in order to increase food self-sufficiency.  相似文献

This paper examines the spatial and temporal variability and trends of agricultural productivity in the Lower Mekong River Basin. We also show the future productivity requirements for both food security and the maintenance of the basin’s export potential at the current level for the projected increase in population by 2030. We considered both rice and upland crops grown in the basin and estimated physical and economic productivity in terms of land and population. Both physical and economic productivity of rice in terms of land area and population is highest in Vietnam, moderate in Laos and lowest in Thailand and Cambodia. However, the physical productivity of upland crops such as sugarcane and maize is highest in Thailand. Economic productivity of upland crops is highest in Laos followed by Vietnam, Cambodia and Thailand, respectively and is much higher than that of rice. Total economic productivity is dominated by rice in all countries except Laos. In general, productivity has increased in all four riparian countries between 1993 and 2004 and there appears to be considerable scope for further increases, which will allow maintenance of the current level of rice export in the future, despite population growth.

The 2007–08 food price crisis has not only increased food insecurity around the globe, but also exposed long-term failures in the functioning of the world food system. Establishing a global governance architecture for governing food, nutrition, and agriculture as well as improving market functioning and increasing investment in public goods will be critical for the way forward. Three high-priority policy actions are necessary to cope with urgent needs for food and nutrition security and at the same time build a stronger food system that can respond to future challenges: (1) improve productivity and scale up research investments; (2) expand nutrition and social protection, (3) strengthen markets and trade.

Polygalacturonase was extracted from ripe Uapaca kirkiana, Zizphus mauritiana, Tamarindus indica and Berchemia discolor fruits of Zimbabwe. Protein concentrations and activities of the enzymes in the extracts were determined in the four fruit extracts. The protein concentrations in the enzyme extracts ranged from 0.82 ± 0.17 to 1.97 ± 0.13 mg/ml and enzyme activities from 1.99 ± 0.13 to 6.64 ± 0.38 mmol min−1 mg−1 in the four fruit extracts. Optimum pH of the enzyme ranged from 4.5 to 5 and optimum temperature from 25 to 37 °C. The enzyme extracts reduced the viscosity of 1% pectin solutions in an experiment which was done together with assay for reducing sugars to prove the activities of the enzyme extracts in the four wild fruits. The Km and Vmax ranged from 0.115 to 0.252 mg/ml and 0.0057 to 0.0119 mmol reducing groups/min/mg protein, respectively, in the four polygalacturonase extracts. Calcium chloride and sodium chloride activated the PG from all sources to a greater extend than magnesium chloride and barium chloride. PG from the other three fruits had very little effect on the polysaccharide from U. kirkiana.  相似文献

Buttermilk is one of the most important by‐products of the dairy industry. Approximately 2 million tonnes were produced within the European Union in 2015. Recently, buttermilk has gained increasing attention due to its unique structure, characteristics, and promising applications. It is classified as a functional food because it contains water‐soluble components, polar lipids and milk fat globule membranes. This review is focused on buttermilk composition, global production, and applications in several food industries. During the past decade, there was an increasing interest to develop and use bio-based active films which are characterized by antimicrobial and antifungal activities in order to improve food preservation and to reduce the use of chemical preservatives. Biologically active bio-molecules such as chitosan and its derivatives have a significant potential in the food industry in view of contaminations associated with food products and the increasing concerns in relation with the negative environmental impact of conventional packaging materials such as plastics. Chitosan offers real potential for applications in the food industry due to its particular physico-chemical properties, short time biodegradability, biocompatibility with human tissues, antimicrobial an antifungal activities, and non-toxicity. Thus, chitosan-based films have attracted serious attention in food preservation and packaging technology. This is mainly due to a fact that chitosan exhibits high antimicrobial activity against pathogenic and spoilage micro-organisms, including fungi, and both Gram-positive and Gram-negative bacteria. The aim of the present review was to summarize the most important information on chitosan from its bioactivity point of view and to highlight various preparative methods used for chitosan-based active bio-films and their potential for applications in the food preservation and packaging technology.  相似文献

This paper investigates the role of women in achieving household food security in the Western Region of Sudan, an area much affected by the impacts of drought and civil conflicts. The study is based on a quantitative survey and qualitative focus group discussions, supported by personal observations made during fieldwork. Additionally, the study draws upon secondary data that is publicly available. Results demonstrate that women play a major role in producing and providing food for their households in this high-risk climate and conflict area, while men are more likely to migrate seasonally and even permanently. In addition, women are responsible for food preparation, processing, and food preservation and are wholly responsible for attending to household garden plots. They therefore contribute more to household food security than men, though this contribution is not recognized in official statistics. The study findings indicate that the main problems women face as food producers and providers are a lack of access to the full package of improved production methods (improved seeds, fertilizers, modern farming methods, credit services, pesticides, appropriate technologies, and marketing facilities), in addition to gender disparities and gender-biased traditions. The impacts of natural crises and civil conflicts are gendered and therefore the responses to these crises must be gender responsive. Holistic and strategic policies and plans that take gender issues into account are thus needed in order to achieve food security.  相似文献

