为扩大并深入变性淀粉在面制品的应用开发,分析了不同交联度木薯羟丙基淀粉的黏度曲线、粒径及沉降积,并研究其对麻糬面包的外观、口感、组织结构等感官评价,以及对麻糬面包比容、质构的影响。结果表明,随交联度增加,淀粉的沉降积逐渐减小,耐热性增强,糊化温度逐渐提高,淀粉糊的粒径先增加后降低;在应用效果上,轻交联的木薯羟丙基淀粉在组织结构、加工性能、口感上优于深交联木薯羟丙基淀粉,在比容、弹性及硬度上也表现良好。综合评定轻交联木薯羟丙基淀粉308效果最好,且与预糊化变性淀粉按4:1复配时,能显著提高麻糬面包的比容、弹性、组织结构,且口感清爽、保型性好,为麻糬面包最优淀粉配比。  相似文献

为了探索并优化麻糬面包的配方,研究了预糊化乙酰化双淀粉己二酸酯分别与羟丙基二淀粉磷酸酯、乙酰化双淀粉和磷酸酯双淀粉的不同复配比例对麻糬面团的流变特性、微观结构,以及麻糬面包的比容、感官评价与质构特性的影响。结果表明,随着预糊化淀粉添加量的增加,麻糬面包的储能模量与损耗模量升高,初始模量最高分别超过12 500 Pa和4 000 Pa。羟丙基变性淀粉与磷酸酯变性淀粉组中预糊化淀粉添加量增加,麻糬面包的硬度升高到7 571.47 g和6 017.17 g,咀嚼度升高到2 435.48和2 840.05,但是比容逐渐降低,微观结构变的更清晰。而乙酰化变性淀粉组中预糊化淀粉含量升高,麻糬面包的硬度与咀嚼性先下降后上升,比容先上升后下降。当预糊化淀粉添加量为20%时,麻糬面包的感官评分最高,达到86.25分。该研究结果可为麻糬面包的原料提供更多选择,为其加工提供理论依据。  相似文献

本文研究了木薯交联羟丙基淀粉对麻糬品质的影响,研究表明,添加木薯交联羟丙基淀粉可明显改善麻糬皮料的外观、口感、抗老化性能,其中糯米粉与木薯交联羟丙基淀粉以4:1的比例制作麻糬时产品品质最佳。  相似文献

探讨不同添加量的马铃薯变性淀粉和木薯变性淀粉对面团流变学特性和面包品质的影响。结果表明:两种变性淀粉均可改善面团的流变学特性,增大面团的韧性、减小面团的延伸性,改善面团的筋力;与对照相比,马铃薯变性淀粉能有效改善面包的焙烤品质,明显增加面包的比容,有效改善面包的硬度和弹性,木薯变性淀粉对面包品质的影响不明显;马铃薯变性淀粉的最适添加量为0.8%~1.2%面粉。  相似文献

以木薯淀粉为原料,主要研究了预糊化淀粉、羟丙基二淀粉磷酸酯和乙酰化二淀粉磷酸酯三种变性淀粉的物化特性与冻融稳定性,以及它们对冷冻面团面包比容及面包全质构的影响。实验结果表明:木薯淀粉经过不同方式的变性后,物化特性差异很大,其中,羟丙基二淀粉磷酸酯的冻融稳定性最好,预糊化淀粉的冻融稳定性最差;添加5%三种变性淀粉后均能显著延缓冷冻面团的下降趋势,并对冷冻面团面包的品质具有良好的改善作用。这一结果与变性淀粉冻融稳定性及冷冻面团面包比容变化趋势一致,进一步表明变性淀粉,尤其是羟丙基二淀粉磷酸酯可以有效抑制冷冻面团内部水分的迁移,降低冻藏过程中冰晶和重结晶的形成,从而改善冷冻面团面包的内部质构。  相似文献

