The aim of this study was to estimate the dietary intake of arsenic (As) by children and adults from Jinhu area of China. A duplicate diet approach was used to collect diet samples in November and December 2007. The As content was measured by hydride generation atomic fluorescence spectrometry. The As intakes (median) for different group were: children: 0.6 µg kg?1 bw day?1 or 6.7 µg kg?1 bw week?1; adults: 0.5 µg kg ?1 bw day?1 or 3.8 µg kg ?1 bw week?1, none of which exceeded the provisional tolerable weekly intake (PTWI) of 15 µg kg ?1 bw week?1 for As proposed by the World Health Organization (WHO). The median and maximum of the children group amounted to 44.7% and 125.3% of the PTWI; the values for adults were 25.3% and 118.7%, respectively. There were 3.3% of children whose weekly As intake exceeded the PTWI, and there were 6.7% of adults whose weekly As intake exceeded the PTWI. It is concluded that dietary As intake was safe for most people in Jinhu area, but the high dietary As intake for a minority of people in this area deserves attention.  相似文献

A deterministic exposure assessment using the Nusser method that adjusts for within-subject variation and for nuisance effects among Finnish children and adults was carried out. The food consumption data covered 2038 adults (25–74 years old) and 1514 children of 1, 3 and 6 years of age, with the data on foods’ acrylamide content obtained from published Finnish studies. We found that acrylamide exposure was highest among the 3-year-old children (median?=?1.01?µg?kg?1?bw?day?1, 97.5th percentile?=?1.95?µg?kg?1?bw?day?1) and lowest among 65–74-year-old women (median?=?0.31?µg?kg?1?bw?day?1, 97.5th percentile?=?0.69?µg?kg?1?bw?day?1). Among adults, the most important source of acrylamide exposure was coffee, followed by casseroles rich in starch, then rye bread. Among children, the most important sources were casseroles rich in starch and then biscuits and, finally, chips and other fried potatoes. Replacing lightly roasted coffee with dark-roasted, swapping sweet wheat buns for biscuits, and decreasing the acrylamide content of starch-based casseroles and rye bread by 50% would result in a 50% decrease in acrylamide exposure in adults. Among children, substituting boiled potatoes for chips and other friend potatoes and replacing biscuits with sweet wheat buns while lowering the acrylamide content of starch-based casseroles by 50% would lead to acrylamide exposure that is only half of the original exposure. In conclusions, dietary modifications could have a large impact in decreasing acrylamide exposure.  相似文献

Potato crisps are one of the food commodities that contribute most to overall dietary human exposure of acrylamide. This investigation has estimated the dietary exposure to acrylamide form potato crisps in the Spanish population. Sampling of potato crisps (n = 36) from 16 different producers were carried out in March 2008. An average level of 740 µg kg?1 (ranging from 81 to 2622 µg kg?1; minimum to maximum) and a median of 592 µg kg?1 were obtained. Acrylamide levels in marketed potato crisps have been significantly reduced (nearly to 50%) compared with a previous sampling performed 4 years earlier. The observed signal value (90th percentile) was 1377 µg kg?1 with 86% of the samples with acrylamide levels lower than 1000 µg kg?1. Dietary exposure to acrylamide from potato crisp consumption in the total Spanish population was estimated to be 0.042 µg kg?1 body weight day?1 by using a deterministic approach based on the National consumption database. In a second study, dietary exposure (based on a 3-day food record) was determined to be 0.053 µg kg?1 body weight day?1 for the adult population (17–60 years) and 0.142 µg kg?1 body weight day?1 for children (7–12 years). The contribution of potato crisps to the estimated dietary acrylamide exposure of the Spanish population is moderate as compared with other European Member States.  相似文献

