The aim of this work was to investigate the effect of almond gum as dietary fibre source in enhancing the wheat bread quality. Different amounts of almond gum (2%, 5% and 10% (w/w)) were used in bread formulation. The volume, texture, crust and crumb colour, as well as the sensorial properties, were evaluated and compared to control (without almond gum). The obtained results showed that almond gum addition enhanced significantly the volume of bread. The highest volume was obtained using 2% almond gum concentration with 23.6% increase, compared to control. Using almond gum in bread formulation improved considerably its texture with a notable decrease in hardness by 61.7% and 42.5% when using 2% and 5% almond gum, respectively. The sensory analysis scores showed that the better overall acceptability was found for breads supplemented with 2% almond gum, as compared to control and breads supplemented with 5% or 10% almond gum. 相似文献

For the development of healthful gluten-free soy bread acceptable to consumers, we evaluated the effects of various processing procedures for soy flour on bread quality, in terms of beany flavour and texture. We pretreated soy flour by both non-heating (raw:NS and germinated:GS) and heating (steamed:SS and roasted:RS) methods. In addition, to improve the loaf volume, we added 1% hydroxypropyl-methylcellulose (HPMC) to RS flour. Lipoxygenase activity was retained in the non-heat-treated flours (279 U/g for NS and 255 U/g for GS), but was significantly reduced in the heat-treated flours (106 U/g for SS and 69 U/g for RS). Moreover, heat-treated flour had higher isoflavone and ferric reducing antioxidant power than had non-heat-treated flour. However, RS flour had the lowest moisture content and lowest L∗ value. The GS bread had the highest specific loaf volume (3.53 cm3/g), followed by NS (2.96 cm3/g), RS (2.25 cm3/g), and SS (1.81 cm3/g) bread. GS bread had the lowest hardness (1.53 N), followed by NS (1.65 N), RS (2.00 N), and SS (3.75 N) bread. The addition of 1% HPMC to RS increased the loaf volume (2.44 cm3/g), but decreased the bread’s hardness (1.80 N). As to the sensory properties, the bread with heat-treated flour was perceived to have a less beany odour and taste than was the bread with non-heat-treated flour. However, the latter had a better appearance than the former. These results indicated that soy flour pretreatment could enhance the loaf volume and reduce the beany flavour of whole soy bread. 相似文献

The aim of this study was to evaluate the applicability of differential scanning calorimetry (DSC) and thermogravimetric analysis (TGA) for discriminating wheat and barley kernels naturally infected with fungi of the genus Fusarium from healthy kernels. Differences in selected thermal parameters were observed between infected and healthy kernels. In infected wheat kernels, the 2nd endothermic peak occurred at 58.6–62.3 °C, the 3rd endothermic peak at 270.1–279.7 °C; the area under the DSC curve was determined at 1842–2246 J g−1, and mass loss at 76.26–80.39%. In healthy wheat kernels, the above parameters were determined at 77.0–78.9 °C, 292.6–311.0 °C, 1180–1432 J g−1, and 71.10–74.92%, respectively. In infected barley kernels, the 2nd endothermic peak occurred at 51.6–56.4 °C, the 3rd endothermic peak at 286.1–290.1 °C; the area under the DSC curve was determined at 1752–1998 J g−1, and mass loss at 78.65–81.22%. In healthy barley kernels, the investigated parameters were determined at 69.1–74.3 °C, 310.0–324.9 °C, 1187–1249 J g−1, and 72.18–74.09%, respectively. 相似文献

We determined the effect of onion skin extract (OE) on the quality of wheat bread: contents of total polyphenols and flavonols, antioxidative activity and their changes during storage. With increasing doses of OE to bread, contents of total polyphenols and flavonols and the antioxidative activity were observed to increase. A higher total flavonol content was found in bread with 1% OE stored at 24 °C than in bread stored at 4 °C. There was no such relationship in the bread with 0.5% OE. Changes in flavonols content during storage for 72 h were insignificant. No clear trends of change in the antioxidant activity could be found at storage of breads. The addition of OE caused no changes in the yield and volume of bread and contributed to a decreasing value of L* parameter and to increasing values of ΔE, a* and b* parameters of bread crumb colour. Consumers accepted the smell and taste of bread with the addition of OE to a lesser extent than the control bread. Bread with 1% OE the taste was rated very low. Consumers rated the taste of bread with 1% OE low because it was bitter. Breads enriched with OE had a proper external appearance as well as crumb and crust features. Roasted onion aroma and taste were perceptible in the obtained breads. A bitterness was perceptible in breads baked with the addition of 1% of OE. 相似文献

