A 3 × 3 × 2 factorial was utilized to determine if roast size (small, medium, large), cooking method (open-pan, oven bag, vacuum bag), and heating process (fresh, reheated) prevented warmed-over flavor (WOF) in beef clod roasts. Fresh vacuum bag and reheated open-pan roasts had higher cardboardy flavor scores compared with fresh open-pan roast scores. Reheated roasts in oven and vacuum bags did not differ from fresh roasts for cardboardy flavor. Brothy and fat intensity were increased in reheated roasts in oven and vacuum bags compared with fresh roasts in oven and vacuum bags. Differences in TBARS were found in the interaction of heating process and roast size with the fresh and reheated large, and reheated medium roasts having the lowest values. Based on TBARS data, to prevent WOF in reheated beef roasts, a larger size roast in a cooking bag is the most effective method.  相似文献

Beef semitendinosus roasts were cooked in a forced-air convection oven using conventional or modeled, multi-stage cooking. Conventional cooking was defined as cooking at 163°C to a core endpoint of 65°C. The model method was developed using a finite difference heat and mass transfer model optimized for a three-stage cooking process that included preheating, holding, and finishing. Model cooking resulted in lower (P<0.05) Warner–Bratlzer peak shear force values than conventional cooking (3.3 vs 4.7 kg). Collagen total unaltered fraction was lower (44 vs 55%, P=0.05) and enzyme labile fraction was higher (56 vs 45%, P<0.05) in the model-cooked samples than in conventionally cooked samples. The three-stage cooking process results in a more tender product without adversely affecting product yield.  相似文献

The effects of postmortem handling and aging time were investigated on the palatability attributes of beef at weekly intervals up to four weeks using both an experienced laboratory panel and a highly trained, flavour/texture profile panel. The presence of bone in intact meat cuts reduced both cooking times and cooking losses, irrespective of postmortem handling treatment. Bone-in (intact), vacuum packaged meat cuts were more tender initially and overall and had less perceived connective tissue and lower shear force values than conventionally aged controls and controlled atmosphere, boneless, display-ready cuts. Boneless, vacuum packaged cuts also were more tender overall than controlled atmosphere, boneless, display-ready cuts. Both bone-in (intact) and boneless, vacuum packaged cuts were rated higher in juiciness and flavour desirability than conventionally aged controls and controlled atmosphere, boneless, display-ready cuts. Bone-in (intact), vacuum packaged cuts were also perceived to have a more intense beef flavour than cuts receiving any other postmortem handling treatment. Consequently, both bone-in (intact) and boneless vacuum packaged cuts were rated higher in overall palatability than conventionally aged controls and controlled atmosphere, boneless, display-ready cuts. However, detailed flavour and texture profile analysis indicated steaks could be aged for up to four weeks without influencing the overall quality of the flavour or texture, irrespective of postmortem handling treatment. Both initial and overall tenderness improved progressively and Warner–Bratzler shear force values and the amount of perceived connective tissue decreased progressively as postmortem storage was extended. In addition, both flavour intensity and desirability increased progressively with the extension of postmortem aging. Consequently, postmortem aging appeared to be beneficial to all palatability attributes, except juiciness. Therefore, steaks can be aged for up to four weeks to obtain substantial improvements in overall texture, without adversely affecting overall flavour quality, irrespective of postmortem handling treatment.  相似文献

To investigate the impact of sampling fat location and cooking on fatty acid composition of beef steaks, 21 raw steaks from crossbred steers were dissected to obtain outer (OSC) and inner subcutaneous fat (ISC), seam fat, marbling, and lean muscle. Twenty-one cooked steaks were dissected to obtain OSC, ISC, seam fat, surface and inner muscle. Trans-vaccenic acid and c9, t11-CLA percentages were lower (< 0.05) in lean muscle than subcutaneous (s.c.) fat or marbling. Monounsaturated: saturated fatty acid ratios were lower (P < 0.05) in seam fat and marbling than s.c. fat or lean muscle. Linoleic and linolenic acid levels were highest in lean muscle and longer chain n−6 and n−3 fatty acids were only detected in lean muscle. Cooking did not change fatty acid composition dramatically except that n−6: n−3 ratio in s.c. and seam fat decreased after cooking (P < 0.05).  相似文献

The juiciness and flavour characteristics of 15 aged primal beef cuts of electrically stimulated carcasses, from three different age groups, were assessed (n=61). Cooking losses were determined and proximate analyses (moisture, fat, nitrogen and ash) were performed. Tender cuts were cooked by a dry heat method, and less tender cuts were cooked by moist heat methods. A trained panel (n=10) evaluated sensory quality characteristics including initial and sustained juiciness, aroma and flavour. Flavour intensity was the biggest discriminant between the three age groups and declined with an increase in age. Initial impression of juiciness decreased with increased age of the animal and cooking losses increased nonlinearly with age, irrespective of the muscle. In contrast sustained juiciness increased with increased age. Cuts cooked according to a dry heat cooking method were reported juicier (both initial and sustained) than those cooked by moist heat methods.  相似文献

