Power ultrasound is recognised as a potential non-thermal technique to inactivate micro-organisms pertinent to fruit juices. In this study tomato juice was sonicated at different amplitude levels (24.4–61.0 μm) at a constant frequency of 20 kHz for treatment times (2–10 min) and pulse durations of 5 s on and 5 s off. Hunter colour values (L∗, a∗ and b∗), pH, °Brix, titratable acidity, ascorbic acid and yeast inactivation were measured. No significant differences (p < 0.05) in pH, °Brix or titratable acidity were observed. Regression modelling was used to investigate the main effects of amplitude level and treatment time. Prediction models were found to be significant (p < 0.05) with low standard errors and high coefficients of determination (R2). Model predictions for critical quality parameters of Hunter colour values (L∗, a∗ and b∗), ascorbic acid and yeast inactivation were closely correlated with the experimental results obtained.  相似文献

Urmu mulberry (Morus nigra L.) juice was concentrated from 15.02 to 45.20 °Brix by rotary vacuum evaporator at 40 °C. The objectives of this study were to determine the titratable acidity, soluble solid content, antioxidant capacity, total monomeric anthocyanins and total phenolic matter in prepared concentrate, to investigate the thermal degradation kinetics of anthocyanins and Hunter colour parameters (L, a, b) and total colour difference (TCD) and to develop a relationship between visual colour and anthocyanin during thermal processing at 60, 70 and 80 °C. Monomeric anthocyanin degradation showed a first order reaction kinetics. The zero order, first order and a combined kinetics model were applied to the changes in Hunter colour parameters (L, a and b) and total colour difference (TCD). All colour parameters followed an apparent combined kinetics model. The degradation of anthocyanins showed positive correlation with a, b and L and negative correlation with TCD.  相似文献

Freshly squeezed orange juice samples were sonicated at a constant frequency of 20 kHz for a range of processing temperatures (10–30 °C), amplitude levels (40–100%) and time (2–10 min) with pulse durations of 5 s on and 5 s off. Hunter colour values (L*, a* and b*), pH, oBrix, titratable acidity, cloud, non-enzymatic browning and ascorbic acid content were measured. Response surface methodology (RSM) based upon a three-factor, three-level Box–Behnken experimental design was used to determine the effect of independent variables. Under process conditions used in this study, no significant difference (p < 0.05) in pH, oBrix or titratable acidity was observed. Model predictions developed for Hunter colour values, cloud value, non-enzymatic browning and ascorbic acid content were closely correlated (R 2 > 0.92) to experimental data. Box–Behnken design and RSM was demonstrated to be an effective technique to model the effect of sonication on juice quality while minimising the number of experiments required.  相似文献

Starfruit juice were exposed to ultraviolet (UV-C) light for 0, 30 and 60 min at room temperature (25 ± 1 °C). On exposure, the titratable acidity significantly decreased, while the decrease in °Brix and pH were not significant. With regard to colorimetric parameters, L value increased significantly with a subsequent decrease in a and b values corresponding to UV treatment time. Except for the ascorbic acid, other antioxidants measured (% DPPH inhibition, total phenols, flavonols, flavonoids and antioxidant capacity) showed enhancement on expsoure to UV (significant at 60 min). Microbial studies showed reduction in APC, yeasts and mould counts by 2-log cycle on UV treatments. These results supports the application of UV as a measure of non-thermal and physical food preservation technique for starfruit juice that can be explored commercially to benefit both the producers and consumers.  相似文献

Fresh apple juice was heated at 95 °C for 30 and 60 min, and then stored for 6 days for obtaining different extent of non-enzymatic browning. Front-face fluorescence excitation–emission-matrix (EEM) with excitation at 355 and 400 nm and emission ranges of 385–600, and 430–600 nm was used to measure the juice samples. The sign test pointed out an enhanced sensitivity of EEM compared to commonly used browning indicators, such as non-enzymatic browning index (NEBI), color readings in Lab space, and the concentration of 5-hydroxymethylfurfural (HMF). Using the fluorescence data, the correctness of classifications of fresh juice, heated juice, and stored juice were >85%. Multivariate analyses were applied to study the relations of fluorescence emission spectra and common indicators. For predicting NEBI, b, and HMF, the correlation coefficients were >0.80. Resulting, the spectroscopic analyses of fluorescent neoformed products such as HMF provide a feasible approach to monitor non-enzymatic browning of juice.  相似文献