Effect of water and guar gum content on thermal properties of chestnut flour and its starch 总被引:1,自引:0,他引:1
Thermal properties of chestnut flour and chestnut starch at several water content (40, 50, 60 and 95%, flour basis, f.b.) as well as the influence of guar gum (0.5, 1.0, 1.5 and 2.0%, f.b.) on both raw materials at fixed water content (50%, f.b.) were determined by differential scanning calorimetry (DSC). Thermal properties of guar gum–water systems at several guar content (0.5, 1.0, 1.5 and 2.0%, w/w) were also obtained by DSC. Results indicated that the water content and the presence of guar gum had a significant impact on the thermal properties of chestnut flour and its starch. For each endothermic curve, the values of onset (To), peaks (Tp1, Tp2) and final (T1) temperatures decreased linearly with increasing water content. Experimental data were successfully (R2 > 0.997) described following the Flory equation. A reverse trend was observed in the enthalpy values. Thermal properties of chestnut flour and chestnut starch were suppressed by the presence of guar gum even at the lowest concentrations employed (0.5%, f.b.). The guar gum addition to the assayed systems promoted a starch gelatinization delay and the enthalpy values showed a threshold content above 1.0% of guar gum. Analyses of aqueous guar gum mixtures showed that the existence of a second transition in chestnut starch systems can be successfully explained by means of hydrocolloid–starch interactions, whereas in the flour other interactions should be taken into account. 相似文献

ABSTRACT: The physicochemical changes upon addition of soymilk powder (SMP) to soy bread were investigated. Two-pound loaves of soy bread were produced with components (soluble fiber [SF], insoluble fiber [ISF], soy protein) that mimic those levels contributed by SMP. Soy flour and soy flour/SMP soy breads served as controls. The following were determined for all breads produced: physical properties (loaf volume, crust, and crumb color); chemical compositions (SF and ISF contents, protein and ash contents); and physicochemical properties (water activity, total moisture content by thermogravimetric analysis [TGA], "freezable" water [FW], "unfreezable" water [UFW] content by DSC, stiffness at 25 °C by dynamic mechanical analysis [DMA], and firmness with Instron testing machine). SMP contained significant amounts of SF aside from the ISF fraction and mostly denatured soy protein. SMP addition to soy bread formulation significantly decreased loaf volume with respect to control soy bread, which can be attributed to the ISF and SPI contents of this ingredient. Other effects of SMP were found to be lighter and yellowish crumb color, darker crust color, and increase in firmness, as well as no change in moisture content, FW and UFW contents, water activity, and stiffness parameters. 相似文献

Protein endothermic transitions (thermal denaturation), rheological properties (protein gelation), and fundamental texture properties (shear stress and strain at mechanical fracture) of Alaska pollock surimi gels made with 0 (control), 1, 2, and 3 g/100 g of salt (NaCl) were determined and compared with equal molar concentration of salt substitute. Salt and salt substitute shifted the onset of myosin transition to higher temperature and resulted in larger myosin peaks (i.e., transition enthalpy). Endothermic transitions showed similar trends to rheological properties. The elastic modulus (G′) increased when salt or salt substitute was added to surimi, except at the highest concentration of salt and salt substitute. Salt and salt substitute also induced the onset of protein gelation (i.e., as measured by significant increase of G′) at lower temperature. Surimi gels with salt substitute and salt at equal molar concentrations had similar texture properties (shear stress and strain). Based on the present study, salt substitute can be used in the development of low-sodium surimi seafood products without significant change in gelation and texture. 相似文献

The effects of moisture content levels and storage temperature on the lipid oxidation in freeze-dried grouper were studied. Three trends were observed in the changes of PV (peroxide value) depending on the moisture content and storage temperature. An exponential rise of PV was observed (p < 0.05) at lower temperatures (−20 °C and 5 °C for samples at moisture 5 g/100 g; and −20 °C for samples at moisture 20 g/100 g). At temperatures 25 °C for samples at moisture 5 g /100 g, and 5 and 25 °C for samples at 20 g moisture/100 g peaks of PV were observed (p < 0.05). At higher temperatures (40 °C for both moisture content levels) an exponential decay instead of increase were observed (p < 0.05). Moisture content levels had no significant effect (p > 0.05) on PV stored at temperature of −40 °C. The monolayer moisture for freeze-dried grouper was estimated as 6.2 g/100 g dry solids using BET-isotherm. Differential scanning calorimetry (DSC and modulated DSC) thermogram line showed two shifts (i.e. glass transition) and two endothermic peaks, one for melting of oil and another for decomposition. The validity of the water activity and glass transition concepts were evaluated. It is concluded that glass transition concept may be used to explain the process more adequately. 相似文献