The aim of the study was to evaluate the influence of cooking conditions (dry air and steam) and final internal temperature (75, 85, 95°C) on the physico-chemical properties of beef infraspinatus (INF) and semimembranosus (SEM) muscles as well as their tenderness and juiciness. Cooking method and temperature influenced moisture, total collagen content in cooked meat and cooking loss, whereas muscle type affected fat, total collagen content and cooking loss. Warner-Bratzler shear force values were affected by cooking method, which also influenced juiciness of roasts. Temperature affected tenderness and juiciness, whereas muscle type influenced juiciness. The most desirable tenderness had INF heated in steam and dry air to 95°C. Processing SEM in dry air to 85 and 95°C lowered the juiciness of the roasts. There were significant correlations between physico-chemical, sensorial and image attributes, however high accuracy of prediction (r(2)>0.8) was achieved only for SEM muscle.  相似文献

The aim was to investigate the effect of different cooking regimes on the cook yield and tenderness of non-injected and brine injected (0.5% residual NaCl) bovine M. triceps brachii caput longum (TB), M. supraspinatus (SP) and M. pectoralis profundus (PP). Injected and non-injected TB, SP and PP muscle sections (400 g) were (a) conventionally oven cooked to 72 °C or cooked slowly (using a Δ10 programme) to 72 °C or (b) cooked in a water bath to 72 °C or cooked in a water bath to 55 °C and held at this temperature for 2 h before heating to 72 °C. In addition, injected PP muscle sections were oven cooked to 69 °C and held at this temperature for up to 12 h. Slow cooking using a Δ10 programme had no significant (P < 0.05) effect on WBSF values of injected or non-injected SP and TB muscles but significantly (P < 0.05) decreased the WBSF values of injected and non-injected PP muscles when compared to conventional cooking. Slow cooking significantly (P < 0.05) increased % cook yield of injected PP, SP and TB muscles. Staged cooking significantly (P < 0.05) decreased the WBSF values and had no significant effect on sensory tenderness ratings of non-injected TB, SP and PP muscles and injected PP muscles. Staged cooked injected or non-injected PP, SP and TB muscles had lower % cook yield values than those cooked straight to 72 °C. Increasing the cooking time of injected PP muscles at 69 °C to 8 and 12 h decreased % cook yield, decreased WBSF values and increased sensory tenderness ratings. It also alleviated the problem of residual chewiness which was evident in PP muscles cooked using the other regimes.  相似文献

Beef meat was cooked at 373 K for 10 and 30 min to investigate the effect of the cooking conditions generally used during beef stew and curry preparation on protein digestibility. The cooked meats, along with a raw control, were digested using an in vitro digestion model to simulate gastric and small-intestinal conditions. Samples taken at different digestion times were analyzed using SDS-PAGE, RP-HPLC, ninhydrin assays for amino N and transmission electron microscopy. Simulated gastric conditions quickly led to the loss of basic sarcomere structure in raw meat myofibrils whereas the sarcomere structure of the compact cooked meat myofibrils remained intact after 30 min of gastric digestion. Prolonged cooking of meat (30 min) resulted in incomplete digestion of small MW (<10 kDa) peptides, as observed from SDS-PAGE. This agreed with the amount of ninhydrin-reactive amino N released during digestion, which decreased with an increase in cooking time. The RP-HPLC peak areas of the major identified amino acids (tryptophan, tyrosine and phenylalanine) also decreased with an increase in cooking time. This suggested the formation of “limit peptides” during prolonged cooking of beef, which were not further broken down into free amino acids by digestive enzymes and therefore might not be bioavailable.  相似文献

Beef forequarter muscles biceps brachii (BRB), brachialis (BRA), complexus (COM), splenius (SPL), infraspinatus (INF), teres major (TER), rhomboideus (RHO), subscapularis (SUB), supraspinatus (SUP), triceps brachii long-head (TRB) and triceps brachii lateral-head (TRI) were obtained from Mexican beef carcasses originated from Bos indicus (Bi, n=10) or Bos taurus (Bt, n=10) young bulls. Muscles were analyzed for WBSF, cooking loss, and moisture and fat contents. INF had the lowest WBSF (37.23N) and cooking loss (31.78%) of all. RHO exhibited the lowest moisture (72.62%) and highest fat content (5.23%) of all. Bi genotype exhibited higher WBSF (53.78, 48.69N), higher cook loss (36.27, 34.32%), higher fat content (2.93, 2.35%), and lower moisture content (73.70, 75.07%) than Bt. Further research is needed to estimate the actual consumer acceptance of beef forequarter muscles and their marketing potential as individual cuts in the Mexican market.  相似文献

