The equine alpha(s1)- and beta-caseins (CN) were purified by chromatography on DEAE-cellulose and by reversed-phase HPLC. The alpha(s1)-, beta-, and kappa-CN were characterized either by monodimensional urea-PAGE or sodium dodecylsulfate (SDS)-PAGE or by bidimensional electrophoresis. Kappa-casein was characterized after electrophoresis by glycoprotein-specific staining. To identify alpha(s1)-CN without ambiguity, internal sequences were determined after trypsin or chymosin digestion of purified alpha(s1)-CN. These sequences, that could be estimated to correspond to 62% of the full protein, presented strong identities with regions of alpha(s1)-CN primary structures of other species. In particular, 51, 48, 43, and 40% identities were obtained with corresponding regions of sow, dromedary, cow, and human alpha(s1)-CN, respectively. On the other hand, trace amounts of equine gamma-CN-like and proteose peptone component 5-like peptides were found in the whole CN. They were identified by microsequencing and corresponded to beta-CN peptides generated by plasmin action on the whole CN. The equine alpha(s1), beta-, and kappa-CN were separated by bidimensional electrophoresis in numerous isoelectric variants with apparent isoelectric points distributed between pH 4.4 to 6.3, 4.4 to 5.9, and 3.5 to 5.5, respectively. The beta- and kappa-CN displayed a more acidic character in the mare than in the cow.  相似文献

While there has long been public concern over the use of artificial/synthetic food colors, it should be remembered that food and drink products (e.g., red wine) have been purposefully colored for millennia. This narrative historical review highlights a number of reasons that food and drink have been colored, including to capture the shopper's visual attention through to signaling the likely taste/flavor. Over the course of the last century, there has, on occasion, also been interest in the playful, or sometimes even deliberately discombobulating, use of food coloring by modernist chefs and others. The coloring (or absence of color) of food and drink can, though, sometimes also take on more of a symbolic meaning, and, in a few cases, specific food colors may acquire a signature, or branded (i.e., semantic) association. That said, with food color being associated with so many different potential “meanings,” it is an open question as to which meaning the consumer will associate with any given instance of color in food, and what role context may play in their decision. Laboratory-based sensory science research may not necessarily successfully capture the full range of meanings that may be associated with food color in the mind of the consumer. Nevertheless, it seems likely that food color will continue to play an important role in dictating consumer behavior in the years to come, even though the visual appearance of food is increasingly being mediated via technological means, including virtual and augmented reality.  相似文献

北海道从1980年代开始到2010年代为止,水稻大田栽培期间的5–9月份气温随着年代而不断上升。与最近的2010年代(2010—2019年平均)相比,使用两种2030年代的预测气象,根据以往研究得到的关系方程预测研究了水稻生育。其结果,2030年代比2010年代,插秧日期期限(插秧最早期限)比水稻栽培17个地区平均值要早8~9天。另外,抽穗日期最早期限要早1~5天,抽穗日期最晚期限要晚1~5天,安全抽穗期间要长2~10天,抽穗日期要早1~3天。由于从抽穗日期到最晚抽穗为止要长2~9天,延迟型冷害的发生要略少。关于各生育期的气象,抽穗前24天以后的30天期间的平均气温因为生育早而相同或略低。抽穗前10天以后的40天期间以及抽穗日期以后的40天期间的平均气温略高,日射量略少。因此,糙米产量为96%~98%,要略低,显示潜在产量特性的气候灌浆量指数相同。因为与障碍秕粒发生有关的孕穗期冷害危险期的平均气温略低或基本相同,带来发生冷害的风险。另一方面,引起秕粒发生的低温区的出现频率在地区间具有差异。虽然大米蛋白质含量相同,但直链淀粉含量略低、食味略良。关于米粒外观品质,受害粒比率和着色粒比率没有一定的变化趋势,未熟粒比率略高,大米白度相同,糙米白度略高。通过上述预测研究显示了未来日本寒冷地带水稻生育的技术应对方向。  相似文献
