Sensory (cooked and uncooked), chemical (proximate composition, TVB-N, nucleotide degradation products and biogenic amines) and microbiological quality (TVC and total coliform) changes were investigated during storage of ungutted white grouper kept in ice and at chill temperature (4 °C). According to the sensory assessment, the shelf life of white grouper was 16 days in ice and 4 days for fish stored at chill temperature. TVB-N values increased with storage time. Amines found in white grouper stored in ice were TMA, putrescine, cadaverine, 2-phenylethylamine, dopamine, agmatine, tryptamine and serotonin. Histamine, spermine, spermidine were never detected with either storage condition. The acceptability limit in terms of microbial count was exceeded at 8 days in ice and at 4 days for fish stored at chill temperature. Total coliform count was 2.8 log10 cfu/ml at 1 day and reached 105 cfu/ml for both storage conditions.  相似文献

The freshness of yellow grouper (Epinephelus awoara) stored under vacuum-packing at 0 °C was assessed by physicochemical, sensory and microbiological methods. No significant differences were found in pH and thiobarbituric acid (TBA) values during the storage, while TVB-N, TMA-N, HxR, Hx and K values increased significantly with time. The content of IMP was decreased significantly with the storage time. The texture profile, hardness and chewiness were significantly decreased with the time. L∗ values, the values of chroma and hue were all decreased. However, the increased b∗ values were observed. Furthermore, the significant variations and correlations of sensory attributes were shown with the storage time. A regression analysis for total viable counts yielded a shelf life of 26 days. This suggested that the TMA-N, IMP, HxR, Hx, K value, hardness, chewiness, colour, sensory attributes and microbiological counts may be considered suitable indicators for evaluating yellow grouper fillets spoilage during refrigerated storage.  相似文献

A comparative study of the effects of packaging on the formation of biogenic amines during storage of sardines (Sardina pilchardus) at 4 °C in air, modified atmosphere pack (MAP) and vacuum pack (VP) was carried out. Sardines were organoleptically acceptable for up to 3 days in air, 12 days in MAP and 9 days in VP. The biogenic amine content generally increased in all treatments with increasing storage time. The concentrations of putrescine and/cadaverine in fish stored in air reached maximum levels of 12.2 mg/100g at 12 days and 10.0 mg/l00 g at 15 days. Significant differences were found (P < 0.05) in the levels of cadaverine and putrescine among the three treatments. Spermidine and spermine levels increased slightly and did not change much throughout the storage period for all experimental conditions. The amine contents of sardine were highest in sardine stored in air, followed by VP and MAP. Quality indices related to the contents of the major biogenic amines were calculated and they correlated well with organoleptic qualities.  相似文献

The feasibility of using d-glucose to extend the shelf life of fresh mutton at 25 ± 2 °C was investigated. Aqueous solutions of 5% d-glucose (w/v) containing 1000 ppm potassium sorbate, when applied on acidulant-treated mutton, are able to inhibit spoilage by delaying proteolytic activity, as seen by significantly lower (P < 0.01) levels of biogenic amines until 4 days of storage. Though there was no significant change in standard plate count during storage, as compared with a 1 day control, Enterobacteria were significantly (P < 0.01) inhibited. Cadaverine, the marker for threshold level of spoilage, was absent up to 4 days. Measurement of glucose retention revealed that 0.25% (0.25 g/100 g mutton) was still available at the end of 4 days, when no spoilage had set in, though there was a slight fermented odour. Thus, the investigation shows that, surface treatment with glucose helps to extend the shelf life of fresh mutton up to 3 days at 25 ± 2 °C.  相似文献

Slurry ice, a biphasic system consisting of small particles of spherical ice immersed in seawater at subzero temperature, was evaluated as a new chilled method for whole sea bream (Sparus aurata) and sea bass (Dicentrarchus labrax). Two types of different chilling methods were used for two species in this study; slurry ice-treated sea bream (Group A), slurry ice-treated sea bass (Group B), flake-ice treated sea bream (Group C) and flake ice-treated sea bass (Group D). The effects of this system on the quality and shelf life of these two species were evaluated. Mesophilic counts for sea bass exceeded 7 log cfu/g, which is considered the maximum level for acceptability for freshwater and marine fish after 13 days for Groups C, D and 15 days for Groups A, B. At day 13, TVB-N values of Groups C, D reached the legal limits (35 mg/100 g set for TVB-N) for consumption. According to the results of sensory analyses, up to day 13, all the Groups were determined as ‘acceptable’ but, on day 15, the Groups A, B, C, D were no longer acceptable. Using slurry ice pretreatment for 2 h before the storage period presumably caused the deleterious effect on appearance as well as salt and water uptake. According to the results of chemical and microbiological analyses, use of slurry ice pretreatment for 2 h extended the shelf life of sea bream and sea bass stored at 4 °C for only two days longer than did use of flake ice.  相似文献