This paper presents an integrated approach to estimate the exposure of the Portuguese population to phthalates as a contaminant originating from paperboard packaging. The approach combined data of migrant concentration in the foods resulting from a stochastic simulation with consumption data of food packaged in paperboard. The results from the exposure model were validated with experimental values actually found in the food. A short surveillance exercise was conducted with samples collection from market shelves to identify and quantify the phthalates present in both the packages and the food. The distribution of values for the di-butyl phthalate concentration in the packages was used as the input of the initial concentration in the Weibull model to estimate the concentration of this phthalate in the foods. This distribution of occurrence data was then combined with the packaging usage data in a probabilistic simulation with a Monte Carlo sampling method. Exposure values ranged between zero and 8.95 µg day?1 kgbw, a value close to the tolerable daily intake established by the European Food Safety Authority (EFSA)–10 µg day?1 kgbw. However, the 97.5th percentile and the average were 1.82 and 0.44 day?1 kgbw, respectively, indicating that further refinement of the estimates is not necessary. Other phthalates were also detected in the packaging samples: di-isobutyl phthalate and di-ethylhexyl phthalate. The latter was present in all packaging samples collected and was detected in a few food samples at values requiring further investigation.  相似文献

Dietary exposure of the Valencian region population to lead, cadmium, inorganic arsenic (iAs), chromium, copper, tin and methylmercury (meHg) was assessed in a total diet study carried out in the region of Valencia in 2010–11. A total of 8100 food samples were collected and analysed. Occurrence data were combined with consumption data to estimate dietary exposure in adults (> 15 years of age) and young children (6–15 years of age). The estimated intake was calculated by a probabilistic approach. Average intake levels (optimistic scenario) for lead, iAs, chromium and tin were 0.21, 0.08, 1.79 and 1.87 µg kg?1 bw day?1 respectively; for Cd and meHg average intake levels were 0.77 and 0.54 µg kg1 bw week?1, respectively, and for Cu, 1.60 mg day?1. In terms of risk characterisation, the results showed that 2.84% of the adult population may exceed the BMDL10 (benchmark dose lower confidence limit) established for Pb, which is linked to renal effects; whereas 28.01% of the young children population may exceed the BMDL01 related to neurodevelopment effects. In addition, 8.47% of the adult population and 12.32% of young children exceeded the meHg tolerable weekly intake (TWI).  相似文献

The paper’s main purpose is to estimate the dietary exposure to lead for the inhabitants of Jiangsu province, China. Lead concentration data were obtained from the national food contamination monitoring programme during 2007–10. Food samples (n = 2077) were collected from 23 food categories in Jiangsu province. Consumption data were derived from Chinese national nutrition and health survey in 2002, which included 3938 inhabitants from 1451 households in Jiangsu province. Concentration data were combined with consumption data to estimate the dietary intake for the inhabitants of 2–6, 7–17 and 18–80 years, respectively. The β-binomial–normal (BBN) model was used to estimate the long-term intake for the population in Jiangsu province. The distribution of individual margin of exposure (IMoE) was introduced to assess the health effect. Uncertainty of IMoE was quantified by Monte Carlo and bootstrap methods. The mean levels of dietary exposure to lead were estimated at 3.019 µg kg?1 bw day?1 for children aged 2–6 years, 2.104 µg kg?1 bw day?1 for teenagers aged 7–17 years, and 1.601 µg kg?1 bw day?1 for adults aged 18–80 years. The mean intakes for the urban and rural populations were 1.494 and 1.822 µg kg?1 bw day?1, respectively. From the 25th to 99.9th percentiles, IMoE was 0.125–2.057 for 2–6 years and 0.473–7.998 for 18–80 years, respectively. The distribution of IMoE could indicate a public health concern on lead for the Chinese population in Jiangsu. Control measures should be taken to reduce lead exposure in Jiangsu province.  相似文献