Maize production in Ghana has been increasing steadily but increases in yield are being undermined by post-harvest losses. This study is part of a larger project to characterize post-harvest losses in Ghana at different points in distribution channels. Here we determined factors contributing to losses during on-farm storage in the Northern Region of Ghana. This study was conducted in six communities: Adubiyili, Diari, Pong-Tamale, Savelugu, Toroyili and Zamnayili. Losses were determined for maize on cobs stored in thatched granary structures, shelled maize in polypropylene (PP) bags stored on the floor in farmers’ homes or small storehouses, and shelled maize in PP bags stored in warehouses. Maize moisture content, temperature, percent weight loss, percent insect damaged kernels on numerical basis (IDKnb), insect pest abundance, and mycotoxin (aflatoxin and fumonisin) levels were determined. Moisture content values of maize at pre-harvest and heaping stages in all six communities were below 15% wb. There were no insect pests on maize at the pre-harvest stage and only a few larvae were found in the heaping stage, but Sitophilus spp., Tribolium castaneum and Cryptolestes ferrugineus infested maize during storage, with significantly more found in granary structures than maize in PP bags in homes or storehouses. Warehouses had significantly fewer insects than granaries and homes or storehouses. Percent IDKnb values in all six communities were <2% per 250 g in the field. Aflatoxin levels were significantly lower at the pre-harvest stage, with average concentration below action limits established in Ghana, compared to the heaping stage, where average level exceeded the threshold. Fumonisin levels were low and similar for both stages. Data from the present study show that heaping maize on-farm prior to primary processing can increase aflatoxin beyond the acceptable level and should not be practiced.  相似文献

The aim of this study was to evaluate the fatty acid composition, enzyme inhibitory, and antioxidant activities of the ethanol extracts of selected wild edible plants consumed as vegetable in the Aegean region of Turkey. In general, Mentha piperita L., Rumex patientia L., and R. acetosella L. exhibited quite strong antioxidant activities in the majority of test systems, whereas Urtica dioica L. and Eruca sativa Mill. show quite weak antioxidant activities. Enzyme inhibitory activities of the plants were found quite different than those of their antioxidant activities. Cardaria draba (L.) Desv., E. sativa, R. patientia, and E. cicutarium (L.) L’Hér. showed the highest inhibitory activities on acetylcholinesterase, butyrylcholinesterase, α-amylase, and α-glucosidase, respectively. U. dioica also showed a promising inhibitory activity on these enzymes. In parallel to the experiments, total phenolic, flavonoid, flavonol, and saponin contents of the extracts were also determined. According to the results of these assays, M. piperita had the highest amounts of phenolics, flavonols, and saponins (162.36 mg gallic acid equivalents/g extract, 3.52 mg CEs/g extract and 761.54 mg QAEs/g extract, respectively). Opopanax hispidus (Friv.) Griseb. and Lepidium sativum L. were found to be rich in flavonoid compounds (121.18 and 104.21 mg Res/g extract, respectively). In general, a strong correlation was determined between the phytochemical profile and antioxidant activity of the plant species.  相似文献

Samples of M. longissimus were collected from a total of 203 feral roe deer (n = 118) and wild boar (n = 85) in two regions of Mecklenburg-Western Pomerania (Germany). The muscle lipid saturated fatty acid proportions of roe deer and wild boar ranged between 33 and 49 g/100 g total fatty acids and 31 and 35 g/100 g total fatty acids, respectively. The total n − 3 PUFA proportions in roe deer muscle varied between 8.0 and 14 g/100 g fatty acids, and in wild boar muscle between 2.6 and 6.0 g/100 g fatty acids. The major vitamin E homologue, α-tocopherol, was determined to be between 5.8 and 13.1 mg/kg in roe deer muscles. Lower levels between 1.2 and 4.7 mg/kg were measured in wild boar muscles. The iron and zinc concentrations in roe deer and wild boar muscle ranged from 26.3 to 33.9 mg/kg and from 17.0 to 21.7 mg/kg, and from 13.6 to 39.3 mg/kg and 18.1 to 31.9 mg/kg, respectively.  相似文献

Although prawn farming in rice fields is concentrated in the southwest of Bangladesh, the southeast region has been identified as a promising area for prawn culture, owing to favorable resources and agro-climatic conditions. To date, however, relatively few farmers in this area have adopted prawn culture. We examined the opportunities and constraints for the development of prawn farming with fish and rice in southeast Bangladesh. The prospects for prawn-carp polyculture and integrated prawn-fish-rice farming in southeast Bangladesh are positive but require institutional and organizational support, and technical assistance. We conclude that the sustainable development of prawn farming with fish and rice in southeast Bangladesh has considerable potential for increasing incomes and improving the food security of farming households, and more broadly the economic growth of the country through earnings from the export of prawns.  相似文献