Gluten-free formulations are often supplemented with proteins to improve their quality. To determine the effects of alternative proteins on a hydroxypropyl methylcellulose (HPMC)-treated gluten-free dough system, soy protein isolate was added at 1%, 2% and 3% while egg white solids were investigated at 5%, 10% and 15%. The formulated doughs were analysed using thermoanalytic and rheological techniques to determine the role of water and subsequent flow behaviour upon hydrocolloid addition. The baked loaves were measured for specific loaf volume and tensile strength to determine bread quality. The addition of soy protein isolate and egg white solids (5% and 10%) reduced dough stability by suppressing HPMC functionality, reducing available water, weakening HPMC interactions with the starch matrix and reducing foam stability. At 15% addition, egg white solids became the primary protein scaffolding in the dough and overcame negative interactions with HPMC, improving the loaf volume. However, this formulation may need further optimisation to meet full consumer acceptability. 相似文献

Dough and crumb grain evolution of yeasted sweet dough, as affected by the combined effect of mixing (dough development) and fermentation times, and their relation to rheological properties and bread quality was studied. Structural changes of under or optimum developed dough, without fermentation, were related mainly to increments in extensibility (P > 95%), without a noticeable change in pH. At all mixing stages, fermentation duration increased Rm, whereas extensibility and pH decreased. When plotting Rm with bread specific volume, cell area, total cell area fraction or yellow crumb colour parameter (b*) simple mathematical models, with determination coefficients larger than 0.85 were obtained. Bread crumb image analysis showed that crumb cell size was not affected by mixing time, while fermentation duration had a direct influence on this parameter, increasing the proportion of the smallest and the largest crumb cells, without changing cell density, possibly as a result of Ostwald ripening, coalescence and separation‐redistribution mechanisms. 相似文献

为了探讨营养强化剂叶黄素酯在馒头加工和贮藏过程中的稳定性,通过叶黄素酯水溶性微囊粉添加于馒头中,分析馒头和面、压延、发酵、蒸制和储藏过程中总叶黄素酯、总叶黄素及其异构体的变化情况。结果表明:和面、压延和发酵对叶黄素酯的降解影响不显著,蒸制引起馒头中叶黄素酯含量下降明显;馒头加工过程对皂化测得的总叶黄素和全反式叶黄素保留率较高。叶黄素酯强化馒头在整个加工和储藏过程都伴随着叶黄素异构体的生成和含量变化,和面过程中生成了少量的13-顺式和13’-顺式叶黄素,压延、发酵过程13-顺式和13’-顺式叶黄素含量继续增加,蒸制引起13-顺式、13’-顺式叶黄素含量显著增加以及9-顺式叶黄素的生成。储藏过程中馒头中的叶黄素酯、皂化测得的总叶黄素和全反式叶黄素含量,及叶黄素顺式异构体含量均略有下降。 相似文献

主要研究了黄原胶、羟丙基甲基纤维素(HPMC)、以及海藻酸钠对无麸质面包(糙米与荞麦粉比例为80∶20)流变学特性,比容、气孔,以及感官评分的影响。结果表明,添加胶体后,无麸质面糊的弹性模量和黏模量显著增加,并且无麸质面包的比容增大,感官评定分数也增大。通过各方面综合比较,0.5%黄原胶的添加使无麸质面包感官以及气孔分析各方面指标都有显著改善,无麸质面包无塌陷。经研究发现,与对照组面包相比,当黄原胶添加量为0.5%时,比容增加了9%,image分析中的count值增加了10.9%,硬度降低了13.1%,感官总体可接受度上升了17.4%。 相似文献

