This study was designed to estimate the dietary intake of cadmium (Cd), lead (Pb), mercury (Hg) (total and methyl), and arsenic (As) by inhabitants of Xiamen, China. The concentrations of these toxic elements (TEs) were determined in vegetables, fruits, meat, and seafood samples randomly acquired in 5 districts of Xiamen between 2005 and 2009. Health risks were evaluated for inhabitants of Xiamen due to dietary consumption. The target hazard quotient (THQ) values for individual elements were far below 1, indicating minimal noncarcinogenic risks from TEs for inhabitants of Xiamen under the current food consumption rate. However, consumption of the entire foodstuffs could lead to potential health risks since the 95th percentile HI was higher than 1. The relative contributions of Cd, Pb, Hg T, and As to the HI were 16.0%, 15.9%, 5.9%, and 62.2% for the mean exposure level, and 13.3%, 13.4%, 5.6%, and 67.9% for the 95th percentile estimate. The THQ value of methyl mercury through consumption of cephalopod was less than 1. Tomato, cephalopod, eggplant, cabbage, orange, and pork were the main sources of total dietary intakes of TEs. The estimation of carcinogenic risk shows that the carcinogenic rate of arsenic exceeded the accepted risk level of 10(-4) . Therefore, the carcinogenic risk of arsenic for inhabitants of Xiamen is of concern. Practical Application: Tomato, cephalopod, eggplant, cabbage, orange, and pork were the main sources of dietary intakes of TEs in Xiamen, China. The carcinogenic risk of arsenic for inhabitants in this area who consume large amounts of fruits and vegetables daily may be of concern. Consumers are encouraged to eat fruits and vegetables with different origins and eat less cephalopod to reduce the possibilities of continuously eating commodities from the contaminated areas.  相似文献

Fresh fruits and vegetables are an important part of a healthful diet. They provide vitamins, minerals and fiber to help keep our body healthy. Occasionally, fresh fruits and vegetables can become contaminated with harmful bacteria or viruses, which are also known as pathogens. The major family of pathogen associated with food are members of Enterobacteriaceae which commonly form a part of microbiological criteria and their presence is traditionally related to hygiene and safety of foods. Organic fertilizers, irrigation water quality and soil are major source of contamination. For removal of pathogens, various decontamination procedures are also followed to reduce microbial load on the fruits. These are chemical preservatives and irradiation. Microbiological study of fresh produce can be done by various phenotypic, biochemical and molecular techniques so that pathogen can properly be identified. The World Health Organization (WHO) developed global risk communication message and training materials to assist countries in strengthening their food educating programs. There is a need for improved surveillance systems on food-borne pathogens, on food products and on outbreaks so that comparable data are available from a wider range of countries.  相似文献

An investigation of the naturally occurring aluminum contents in grains, fruits and vegetables locally planted in some areas of China was conducted, and the aluminum dietary intake from the investigated food was estimated. A total of 2,469 samples were collected during 2013 to 2014 and tested for aluminum content using ICP‐MS method. The results showed that although 77.6% of the samples contained aluminum less than 5 mg/kg, significant variations of aluminum contents were observed in different food groups. Generally, the aluminum contents were found to be relatively high in dried grains and fresh vegetables, and low in fresh fruits. The mean value of aluminum contents in grains was 6.3 mg/kg, with wheat being the highest, followed by soybean and corn. The fresh vegetables had an average aluminum content of 4.7 mg/kg, with leafy vegetables being the highest, followed by bulb and stem vegetables. Most varieties of fresh fruits were low in aluminum, with the mean of 1.3 mg/kg. Based on the food consumption data from the China National Nutrient and Health Survey, the average weekly dietary intake of naturally occurring aluminum from the investigated foods was estimated to be 0.62 mg/kg bw for the general population and 0.55 to 1.00 mg/kg bw for different age groups. Grains and vegetables were the main contributors to the overall intake. Evaluated against the provisional tolerable weekly intake (PTWI) of 2 mg/kg bw, the dietary naturally occurring aluminum intake from the investigated foods was considered to be no safety concern.  相似文献