以玉米淀粉、蜡质玉米淀粉、马铃薯淀粉、马铃薯酯化变性淀粉、木薯淀粉和木薯醋酸酯淀粉为原料,比较研究了激光粒度仪和X-射线衍射仪测定的淀粉的颗粒大小和结构,快速粘度仪测定糊化特性,差示扫描量热仪和热重分析仪测定淀粉的热特性。结果表明,淀粉的平均粒径大小顺序为马铃薯类淀粉玉米类淀粉木薯类淀粉,且湿法和干法测定有差异;玉米淀粉、木薯淀粉和木薯醋酸酯淀粉为A型结构,蜡质玉米淀粉经过变性处理无双峰结构,马铃薯及其酯化变性淀粉为B型结构;马铃薯淀粉峰值粘度最大,热焓值最高,持水力最强,玉米淀粉的糊化温度最高,峰值粘度和衰减值最小,马铃薯酯化淀粉的起始糊化温度最低,综合持水力最弱。  相似文献

以8种类型变性淀粉为研究对象,对其冻融稳定性、糊化特性、透明度、凝沉性、凝胶强度等理化特性进行研究。结果表明,预糊化羟丙基二淀粉磷酸酯蜡质玉米淀粉的冻融稳定性最好;蜡质玉米氧化淀粉的透明度最佳;乙酰化二淀粉磷酸酯马铃薯淀粉、羟丙基二淀粉磷酸酯蜡质玉米淀粉、羟丙基二淀粉磷酸酯木薯淀粉、预糊化羟丙基二淀粉磷酸酯蜡质玉米淀粉的凝沉性较强,而蜡质氧化淀粉几乎无凝沉性;乙酰化二淀粉己二酸酯木薯淀粉的凝胶强度最大;羟丙基二淀粉磷酸酯蜡质玉米淀粉的最高黏度值最大,消减值最大;乙酰化二淀粉磷酸酯玉米淀粉的糊化温度最高;乙酰化二淀粉磷酸酯玉米淀粉的冻融稳定性、凝沉性优于乙酰化二淀粉磷酸酯马铃薯淀粉,且凝胶强度较高;羟丙基二淀粉磷酸酯蜡质玉米淀粉的黏度明显高于羟丙基二淀粉磷酸酯木薯淀粉,而后者的冻融稳定性、透明度、凝沉性优于前者。  相似文献

以玉米淀粉、木薯淀粉和马铃薯淀粉为对照,分析了凉薯淀粉的颗粒形貌及大小、溶解度、膨胀度和糊化特性等理化性质。结果表明:凉薯淀粉颗粒形状多为不规则多边形,少数为圆形,粒径范围为3~11μm,平均粒径为8μm,小于其他三种淀粉;溶解度和膨胀度比木薯淀粉和玉米淀粉高,比马铃薯淀粉低,且随温度升高,溶解度和膨胀度显著增大;糊化温度为80℃,高于其他三种淀粉,峰值黏度小于木薯、马铃薯淀粉,高于玉米淀粉,糊化热稳定性比其他三种淀粉强,回生能力比玉米、马铃薯淀粉强,比木薯淀粉弱;透明度较低,易凝沉,表观黏度较小,表现出剪切稀释现象,冻融稳定性较差;凝胶硬度、咀嚼性、黏聚性、黏附性远低于马铃薯、木薯淀粉,高于玉米淀粉,且凝胶弹性最低。  相似文献

本文对小麦淀粉、玉米淀粉、木薯淀粉、木薯淀粉醋酸酯、马铃薯淀粉及马铃薯淀粉醋酸酯的糊化特性以及它们添加到面粉中对方便面品质的影响进行了研究。感官评定及质构分析表明:添加木薯淀粉、木薯淀粉醋酸酯、马铃薯淀粉及马铃薯淀粉醋酸酯均可提高方便面的光泽度、透明度、弹性、滑爽性和耐嚼性。淀粉醋酸酯比其原淀粉效果好,而马铃薯淀粉醋酸酯比木薯淀粉醋酸酯性能更优。  相似文献

