通过对不同条件下草莓色素特征吸光值变化的研究,探讨其在不同温度、pH、光照、氧化剂、还原剂、食品添加剂、金属离子等环境下的稳定性.试验结果表明,色素在pH值1~4,温度60℃以内比较稳定;光照能加快色素降解;Na+、Ca2+、Mg2+对色素有一定的增色护色作用;Fe3+、Al3+、Cu2+对其有不良影响;Vc、NaSO3对色素有严重的破坏作用,食品添加剂对色素无影响.因此,草莓色素作为食用色素具有很好的开发价值.  相似文献

红曲色素是一种天然的安全的食用色素,在食品行业应用广泛。主要研究了光照、温度、pH、金属离子(Cu2+、Ca2+、Mg2+、K+和Na+)以及食品添加剂(酸度调节剂、甜味剂、防腐剂和抗氧化剂)对红曲色素TR稳定性的影响。结果表明,红曲色素TR溶液的光稳定性较差,在室外光照20h其色价保存率仅为49.9%,室内光照和避光对溶液色价影响不明显;溶液具有较好的热稳定性,在120℃下加热1h其色价保存率为82%以上;pH在3~11范围溶液稳定性好,无沉淀产生并且色泽明亮;Fe2+影响能使溶液有少量沉淀产生,其他金属离子影响小;食品添加剂(酸度调节剂、甜味剂、防腐剂和抗氧化剂)对溶液稳定性影响小。  相似文献

药用植物内生菌有产生活性物质的潜力,是天然功能色素的潜在来源之一。文章从温度、p H、光照、金属离子、氧化剂与还原剂、食品添加剂等方面探究铁皮石斛内生菌H1B1所产红色素的稳定性。结果表明,该菌所产红色素对温度、自然光较为稳定,对紫外线敏感;该色素在p H≥7环境条件下色素稳定性高且有增色效应;金属离子中,K~+、Mn~(2+)、Mg~(2+)、Co~(2+)、Al~(3+)、Cu~(2+)、Na~+、Zn~(2+)对该色素有护色或增色作用,但Fe~(3+)和Ca~(2+)对色素有明显的不良影响,容易产生沉淀;Na Cl和葡萄糖、蔗糖、麦芽糖等食品添加剂和配料能较好地保持红色素色价的稳定性,且10%~15%的葡萄糖对其有明显的增色效应。  相似文献

本文以中药朱砂七为原料,通过提取溶剂的选择和料液比、提取温度和提取时间的单因素分析,选取不同因素水平进行正交实验,以紫外—可见分光光度计法测定吸光度,以吸光度值为考察指标进行分析.同时研究了光照、温度、pH、氧化剂和还原剂、食品添加剂和金属离子对朱砂七色素的稳定性影响.结果表明:朱砂七色素最佳提取工艺为:70%乙醇为浸提溶剂,料液比1:6,50℃时浸提90min;朱砂七色素光稳定性、热稳定性和耐氧化性较好,低浓度的还原剂溶液中色素的耐还原性较好,在弱酸至中强度碱(6 <pH<10)条件下稳定,对葡萄糖和柠檬酸等食品添加剂稳定,碳酸氢钠有不良影响,金属离子Na+、Zn2+、Mg2+、K+对色素几乎没有影响,Ca2、Fe3、Cu2+对色素有较大影响.  相似文献

对油葵籽壳红色素的提取条件以及温度、pH、光照、常用食品添加剂、金属离子对油葵籽壳红色素稳定性的影响进行了系统研究。结果表明,料液比1:20(g/mL)、50℃恒温、30%乙醇(pH2.0)、浸提60min,采用三次浸提,提取得率可达96.76%。色素在pH值2~6,温度65℃以内比较稳定;光照能加快色素降解;K+和Ca2+对该色素无不良影响;而Cu2+、Al3+、Fe3+、Sn2+和Ph2+对该色素有较大影响;常用食品添加剂对色素稳定性无影响。因此,油葵籽壳红色素作为食用色素具有很好的开发价值。  相似文献

对冰糖橙皮色素的提取条件以及温度、pH、光照、氧化剂、还原剂、金属离子等对冰糖橙皮色素稳定性的影响进行了系统研究.结果表明,料液比1∶8(g/mL)、60℃恒温、95%乙醇(pH5.0)浸提6 h,色素提取率达35.76%.色素在pH值2~8,温度60℃以内比较稳定;光照能加快色素降解;K 、Na 、Mg2 、Zn2 对色素有一定的增色护色作用;而Cu2 对色素色泽无影响,Ca2 对其有不良影响,色素对氧化剂和还原剂耐受力较强,食品添加剂对色素无影响.因此,冰糖橙皮色素作为食用色素具有很好的开发价值.  相似文献

以猪血为实验材料,制备亚硝基血红蛋白色素,并确定其最佳合成参数。从光、热、pH值、氧化介质、还原介质、金属离子、防腐剂等方面对色素的稳定性进行了研究。结果表明:该色素耐光性较弱;但具有一定的耐热性;抗H2O2的能力较差,NaHSO3对它起护色作用;防腐剂苯甲酸钠及大多数金属离子对色素稳定性无不良影响,但Fe3+、Fe2+、Zn2+、Pb2+、Sn2+对色素具有不利的影响。  相似文献

采用溶剂浸提法提取紫色马铃薯花色苷,研究pH 值、温度、光照对色素的影响,探讨在金属离子、氧化还原剂、防腐剂、食盐、葡萄糖等存在的条件下花色苷的稳定性。结果表明:紫色马铃薯花色苷在可见光范围内的最大吸收波长为536nm,为水溶性色素;70℃以内比较稳定;pH 值对色素有显著影响,在酸性条件下较为稳定;金属离子Al3+、Zn2+、Na+、Ca2+ 对色素色泽无不良影响,而Sn2+、Fe3+ 影响显著;色素耐氧化性、耐还原性差,且光照能加速色素降解;防腐剂、食盐及葡萄糖等常用添加剂对色素无影响。  相似文献

以叶子花苞叶为原料提取红色素,经正交试验选择最佳提取条件,并对光、温度、pH值、氧化还原介质、6种金属离子和4种食品添加剂对色素稳定性的影响进行了研究。结果表明,叶子花红色素为水溶性花青素的花色苷,在可见光区的最大吸收波长λmax=541nm。最佳提取条件为:以5%乙醇为提取剂,配料比为1:15,25℃下保温浸提3次,每次1h。该色素在70℃以下稳定性较好,对光的耐受性较差;色素在酸性条件下稳定,耐还原性强,但耐氧化性较差。6种金属离子中,Cu2+、Zn2+、Fe3+对色素有明显的破坏作用,而Mn2+、Mg2+、Al3+对色素稳定性较好,并有不同程度的护色作用。葡萄糖、NaCl、VC、苯甲酸钠对色素无不良影响。  相似文献

通过时不同条件下蓝莓花色素苷特征吸光值变化的研究,探讨了其在不同pH值、温度、光照、氧化剂、还原剂、食品添加剂、金属离子等环境条件下的稳定性.试验结果表明:蓝莓花色素苷对酸碱度、温度、光照、氧化剂及还原剂非常敏感,对食品添加剂的稳定性较好,高浓度的葡萄糖、蔗糖、防腐剂对蓝莓花色素苷有较明显的护色作用.金属离子中Na 、K 、Zn2 、Mg2 、Ca2 、Cu2 、Fe3 对该花色素苷有不同程度的护色效果,Al3 对其稳定性有明显的破坏作用.  相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties.  相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials.  相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance.  相似文献