Recent produce-related outbreaks have been receiving heightened media coverage, which has increased public concern toward the safety of fresh fruits and vegetables. In response, the microbial contamination of Ontario-grown fresh fruits and vegetables was evaluated by the Ontario Ministry of Agriculture, Food and Rural Affairs during the summer of 2004. Prior to this survey, information specific to the microbial contamination of Ontario-produced fruits and vegetables was limited. This nonregulatory survey had two objectives: (i) to obtain a general microbiological profile of selected fruits and vegetables produced in Ontario and (ii) to use the information and knowledge gained from this survey to direct and support future on-farm food safety research and food safety programs to manage potential risks. In all, 1,183 samples, including muskmelon (151), scallions and green onions (173), leaf lettuce (263), organic leaf lettuce (112), head lettuce (155), parsley (127), cilantro (61), and fresh market tomatoes (141), were collected and analyzed. Samples were analyzed for Salmonella, Shigella, and generic E. coli. Enrichment cultures positive for E. coli were further assessed for verotoxigenicity. One sample each of Roma tomato and organic leaf lettuce were positive for Salmonella, with no samples yielding Shigella or verotoxigenic E. coli. The E. coli prevalence was highest in parsley (13.4%), followed by organic leaf lettuce (11.6%), leaf lettuce (6.5%), scallions (6.4%), cilantro (4.9%), muskmelon (1.3%), head lettuce (0%), and fresh market tomatoes (0%). These findings, in combination with foodborne illness data, will help target those commodities that require more focused risk mitigation efforts.  相似文献

ABSTRACT

Given that it should be aware of the nutritional benefits, resulting from the consumption of fresh fruits and vegetables consumed raw and/or minimally processed, comparing the efficacy of different individual sanitizing methods against the major food-borne pathogens localized in fresh commodities is of much importance; these products are easily vulnerable to the microbial contamination. In this review, the current propensity of alternative sanitizing methods was introduced, as well as principal elements for deteriorating the cleaning effects were also discussed. Chlorine-based-sanitizers exhibited the microbial reduction of <1.12 log10 CFU/g on fruits and vegetables. Most of aqueous disinfectants showed ≤3.01 log10-redcutions against a variety of microorganisms inoculated on fresh commodities. Similarly, several physical technologies such as hydrostatic pressure and ultraviolet light were effective for reducing surviving bacterial cells could recover and grow rapidly during the whole processing, posing a potential risk of causing food-borne outbreaks associated with the fresh products. The invasion and subsequent localization of the organisms into the inner parts of products, interactions between the microbial cell and food-contacting surfaces, as well as development of biofilms could restrict the antimicrobial activity of the currently used approaches.  相似文献

Fruits and vegetables are the most utilized commodities among all horticultural crops. They are consumed raw, minimally processed, as well as processed, due to their nutrients and health‐promoting compounds. With the growing population and changing diet habits, the production and processing of horticultural crops, especially fruits and vegetables, have increased very significantly to fulfill the increasing demands. Significant losses and waste in the fresh and processing industries are becoming a serious nutritional, economical, and environmental problem. For example, the United Nations Food and Agriculture Organization (FAO) has estimated that losses and waste in fruits and vegetables are the highest among all types of foods, and may reach up to 60%. The processing operations of fruits and vegetables produce significant wastes of by‐products, which constitute about 25% to 30% of a whole commodity group. The waste is composed mainly of seed, skin, rind, and pomace, containing good sources of potentially valuable bioactive compounds, such as carotenoids, polyphenols, dietary fibers, vitamins, enzymes, and oils, among others. These phytochemicals can be utilized in different industries including the food industry, for the development of functional or enriched foods, the health industry for medicines and pharmaceuticals, and the textile industry, among others. The use of waste for the production of various crucial bioactive components is an important step toward sustainable development. This review describes the types and nature of the waste that originates from fruits and vegetables, the bioactive components in the waste, their extraction techniques, and the potential utilization of the obtained bioactive compounds.  相似文献