ABSTRACT: The proportions of cornstarch, cassava starch, and rice flour were optimized for production of gluten-free bread (with 0% and 0.5% soy flour) to maximize specific volume (Y1,Y1'), crumb-grain score (Y2,Y2'), and bread score (Y3,Y3'). A central composite design involving cornstarch/cassava starch ratio (X1) and rice flour/cassava starch ratio (X2) was used, and 2nd-order models for Y1 and Y1' were employed to generate response surfaces. The maxima of response surfaces for crumb-grain score and bread score indicate that optimal gluten-free bread can be prepared from 74.2% cornstarch, 17.2% rice flour, and 8.6% cassava starch. Addition of soy flour at the 0.5% level also improved bread texture.  相似文献

Low protein and poor functionality limit the use of cassava flour in snack foods, which were modified using blends with cereal and/or legume flours. Native, malted (using alpha-amylase) as well as malted and pre-gelatinized was blended with cereal (finger millet and whole wheat flours) and/or legume (chick pea flour). Extrudates were prepared at a screw speed of 100 rpm and die temperature of 180 °C. Malted flour based extrudates had lower starch content than native flour. Gram malted cassava based blends gave products with the highest protein. In vitro starch digestibility was the highest for pre-gelatinized flour based mixes. Extrudates with low fat and energy have scope as low calorie snacks for obese and diabetic people.  相似文献

Gluten-free sorghum bread was made from cassava, maize, potato or rice starch and sorghum in the ratios 10:90, 20:80, 30:70, 40:60 and 50:50. The other baking ingredients, on flour-weight-basis, were water (100%), sugar (6.7%), egg white powder (6%), fat (2%), salt (1.7%) and yeast (1.5%). Increasing starch content changed the batters’ consistencies from soft doughs to thin pourable batters. Increasing starch content decreased crumb firmness and chewiness, and increased cohesiveness, springiness and resilience of all breads. Cassava-sorghum and rice-sorghum breads had better crumb properties than maize-sorghum or potato-sorghum breads. Although the crumb properties of all breads declined (i.e. firmness and chewiness increased; cohesiveness, resilience and springiness decreased) on storage, the formulation containing 50% cassava starch retained the best overall texture.  相似文献

A gluten-free wheat bread replacement was developed from rice flour (80%) and potato starch (20%). Using objective measurements as responses, response surface methodology was utilized to find carboxymethylcellulose (CMC)-hydroxypropylmethylcellulose (HPMC)-water combinations which could successfully replace gluten in the rice flour yeast breads from each of three rice flours. CMC and water had the greatest effect on the responses measured; HPMC had the least. Rice bread formulations were found that resulted in breads which met wheat (white) bread reference standards for specific volume, crumb and crust color, Instron firmness and % moisture.  相似文献

马铃薯和猪肉分属于植物性和动物性食物资源,两者产量大,且在营养上有一定的互补性。试验选择两者为主要原料,以感官评价为指标,对猪肉马铃薯饼的生产工艺进行了优化。结果表明:糯米淀粉质量分数为20%,白糖质量分数为10%,猪肉质量分数为20%,盐质量分数为1%时(以马铃薯质量分数为100%基料计),成品感官效果最佳。对比了糯米淀粉、玉米淀粉、变性淀粉三种淀粉,对成品感官影响不大,以糯米粉最优,变性淀粉成本最低。  相似文献

讨论了6种变性淀粉对可吸性糊状食品的析水率、抗老化性、稳定性和口感的影响。结果表明:添加糊精以及羟丙基淀粉的产品稳定性较差,醋酸酯马铃薯淀粉以及羟丙基二糯玉米淀粉磷酸酯的析水率较高,而羟丙基二木薯淀粉磷酸酯能改善产品的稳定性、口感和抗老化性,适用于可吸性糊状食品。  相似文献

本文采用纯的米粉和红薯淀粉为原料来制作无麸质面包,研究了羟丙基甲基纤维素(HPMC)、羧甲基纤维素(CMC)对无麸质面包的比容、失水率、表皮颜色、硬度和弹性的影响,并从感官上对面包的品质进行了评价。实验结果表明:与空白样相比,添加2%CMC的面包比容增加最多为22%,添加2%CMC面包的黄色指数增加最多为37%,添加1%CMC面包的失水率减小了7%。面包放置24 h、48 h后,含1%CMC的面包硬度变化率减少最多分别为18%、21%,含1%HPMC的面包弹性变化率减少最多分别为18%、19%。  相似文献