Biogenic amines, total volatile base nitrogen (TVB‐N) and trimethylamine nitrogen (TMA‐N) concentrations in the muscle of postmortem Chinese mitten crab stored at 4 and 20 °C were studied. Among five biogenic amines, histamine, tyramine, tryptamine, putrescine and cadaverine, histamine was the main biogenic amine formed during the storage time and reached highest levels of 91.22 mg kg?1 after 72 h at 4 °C and 181.23 mg kg?1 after 24 h at 20 °C. Histamine could be used a safety index for crab. The levels of other biogenic amines were less than 10 mg kg?1 and fluctuated with storage time. TVB‐N and TMA‐N levels did not change greatly throughout 72 h storage at refrigerated temperature. TVB‐N and TMA‐N were not considered to be reliable indicators of the freshness of crab.  相似文献

This work evaluated the effect of brine concentration on the shelf-life of hot-smoked tilapia (Oreochromis niloticus) stored at 4 °C. The fish were brined in solutions of 5%, 10%, and 15% NaCl and unsalted fish were used as controls. The fish were then smoked, cooled and stored at 4 °C. Oxidative rancidity measured by the peroxide value (PV), and thiobarbituric acid number (TBA) showed increases with the storage time and also as a result of the increasing salt content in fish muscle. Hot smoked tilapia can be stored safely under refrigerated conditions for over 35 days, and 5% brine was found to be optimal for storage.  相似文献

The presence of bioactive amines in raw and sterilised milk inoculated with Pseudomonas fluorescens during storage at 4°C, 7°C and 10°C for 6 days was investigated. Spermine, spermidine, putrescine, serotonin and phenylethylamine were present in the samples immediately after milking. Histamine, cadaverine and tyramine were formed in the raw milk on the 4th day of storage at 10°C, increasing significantly afterwards. Cadaverine was formed during sterilisation. There was no significant change in amines, acidity, thermostability and alizarol tests throughout storage of the sterilised milk; however, a putrid smell was detected at every temperature on the 6th day. Therefore, raw or sterilised milk storage at 4–7°C should not exceed 4 days. Furthermore, raw milk should not be stored at 10°C.  相似文献

The biogenic amine content and related bacterial changes (Pseudomonas spp., psychrotrophic and mesophilic counts) in whole farmed rainbow trout (Oncorhynchus mykiss) were monitored during ice storage for 18 days (at 0, 3, 6, 9, 12, 15 and 18 days). Levels of putrescine, cadaverine and histamine, and bacterial loads, increased (P < 0.05) during storage, but tyramine was not detected in any of the tested samples. Concentration of putrescine ranged from 0.4 initially to 8.97 μg/g, and psychrotrophic microorganisms were dominant. The best linear regressions (correlations) were for putrescine and Pseudomonas spp. and psychrotrophs (r = 0.98), and for cadaverine with Pseudomonas spp. (r = 0.82). Putrescine content was a good quality marker. Histamine was detected only at later stages of storage and was therefore less suitable than the other biogenic amines as freshness indicator.  相似文献

Chemical and biochemical changes of aquacultured hybrid catfish fillet (Clarias macrocephalus × Clarias gariepinus) and its gel-forming ability as affected by age and sex of fish along with storage time were investigated. Fillets were stored at 4 °C for 0, 3, 6, 9, 12 and 15 days. There was no significant effect of sex and age of fish as well as storage time on fat, moisture and ash contents (P > 0.05). The total protein, water soluble protein, and salt soluble protein contents of the fillets significantly decreased with storage time (P < 0.05). On the other hand, pH, total volatile base nitrogen (TVB-N) and autolytic degradation products (ADP) increased as storage time continued (P < 0.05). Decreases in Ca2+-ATPase activity and gel properties were observed as storage time increased. However, there was no significant effect of either sex or age of fish on textural properties of gel (P > 0.05). Hybrid catfish fillet stored at 4 °C should be processed within 6 days.  相似文献