Promotion of healthier lifestyles has led to an increase in consumption of fresh produce. Such foodstuffs may expose consumers to increased risk of foodborne disease, as often they are not subjected to processing steps to ensure effective removal or inactivation of pathogenic microorganisms before consumption. Consequently, reports of ready‐to‐eat fruit and vegetable related disease outbreak occurrences have increased substantially in recent years, and information regarding these events is often not readily available. Identifying the nature and source of microbial contamination of these foodstuffs is critical for developing appropriate mitigation measures to be implemented by food producers. This review aimed to identify the foodstuffs most susceptible to microbial contamination and the microorganisms responsible for disease outbreaks from information available in peer‐reviewed scientific publications. A total of 571 outbreaks were identified from 1980 to 2016, accounting for 72,855 infections and 173 deaths. Contaminated leafy green vegetables were responsible for 51.7% of reported outbreaks. Contaminated soft fruits caused 27.8% of infections. Pathogenic strains of Escherichia coli and Salmonella, norovirus, and hepatitis A accounted for the majority of cases. Large outbreaks resulted in particular biases such as the observation that contaminated sprouted plants caused 31.8% of deaths. Where known, contamination mainly occurred via contaminated seeds, water, and contaminated food handlers. There is a critical need for standardized datasets regarding all aspects of disease outbreaks, including how foodstuffs are contaminated with pathogenic microorganisms. Providing food business operators with this knowledge will allow them to implement better strategies to improve safety and quality of fresh produce.  相似文献

Cellulose, hemicellulose, pectin (carbohydrate), and lignin (noncarbohydrate) polymers are the main substrates of lignocellulose‐degrading enzymes. They are present in large amounts in the primary cell wall and dietary fibers of major fruits and vegetables. During processing of fruits and vegetables to the corresponding final food products, lignocellulosic substrates are hydrolyzed by different lignocellulolytic enzymes. Currently, lignocellulolytic enzymes such as cellulases, xylanases, pectinases, and laccases are extensively used during the processing of fruits and vegetables, in applications like texturizing and flavoring of products in the food industries. The present article provides an updated overview of functional applications of lignocellulolytic enzymes in the juice processing, oil extraction, and alcoholic beverage processing industries. Extensive use of lignocellulolytic enzymes in different food processing industries not only accelerates the production rates but also improves product quality. It is also possible to ensure the efficient use of fruits and vegetables globally by employing lignocellulolytic enzymes in the corresponding processing industries to convert them into food commodities, which will not only raise their economic value in the global market but also increase food availability, which will help mitigate nutritional problems worldwide.  相似文献

ABSTRACT: One of the major growth segments in the food retail industry is fresh and minimally processed fruits and vegetables. This new market trend has thus increased the demands to the food industry for seeking new strategies to increase storability and shelf life and to enhance microbial safety of fresh produce. The technology of edible coatings has been considered as one of the potential approaches for meeting this demand. Edible coatings from renewable sources, including lipids, polysaccharides, and proteins, can function as barriers to water vapor, gases, and other solutes and also as carriers of many functional ingredients, such as antimicrobial and antioxidant agents, thus enhancing quality and extending shelf life of fresh and minimally processed fruits and vegetables. This review discusses the rationale of using edible coatings on fresh and minimally processed produce, the challenges in developing effective coatings that meet the specific criteria of fruits and vegetables, the recent advances in the development of coating technology, the analytical techniques for measuring some important coating functionalities, and future research needs for supporting a broad range of commercial applications.  相似文献

Fresh produce is an important part of a healthy diet. During the last three decades, the number of outbreaks caused by foodborne pathogens associated with fresh produce consumption reported to the Centers for Disease Control and Prevention has increased. To identify trends, we analyzed data for 1973 through 1997 from the Foodborne Outbreak Surveillance System. We defined a produce-associated outbreak as the occurrence of two or more cases of the same illness in which epidemiologic investigation implicated the same uncooked fruit, vegetable, salad, or juice. A total of 190 produce-associated outbreaks were reported, associated with 16,058 illnesses, 598 hospitalizations, and eight deaths. Produce-associated outbreaks accounted for an increasing proportion of all reported foodborne outbreaks with a known food item, rising from 0.7% in the 1970s to 6% in the 1990s. Among produce-associated outbreaks, the food items most frequently implicated included salad, lettuce, juice, melon, sprouts, and berries. Among 103 (54%) produce-associated outbreaks with a known pathogen, 62 (60%) were caused by bacterial pathogens, of which 30 (48%) were caused by Salmonella. During the study period, Cyclospora and Escherichia coli O157:H7 were newly recognized as causes of foodborne illness. Foodborne outbreaks associated with fresh produce in the United States have increased in absolute numbers and as a proportion of all reported foodborne outbreaks. Fruit and vegetables are major components of a healthy diet, but eating fresh uncooked produce is not risk free. Further efforts are needed to better understand the complex interactions between microbes and produce and the mechanisms by which contamination occurs from farm to table.  相似文献

