This study analyzed the aromatic composition and established the soluble carbohydrate profiles of the Chriha, Razeki, Assli, and Meski varieties of Tunisian raisin (Vitis vinifera L.). A total of 80 compounds obtained by headspace solid phase micro-extraction were detected by gas chromatography-mass spectrometry. Non-terpene hydrocarbon derivatives were the major compounds of the Chriha and Assli varieties (35.8 and 26.3%, respectively). The Razeki variety accumulated 25.5%. apocarotenoids. Oxygenated non-terpene derivatives, including esters, alcohols, aldehydes, acids, ketones, and others were the most abundant (57.5%) in the Assli variety. The presence and amounts of volatiles were different among varieties and might be responsible, in part, for the aroma and taste of raisins. The concentration of total sugars was highest in the Razeki variety and lowest in the Chriha variety. The content of individual sugars differed quantitatively among the varieties in this study. The Razeki variety had the best fruit quality with higher contents of individual and total sugars compared to the other three varieties.  相似文献

The phenolic composition, antioxidant activity, and antimicrobial activity of extracts from vine leaves of six grape varieties collected in May, August, and September was studied. The phenolic potential of the extracts was dependent on variety and picking-time. Extracts of leaves collected in September were the richest in total phenols, flavonoids, flavonols, and stilbenes. The antioxidant properties determined by ferric reducing antioxidant power and 2,2-diphenyl-1-picrylhydrazyl assays, and antimicrobial activity against Stapylococcus aureus, Bacillus cereus, Campylobacter jejuni, Escherichia coli, and Salmonella Infantis were good and in correlation with the chemical composition changes of the leaf extracts. The results indicated that leaves remaining on the vine in September after the grape harvest could be especially promising as an inexpensive source of effective antioxidant/antimicrobial agents.  相似文献

In this study, total phenolic content, antioxidant activity, mineral content and selected physicochemical properties of three white mulberry phenotypes (Morus alba L.) grown in Turkey were measured. Moisture, total soluble solids, total sugar, sucrose, reducing sugar, protein, ash, pH, titratable acidity, color (L, a, b), vitamin C, total phenolic, antioxidant activity of fruits were determined between 72.85–79.75 g/100 g fresh fruit, 21.25–28.50 g/100 g fresh fruit, 12.18–17.02 g/100 g fresh fruit, 1.57–4.36 g/100 g fresh fruit, 9.42–15.46 g/100 g fresh fruit, 0.82–0.89 g/100 g fresh fruit, 2.20–2.65 g/100 g fresh fruit, 5.70–5.86, 0.25–0.28 g/100 g fresh fruit, 31.24–68.69, ?2.46 to 15.68, 4.58–21.74, 10.15–21.50 mg/100 g fresh fruit, 18.16–19.24 μg gallic acid equivalent/mg of sample, and 33.96–38.96%, of sample respectively. The antioxidant capacity of commonly consumed cucurbits vegetable was determined by the DPPH, FRAP, Fe3+ reducing power, and hydrogen peroxide scavenging assay. The aqueous extract of Luffa cylindrica showed the highest value of phenolic content and antioxidant capacity based on FRAP, Fe3+ reducing power, and hydrogen peroxide scavenging assay. However, Laginaria siceraria extract showed the highest flavonoid and DPPH scavenging activities among all three cucurbits used in this study. Phenolic content in aqueous extracts of Luffa cylindrica and Laginaria siceraria was almost equal. Cucurbita maxima exhibited the lowest phenolic, flavonoid content, and exhibited the lowest power of antioxidant scavenging. The antioxidant capacity of cucurbits was significantly correlated (P < 0.05) with the phenolic content of their extracts. The antioxidant capacity of Luffa cylindrica and Laginaria siceraria have also shown a significant correlation (P < 0.05).  相似文献

