The objective of this study was to characterize the impact of heat treatments on the distribution of transforming growth factor-beta (TGF-??2) between cream and skim milk and between the casein and whey fractions of skim milk. Skimming removed 45% and 62% of the TGF-??2 from raw and pasteurized milks and only 8% of the total TGF-??2 in skimmed pasteurized milk was found in whey, compared to 37% in whey from raw skimmed milk. The TGF-??2 content of whey decreased as the heat treatment of the milk increased in intensity (thermization > pasteurization > UHT sterilization). Using milk held for 1 or 2 min at temperatures ranging from 57 to 84 °C, it was shown that TGF-??2 in the whey portion decreases at temperatures above 66 °C and becomes undetectable at temperatures higher than 76 °C. Altogether, these data on the heat-induced changes in TGF-??2 content of cream, skim milk, casein and whey reveal a potentially negative impact of certain heat treatments in developing TGF-??2-enriched fractions from milk.  相似文献

Dynamic-headspace sampling with a standard-addition method was employed to quantitatively analyze aliphatic lactones in rendered fat from marbled beef and to evaluate the effect of the matrix on volatility. Further, the effects of different levels of the antioxidant α-tocopherol on lactone formation were examined. The slopes of the linear regression curves from the standard-addition method were significantly changed (P < 0.05 or 0.01) for all lactones after storage, with the exception of γ-octalactone, indicating the volatility of the longer-chain lactones were increased after storage. The concentrations of γ-lactones were increased after 7 d of storage at 2 °C (P < 0.01), and the α-tocopherol content in the meat affected the formation of γ-octalactone (P < 0.05) and γ-nonalactone (P < 0.01). The greatest increase was observed for γ-nonalactone in the lowest α-tocopherol (2.9 ppm) group: the concentration of 51.4 ppb was 11.7-fold higher than that before storage. Meanwhile, δ-tetradecalactone in the highest α-tocopherol (28.8 ppm) group showed the highest concentration for the lactones at 415.8 ppb, which was 2.6-fold higher than the concentration before storage. The effect of α-tocopherol was unclear for the δ-lactones. The results indicate that most of the γ-lactones are produced by oxidation during storage but that the other lactones are also generated by other processes as well.  相似文献

This study assessed prevalence of boar taint in backfat and lean of barrows, gilts, sows, and boars, collected from abattoirs, without knowledge of the farms of origin, in different regions in the United States. Concentrations of 5α-androstenone (liquid chromatography/mass spectroscopy) and skatole (liquid chromatography with fluorescent detection) in backfat were measured. A trained panel evaluated boar taint aroma in heated samples. Mean 5α-androstenone and skatole levels were low among barrows, gilts, and sows, whereas 55.8% of boars scored above a 1.0 μg/g threshold for 5α-androstenone concentrations and 34.2% were above a 0.2 μg/g threshold for skatole concentrations. Mean aroma scores for backfat and lean from barrows, gilts, and sows were low. In comparison, 59.2% of boars had elevated mean aroma scores from fat samples and 31.7% from lean. Importantly, boar taint aroma was detectable by the trained panel in at least some animals in each of the sex classes.  相似文献

This paper describes the influence of slaughter season on lipid content, fatty acid composition, conjugated linoleic acid (CLA) isomeric profile and nutritional value of fat in Barrosã veal from calves reared according to the specifications of the Protected Designation of Origin (PDO). Barrosã purebred calves (n = 27) were raised in a traditional production system and slaughtered in early autumn (October) and late spring (June). Barrosã-PDO veal only presented seasonal differences in the levels of some minor fatty acids and CLA isomers, as well as in the PUFA/SFA ratio. Based on the analysed grass intake indicators, it was shown that veal-PDO has similar values to pasture-fed cattle for both slaughter seasons. From a human nutrition perspective, intramuscular fat in Barrosã-PDO veal has a high nutritional value throughout the year, since CLA contents and the percentages of the c9,t11 isomer are relatively high, and the n − 6/n − 3 ratios are within the recommended values for the human diet.  相似文献

