AbstractBroccoli is considered one of the attractive raw materials for dehydrated vegetables owing to its high nutritional value. However, information about how drying methods affect the physicochemical and nutritional properties of broccoli is limited. In this study, broccoli pieces were subjected to freeze drying (FD), hot air drying (HAD), microwave vacuum drying (MVD), vacuum drying (VD), MVD combined with HAD (MVD?+?HAD), and MVD combined with VD (MVD?+?VD). Quality attributes of dehydrated broccolis were contrasted in terms of color, texture, volume shrinkage, nutritional components, antioxidant activity, and rehydration capacity. Results demonstrated that FD better preserved the nutrients while HAD displayed the worst effect. The combination of MVD?+?HAD and MVD?+?VD resulted in higher retention of nutritional compositions, better antioxidant activity, and lower energy consumption than that of HAD. Obesity increased in recent years at different rates among socioeconomic levels (SEL). The purpose of this study was to analyze the association between SEL and nutritional status in schoolchildren attending elementary schools in the six counties that show the highest prevalence of obesity in Santiago, Chile. Within the counties schools were stratified according to obesity and children were randomly selected from each school. Anthropometric assessment was performed in children whilst a socio-demographic survey and a 24 hour recall of food intake were applied to their mothers. We classified the sample according to SEL in two categories (higher and a lower vulnerability). The prevalence of excess weight was 51.1% (24.7% overweight and 26,4% obese) without significant differences among SEL. The most vulnerable group had lower values of body mass index, skinfold thickness, arm circumference and food intake however, these differences were not statistically significant. At the same time, these children were physically more active, showing higher use of community places to play [OR 1.91; 95% CI 1.05-3.48] and walked larger distances from houses to schools OR 6.6; CI 2.5-16.7). Thus, albeit non significant association was detected between SEL and anthropometric indicators nor with food intake, the highest vulnerable group showed a tendency to have lower values and more physical activity. 相似文献

Background
Carbohydrates (CHOs), branched-chain amino acids (BCAAs) and caffeine are known to improve running performance. However, no information is available on the effects of a combination of these ingredients on performance and neuromuscular function during running.Methods
The present study was designed as a randomized double-blind cross-over placebo-controlled trial. Thirteen trained adult males completed two protocols, each including two conditions: placebo (PLA) and Sports Drink (SPD: CHOs 68.6 g.L-1, BCAAs 4 g.L-1, caffeine 75 mg.L-1). Protocol 1 consisted of an all-out 2 h treadmill run. Total distance run and glycemia were measured. In protocol 2, subjects exercised for 2 h at 95% of their lowest average speeds recorded during protocol 1 (whatever the condition). Glycemia, blood lactate concentration and neuromuscular function were determined immediately before and after exercise. Oxygen consumption ( ), heart rate (HR) and rate of perceived exertion (RPE) were recorded during the exercise. Total fluids ingested were 2 L whatever the protocols and conditions.Results
Compared to PLA, ingestion of SPD increased running performance (p = 0.01), maintained glycemia and attenuated central fatigue (p = 0.04), an index of peripheral fatigue (p = 0.04) and RPE (p = 0.006). Maximal voluntary contraction, , and HR did not differ between the two conditions.Conclusions
This study showed that ingestion of a combination of CHOs, BCAAs and caffeine increased performance by about 2% during a 2-h treadmill run. The results of neuromuscular function were contrasted: no clear cut effects of SPD were observed.Trial registration

Two composts were tested as mulching materials in a vineyard: one was a sewage sludge and bark compost with a low heavy metal content, the other was a municipal solid waste compost with a higher concentration of metals. Both compost mulches increased organic matter content, available phosphorous and exchangeable potassium of soil and improved the porosity and water retention capacity of the soil. They also reduced soil temperature fluctuations, reduced evaporation of soil water, and influenced the levels of some nutrients measured in leaf samples. The data obtained show that the nutrients uptake was more influenced by the physical conditions of the soil (temperature, moisture) than by the availability of nutrients in the soil. The sewage sludge and bark compost did not cause any significant increase in heavy metal levels in soil and plants. In contrast, the municipal solid waste compost led to a notable accumulation of metals in the soil, in the vegetation and in the musts. Both the compost mulch materials had considerable advantages for the soil management on the grapevine rows, by reducing chemical weed control and allowing for the substitution of chemical fertilisers with no loss in vigour, yield or quality of musts. 相似文献