Estimating the risk associated with dietary intake of heavy metals by consumers is a vital and integral part of regulatory processes. The assessment of exposure to mercury shown in this paper has been performed by means of a study on the whole diet. Total mercury (Hg) levels were determined by cold vapour atomic absorption spectrometry (AAS) in 420 samples of regularly consumed food and drink. The total Hg concentrations measured in the different groups of food ranged from non-detectable to 119 µg kg?1 w/w. The fish group had the highest concentrations of total Hg. All groups of food with regulated Hg content showed levels that were lower than the legally set values. The food consumption data used in the analysis were taken from the latest nutritional survey made in the Canary Islands, Spain. The estimated total Hg intake of local population (5.7 µg/person day?1) did not exceed the provisional tolerable weekly intake (PTWI) limit of 0.3 mg week?1 of total mercury (43 µg/person day?1) fixed by the Joint Food and Agricultural Organization/World Health Organization (FAO/WHO) Expert Committee on Food Additives. Fishery products contributed 96% of the total Hg intake. The mean Hg intake for each island in this archipelago, formed by seven, has also been calculated. Fuerteventura, Lanzarote and El Hierro are the islands with the highest level of Hg intake (7.0, 7,0 and 6.1 µg/person day?1, respectively). La Palma Island, due to its low fish consumption, had the lowest level of Hg intake (4.5 µg/person day?1), followed by La Gomera (5.4 µg/person day?1), Tenerife (5.5 µg/person day?1) and Gran Canaria (5.6 µg/person day?1). This paper reports levels of 3-monochloropropan-1,2-diol (3-MCPD) and 1,3-dichloro-2-propanol (1,3-DCP) in a wide range of food items and estimates their dietary exposure for secondary school students in Hong Kong. Dietary exposure to chloropropanols was estimated using local food consumption data obtained from secondary school students in 2000 and the concentrations of 3-MCPD and 1,3-DCP in food samples taken from the local market. The dietary exposure to 3-MCPD for an average secondary school student consumer was estimated to be 0.063–0.150 µg kg?1 body weight (bw) day?1, whilst that for the high consumer was 0.152–0.300 µg kg?1 bw day?1. Both estimates fell below the provisional maximum tolerable daily intake of 2 µg kg?1 bw established by the Joint Expert Committee on Food Additives (JECFA) and amounted to less than 20% of this safety reference value. The dietary exposure to 1,3-DCP for an average secondary school student consumer was estimated to be 0.003–0.019 µg kg?1 bw day?1, whilst that for the high consumer was 0.009–0.040 µg kg?1 bw day?1. The resulting margins of exposures were of low concern for human health. It could be concluded that both the average and high secondary school student consumers were unlikely to experience major toxicological effects of 3-MCPD and 1,3-DCP.  相似文献

The occurrence of deoxynivalenol (DON) was investigated in 514 cereal-based products (corn-based, n = 125; barley-based, n = 96; wheat-based, n = 94; rice-based, n = 199) marketed in Korea during 2007?2008, and estimates of DON intake were determined. Samples were analysed by high-performance liquid chromatography (HPLC) with ultraviolet light (UV) detection after immunoaffinity clean-up. The limits of detection (LOD) and limits of quantification (LOQ) were 2.2 and 5.6 µg kg–1, respectively. Recoveries and repeatability expressed as coefficients of variation (CV) were 82.3–100% and 2.4–15.3% in beer, bread and dried corn. The incidences and mean levels of DON were 56% and 68.9 µg kg?1 for corn-based products, 49% and 24.1 µg kg?1 for wheat-based products, 43% and 7.5 µg kg?1 for barley-based products, and 16% and 3.4 µg kg?1 for rice-based products, respectively. The estimated daily intake of DON from the consumption of rice-based, wheat-based, barley-based and corn-based products were 0.0038 µg kg?1 bw day?1, 0.0032 µg kg?1 bw day?1, 0.0015 µg kg?1 bw day?1 and 0.0002 µg kg?1 bw day?1, respectively. These values represent 0.38%, 0.32%, 0.25% and 0.01% of the provisional maximum tolerable daily intake (PMTDI) of 1 µg kg?1 bw day?1. These results indicate that rice-based products are major contributors to DON exposure in Korea, even though the current exposure level is unlikely to cause adverse health effects.  相似文献