In recent years, the consumption of fresh fruits and vegetables has greatly increased, and so has its association with contamination of several foodborne pathogens (Listeria, Salmonella, and Escherichia coli). Hence, there is a need to investigate effective sanitizer systems for produce decontamination. Chlorine dioxide (ClO(2)), a strong oxidizing gas with broad spectrum and sanitizing properties, has previously been studied for use on selected fruits and vegetables. ClO(2) gas treatments show great potential for surface pathogen reduction; however its use from a residue safety standpoint has yet to be assessed. Thus, the objective of this study was to evaluate residues of ClO(2), chlorite, chlorate, and chloride on selected fresh produce surfaces after treatment with ClO(2) gas. A rinse procedure was used and water samples were analyzed by N, N-diethyl-p-phenylenediamine and ion chromatography method (300.0). Seven different foods--tomatoes, oranges, apples, strawberries, lettuce, alfalfa sprouts, and cantaloupe--were analyzed after ClO(2) treatment for surface residues. Very low residues were detectable for all the food products except lettuce and alfalfa sprouts, where the measured concentrations were significantly higher. Chlorine dioxide technology leaves minimal to no detectable chemical residues in several food products, thus result in no significant risks to consumers. Practical Application: Potential for chlorine dioxide gas treatments as an effective pathogen inactivation technology to produce with minimal risk for consumers.  相似文献

Components of cereals, legumes, pulses, proteins, sea food, milk, carbohydrates and lipids are being evaluated for their influence on human health, as biofunctional compounds. However, references dealing with fruits and vegetables exceed any other food group and accordingly their focus. Fruits and vegetables abound in a spectacular range of such health influencing compounds and thus, study of their bioactivity, in lieu of their consumption in fresh or processed form. Anti-cancerous phenolics from Phyllanthus, radioprotective Litchi phenolics/flavonoids, hypoglycemic Sygium, quercitin and hydroxyl cinnamates of Sweet cherries, xanthones of Mangosteen, ellagitannins of Pomegranate, ursolic acid of Sea buckthorn, muscle relaxative watermelon, anti-cholesterolemic soluble fibre and sterols, cardioprotective saponins, ACE-inhibitory potato hydrolysates, anti-pancreatic cancerous ascorbic acid, carotenoids including pro-vitamin A are few examples unraveled. Thus, the imminent scope to obviate their structural chemistry, influence on storage and processing conditions, factors favoring their bio-accessibility/bio-availability in the food formulations, influencing human health. It is the meticulous combination of these compounds in daily consumption that determines their usefulness to human body. What is of paramount importance is the actual health benefits accrued from consumption of such functional- compound based fresh/processed fruits,vegetables or other foods.  相似文献

PURPOSE: The impact of consuming processed versus fresh fruits and vegetables on the galactose intake of galactosemic patients was compared. METHODS: The galactose content of processed fruits was determined when the following processing methods were used: freezing, drying, blanching, microwaving, canning, and a combination of blanching and freezing. Then three-day food intakes of five subjects with galactosemia were recorded. The records were used to estimate galactose intake, according to previously reported galactose levels for fresh fruits and vegetables and the potential reduction in galactose intake when only processed fruits and vegetables are consumed. RESULTS: The average galactose reduction was approximately 45% for all the fruits and all processing methods, excluding drying. Intakes varied from 17 to 108 mg/day when fresh values were used and 11 to 103 mg/day when only processed fruits and vegetables were consumed. This reduction was statistically significant for four out of five patients. CONCLUSIONS: When the reduction is compared with reported daily fluctuations in galactosemic patients' endogenous galactose production, the clinical significance of reduced free galactose consumption on long-term outcome is unclear. However, metabolic dietitians now have objective data that the processing methods described will lower the free galactose content of the fruits analyzed.  相似文献