Growth and virulence of pathogenicYersinia enterocoliticawere investigated on high (pH>6.0) and normal (pH<5.8) pH pork packaged in modified atmospheres and stored at 4°C. Modified atmospheres used in the study were vacuum packaging and saturated CO2. Pork was packaged in a high gas barrier packaging film and examined over a 30-day period. Phenotypic characteristics were used to detect the presence of the virulence plasmid ofY. enterocoliticaafter exposure to the pork packaging and storage regimen. Phenotypic characteristics ofY. enterocoliticaisolates from pork loin stored at 4°C for 30 days that were studied included Congo red uptake, calcium dependence and autoagglutination in methyl red Voges–Proskauer broth and tissue culture medium. Numbers ofY. enterocoliticaon the lean surface of high pH pork slices increased approximately 2.7logcfucm−2when vacuum packaged and stored at 4°C for 30 days. Storage of inoculated normal pH pork in 100% CO2resulted inY. enterocoliticaremaining in the lag phase over the storage period. Virulence ofY. enterocoliticawas maintained in 25 to 35% of isolates following storage for 30 days at 4°C in vacuum- and CO2-packaged meats and was not affected by pH of the pork loin.  相似文献

This study was undertaken to model and predict growth of Salmonella and the dominating natural microbiota, and their interaction in ground pork. Growth of Salmonella in sterile ground pork at constant temperatures between 4 °C and 38 °C was quantified and used for developing predictive models for lag time, max. specific growth rate and max. population density. Data from literature were used to develop growth models for the natural pork microbiota. Challenge tests at temperatures from 9.4 to 24.1 °C and with Salmonella inoculated in ground pork were used for evaluation of interaction models. The existing Jameson-effect and Lotka–Volterra species interaction models and a new expanded Jameson-effect model were evaluated. F-test indicated lack-of-fit for the classical Jameson-effect model at all of the tested temperatures and at 14.1–20.2 °C this was caused by continued growth of Salmonella after the natural microbiota had reached their max. population density. The new expanded Jameson-effect model and the Lotka–Volterra model performed better and appropriately described the continued but reduced growth of Salmonella after the natural microbiota had reached their max. population density. The expanded Jameson-effect model is a new and simple species interaction model, which performed as well as the more complex Lotka–Volterra model.  相似文献

ABSTRACT: A novel nano-packing material with lower relative humidity, oxygen transmission rate and high longitudinal strength was synthesized by blending polyethylene with nano-powder (nano-Ag, kaolin, anatase TiO2, rutile TiO2), and its effect on preservation quality of strawberry fruits (Fragaria ananassa Duch. cv Fengxiang) was investigated during storage at 4 °C. Results showed that nano-packaging was able to maintain the sensory, physicochemical, and physiological quality of strawberry fruits at a higher level compared with the normal packing (polyethylene bags). After a 12-d storage, decreases in the contents of total soluble solids, titratable acidity, and ascorbic acid of nano-packing were significantly inhibited. Meanwhile, decay rate, anthocyanin, and malondialdehyde contents were decreased to 16.7%, 26.3 mg/100g, 66.3 μmol/g for nano-packing and 26.8%, 31.9 mg/100g, 75.4 μmol/g for normal packing; polyphenoloxidase (PPO) and pyrogallol peroxidase (POD) activities were significantly lower in nano-packing than the control. These data indicated that the nano-packaging might provide an attractive alternative to improve preservation quality of the strawberry fruits during extended storage. Practical Application: Nano-packing exhibited identified quality benefits applicable to the preservation of fresh strawberry. Furthermore, nano-packing has the advantages of simple processing and feasibility to be industrialized in contrast with other storages. Thus, the utilization of nano-packing will likely assist commercial producers and retailers in extending the shelf life of products over a broader range in the future.  相似文献

The aim of this study was to investigate the effects of ATP on glycogen phosphorylase activity in lamb during incubation at 4℃ in vitro. Sarcoplasmic proteins from lamb were extracted and treated with different contents of ATP to get three groups of glycogen phosphorylase with low, middle and high ATP content groups, the amount of ATP were 0.5, 2.0 and 2.5 μM per 100 μg protein, respectively. The control group was without ATP adding. The results showed that ATP promoted the phosphorylation of glycogen phosphorylase, and phosphorylation modification promoted its activity. But ATP inhibited the activity of glycogen phosphorylase and ATP preferentially participated in phosphorylation. When ATP concentration was 0.5 μM per 100 μg protein, the effect of phosphorylation modification on the activity of glycogen phosphorylase was equal to the inhibition of ATP. The effect of glycogen phosphorylase phosphorylation on its activity gradually became dominant as incubation time prolonged.  相似文献