Thirty-five honeys were evaluated for total phenolic content by Folin-Ciocalteu method, for potential antioxidant activity using phosphomolibdenum assay and by the 1,1-diphenyl-2-picrylhydrazyl method for antiradical activity. The antimicrobial activity was studied by the agar diffusion method, using 12 bacteria and 2 yeasts. The means of the total phenolic contents of chestnut, honeydew, multifloral, thyme, and astragalus were 47 ± 18, 24.2 ± 0.6, 14 ± 11, 11 ± 6, and 9 ± 7 mg/100 g honey as gallic acid equivalent, respectively. The lowest antioxidant activity was observed in honeydew 70 ± 5 mg ascorbic acid equivalent/g honey while the highest content was observed in astragalus honey 86 ± 16 mg ascorbic acid equivalent/g honey. Correlation between the phenolic content and antioxidant activity were found to be statistically significant. Chestnut honeys (n = 5) exhibited maximum free radical scavenging activity with an average 68 ± 9%. The honey samples showed the highest antimicrobial activity against some microorganisms, especially Escherichia coli O157:H7, Salmonella typhimurium, Staphylococcus aureus, Listeria monocytogenes, and Proteus mirabilis. On the other side, Aeromonas hydrophila, Bacillus subtilis, and E. coli were the most resistant microorganisms. The results revealed that the Turkish honeys studied proved to be a good source of antioxidant and antimicrobial agents that might serve to protect human health.  相似文献

The purpose of this study was to evaluate phenolic profile and antioxidant activity of ten different meads of 1:1 and 1:2 types, produced with addition of fruit juices, root spices, and herbs. The total phenolic content in meads varied from 15.27 to 70.80 mg/dm3. The meads originated from dark honeys exhibited the highest antioxidant activity. The predominant phenolic compounds in meads were hydroxybenzoic acids, especially gallic and protocatechuic acid, originated mainly from honeys. Whereas, among the hydroxycinnamic acids, the major phenolic was chlorogenic acid, derived mainly from plant additives used in meads production. A principal component analysis was applied in order to differentiate the investigated meads. The 1:2 meads type could be best described by chlorogenic acid. Among the 1:1 meads type, those made from the dark honeys could be best described by gallic, p-coumaric, and protocatechuic acid while those made with addition of blackcurrant and raspberry juice could be described by caffeic and ferulic acid.  相似文献

The objectives of this study were to determine phenolic content, antioxidant activity of methanolic extracts from different parts of Cordia evolutior (leaf, bark, and fruit), and nutrition composition. The leaf extract showed the highest total phenolic content (25.40 ± 0.34 mg GAE/g extract) and total flavonoid content (69.70 ± 3.37mg RE/g extract) accompanied with the best antioxidant activity through all antioxidant assays. The fruit proximate compositions of crude protein, ash, carbohydrate, fiber, and fat were analyzed. Macro-nutrient contents were found to be higher in the fruit when compared to micronutrients. The analysis also showed the presence of almost all of the essential and non-essential amino acids. Linolenic acid content was higher than stearic acid among the fatty acids in the fruit.  相似文献

In the present study, betalains content, phenolic composition, and antioxidant activity of different parts of red beet (Beta vulgaris L. conditiva) (i.e., roots and stems) were compared. Crude extract of root showed the highest betalain content with a maximum of 53 ± 4 mg betanin eq and 46 ± 3 mg vulgaxantin I eq g?1 of extract stems showed higher total phenolic concentration than roots, ranging between 2.0 ± 0.4 and 14.6 ± 0.5 mg gallic acid eq?1 of extract. Chemical composition was analyzed using LC-MS. Betalains (vulgaxanthin I, betanin, and isobetanin) and phenolics (gallic acid, ferulic acid, chlorogenic acid, caffeic acid, vanillic acid, syringic acid, ellagic acid myricetin, quercetin, rutin, kampferol) were identified in roots and stems. Betalain extract obtained from roots showed higher antioxidant activity than extract obtained from stems.  相似文献