The effects of frozen storage at −18 °C on the chemical and sensory qualities of fish fingers produced from unwashed and washed mirror carp (Cyprinus carpio) mince were investigated. The amounts of moisture, crude protein, lipid, crude ash, ω3 polyunsaturated fatty acids (PUFA ω3), and ω6 polyunsaturated fatty acids (PUFA ω6) in fish fingers produced from unwashed mince (UWF) were found to be 68.50%, 15.5%, 6.00%, 2.20% 2.31%, and 55.2%, respectively, while they were found to be 70.23%, 10.8%, 2.14%, 1.80%, 2.28%, and 54.6%, respectively, in carp fingers produced from washed mince (WF). The thiobarbituric acid value (TBA, mg malonaldehyde/kg) was found to be significantly higher in mince of WF than in mince of UWF and increased significantly during frozen storage in both the mince of UWF and WF (p < 0.05). A significant decrease in pH was obtained throughout the washing treatment (p < 0.05). There were no significant differences of pH in either the mince of UWF or WF between the beginning and end of the storage periods (p > 0.05), whereas a sharp increase was observed in the fourth month in both groups. The protein solubilities of the mince of both UWF and WF decreased significantly throughout the storage periods (p < 0.05). Sensory parameters of colour, odour, flavour, and general acceptability for both groups decreased during the frozen storage period (p < 0.05) but were still within acceptable limits. It was also concluded that mirror carp was a good source for fish fingers and that product could be stored for five months in a frozen state without undesirable changes of sensory and chemical qualities.  相似文献

Strawberries (Fragaria × ananassa Duch.) were coated with either 1% or 1.5% chitosan (CS) or chitosan combined with calcium gluconate (CaGlu). Following treatment, strawberries were stored at 10 °C and 70 ± 5% RH for one week. The effectiveness of the treatments in extending fruit shelf-life was evaluated by determining fungal decay, respiration rate, quality attributes and overall visual appearance. No sign of fungal decay was observed during the storage period for fruit coated with 1.5% CS (with or without the addition of CaGlu) or 1% CS + 0.5% CaGlu. By contrast, 12.5% of the strawberries coated with 1% CS lacking calcium salt were infected after five days of storage. The chitosan coating reduced respiration activity, thus delaying ripening and the progress of fruit decay due to senescence. Chitosan coatings delayed changes in weight loss, firmness and external colour compared to untreated samples. Strawberries coated with 1.5% chitosan exhibited less weight loss and reduced darkening than did those treated with 1% chitosan, independently of the presence or absence of CaGlu. However, addition of calcium to the 1% chitosan solution increased the firmness of the fruit. Coated samples had greater visual acceptability than had untreated fruits. The addition of calcium gluconate to the chitosan coating formulation increased the nutritional value by incrementing the calcium content of the fruit.  相似文献

The purpose of this study was to investigate the effect of packaging film on physicochemical properties, microbial profile, and biogenic amines content of barramundi (Lates calcarifer Bloch) fillets packed in polyamide, polypropylene, and low-density polyethylene films and kept at 8°C more than 20 days under modified atmosphere packaging. Putrescine and cadaverine were the most abundant amines, whereas the concentration of histamine ranged from less than 0.5 (not detected) to 198.0, 264.3, and 308.5 mg/kg for polyamide, polypropylene, and polyethylene (low-density polyethylene) films, respectively. Among the three, the psychrotrophic bacteria count was initially 4.26 log colony forming units/g and exceeded the acceptable limit of 7 log colony forming units/g on the 16th day of storage for polyamide and on 12th day of storage for polypropylene and polyethylene. However, the total plate count, among the three packaging films, was initially 3.54 log colony forming units/g and exceeded the acceptable limit of 6 log colony forming units/g on the 12th day of storage. The histamine-forming bacteria count was significantly (p < 0.05) lower in barramundi fillets packaged with polyamide compared to polypropylene and polyethylene. The significant difference (p < 0.05) was observed between the concentration of amines in polyamide as compared with polypropylene and polyethylene. Among the three packaging materials, polyamide was found to be the best for prolonging the storage of barramundi fillets.  相似文献