Dietary polyamines putrescine (PUT), spermidine (SPD) and spermine (SPM) participate in numerous human physiological processes, including tumour growth. Reliable information on their contents in foods is thus needed. Data for processed beef are very limited. Nine experiments with beef loin (longissimus lumborum) were, therefore, carried out. Loin cuts were stored at −18 °C for 178 days or beef was stored aerobically, vacuum-packaged (VP) and packaged in a modified atmosphere (MA; 70% N2 and 30% CO2, v/v) at +2 °C for 9, 21 and 21 days, respectively. The effects of three usual cooking treatments were also tested. Polyamines were determined after extraction with perchloric acid as dansyl derivatives using an HPLC method. Only SPM was detected at initial levels of 23.5–27.5 mg kg−1, PUT and SPD contents were below the detection limits of 1.2 and 1.7 mg kg−1, respectively. SPM content increased during the initial weeks of frozen storage and then gradually decreased to about 70% of the initial values at the end of the storage period (P < 0.05). No apparent SPM decrease was observed during aerobic storage for 9 days, while in VP and MA variants the losses were about 20% of the initial values on day 21 (P < 0.05). Slightly higher mean SPM losses were observed during boiling and stewing with and without added water. The differences among the cooking treatments were not significant. The aim of this study was to assess the effects of power ultrasound‐assisted (0, 400, 600, 800 and 1000 W, frequency of 20 kHz) cooking (80, 100, 120 min) on spiced beef. The results showed that power ultrasound could significantly increase the salt content (< 0.05). For water holding capacity, the ultrasonic treatment could significantly reduce the pressure loss and free water content while improving the immobilised water content (< 0.05). And ultrasonic treatment improved hardness compared with control (< 0.05). However, the effects on the springiness, the chewiness and the resilience of the spiced beef were not significant (> 0.05). As for microstructure, the myofibrils of beef were ruptured by ultrasonic treatment along with the Z‐lines leading to the muscle swelling. The results indicated that the application of ultrasound during cooking could effectively promote the penetration of salt, improve the water holding capacity and ameliorate the tenderness of spiced beef.  相似文献

Changes in chemical composition, with special reference to fatty acids, as affected by cooking, were studied in low-salt (0.5%)/low-fat patties (10%) with added Wakame (3%) and partial or total replacement of pork backfat with olive oil-in-water emulsion. The addition of Wakame and olive oil-in-water emulsion improved (P < 0.05) the binding properties and the cooking retention values of moisture, fat, fatty acids and ash, which were close to 100%. Partial and total replacement of animal fat with olive oil-in-water emulsion reduced (P < 0.05) saturated fatty acids (SFAs), while total replacement also reduced (P < 0.05) polyunsaturated fatty acid (PUFAs) contents. The fatty acid concentration in cooked patties was affected by product formulation. Unlike the case of all animal fat patties, when olive oil was added the cooking process increased (P < 0.05) SFAs, monounsaturated fatty acids (MUFAs) and PUFA n-3 (linolenic acid) and n-6 (linoleic acid) contents. Cooked formulated patties with seaweed and partial or total replacement of pork backfat by oil-in-water emulsion and with seaweed added were less calorie-dense and had lower SFAs levels, while samples with olive oil had higher MUFAs levels.  相似文献

The objective was to assess different beef muscles for use as stir-fry. Inside round, outside round, eye of round, knuckle, chuck clod, and chuck tender were obtained from six beef carcasses. Different slice thickness (2, 4, or 8 mm) and muscle fiber direction were evaluated. Slices were cooked from frozen on a flat grill and then cut into strips for shear and sensory testing. While meat cut had little effect on shear values of these thin slices, increasing slice thickness greatly affected tenderness and cook yield. The sensory panel found that strips from the knuckle were more tender and juicy, with less connective tissue and with a better flavor than that of slices from the eye of round and outside round. Increasing slice thickness resulted in detection of greater amounts of connective tissue but did not result in a significant difference in the perception of tenderness. Fiber direction was also of importance. Slices removed perpendicular to the fiber direction had shear values up to 50% lower than slices removed parallel.  相似文献

The effect on cooking time and weight loss of the thickness of minced fat located at the surface or centre of a cylinder of lean M. semitendinosus was examined. All joints were 160 mm longx80 mm diameter and cooked in a natural convection oven at 175°C. Joints with minced fat at the surface cooked more quickly than those with an equal thickness or volume of fat at the centre. Percentage weight losses from the joints with surface fat were greater than those from joints with the same thickness of fat at the centre but the losses were the same for joints with equal volumes of fat. Cooking time decreased and weight loss increased with increasing amounts of minced fat. For comparison, cylinders of unminced fat were also heated; these required much longer to reach 74°C and suffered substantially less weight loss than the cylinders of minced fat. This showed the need for further work to examine the effect of degree of comminution on the heat penetration and weight losses from fat.  相似文献