Thirty turkeys were allocated to five groups of six birds each. One group that served as control was fed a basal diet, while the others were fed diets supplemented with olive leaves at 5 or 10 g/kg, or α-tocopheryl acetate at 150 or 300 mg/kg. Following slaughter, fillets from breast were stored at 4 °C in the dark for 12 days, and lipid oxidation and microbial growth were assessed. Results showed that the incorporation of olive leaves in turkey diets increased (P < 0.05) the oxidative stability of raw breast fillets during refrigerated storage. Dietary olive leaves at 10 g/kg were more effective (P < 0.05) in inhibiting lipid oxidation compared to 5 g/kg, but inferior to the supplementation of 300 mg α-tocopheryl acetate/kg. In turn, α-tocopheryl acetate supplementation at 150 mg/kg was equal to olive leaves at 5 g/kg but inferior to olive leaves at 10 g/kg. Total viable counts, lactic acid bacteria, Enterobacteriaceae and psychrotrophic bacteria counts were all increased (P < 0.05) in breast fillets of all groups throughout the refrigerated storage. Diet supplementation with α-tocopheryl acetate had no effect on the bacterial counts recorded in the control group, but diet supplementation with olive leaves resulted in decrease (P < 0.05) of all bacterial counts at day 2 of storage and thereafter; during this period, olive leaves at the level of 10 g/kg were more effective in inhibiting bacterial growth compared to the level of 5 g/kg.  相似文献

The effects of antibacterial treatments and several natural chemicals on the quality and safety of crab paste during storage at −20°C were investigated. All antibacterial treatments significantly reduced the bacterial total viable count (TVC) of swimming crabs, with sodium hypochlorite (NaClO) combined with ultrasonic cleaning having the best effects. Four chemicals significantly inhibited the increase in TVC, pH, and the accumulation of total volatile basic nitrogen (TVB-N) compared to controls, and their combined treatment had synergistic effects. The L 9(3 4) orthogonal experiment showed that the optimum combination was A1B3C3D2 (i.e., 0.1 g kg−1 nisin, 0.4 g kg−1 ε-polylysine hydrochloride, 0.3 g kg−1 tea polyphenol, and 0.5 g kg−1 citric acid). The TVC, TVB-N concentration, and pH in A1B3C3D3-treated samples remained far below the maximum acceptable limit for good-quality marinated, raw, aquatic animal product after 12 months of frozen storage at −20°C. Furthermore, the combined treatment (A1B3C3D3) significantly inhibited the reproduction of foodborne pathogenic bacteria and spoilage bacteria. The antibacterial treatments and natural chemicals reduced foodborne pathogenic bacteria and inhibited microbial spoilage, and therefore maintained the quality and safety of crab paste during frozen storage. Antibacterial treatments and natural chemicals could be commercially utilized to maintain the quality and safety of crab paste.  相似文献

The objectives were to determine the effects of PGF treatment on the prevalence of subclinical endometritis (SCE) and fertility of dairy cows. A total of 406 Holstein cows (167 primiparous and 239 multiparous) from 5 herds were used. Uterine lavage for diagnosis of SCE, PGF treatment, evaluation of body condition scores (BCS), and collection of blood samples for estrous cyclicity determination were performed at 21, 35, and 49 d in milk (DIM). Polymorphonuclear cells (PMN) were quantified and thresholds for diagnosing SCE were selected by receiver operating characteristics analysis. Cows classified as having SCE at 35 DIM (≥6.5% PMN) and 49 DIM (≥4.0% PMN) had increased time to pregnancy; however, cows classified as having SCE at 21 DIM (≥8.5% PMN) did not. Median days to pregnancy were delayed by 30 (151 vs. 121 d) and 40 (169 vs. 129) d for cows classified as having SCE at 35 and 49 DIM, respectively. Treatment with PGF did not affect the prevalence of SCE either at 35 (37.9 vs. 38.4%) or at 49 DIM (34.0 vs. 40.4%). Treatment with PGF did not affect time to first insemination (AI; median 76 DIM for cows treated with PGF; 79 DIM for control. Nonetheless, PGF treatment increased pregnancy to first AI in all the cows (35.5 vs. 24.1%) and hazard ratio (HR) of pregnancy in cows with BCS ≤2.5 when all of the cows were evaluated (HR = 1.5; 95% confidence interval; CI = 1.1 to 2.0) and when only cows without SCE were evaluated (HR = 1.8; 95% CI = 1.2 to 2.7). Treatment with PGF did not affect the hazard of pregnancy in cows with SCE at 49 DIM (HR = 0.9; 95% CI = 0.6 to 1.3). In these farms, treatment with PGF did not affect SCE or time to first insemination, but did increase first-service pregnancy per AI and decreased time to pregnancy in cows with low BCS.  相似文献