Enzymatic browning reactions limit the commercial shelf life of apple juice, so that colour preservation during storage is one of the main objectives of fruit processors. In this paper, the colour of fresh apple juice was evaluated in the presence of different types of cyclodextrins (CDs) (α-CD, β-CD, γ-CD and maltosyl-β-CD), compounds that bind or complex polyphenol oxidase substrates. The effectiveness of CDs as browning inhibitors was determined as the difference between the colours observed in the CD-treated sample and the controls, using the colour space CIE-L, a, b system. Although the effect of CDs on apple juice enzymatic browning has been studied, the action mechanism involved remains a subject of controversy. In this work, we have kinetically modelled apple juice enzymatic browning in the absence and presence of maltosyl-β-CD. The complexation constant between the mixtures of diphenols present in apple juice and maltosyl-β-CD was calculated (Kc = 4.09 mM−1). Different concentrations of maltosyl-β-CD modified the evolution of lightness (L), total colour (ΔE) and hue angle (H) because of the higher affinity constant it shows for the compounds responsible for apple juice browning than do α-CD, β-CD and γ-CD. Moreover, in this paper we show that maltosyl-β-CD can enhance the ability of ascorbic acid to prevent the enzymatic browning due to the protective effect of maltosyl-β-CD against ascorbic acid oxidation. Hence, maltosyl-β-CD seems to act as a “secondary antioxidant”, reducing apple juice browning and enhancing the naturally occurring antioxidant capacity of a food.  相似文献

The aim was to develop snack bars with high dietary fibre (DF) and polyphenol contents. Snack bar base was formulated without (control bar) or with fibre (inulin or apple DF bar). Snack bar filling was formulated with or without apple polyphenol extract (APE). Nutritional assessment of snack bars was based on the total DF, phenolics, protein, fat, uronic acid (UA) and moisture contents, water activity, Hunter Lab colour, hardness, and phenolic composition. Results showed that snack bars with added apple DFs gave the highest amount of total DF (∼5.3% w/w). Good quantities of phenolics were also retained in the snack bars with added apple DF and APE after baking. With APE in the bar filling, the snack bars enhanced with apple DF or inulin had higher levels of extracted phenolics (2.87 and 2.22 mg catechin equivalent (CtE)/g bar) than the control bars (1.45 mg CtE/g bar). The phenolic profiles of snack bars obtained by HPLC resembled that of the APE ingredient. The Hunter Lab colour and water activity values suggested that the addition of APE did not cause extra browning and the resultant snack bars would possess a good shelf life. Therefore, snack bars enhanced with apple DF and APE may be a convenient functional food, offering a good source of DF and apple polyphenols.  相似文献

Physicochemical changes, such as peel and flesh colours, total anthocyanin content, browning index, firmness, total soluble solid (TSS), titratable acidity (TA), sugar acid ratio (TSS/TA), antioxidant capacity, total phenolic content and ascorbic acid content, in fresh-cut Taaptimjan wax apple fruit stored at 4 ± 2 °C and 12 ± 2 °C for 7 days were investigated. The skin of fresh-cut fruit stored at 4 ± 2 °C showed higher a value, chroma and total anthocyanin content and lower hue angle than those stored at 12 ± 2 °C. Lightness (L value) and whiteness index of the fresh-cut fruit flesh stored at 12 ± 2 °C showed significantly lower than those stored at 4 ± 2 °C which related to an significant increase in browning index. Firmness, total soluble solid, titratable acidity and sugar acid ratio did not significant changes during storage. Antioxidant capacity and total phenolic content increased throughout storage. Ascorbic acid content of the fresh-cut fruit stored at 4 ± 2 °C remained constant throughout storage whilst ascorbic content at 12 ± 2 °C decreased and was lower than that at 4 ± 2 °C. At 4 ± 2 °C antioxidant capacity and ascorbic acid content were higher than that stored at 12 ± 2 °C whilst there was no significant difference in total phenolic content. In conclusion, the reduction of whiteness index and the increase in browning index of fresh-cut wax apple flesh were the key factors affecting its quality and storage at 4 ± 2 °C could reduce the change in the flesh colour and maintained the peel colour and nutritional values of fresh-cut wax apple fruit during storage.  相似文献

The relationship between colour parameters and anthocyanins of four sweet cherry cultivars, Burlat, Saco, Summit and Van was studied. The colour (L, a, b, chroma and hue angle parameters) and anthocyanins were analysed during two different years at two different ripening stages (partially ripe, and ripe, respectively). The cherries were analysed at harvest and after storage at 1.5 ± 0.5 °C and 15 ± 5 °C for 30 and 6 days, respectively. The colour was measured by tristimulus colourimetry (CIELAB system) directly on the fruits, while anthocyanins were quantified by HPLC-DAD analysis on methanolic extracts of freeze-dried samples of the fresh cherries and on the differently stored cherries. L, chroma, and hue angle values were always lower for the ripe than for the partially ripe cherries. All of the cultivars were found to contain cyanidin-3-rutinoside and cyanidin-3-glucoside as the major anthocyanins. The total anthocyanin content in fruits of the different cultivars varied in the order Burlat > Saco > Van > Summit. The concentration of anthocyanins increased at both temperatures of storage in both ripe and partially ripe cherries, but the extent of increase varied among cultivars. Cherries stored at 15 ± 5 °C showed higher reduction of L, chroma and hue angle than fruits stored at 1.5 ± 0.5 °C. L, a, b, chroma and hue angle correlated negatively (P < 0.001) with the total anthocyanins levels, but not with the total phenols. These results show that chromatic functions of chroma and hue correlate closely with the evolution of colour and anthocyanins levels during storage of sweet cherries and indicate that colour measurements can be used to monitor pigment evolution and anthocyanin contents of cherries (and vice versa).  相似文献