Physicochemical changes of ω − 3-enhanced farmed rainbow trout (Oncorhynchus mykiss) fillets developed by dietary modification with flaxseed oil and α-tocopheryl acetate (α-TA) were determined during storage at 2 °C. Trout were fed experimental diets for 120 days followed by processing to obtain boneless skinless fillets. The dietary modification increased concentration of total ω − 3 fatty acids in the fillets, which enhanced chances for lipid oxidation during storage. The fillets were vacuum or non-vacuum packed and stored at 2 °C for 10 or 12 days. Dietary α-TA resulted in higher (P < 0.05) concentration of α-tocopherol in fillets during storage; however, it did not retard (P > 0.05) lipid oxidation. Vacuum packaging resulted in much lower (P < 0.05) TBARS and higher (P < 0.05) retention of α-tocopherol during storage than non-vacuum packaging. However, α-tocopherol unlike vacuum packaging better protected ω − 3 FA in the fillets during storage.  相似文献

The processing of fish roe leads to changes in its chemical composition, the extent of which depends on the techniques and additives employed. This study aimed to investigate the effects of ripening temperature and the use of sodium benzoate and citric acid on the quality of ripened cod roe, with respect to the contents of volatile base nitrogen (VBN), trimethylamine (TMA), biogenic amines (BA) and on the lipid composition. In comparison with fresh roes, ripened roes presented higher contents of VBN, TMA, BA and the proportion of free fatty acids regardless of the temperature and additives used during the ripening process. The greatest increases were observed in the samples ripened at 17 °C without additives, in which histamine was detected at 8.8 mg/100 g. A low ripening temperature was the main factor responsible for minimising changes in the cod roe composition. The addition of sodium benzoate as a preservative or citric acid to decrease the pH value had a significant effect in maintaining the quality of the cod roes, mainly at high ripening temperature.  相似文献

The effect of low concentration of salt and sucrose on the quality of bighead carp (Aristichthys nobilis) fillets was evaluated over a 16-day storage at refrigerated temperature (4 °C). Fish samples were brined with 1.1% salt (T1) and 1.1% salt + 0.9% sucrose (T2). The control and the treated fish samples were analysed periodically for physicochemical (pH, total volatile base nitrogen (TVB-N), water loss, electrical conductivity (EC), color), microbial (total viable counts) and sensory characteristics. No significant differences were observed between T1 and T2 for sensory score and EC (p > 0.05). Brining treatments predominantly decreased chemical changes, reflected in TVB-N and pH, retarded water loss and discoloration, inhibited bacterial growth and increased the overall sensory quality of fish, compared to untreated fillets. The results indicated that brining treatments improved the quality and safety of bighead carp fillet, which can be exploited by fish processors.  相似文献

Changes in heme proteins and lipids associated with off-odour development in seabass (Lates calcarifer) and red tilapia (Oreochromis mossambicus × O. niloticus) muscles during 15 days of iced storage were studied. Fresh seabass contained the higher contents of myoglobin and heme iron, compared with red tilapia (P < 0.05). An increase in metmyoglobin proportion was observed during storage. After 3 days of storage, a decreased heme iron content and a concomitant increase in non-heme iron content were noticeable in both fish (p 0.05). Oxidation of myoglobin and released non-heme iron were associated with lipid oxidation. The increases in oxidation products and free fatty acids were observed as the storage time progressed. Fishy and rancid odours were detected at day 6 of storage for both fish and a higher intensity was found in seabass muscle. Thus, the off-odour in fish muscle was mostly governed by lipid oxidation and species specific.  相似文献

The most important factor for increasing shelf life is the product temperature, and since fish is more highly perishable than meat, the temperature is even more important. In the present study, portions of fillets of farmed Atlantic salmon (Salmo salar) were superchilled at two temperature levels, −1.4 and −3.6 °C. Texture, drip loss, liquid loss, cathepsin activities and protein extractability were investigated during storage and compared to ice chilled and frozen references. Drip loss was not a major problem in superchilled salmon. Textural hardness was significantly higher in superchilled salmon fillets stored at −3.6 °C compared to those stored at −1.4 °C, ice chilled and frozen references. Cathepsins B and B + L were not deactivated at the selected storage temperatures. The storage time of vacuum packed salmon fillets can be doubled by superchilled storage at −1.4 °C and −3.6 °C compared to ice chilled storage.  相似文献