BACKGROUND: Maize, one of the suitable grains for coeliac consumption, is, together with rice, the most cultivated cereal in the world. However, the inclusion of maize flour in gluten‐free bread is a minority and studies are scarce. This paper analyses the influence of different maize flour types and their particle sizes on the quality of two types of bread without gluten (80% and 110% water in the formulation) obtained from them. We also analysed the microstructure of the dough and its behaviour during the fermentation. RESULTS: Finer flours had a lower dough development during fermentation in all cases. Among the different types of flour, those whose microstructure revealed compact particles were those which had higher specific bread volume, especially when the particle size was greater. Among the formulations, the dough with more water gave breads with higher specific volume, an effect that was more important in more compact flours. The higher volume breads had lower values of hardness and resilience. CONCLUSION: The type of corn flour and mainly its particle size influence significantly the dough development of gluten‐free bread during fermentation and therefore the final volume and texture of the breads obtained. The flours having coarser particle size are the most suitable for making gluten‐free maize bread. © 2012 Society of Chemical Industry  相似文献

为了提高面包营养价值,改善滋味,降低面包老化速度,延长保质期,将甘薯淀粉添加到面包当中,采用单因素和正交实验,考察配方(甘薯淀粉、黄油、干酵母的添加量)及加工工艺(一次醒发时间、醒发温度和烘焙时间)对面包感官性状和质构的影响。基于模糊数学的评价方法评价甘薯淀粉面包的品质,对甘薯淀粉面包的形状、色泽、松软度、香味、滋味进行感官性质的分析。结果表明:最佳配方为混合粉(小麦粉+甘薯淀粉)150 g,甘薯淀粉的含量为15 g、黄油15 g、干酵母5.5 g;最优加工工艺为一次醒发时间为60 min、醒发温度为25 ℃、烘焙时间为9 min;最优条件下其硬度为27.95 N,弹性为15.18 mm,咀嚼性为228.30 mJ,胶粘性为15.05 N。按此条件制作的甘薯淀粉面包色泽金黄,外形饱满,柔软适口具有甘薯淀粉面包特有的风味,为甘薯淀粉面包工业化生产提供理论指导,同时丰富面包种类,拓宽甘薯淀粉用途。  相似文献

The feasibility of emulsifying starches as bread improvers was investigated by incorporating starch sodium octenyl succinate (OSA-st), pre-gelatinized OSA-st and hydrolysed spray-dried OSA-st at 2.5, 5 and 10 % into wheat flour. Dough rheological properties (creep and recovery measurements; Mixolab, Alveograph) and bread quality parameters (specific loaf volume, crust and crumb colour, crumb moisture, crumb grain features, texture) were evaluated. The substituted flours, except hydrolysed OSA-st, significantly increased water absorption measured by Mixolab. The study on the rheological behaviour of doughs containing emulsifying starches, performed using a rheometer and an Alveograph, showed that OSA-st incorporation yielded strengthened dough, whereas pre-gelatinized and hydrolysed OSA-st addition led to more extensible dough. With regard to the thermal behaviour, investigated in water-limited systems by Mixolab, doughs prepared from pre-gelatinized OSA-st and hydrolysed OSA-st exhibited lower maximum peak torque, whilst all three examined starches increased cooking stability and decreased the setback value. Specific volumes of loaves baked from the substituted flours increased, and the highest effect was observed with pre-gelatinized OSA-st, which consequently produced bread crumbs with the largest mean gas cell area. The bread crumbs baked with octenyl succinate starches were whiter and softer. Although upon 1 day of storage no significant moisture retention capacity of emulsifying starches was noticed, the firmness values of OSA-st and pre-gelatinized OSA-st-supplemented bread crumbs, after 24 h of storage, were similar to or significantly lower than those of the control determined 2 h after baking. The obtained results indicate a requirement for further optimization of the octenyl succinate starch-supplemented doughs in terms of the combination of different types and levels of modified starches in order to obtain maximum bread quality.  相似文献