BACKGROUND: Proper postharvest handling and storage of sweet potato is an important link in the chain from producer to consumer or manufacturing industry. Heat treatments have been used as a non‐chemical means to modify the postharvest quality and reduce pathogen levels and disease development of a wide variety of horticultural products. The objective of this study was to investigate the effects of hot water treatment (HWT) on the quality, gelatinisation enthalpy and pasting properties of sweet potato starch during long‐term storage. The weight loss, sprouting, spoilage and sugar content of sweet potato were also determined. RESULTS: HWT significantly inhibited the sprouting and decay of sweet potato during the storage period. There were no significant differences (P < 0.05) in the pasting properties and onset (TO), peak (TP) and endset (TE) temperatures of gelatinisation of sweet potato starch among all treatments, especially between heat‐treated and non‐heat‐treated samples. HWT also had no significant impact on the quality of the internal components of the roots. Less than 4% of the yearlong‐stored roots were discarded owing to spoilage. HWT supplied a lethal dose of heat to surface pathogens and black spot without damaging the nutritional and processing qualities of sweet potato. CONCLUSION: HWT was an effective method to reduce root sprouting and deterioration without significant impact on the quality of the internal components of sweet potato. Soy protein isolates (SPI) were fractionated by ultrafiltration unit equipped with 100 and 300 kDa cutoff size membranes. Glycerol-plasticized fractionated soy protein films were developed by casting methods. Mechanical, moisture barrier and physical properties of films, as affected by molecular weight of soy protein fraction, were investigated. Tensile strength and percent elongation at break of films increased with molecular weight of soy proteins. However, molecular weight variation did not influence the water vapor barrier properties of films. Protein solubilities of fractionated films were in the range of 3.5-4.6 g/100 g of dry film, whereas 11.9 g of proteins were solubilized from 100 g of dry SPI film. Hunter b value of fractionated protein films decreased with molecular weight of soy protein. 相似文献

面包在贮存过程中容易霉变,因此延长面包的保质期是面包工业一直研究的热点。该文研究了面包在贮存过程中皮层和瓤部微生物的生长变化,并提出防腐剂添加方法,对比了三种添加方法对面包防腐效果的影响。实验结果表明,面包在贮存过程中,皮层微生物繁殖速度高于瓤部,在表皮最先出现霉斑。采用丙酸钙混合添加、包裹添加和涂抹添加三种方式,都可以抑制微生物的繁殖速度,延长面包的保质期,防霉变的效果顺序为表皮涂抹>表皮包裹>混合添加。丙酸钙在面包表皮浓度越高,防霉变效果越好,加强面包皮层防腐对面包保鲜更加重要。 相似文献

Use of high‐intensity ultrasound to modify certain functional properties of whey proteins is an alternative to traditional method in food industry. Whey protein isolate (WPI) solutions were treated with an ultrasound probe (20 kHz) at different intensities (20% or 30% amplitude) and durations (10 or 20 min). Results showed that ultrasound treatment changed physical and several functional properties of whey proteins including decreased particle size (from 190.4 nm to 138.0 nm), increased surface hydrophobicity (from 5.13 × 105 to 5.77 × 105), free sulphydryl groups (from 52.64 μmol SH g?1 to 53.64–58.77 μmol SH g?1), solubility (from 74.95% to 89.70%), emulsion activity index (from 3.18 m2 g?1 to 3.59–5.32 m2 g?1) and emulsion stability index (from 62.26 min to 71.44–104.83 min), and changed viscosity (from 5.51 mPa.s to 4.81–5.64 mPa.s). Therefore, we conclude that high‐intensity ultrasound can be potentially applied to whey proteins to improve its specific functions during food processing. 相似文献

探讨新型油包水(W/O)盐卤凝固剂对大豆蛋白凝胶中水分变化的影响。利用差示量热扫描仪(DSC)和低场核磁共振(LF-NMR)来研究豆腐凝胶过程中水分的变化。结果表明,在豆腐凝固的过程中,总水分含量下降,自由水下降,结合水含量总体呈现上升趋势,豆腐凝胶结构中的水分自由度在不断减少。与传统盐卤凝固豆腐相比,新型W/O盐卤豆腐凝胶在同一阶段的自由水含量较高,弛豫时间较长,W/O凝固剂的缓释可以改善豆腐的质量。此外,WPI含量不仅对乳液稳定性起作用,而且会改善豆腐品质。在0.5%WPI W/O乳液作为凝固剂得到的豆腐样品核磁共振成像中氢质子的密度最大,说明WPI可以提高豆腐的持水性和品质,因此可将0.5%WPI制备的W/O乳液凝固剂作为豆腐生产用凝固剂。 相似文献

In this study, the effect of adding dried Besni grape (BG) at different concentrations on the physico‐chemical characteristics, colour values, total phenolic and flavonoid contents, glass transition (), melting (), freezing (Tf) and melting (Tm) point temperatures, and sensory properties of ice creams was investigated. Generally, the addition of BG caused a statistically significant (P < 0.01) increase in total solids, ash, fat, viscosity, first dripping times, complete melting times and a* colour values, while it decreased protein, pH, overrun, L*, b*, , , Tf and Tm values. The colour scores of ice cream samples showed a statistically significant increase (P < 0.05) with the increment of BG concentration, while the effects of BG addition on texture, resistance to melting, flavour, gumming structure and overall acceptability scores were not statistically significant. 相似文献