In this study, a cheese analogue was produced based on UF white‐brined cheese by replacing the dairy fat with sunflower oil and cooking at different temperatures and times. Hardness, adhesiveness, meltability and oiling‐off were used to evaluate the suitability of the final product. Partial replacement of dairy cream with sunflower oil led to an increase in the adhesiveness, oiling‐off and spreadability while decreasing the hardness of the cheese. Optimum operating conditions were found to be 85 °C for the cooking temperature, 14.12 min for the cooking time and 27.14% w/w for the sunflower oil content.  相似文献

Conventional cooking tends to be slow and the surface of the food always receives a much more severe heating treatment than the rest of the food. Ohmic heating has the potential to be much faster and produces even more cooking. In this work cylindrical ground beef samples having different initial fat contents (2%, 9% and 15%) were cooked ohmically (20, 30 and 40 V/cm) and conventionally. Ohmic cooking was faster than the conventional cooking (p < 0.05). Ohmically cooked samples were firmer than those conventionally cooked but yield and fat retention was similar. However, the reduction in volume during cooking was significantly smaller from 5.36% to 6.97% in ohmic cooking than the conventional system which was measured from 26.01 to 31.59. The voltage gradient applied during ohmic cooking was not related to the quality of the cooked meat. These results show that ohmic cooking could be a fast-alternative method for meat products.  相似文献

Effects of cooking method, holding temperature, holding time, and reheating on Warner-Bratzler peak shear force (WBPSF); Warner-Bratzler myofibrillar force (WBM-F), Warner-Bratzler connective tissue force (WBC-F) and cooking loss were investigated. Two muscles (longissimus lumborum and biceps femoris) from USDA Choice beef carcasses were used. Water-bath cooking resulted in higher WBPSF, WBM-F, and WBC-F than belt-grill cooking for longissimus lumborum. The biceps femoris muscle tenderness improved more with holding time after cooking on a belt than the longissimus lumborum due to its higher collagen content. Cooking biceps femoris steaks to 54?°C by a belt grill and holding them at 57?°C in a water bath for 15 min and subsequent reheating to 70?°C (best treatment combination) produced a 25% reduction in WBPSF, a 37% reduction in WBC-F, and a 12% reduction in WBM-F as compared to the control (cooking steaks directly to 70?°C without holding). Water-bath cooking resulted in lower WBPSF than belt-grill cooking for biceps femoris without any holding time, but further tenderization did not occur with holding. Water-bath cooking resulted in higher cooking losses than belt-grill cooking for both muscles.  相似文献

为研究排酸时间与熟制程度对牛肉挥发性风味成分的影响,选择排酸过程中(3,5,7d)的西门塔尔牛背最长肌分别制作五成熟、七成熟和全熟牛排,采用顶空固相微萃取—气相色谱—质谱联用(HS-SPME-GC-MS)法对不同排酸时间下各熟制程度牛肉进行挥发性风味物质的定性、定量与主成分分析,探究利于风味物质形成的排酸时间与熟制程度。结果表明:各牛肉样品中共鉴定出50种挥发性风味化合物,其中酯类化合物相对含量与排酸时间呈正相关,与熟制程度呈负相关,烃类、酮类化合物相对含量分别与排酸时间、熟制程度对应呈负相关,而醛类化合物相对含量与排酸时间和熟制程度均呈正相关,呋喃类化合物仅在排酸7d的牛肉中有检出。主成分分析(PCA)与综合因子评分结果显示排酸7d的五成熟牛肉中的挥发性风味化合物综合评分远高于其它样品组,该条件最利于牛肉中挥发性风味物质的形成。  相似文献

Longissimus muscle samples from 31 Angus-cross heifers finished on either a high-concentrate feedlot diet or pasture were used to evaluate the effects of cooking (71°C) on the concentration and forms of iron in the meat, and also on concentrations of the bioactive compounds taurine, carnosine, coenzyme Q(10), creatine and creatinine. For a sub-sample of 15 the effects of pepsin and pancreatin digestion were assessed. For iron, cooking resulted in some overall loss together with a major change from soluble haem and non-haem iron to the insoluble forms, but solubility was regained to a significant extent following digestion. Total haem iron percentage, however, decreased at each step from an initial 88% to a final 61% of total iron. For the bioactive compounds, cooking led to a reduction in taurine, carnosine, coenzyme Q(10), and creatine. The effects of digestion on the bioactive compounds varied. No clear differences were shown in the way in which beef from pasture-finished and feedlot-finished cattle responded to cooking and digestion.  相似文献