Carotenoid profile, antioxidant activity, and total phenolic content of carrot cultivars from three different locations in Turkey were determined during two consecutive years. The major carotenoids determined in carrots were β-carotene (41.60–71.2 mg/kg FW) and α-carotene (13.44–30.11 mg/kg FW). The total phenolic contents of carrots ranged from 114–306 mg catechin/kg FW. The antioxidant activity in carrots determined by the TEAC assay varied between 25.9 and 86.6 μmol TE/100 g FW. There was considerable variation in carotenoid contents between locations and years among cultivars. Significant differences were found between the two consecutive years in total phenolic contents except for only one cultivar. The level of antioxidant activity in carrots varied significantly over the years.  相似文献

The antioxidant capacity and phenolic content of three varieties of Phoenix dactylifera leaves, namely Deglet Nour, Medjhoul, and Barhee, were studied. The antioxidant activities of extracts of different leaf varieties obtained with solvents of different polarity were investigated using assays of 2, 2-diphenyl-2-picrymhydrasyl hydrate radical-scavenging activity, total phenolics and flavonoids amount, condensed tannins, reducing power, and total antioxidant capacity. The results showed that all the extracts exhibited antioxidant and radical-scavenging activities at different magnitudes and potency. The decreasing order of antioxidant and radical-scavenging activities among the extracts assayed were found to be methanol (MeOH) fraction > ethyl acetate fraction > hexane fraction > water extract. Correlation analysis indicated that there is a linear relationship between antioxidant potency, free radical-scavenging ability, and the content of phenolic and flavonoids compounds of Phoenix dactylifera leaf extracts. These results showed that Phoenix dactylifera leaf extracts are a valuable natural antioxidant, which can be applied in both healthy medicine and food industry and biotechnology.  相似文献

Five commonly consumed pulses, Mah (Vigna mungo), Green mung (Vigna radiata), Arhar (Cajanas cajan), Masur (Lens esculantus), and Moth (Vigna aconitifolia), were studied for their total phenolic content and antioxidant activity after germination (12 and 24 h) and pressure cooking. Arhar had the highest total phenolic content (6.71 mg ferulic acid/g flour) whereas Moth had the least (1.54 mg/g). All pulses, except Moth, showed a significant decrease in total phenolic content after germination. The antioxidant activity of the pulses varied from 10.61 to 36.38% (DPPH radical scavenging activity), which significantly decreased with germination in all pulses except Moth. The total phenolic content highly correlated with the antioxidant activity in the pulses. Cooking lowered the total phenolic content by 10–45% and antioxidant activity by 27–68% in the control and germinated pulses.  相似文献

This study was undertaken to determine the total phenols, total flavonoids, and major phenolic compounds in the polar (methanol, 80% methanol, and aqueous) extracts of propolis collected from the Greek mainland (West Macedonia) and the Greek island, Rhodes. The antioxidant properties of the propolis extracts were also evaluated by using free 2,2-diphenyl-1-picrylhydrazyl radical scavenging assay and ferric reducing antioxidant power assay. The results showed that propolis from West Macedonia was found to be the strongest radical scavenger and ferric reducing agent (mean IC50 0.179 and 0.009 mg/ml, respectively). Methanol (mean IC50 0.181 mg/ml) and 80% methanol extracts (mean IC50 0.138 mg/ml) of propolis from West Macedonia showed higher radical scavenging activity than the synthetic antioxidant butylated hydroxytoluene (mean IC50 0.207 mg/ml), while exhibiting similar levels of reducing activity (IC50 0.0099 mg/ml and 0.0085 mg/ml, respectively) with flavonol quercetin (mean IC50 0.0101 mg/ml). In addition, analysis by high performance liquid chromatography showed that West Macedonia propolis, contained the highest amount of phenolic compounds: phenolic acids (caffeic acid, caffeic acid phenethylester, ferulic acid, p-coumaric acid) and flavonoids (quercetin, galangin, luteolin, apigenin). Caffeic acid (0.639–4.172 mg/g propolis) and galangin (1.317–8.551 mg/g propolis) were found to be the predominant phenolic compounds in these propolis extracts.  相似文献