Background
Reports of the use of psyllium, largely in hypercholesterolemic men, have suggested that it lowers serum cholesterol as a result of the binding of bile acids in the intestinal lumen. Widespread advertisements have claimed an association between the use of soluble fibre from psyllium seed husk and a reduced risk of coronary heart disease. Given the purported mechanism of cholesterol-lowering by psyllium, we hypothesized that there would be a greater effect when psyllium is taken with breakfast than when taken at bedtime. Background
Hormones, which influence satiety and hunger, play a significant role in body energy balance regulation. Ghrelin is a peptide that plays an important role in short-term appetite regulation, whereas leptin is a factor that controls long-term energy balance and is considered as a satiety hormone. The aim of this study was to evaluate the leptin/ghrelin ratio in a fasting state and after the intake of meals with varying macronutrient contents and to assess the possible differences between normal body weight and overweight/obese men.Methods
We examined 46 healthy adult men (23 with normal body weight and 23 overweight/obese) aged 21–58, who were divided into two groups. In the crossover study, participants received isocaloric (450?kcal) meals with different macronutrient contents: men from the first group received high-carbohydrate (HC) and normo-carbohydrate (NC) meals, and in the second group, participants received high-carbohydrate and high-fat (HF) meals. The ratio of leptin/ghrelin levels was calculated from leptin and total ghrelin serum concentrations in a fasting state and 30, 60, 120, 180 and 240?min after meal intake. One-way ANOVA and Wilcoxon signed-rank tests were carried out. The normality of the variable distribution was checked with the Shapiro–Wilk test, the homogeneity of variances was verified with the Levene test, and the false discovery rate p-value adjustment method was used.Results
The leptin/ghrelin ratio was significantly higher in overweight/obese men than individuals with normal body weight in a fasting state, as well as postprandially. We observed trends towards a higher leptin/ghrelin ratio values from the 60?min after HC-meal intake compared to the NC- and HF-meals in normal body weight participants, while in overweight/obese men, we did not note any significant differences dependent on the meal type.Conclusions
We have observed a significantly different postprandial leptin/ghrelin ratio in normal body weight and overweight/obese men, and our results suggest that in men with normal body weight, a greater feeling of satiety may occur after high-carbohydrate meal intake, which was not noted in the overweight/obese individuals.11.

Background
Facemasks are increasingly worn during air pollution episodes in China, but their protective effects are poorly understood. We aimed to evaluate the filtration efficiencies of N95 facemasks and the cardiopulmonary benefits associated with wearing facemasks during episodes of pollution.Results
We measured the filtration efficiencies of particles in ambient air of six types of N95 facemasks with a manikin headform. The most effective one was used in a double-blind, randomized, controlled crossover study, involving 15 healthy young adults, conducted during 2 days of severe pollution in Beijing, China. Subjects were asked to walk along a busy-traffic road for 2 h wearing authentic or sham N95 facemasks. Clinical tests were performed four times to determine changes in the levels of biomarkers of airway inflammation, endothelial dysfunction, and oxidative stress within 24 h after exposure.The facemasks removed 48–75% of number concentrations of ambient air particles between 5.6 and 560 nm in diameter. After adjustments for multiple comparison, the exhaled nitric oxide level and the levels of interleukin-1α, interleukin-1β, and interleukin-6 in exhaled breath condensate increased significantly in all subjects; however, the increases in those wearing authentic facemasks were statistically significantly lower than in the sham group. No significant between-group difference was evident in the urinary creatinine-corrected malondialdehyde level. In arterial stiffness indicators, the ejection duration of subjects wearing authentic facemasks was higher after exposure compared to the sham group; no significant between-group difference was found in augmentation pressure or the augmentation index.Conclusions
In young healthy adults, N95 facemasks partially reduced acute particle-associated airway inflammation, but neither systemic oxidative stress nor endothelial dysfunction improved significantly. The clinical significance of these findings long-term remains to be determined.Trial registration

Serum TAG (P=0.016), plasma FA (P<0.001) and lipid peroxidation products in plasma (P<0.001) and VLDL (P=0.007) increased, reaching a peak at 4–6 h, and returning to baseline values at 24 h after oil ingestion. The opposite changes
were observed in plasma glutathione peroxidase (P=0.001) and glutathione reductase (GR) (P=0.042). No changes in LDL lipid peroxidation or resistance to oxidation were observed postprandially. At 24 h, plasma oleic
acid remained increased (P<0.05) and resistance of LDL to oxidation improved (P<0.05). Background
Dietary creatine has been largely used as an ergogenic aid to improve strength and athletic performance, especially in short-term and high energy-demanding anaerobic exercise. Recent findings have also suggested a possible antioxidant role for creatine in muscle tissues during exercise. Here we evaluate the effects of a 1-week regimen of 20?g/day creatine supplementation on the plasma antioxidant capacity, free and heme iron content, and uric acid and lipid peroxidation levels of young subjects (23.1?±?5.8?years old) immediately before and 5 and 60?min after the exhaustive Wingate test.Results
Maximum anaerobic power was improved by acute creatine supplementation (10.5?%), but it was accompanied by a 2.4-fold increase in pro-oxidant free iron ions in the plasma. However, potential iron-driven oxidative insult was adequately counterbalanced by proportional increases in antioxidant ferric-reducing activity in plasma (FRAP), leading to unaltered lipid peroxidation levels. Interestingly, the FRAP index, found to be highly dependent on uric acid levels in the placebo group, also had an additional contribution from other circulating metabolites in creatine-fed subjects.Conclusions
Our data suggest that acute creatine supplementation improved the anaerobic performance of athletes and limited short-term oxidative insults, since creatine-induced iron overload was efficiently circumvented by acquired FRAP capacity attributed to: overproduction of uric acid in energy-depleted muscles (as an end-product of purine metabolism and a powerful iron chelating agent) and inherent antioxidant activity of creatine. 相似文献19.