The present study investigated in vitro antimicrobial activity of Eryngium caeruleum essential oil (EEO) against five foodborne pathogenic bacteria based on microdilution and disk diffusion methods. Moreover, its effects on specific spoilage microorganisms, inoculated Listeria monocytogenes, and its sensory changes in minced fish were evaluated during 12 days of storage at refrigeration temperature. The results showed that Staphylococcus aureus and Escherichia coli were the most sensitive and the most resistant bacteria with a minimum inhibitory concentration of 0.125 and 1 mg/ml, as well as inhibition zones of 15.66 and 11.66 mm, respectively. Regarding the antimicrobial effect of EEO on the microbial profile and inoculated L. monocytogenes, treating with 0.4% EEO caused a significant decrease in the studied microorganisms when compared to the control group (p < 0.05). In addition, considering the sensory evaluation, the best scores were observed for the samples treated with 0.2% and 0.4% EEO. However, none of the groups obtained acceptable scores until the final day of storage except for the color attribute. In general, sensory evaluation and its correlation with microbial counting indicated that the treatment with 0.4% EEO was able to preserve the microbial quality of the minced fish at refrigeration temperature without any undesirable sensory effects.  相似文献

The objective of this work was to better understand the effect of differences in milk protein composition, and specifically, a change in β-casein to total casein in a milk-based matrix, on growth performance and metabolic and inflammatory responses using a piglet model. Three formulas were optimized for piglets, with similar metabolizable energy, total protein content, and other essential nutrients. Only the protein type and ratio varied between the treatments: the protein fraction of the control diet contained only whey proteins, whereas 2 other matrices contained a whey protein to casein ratio of 60:40, and differed in the amount of β-casein (12.5 and 17.1% of total protein). Piglets fed formula containing whey proteins and caseins, regardless of the concentration of β-casein, showed a significantly higher average daily gain, average daily feed intake, and feed efficiency compared with piglets consuming the formula with only whey protein. Consumption of the formula containing only whey protein showed higher levels of plasma glucagon-like peptide-1 and ghrelin compared with the consumption of formula containing casein and whey protein. A positive correlation was observed between postprandial time and glucagon-like peptide-1 response. The intestinal pro-inflammatory cytokine tumor necrosis factor α increased significantly in piglets fed the whey protein/casein diet compared with those fed whey protein formula. All formula-fed piglets showed a lower level of IL-6 cytokine compared with the ad libitum sow-fed piglets, regardless of composition. No significant differences in the anti-inflammatory IL-10 concentration were observed between treatment groups. Milk protein composition contributed to the regulation of piglets‘ metabolic and physiological responses, with whey protein/casein formula promoting growth performance and a different immune regulatory balance compared with a formula containing only whey protein. Results indicated no differences between treatments containing different levels of β-casein.  相似文献

The objective of the study was to evaluate the effect of prepartum and postpartum (PP) supplementation with 2 isomers of conjugated linoleic acid (CLA) on reproductive parameters and some related metabolic factors in dairy cows. High-producing, multiparous Holstein Friesian cows (n = 60) were allotted to 3 treatment groups: the CLA1 group (n = 20) was supplemented with 70 g of lipid-encapsulated CLA providing 7 g each of cis-9,trans-11 and trans-10,cis-12 CLA from d 21 (d 21) before expected calving until d 7 after artificial insemination (AI), that is, until 77 to 91 d PP; the CLA2 group (n = 20) was supplemented with the same amount of CLA beginning at calving until d 7 after AI; and the control group (n = 20) received an isocaloric, isonitrogenous, and isolipidic diet. Blood samples were taken weekly to measure glucose, insulin, insulin-like growth factor-I (IGF-I), and leptin. Liver biopsy was performed in 10 cows per group for growth hormone receptor 1A and IGF-I mRNA analyses. At d 49 to 63 PP, ovulation was synchronized with the Pre-Synch protocol followed by fixed-time AI. Milk progesterone was monitored from calving until d 35 post-AI. Cows returning to estrus following AI were inseminated. Supplementation with CLA before calving improved the recovery of plasma leptin levels in the early PP period (from the day of calving until wk 3 PP; treatment effect). Later PP (wk 5), plasma IGF-I, and leptin remained significantly higher in both CLA1 and CLA2 groups compared with control, although hepatocellular IGF-I mRNA was not different among groups. Plasma IGF-I levels remained higher in both CLA-treated groups on the day of AI. Growth hormone receptor 1A mRNA levels in hepatic tissue decreased in all groups, reaching a nadir in the first week PP. Days to first PP ovulation did not differ between groups; however, both supplemented groups conceived earlier compared with control (d 97 ± 19, d 97 ± 23, and d 113 ± 30 for CLA1, CLA2, and control, respectively). Plasma progesterone concentration was higher in both supplemented groups on d 2 to 5 following the synchronized ovulation than in controls. We concluded that CLA supplementation around calving alters PP metabolic signals as reflected by higher plasma leptin and IGF-I levels. Conjugated linoleic acid stimulated early luteal function and reduced the PP interval to conception.  相似文献