The presence of heavy metals in big game meat may pose a risk to human health. The main objective of this paper is to carry out a risk assessment study (using a probabilistic and point-estimate approach) of lead intake by consumption of red deer and wild boar meat in Southern Spain based on Spanish data collected in the period 2003–2006. In general, the concentration levels found for wild boar meat (mean?=?1291?µg?kg?1) were much higher than those observed in red deer meat (mean?=?326?µg?kg?1). The results from a point-estimate risk assessment showed that the estimated average intake of lead among different exposure scenarios varied from 0.1 to 6.5 and from 0.3 to 38?µg?kg?1?week?1 for red deer and wild boar meat, respectively; and from 0.3 to 35?µg?kg?1?week?1 for individuals consuming both red deer and wild boar meat, and that the estimated intake of lead by consumption of big game meat differed significantly between hunters and non-hunters, it being higher for hunters. Besides this, results from the probabilistic risk assessment study corroborated the fact that risk is greater in hunter populations, reaching a maximum in individuals consuming only wild boar and both types of meat, with 0.4% and 0.2% of the population above the provisional tolerable weekly intake (PTWI), respectively. Likewise, the hunter populations consuming wild boar and both types of big game meat (red deer and wild boar meat) were exposed to the maximum lead level (56?µg?kg?1?week?1), which corresponded approximately to 224% of the PTWI. Further data and studies will be needed to give a complete risk estimation in which it will be crucial to consider the contribution to the lead intake level of other foods in the diet of both population groups.  相似文献

The aim of this first study was to determine the dietary exposure of antimony, lead, mercury in foodstuffs consumed by secondary school students in Hong Kong. Around 100 composite food items were purchased and then cooked prior to analysis. Antimony was measured by hydrogen generation (HG)/inductively coupled plasma–mass spectrometry (ICP–MS), while lead was determined by ICP–MS. Total mercury was measured by cold vapour atomic absorption spectrometry. The detection limits for antimony, lead and total mercury were 1, 0.6 and 3 µg kg?1, respectively. The dietary intake of antimony, lead and total mercury for an average secondary student were estimated to be 0.252, 1.98 and 0.92 µg (kg bw)?1 week?1, respectively. The dietary intake of antimony, lead and total mercury for high-consumer secondary student were estimated to be 0.567, 5.09 and 2.33 µg (kg bw)?1 week?1, respectively. The main contribution to antimony, lead and mercury were milk, vegetables and seafood, respectively. The Tolerable Daily Intake (TDI) of antimony, as recommended by WHO, is 6 µg (kg bw)?1 week?1, while the Provisional Tolerable Weekly Intakes (PTWI) of lead and mercury, as recommended by JECFA, are 25 and 5 µg (kg bw)?1 week?1, respectively. The estimated exposure values for secondary school students were compared to these safety reference values. For the relevant population, this study confirms the low probability of health risks from these metals via food consumption.  相似文献

In order to address the issue of excessive intake of aluminium (Al) from Al-containing food additives in the Chinese diet, this study conducted a dietary exposure assessment of Al in the general population based on the national surveillance data of Al content in foods and national food consumption data. It was found that the mean dietary exposure of the whole Chinese population to Al from Al-containing food additives was 1.795 mg kg?1 bw week?1, not exceeding the PTWI, while high dietary exposures (e.g., 97.5th percentile) to Al were 7.660 and 2.103–2.903 mg kg?1 bw week?1 for children, respectively, both exceeding the PTWI. It was found that the dietary exposure to Al for 32.5% of the total Chinese population and 42.6% of children aged 4–6 years exceeded the PTWI. Wheat flour and wheat-based products are the main source of dietary A l exposure (85% of the total intake); and puffed foods are the major source of Al intake for children. These findings suggested that consumption of Al-containing food additives could be a health concern for consumers with high food consumption (97.5th percentile) and children under the age of 14 years.  相似文献

Dietary cadmium (Cd) exposure was estimated for adults living in Cd-contaminated areas close to non-ferrous metal plants and compared with dietary Cd exposure in the general Belgian adult population. To evaluate the contamination levels of locally produced food items, 35 fruit samples, 97 vegetable samples, 98 samples of potatoes and 53 samples of meat, liver and kidney of cattle, which had resided for more than 18 months in the contaminated area, were analyzed for Cd. Mean Cd concentrations in fruit and vegetables were 1.1- to 9-fold higher than in samples from other regions at ambient Cd levels. Mean Cd concentrations in bovine meat, liver and kidney were 2-fold higher compared to samples from animals in other regions of Belgium. The estimated dietary intake was 31.3 and 63.3 µg day?1 for average and large consumers, respectively, in the contaminated area, compared to 17 and 38.3 µg day?1, respectively, for the general adult population. Excessive consumption of locally produced food items in areas close to non-ferrous metal plants could result in Cd intake levels exceeding the provisional tolerable weekly intake (PTWI).  相似文献