In this study, total water soluble antioxidant activity and phenolic content of 26 eggplant ( Solanum melongena L. ) cultivars were investigated. Total water soluble antioxidant activity of the cultivars varied from 2664 to 8247 μmolTrolox/kg, which is a 3.1-fold difference. Cultivars also showed significant variation for total phenolic contents ranging from 615 to 1376 mg/kg, a 2.2-fold difference. The two traits were significantly correlated and results of this study suggested that breeders can use the information to develop eggplant cultivars with high antioxidant activity.  相似文献

Dill (Anethum graveolens L.) have been extensively used in salads, soups, and pickles for its aromatic odor and flavor. Recently, interest in plant-derived food additives has grown. In this study, the possible antioxidant properties of water, ethanol, and acetone extracts of dill leaves were investigated. In order to evaluate antioxidant activities of all extracts, different antioxidant tests were used, such as total antioxidant activity by ferric thiocyanate method, reducing power, DPPH (1,1-diphenyl-2-picryl-hydrazyl) free radical scavenging, hydrogen peroxide scavenging, and ferrous ions chelating activities. The content of phenolic compounds was also determined to be the gallic acid equivalent. Among the three extracts, the water extract of dill leaf showed the most potent antioxidative capacity in each assay, showing 79.66% (at 1 mg/mL) in the DPPH? radical scavenging activity, 63% (at 800 μg/mL) in the metal chelating effect, 60% (at 400 μg/mL) in the H2O2 scavenging activity, and 0.61 absorbance (at 1 mg/mL) in the reducing power.  相似文献

The present work reports amounts of flavonoids and phenylpropanoids of culms of three sugarcane varieties and of raw juice, syrup, molasse and VHP sugar. The antioxidant activity of those materials was evaluated by the DPPH and β-carotene/linoleic acid methods. The predominant phenolics in culms were phenylpropanoids (caffeic, chlorogenic and coumaric acids), while flavones (apigenin, tricin and luteolin derivatives) appeared in lower amounts. Differences were noted either among phenolic profiles of sugarcane culms or between culms and sugarcane products. The antioxidant activities of solutions from most samples were similar or higher than a 80 μM Trolox solution.  相似文献

In this study, the antioxidant activity exhibited by crude extracts from 10 Phaeophyta species from Brittany coasts was assessed by three methods (DPPH, reducing activity and β-carotene–linoleic acid system), and their phenolic contents were examined. Antitumoural activities were determined by a cytotoxic assay with three different tumoural cells lines (Daudi, Jurkat and K562). Among the species under study, four Fucales, i.e. Bifurcaria bifurcata, Cystoseira tamariscifolia, Fucus ceranoides and Halidrys siliquosa, displayed a high antioxidant activity. Further to the fractionation of these crude extracts, a significant correlation was found in most fractions between the high antioxidant activity and the high phenolic content. Five species, i.e. B. bifurcata, C. tamariscifolia, Desmarestia ligulata, Dictyota dichotoma and H. siliquosa, exhibited strong cytotoxic activities against all tumoural cells.  相似文献

This study aimed to determine the phytochemical profile and nutraceutical properties of nopal cladodes (Opuntia ficus-indica) at different stages of maturity. Medium-age cladodes showed the highest total saponins, phytosterols, and indigestible fiber, as well as the highest in vitro antioxidant capacity and digestive enzymes inhibitory activity. Furthermore, these cladodes presented the highest content of p-hydroxybenzoic acid, p-coumaric acid, rutin, narcissin, nicotiflorin, β-sitosterol, and sitosteryl-3-β-glucopyranoside, as well as several amino acids, organic acids, and fatty acids. Whereas young cladodes contained the highest concentration of condensed and hydrolyzable tannins. These results demonstrated that maturity affects the nutritional and nutraceutical properties of nopal cladodes.  相似文献