The daily intake of total phenolics, total flavonoids and antioxidants in the American diet was estimated from the most common 34 fresh fruit and vegetables and their daily consumption data. Among 14 fruit and 20 vegetables, orange contributed the highest amount of total phenolics [117.1 mg gallic acid equivalent (GAE) person?1 day?1] and antioxidants [146.6 mg vitamin C equivalents (VCE) person?1 day?1]. Orange contributed about 26 and 25% of total phenolics and antioxidant, respectively, in the daily consumption of fruit and vegetables. Apples showed relatively high levels of total phenolics and antioxidant capacity comparable to those of oranges and their phenolics and antioxidants contribution is the second highest. Even though potatoes had lower levels of phenolics and antioxidant capacity, they were third due to the fact that their consumption is the highest (137.9 lb person?1 year?1) in the American diet. Although plums and strawberries were ranked as the group with the highest total phenolics and antioxidant capacity among 34 tested fruit and vegetables, their contributions were relatively low due to their lower daily consumption. Generally, the levels of total phenolics, total flavonoids and antioxidant capacity of fruits were higher than those of vegetables. American daily intake of phenolics, flavonoids and antioxidants from fruits and vegetables was estimated to be 450 mg GAE, 103 mg catechin equivalents and 591 mg VCE, respectively. Although we do not yet know the required minimum daily amounts of antioxidants, when we estimate the daily requirement of antioxidants, we must consider not only the antioxidant concentrations of the particular food, but also the daily intakes of the food. Ascorbic acid (AA) is a water-soluble vitamin mainly present in fruits and vegetables. Food Composition Databases (FCDB) provide detailed information on nutritionally important components in foods. However, in some FCDB there is a significant lack of information on vitamin C content. The aim of this study is to produce new data for FCDB by measuring the AA content in 26 types of exotic fruits and to evaluate the nutritional value of these fruits as a source of vitamin C. In this study, the analytical method used to measure ascorbic acid content is an economic, rapid and previously validated High Performance Liquid Chromatography (HPLC) method. Ascorbic acid content per 100 g of edible portion ranged between 0.925 ± 0.018 mg for kiwano and 117 ± 1.64 mg for arbutus. For all the analyzed exotic fruits and considering a mean daily consumption of 100 g/day, twelve of them provide more than 30% of the Dietary Reference Intake. About a quarter of the analyzed exotic fruits are not found in any of the five FCDB considered in this study. The worldwide global market is expanding the production and consumption of fresh fruits and vegetables, mostly exotic, increasing the need of updating the food composition databases with high quality data. The analytical results obtained in this study are an important source of reliable data to be included in the Portuguese food composition database.  相似文献

Minimally processed fresh (MPF) fruits and vegetables are good media for growth of microorganisms. They have been involved in outbreaks because of the consumption of products contaminated by pathogens. They are also sensitive to various spoilage microorganisms such as pectinolytic bacteria, saprophytic Gram‐negative bacteria, lactic acid bacteria, and yeasts. Contamination of MPF fruits and vegetables occurs at every stage of the food chain, from cultivation to processing. Polluted environments during cultivation or poor hygienic conditions in processing increase the risk of contamination with foodborne pathogens. Although MPF fruits and vegetables may harbor psychrotrophic microorganisms such as fluorescent pseudomonads or Listeria monocytogenes, good control of refrigeration temperature limits growth of spoilage and pathogenic microorganisms. Modified atmospheres are often efficient to maintain or improve visual and organoleptic quality of MPF fruits and vegetables, but their effects on microorganisms are inconsistent. Chemical disinfection can partially reduce the initial bacterial contamination; irradiation seems to be more efficient. The applications of legislations and quality assurance systems to control contamination, survival, and growth of foodborne pathogens in MPF fruits and vegetables are discussed.  相似文献