Methods applied in food allergen analysis should be specific, sensitive and applicable to both raw and highly processed foods. The performance of the most commonly used methods, ELISA and real-time PCR, may, however, be influenced by food processing steps, e.g., heat treatment. The present study compares the applicability of four in-house developed methods, one sandwich ELISA, two competitive ELISAs and a real-time PCR method, for the detection of lupine in four different food matrices, comprising bread, biscuits, rice patties and noodles. In order to investigate the influence of food processing on the detectability, not only the heat treated model foods but also the corresponding doughs were analysed. The sandwich ELISA proved to be the most sensitive method. The LOD was found to be 10 ppm lupine, independent from the food matrix and independent if the dough or the heat treated food was analysed. In addition, the methods were applied to the analysis of commercial foodstuffs differing in their labelling.  相似文献

Subsistence farmers in sub-Saharan Africa are highly vulnerable to food insecurity given their low adaptive capacity against ecological and socio-economic shocks. Therefore, food security is one of their main challenges. Participatory action research across food value chains (FVCs) can help stabilize and enhance food security by developing upgrading strategies (UPS) that enhance specific aspects of crop production, post-harvest processing, marketing, income generation, and consumption. However, prior to their widespread adoption or upscaling, UPS need holistic understandings of their potential social, ecological, economic, and institutional challenges and opportunities in target areas. This article reports the application of the “ScalA-FS” tool, which assessed the potential success of selected UPS using assessment criteria developed by agricultural scientists and local farmers in a participatory process in Tanzania. This work is embedded in a larger participatory research project conducted in semi-arid and sub-humid ecological settings of the Dodoma and Morogoro regions of Tanzania. Results from the assessment of the potential impact of the UPS differed strongly between the UPS and the social, economic and environmental assessment criteria, but only slightly between semi-arid and sub-humid regions. The positive impacts of food-securing UPS centre on productivity and income generation. Rain water harvesting, fertilizer micro-dosing, optimized weeding, and promotion of kitchen gardens were expected to have the highest impacts after implementation. The ScalA-FS ex-ante assessments provide a knowledge base about potential impacts, as well as the potential bottlenecks to address during the implementation of UPS.  相似文献

Black garlic (BG) is essentially a processed food and obtained through the transformation of fresh garlic (FG) (Allium sativum L.) via a range of chemical reactions (including the Maillard reaction) and microbial fermentation. This review provides the up‐to‐date knowledge of the dynamic and complicated changes in major components during the conversion of FG to BG, including moisture, lipids, carbohydrates (such as sugars), proteins, organic acids, organic sulfur compounds, alkaloids, polyphenols, melanoidins, 5‐hydroxymethylfurfural, vitamins, minerals, enzymes, and garlic endophytes. The obtained evidence confirms that BG has several advantages over FG in certain product attributes and biological properties (especially antioxidant activity), and the factors affecting the quality of BG include the type and characteristics of FG and processing technologies and methods (especially pretreatments, and processing temperature and humidity). The interactions among garlic components, and between garlic nutrients and microbes, as well as the interplay between pretreatment and main manufacturing process, all determine the sensory and nutritional qualities of BG. Before BG is marketed as a novel snack or functional food, more research is required to fill the knowledge gaps related to quantitative monitoring of the changes in metabolites (especially those taste‐active and/or biological‐active substances) during BG manufacturing to maximize BG's antioxidant, anticancer, antiobesity, anti‐inflammatory, immunostimulatory, anti‐allergic, hepatoprotective, cardioprotective and oxidative stress‐/hangover syndrome‐reducing functions, and beneficial effects on memory/nervous systems. Assessments of the quality, efficacy, and safety of BG should be performed considering the impacts of BG production conditions, postproduction handling, and intake methods.  相似文献

BackgroundResearch infrastructures (RIs) are essential to advance research on the relationship between food, nutrition, and health. RIs will facilitate innovation and allow insights at the systems level which are required to design (public health) strategies that will address societal challenges more effectively.ApproachIn the EuroDISH project we mapped existing RIs in the food and health area in Europe, identified outstanding needs, and synthesised this into a conceptual design of a pan-European DISH-RI. The DISH model was used to describe and structure the research area: Determinants of food choice, Intake of foods and nutrients, Status and functional markers of nutritional health, and Health and disease risk.Key findingsThe need to develop RIs in the food and health domain clearly emerged from the EuroDISH project. It showed the necessity for a unique interdisciplinary and multi-stakeholder RI that overarches the research domains. A DISH-RI should bring services to the research community that facilitate network and community building and provide access to standardised, interoperable, and innovative data and tools. It should fulfil the scientific needs to connect within and between research domains and make use of current initiatives. Added value can also be created by providing services to policy makers and industry, unlocking data and enabling valorisation of research insights in practice through public-private partnerships. The governance of these services (e.g. ownership) and the centralised and distributed activities of the RI itself (e.g. flexibility, innovation) needs to be organised and aligned with the different interests of public and private partners.  相似文献