The risk linked to furan ingestion has been assessed in previous papers for Belgian adults and children. The present paper focuses on infants consuming only ready-to-eat baby food. As there is no Belgian baby dietary database, the furan exposure assessment was carried out by using an Italian infant consumption database and Belgian contamination data. The estimated daily intake (EDI) was calculated according to a deterministic methodology. It involved 42 commercially available ready-to-eat baby food and 36 baby consumption records. The mean EDI was 1460 ng*(kgbw*day)?1 which is 3.8 times higher than the 381 ng*(kgbw*day)?1 reported for Belgian adults, and 3.5 times higher than the 419 ng*(kgbw*day)?1 measured for Belgian children. To assess and characterise the risk for babies’ exposure, the margin of exposure (MoE) was calculated. It highlighted that 74% of infants have a MoE < 1000, with a minimum of 140. However, these are only preliminary results as they were calculated from a very small dataset and the infant cytochrome P450 activity is significantly different compared with the adult’s. Therefore, the risk linked to furan ingestion by babies should be assessed in a different manner. To this end, additional data regarding a baby diet as well as a better understanding of furan toxicity for babies are needed to characterise more accurately the risk for infants.  相似文献

Fish is the main source of dietary exposure to methylmercury (MeHg), which is a public health concern owing to its potential neurotoxicity. To evaluate the public health risk, this study estimated the total mercury (tHg) and MeHg exposure from fish intake in Hong Kong secondary school students. Median tHg and MeHg concentrations of 280 samples purchased from different commercial outlets (covering 89 species of whole fish and three types of canned tuna), together with the local food consumption data of secondary school students obtained by semi-quantitative food frequency questionnaire in 2000, were used to estimate dietary exposure from fish intake for the average and high consumer (95th percentile exposure). For tHg, the median concentration was 63 µg kg–1 (range 3–1370 µg kg–1) and estimated exposures ranged 0.5–0.6 µg kg–1 body weight (bw) week–1 for an average consumer and 1.6–1.9 µg kg–1 bw week–1 for a high consumer. For MeHg, median concentration was 48 µg kg–1 (range 3–1010 µg kg–1) and estimated dietary exposures were 0.4–0.5 µg kg–1 bw week–1 for an average consumer and 1.2–1.4 µg kg–1 bw week–1 for a high consumer. These values are below the respective provisional tolerable weekly intake (PTWI) established by the Joint Food and Agriculture Organization/World Health Organization Expert Committee on Food Additives (JECFA). The health risk is greater for high consumers since MeHg exposures may approach or exceed the PTWI when other dietary sources are taken into account.  相似文献

The contents of lead and cadmium in five major brands of six types of cooked beef sausages consumed in Iran were determined by a graphite furnace atomic absorption spectrometer (GFAAS) after hydrogen peroxide/nitric acid digestion. The metal content in the samples, expressed in µg?kg?1 wet weight, varied from 24.0 to 158.7 with an average of 53.5 for lead and from 2.2 to 13.5 with an average of 5.7 for cadmium. The highest lead and cadmium concentrations were obtained from a German sausage (158.7?µg?kg?1; brand B) and hot dog (13.5?µg?kg?1; brand D), respectively. The results indicate that the sausages from Iran have concentrations below the permitted levels for these heavy metals. The daily dietary intakes and the percentage contribution of the two considered metals to the provisional tolerable weekly intake (PTWI) were calculated for sausages.  相似文献

Sulphites are widely used as a preservative and antioxidant additive in food. The aim of this study was to assess dietary sulphite intake in adults aged 35–65 years and in children aged 4–18 years living in the Basque Country, northern Spain. We determined sulphite concentrations in 909 samples covering 16 food types. The maximum permitted levels were exceeded in 17% of samples. Making recommended assumptions for non-quantifiable results, estimates of mean lower and upper bounds were calculated for sulphite concentrations in each food type. These sulphite data were combined with consumption data derived from 8417 adults from the European Prospective Investigation in Cancer and Nutrition cohort in Gipuzkoa, recruited in 1992–1995 using a diet history method, and 1055 children from the Basque Country Nutrition Children Survey, conducted in 2004–2005 using two 24-h recall questionnaires to assess diet. The results were compared with the acceptable daily intake (ADI) proposed by the Joint Expert Committee on Food Additives (JECFA). The mean dietary exposure to sulphites was 0.08 mg kg?1 bw day?1, only 11% of the ADI in the overall group of children (4–18 years old), but the acceptable intake was exceeded by 4% of 4–6 year olds. For the adults (35–65 years old), the mean dietary exposure was 0.31 mg kg?1 bw day?1, 45% of the ADI, but the acceptable intake was exceeded in 14.6% of cases. The major contributing foods were minced meat and other meat products for children and wine for adults.  相似文献