In this concluding article in the series on the technological feasibility of ionizing radiation treatment for shelf life improvement of fruits and vegetables, the present status of research on several commodities that have not been dealt with earlier is discussed. The commodities include mushrooms, tomatoes, pineapples, lychees, longans, rambutans, mangostenes, guavas, sapotas, loquats, ber, soursops, passion fruits, persimmons, figs, melons, cucumbers, aubergines, globe artichokes, endives, lettuce, ginger, carrots, beet roots, turnips, olives, dates, chestnuts, almonds, pistachios, and other dried fruits and nuts. Changes induced by irradiation on metabolism, chemical constituents, and organoleptic qualities are considered while evaluating the shelf life. The commodities have been grouped into those showing potential benefits and those not showing any clear advantages from radiation treatment. Shelf life improvement of mushrooms and insect disinfestation in dried fruits, nuts, and certain fresh fruits appears to have immediate potential for commercial application.  相似文献

Purpose: Food consumption was investigated in children attending three elementary schools in urban Hamilton, Ontario. Methods: Dietary data were collected from 92 children in grades 2 to 4 through 24-hour dietary recalls (39% participation rate). Servings of four food groups were compared with recommended daily servings in Canada's Food Guide. Results: The majority of students did not consume the recommended five daily servings of vegetables and fruit. On average, they consumed a high number of servings of "other foods," which were not included in the four food groups. More than 50% of the students did not consume the recommended daily servings of milk products, and only a small proportion (21%) drank milk during school lunch. Conclusions: We recommend that primary school educators promote the consumption of vegetables and fruits and milk products at school, either through healthy snack programs or educational programs.  相似文献

Fresh fruits and vegetables are a rich source of micronutrients. However, many foodborne illnesses have been linked to the consumption of fresh fruits and vegetables as they are reported to harbor contaminants such as microorganisms and pesticides. Recently reported foodborne outbreaks have been linked to a diverse group of fruits and vegetables due to the presence of various pathogens including Salmonella, Escherichia coli, and Listeria monocytogenes. Also, the increased use of pesticides has resulted in the deposition of chemical residues on the surface of fruits and vegetables, which has led to the adverse health conditions such as cancer, birth defects, and neurodevelopmental disorders. Fresh commodities are subjected to various treatments to prevent or minimize these outbreaks, and the main targets of such treatments have been the elimination of pathogens and degradation of toxic chemical residues. Here, we have discussed various decontamination methods including simple household washing, chemical treatments, and modern technologies with their mode of action for microbial and pesticide removal. The simple household processes are not very effective in the removal of pathogenic organisms and pesticides. The use of modern techniques like cold plasma, ozone, high hydrostatic pressure, and so on, showed better efficacy in the removal of microorganisms and pesticides. However, their industrial use is limited considering high installation and maintenance cost. In this review, we suggest combined methods based on their mode of decontamination and suitability for a selected fruit or vegetable for effective decontamination of microbes and pesticide together to reduce the treatment cost and enhance food safety.  相似文献

为排查天津市即食生鲜果蔬病原微生物污染情况,2015~2019年在生产环节和流通环节抽取生菜、番茄、黄瓜、苦菊、桃和梨等6种即食果蔬品种共计654批次样品,采用国家标准方法分析样品中菌落总数、大肠菌群、沙门氏菌、金黄色葡萄球菌、单增李斯特氏菌、蜡样芽孢杆菌和大肠杆菌O157:H7污染状况进行风险分析。结果显示,654批次样品中检出食源性致病菌135批次,检出率为20.6%,其中包括沙门氏菌1份,金黄色葡萄球菌6份,蜡样芽孢杆菌128份,其他致病菌均未检出。食源性致病菌检出率较高的样品多出现在超市和农贸市场,表明即食果蔬致病菌的污染易发生在流通环节。即食生鲜果蔬中食源性致病菌污染对消费者健康存在潜在的安全隐患,需加强采后流通环节污染防控,保障即食果蔬食品安全,防止食源性疾病暴发。  相似文献