The aim of this study was to assess the microbiological quality and the ability of Listeria monocytogenes and Salmonella enterica serovar Typhimurium strains to survive during storage at 4 °C of all available brand names of brined pickles and some in-bulk ones, in the district of Athens. None of the samples could be characterized as heavily contaminated. The microbial populations detected could be due to inadequacy of packaging, regarding the ones available in-bulk and improper thermal treatment in the case of the canned ones. Moreover, the ability of both pathogens to survive for 5 days at 4 °C, in some products, has been exhibited.  相似文献

The aim of this study was to investigate the effect of a 10-day ageing at 30 ± 2 °C on the texture of dry-cured hams processed at temperatures up to 18 ± 2 °C for 12 months in relation with raw ham pH and salting time. Three pH groups (semimembranosus muscle at 24 h post-mortem: Low pH < 5.7, Medium pH = 5.7  pH  5.9, and High pH > 5.9), three salting times (6 d, 10 d and 14 d) and two ageing temperatures (18 °C and 30 °C) were investigated. Physicochemical characteristics, instrumental and sensory texture and product sliceability were evaluated on biceps femoris and semimembranosus muscles. Hams with pHSM24 < 5.7 should be avoided in order to reduce the incidence of texture problems in dry-cured ham elaboration. Texture problems are especially important in hams with a reduced salt content that are mechanically sliced (not frozen). A 10-day ageing at 30 °C could be useful for reducing the soft texture problems in dry-cured hams processed at temperatures up to 18 °C for 12 months without affecting the product flavour.  相似文献

Abstract: Improvement of harvesting procedures in aquaculture may also improve the quality and storage properties of the fish. The use of an anesthetic allows fish to be harvested with reduced stress and exhaustion, which affect fillet properties. We report here on the effects of rested harvesting on the postharvest metabolic profiles and K-values in Chinook salmon (Oncorhynchus tshawytscha) fillets stored near to the fish's acclimation temperature at 15 °C for 36 h. Fresh rested fillets were obtained by anesthesia with AQUI-S™. They had high cut surface pHs (7.63) and high concentrations of adenosine triphosphate (ATP) and creatine phosphate (3.75 and 8.73 μmol g−1 respectively), which depleted over 12 h. In contrast, fresh exhausted fillets had low cut surface pHs (6.66) and ATP and creatine phosphate were depleted. Adenosine diphosphate (ADP) and β-nicotinamide adenine dinucleotide (NAD+) concentrations also remained significantly higher during the first 12 h of storage in rested fillets. In fresh rested fillets inosine monophosphate (IMP) concentrations reached maximum after 12 h storage (4.78 μmol g−1), whereas maximum IMP concentrations occurred immediately postharvest in the exhausted fillets (6.42 μmol g−1). After 36 h storage, K-values in exhausted fillets reached 52.11% compared to 19.27% in rested fillets. Rested harvesting of Chinook salmon improved the fillets’ metabolic potential postharvest, extending metabolite depletion times, changing IMP concentrations and reducing K-values. Practical Application: This study shows that an improved metabolic potential is maintained in salmon fillets from fish harvested in a rested state (that is, with no stress and exhaustion) using an isoeugenol based anesthetic (AQUI-S™). Improved understanding of postharvest metabolic function may help to improve quality and storage properties of high value fish tissues.  相似文献