To evaluate the potential public health risk of ethyl carbamate (EC), EC exposure from fermented foods and beverages for Hong Kong population was estimated. In 276 samples analysed, EC was detected (limit of detection (LOD) at 0.4?µg?kg?1) in 202 samples (73%), with higher levels in fermented red bean curd (150–650?µg?kg?1) and yellow wine (140–390?µg?kg?1), while low or non-detected (ND) in preserved vegetables (ND–10?µg?kg?1) and fermented tea (ND–15?µg?kg?1). The estimated dietary exposure from all fermented foods and beverages was 8.27?ng?kg?1?bw?day?1, while exposure excluding alcoholic beverages was 5.42?ng?kg?1?bw?day?1, with calculated margins of exposure (MOEs) at 3.6?×?104 and 5.5?×?104 respectively. The risk of adverse health effects was low for the average population but higher (MOE?of?103) for high consumers of alcoholic beverages especially habitual drinkers of alcoholic types with high EC contents.  相似文献

Chilean consumer preferences include foods that may contain considerable amounts of furan, a potential human carcinogen. However, there is no information regarding dietary exposure to furan in Chile. Thus, the objective of this work was to determine the Chilean exposure to dietary furan. To accomplish this objective, the furan concentration of 14 types of commercial foods processed at high temperature were analysed based on a modified headspace-GC/MS (HS-GC/MS) method in which the limits of detection for different food matrices ranged from 0.01 to 0.6 ng g?1. In addition, a risk assessment was made with exposure estimates based on dietary data from national studies on different age groups (9-month-old babies, school children, adults and elderly people). Of the food items surveyed “American”-type coffee (espresso coffee plus hot water) obtained from automatic coffee machine (936 ng g?1) and low moisture starchy products like crisps and “soda”-type crackers showed the highest furan concentrations (259 and 91 ng g?1, respectively). Furthermore, furan was also found in samples of breakfast cereals (approximately 20 ng g?1), jarred fruit baby foods (8.5 ng g?1) and orange juice (7.0 ng g?1). School children (aged 9–13 years) represented the highest intake of furan (about 500 ng kg?1bw day?1), with margins of exposure of 2479 and 2411, respectively, which points to a possible public health risk.  相似文献

Perchlorate is a thyroid hormone-disrupting compound and is reported to occur widely in the environment. Little is known on human exposure to perchlorate in Kuwait. In this study, 218 water samples, 618 commonly consumed foodstuffs and 532 urine samples collected from Kuwait were analysed to assess the exposure of the Kuwaiti population to perchlorate. For the estimation of daily intake of perchlorate, food consumption rates were obtained from the National Nutrition Survey in the State of Kuwait (NNSSK). The results showed that leafy vegetables accounted for a major share of perchlorate exposure among the Kuwaiti population at 0.062 µg kg1 bw day1 (36.2%), followed by fruits at 0.026 µg kg1 bw day1 (15.3%) and non-leafy vegetables at 0.017 µg kg1 bw day1 (10.1%). The urinary perchlorate geometric mean (GM) concentrations ranged from 8.51 to 17.1 µg l1 for the five age groups, which were higher than those reported in other countries. The estimated urinary perchlorate exposure for the Kuwaiti general population was 0.42 µg kg1 bw day1, which was higher than that reported for the United States. The dietary intake of perchlorate for the Kuwaiti population ranged from 0.14 to 0.67 µg kg1 bw day1 for the five age groups, with a mean total daily intake of 0.17 µg kg1 bw day1 for the general population. The highest estimated dietary mean daily intake of perchlorate (0.67 µg kg1 bw day1) was found for children at 3–5 years.