This paper presents the investigation of strontium isotope ratios of about 650 different European natural mineral waters as part of the food traceability project “TRACE” funded by the EU. Analysed 87Sr/86Sr values in the natural mineral waters range from 0.7035 to 0.7777, which indicates an influence by a great diversity of rocks from young mantle derived basaltic rocks to very old silicic continental crust.  相似文献

There are hundreds of traditional leafy vegetables and wild food plants of horticultural and nutritional significance in Africa. These lesser‐known crops and wild food plants that are highly adapted to harsh growing conditions thrive with little care and are available when other sources of food fail or are out of season. They are rich in micronutrients and are often the cheapest sources of many essential vitamins and minerals in many localities. Many of them are very important functional foods in African traditional diets and are rich in nutraceuticals, including polyphenols, tannins, flavonoids and flavonols, that exert demonstrable antioxidant, free radical scavenging and enzyme inhibition activities and have antimicrobial properties that provide scientific justification and possible mechanisms for their use in the management of a wide range of ailments, including diet‐related, non‐communicable diseases such as diabetes, hypertension and cardiovascular diseases. African traditional leafy vegetables are invaluable in promoting food security and wellness in Africa on account of their availability and affordability, their great nutritional value, chemotherapeutic and health‐promoting properties and other unique qualities. Long recognised by the rural populace as quality food items, they are becoming more popular even with the more affluent urban elites. There is the need to develop improved management practices for these super vegetables to promote their cultivation and boost their exploitation for food security and wellness in Africa. © 2018 Society of Chemical Industry  相似文献

Date fruit is an excellent source of nutritional and health benefits. The chemical composition of dates includes carbohydrates, dietary fibre, proteins, fats, minerals and vitamins, enzymes, phenolic acid and carotenoids, all of which are directly linked to nutritional and health benefits for consumers. A number of studies have also confirmed the therapeutic effects of dates and their efficacy in the treatment of many disease conditions. As a result, a number of food products such as date syrup, date juice and date paste have been developed in order to harness the nutritional potential of dates. Adequate sources of nutrition are important for all consumers, especially for active lifestyle individuals such as athletes and sportspeople. As the goal of every athlete is to enhance athletic performance and prevent energy deficit, the use of dietary supplements has been highly recommended as a solution in this regard. For example, nutrition bars are one source of high energy and nutrients that can provide the required energy for enhanced athletic performance, and date fruits could be valorised into nutrition bars in order to help athletes to achieve their performance and nutritional goals. In this paper, we review the chemical composition and health benefits of date fruit, its food application and consequently its formulation in nutrition bars for athletes.  相似文献

A new trap, the CSL I-SPy Insect Indicator®, has been assessed for monitoring adults of the principal crawling beetle pests of stored products in empty premises and on flat surfaces in grain stores and flour mills in the UK.The new trap was compared with the Igrox Insect Monitoring Peanut-free Bait Bag, the Storgard® Flit-Trak M2 trap and the Pantry Patrol™ trap in laboratory arenas using six beetle species of important pest status or which might be difficult to trap. The Pantry Patrol trap performed least well. The I-SPy Insect Indicator containing a carob lure was as good as, or better than, the Flit-Trak M2 trap containing both food oil and pheromone lures in catching Oryzaephilus mercator (81.0% and 51.1%, respectively), Typhaea stercorea (87.4% and 31.1%), Tribolium confusum (44.6% and 37.5%) and Cryptolestes ferrugineus (45.1 and 53.8%). For the Bait Bag the catches for these species were 67.2%, 59.5%, 55.7% and 81.9% respectively. The I-SPy Insect Indicator containing a carob lure and the Flit-Trak food oil was as good as the Flit-Trak M2 trap in catching Sitophilus granarius (92.9% and 99.2%, respectively) and Rhyzopertha dominica (50.6% and 51.5%).In limited trials in premises with unknown levels of infestation, the I-SPy Insect Indicator containing the carob lure and the Flit-Trak food oil was at least as good as the Flit-Trak M2 trap in a grain store. In a flour mill, the I-SPy Insect Indicator with this combination caught more species, higher numbers of insects and was better at demonstrating the presence of infestation. The I-SPy Insect Indicator is also sturdy, reusable, easy to assemble and leaves the catch easy to identify. Importantly, it contains no food which might act as a source of re-infestation.  相似文献