Carotenoid contents of extruded and non-extruded flours of Papua New Guinean and Australian sweetpotato cultivars were studied, using spectrophotometry and high performance liquid chromatography (HPLC). The cultivars differed (p < 0.05) in their total carotenoid and β-carotene contents, and the Original Beauregard cultivar had the highest total carotenoid and β-carotene contents among the cultivars. The spectrophotometry (84–1720 μg/g solids) method generally over-estimated the total carotenoid content compared to the more specific HPLC (23–355 μg/g solids) method. Extrusion significantly (p < 0.05) decreased the ΔL Hunter colour values, while the Δa, Δb, total colour change (ΔE), chroma (CR), and browning indices (BI) increased. With the extruder and screw configuration used, extrusion at 40% moisture and 300 rpm screw speed retained carotenoid maximally at more than 80%. This study reports, for the first time, carotenoids of flours from south Pacific sweetpotato cultivars, and carotenoid retention during extrusion.  相似文献

The optimum harvesting period of longkong from 13 to 16 weeks of maturation were used to analyse the changes in physiochemical and browning related enzymes. The colour, such as lightness (L) and yellowness (b) decreased and conversely redness (a) increased. The fruit weight was significantly increased from 21.21 to 24.93 g and the diameter was also increased (p > 0.05). Chemical qualities, such as total soluble solids, pH, total sugar and reducing sugar increased while titratable acidity decreased at the end of maturation period (p < 0.05). The antioxidant activity, such as 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity (from 4.73 to 8.97 mg/100 g), ferric reducing antioxidant power (from 5.06 to 6.83 mg/100 g) and total phenolic content increased (from 42.65 to 58.71 mg/100 g) (p < 0.05). The polyphenol oxidase activity significantly increased throughout the maturation; peroxidase and phenyl alanine ammonia lyase enzymes increased at the beginning but after that they decreased at the end of the maturation period. Peel epidermal trichomes losses on the surface and parenchyma cell changes in the cross section were found during these stages.  相似文献

Strawberry juice samples were ozonated with processing variables of ozone concentration (1.6–7.8% w/w) and treatment time (0–10 min). Effects of processing variables on anthocyanins (P3G), ascorbic acid (AA) and colour values (L, a, and b) were determined. Significant reductions in anthocyanin content (98.2%) and ascorbic acid (85.8%) were observed at an ozone concentration of 7.8% w/w and a treatment time of 10 min. The changes in lightness (L) values and total colour difference (TCD) values were fitted well to zero-order kinetics, whereas, a, b followed first-order kinetics. P3G and AA were fitted to first order and fraction conversion models. The rate constants for L, a, b and TCD were linearly correlated with ozone concentration, whereas, P3G and AA were exponentially related.  相似文献

Processing of Dioscorea dumetorum tubers into flour could be a means of adding a longer-term value to this tropical plant with a high nutritional potential but which possesses a post-harvest hardening problem, characterised by a hard-to-cook defect. In an attempt to investigate the changes leading to fermentation of hardened tubers, CIE Lab parameters and some physicochemical properties of the yams were monitored. Four fermentation periods (0, 2, 4, 7 and 14 days) under ambient temperature (23 ± 5 °C) in the presence and absence of oxygen were studied. The results showed that fermentation significantly (p ? 0.05) increased a and b parameters, and decreased L parameter. However, browning affected more tubers fermented in the presence of oxygen. All the anti-nutrients evaluated (total phenols, phytic acid, oxalates, trypsin inhibitors and α-amylase inhibitors) decreased by significant levels (p ? 0.05) within 14 days of fermentation. However, the rates of anti-nutrient losses varied for each constituent and followed first-order reaction kinetics.  相似文献

The effects of electrical stimulation (90 V) 20 min post mortem on meat quality and muscle fibre types of four age group camels (1–3, 4–6, 7–9, 10–12 years) camels were assessed. Quality of the Longissimus thoracis at 1 and 7 days post mortem ageing was evaluated using shear force, pH, sarcomere length, myofibrillar fragmentation index, expressed juice, cooking loss and L, a, b colour values. Age of camel and electrical stimulation had a significant effect on meat quality of L. thoracis. Electrical stimulation resulted in a significantly (P < 0.05) more rapid pH fall in muscle during the first 24 h after slaughter. Muscles from electrically-stimulated carcasses had significantly (P < 0.05) lower pH values, longer sarcomeres, lower shear force value, higher expressed juice and myofibrillar fragmentation index than those from non-stimulated ones. Electrically-stimulated meat was significantly (P < 0.05) lighter in colour than non-stimulated based on L value. Muscles of 1–3 year camels had a significantly (P < 0.05) lower shear force value, and pH, but longer sarcomere, and higher myofibrillar fragmentation index, expressed juice, and lightness colour (L) than those of the 10–12 years camels. The proportions of Type I, Type IIA and Type IIB were 25.0, 41.1 and 33.6%, respectively were found in camel meat. Muscle samples from 1–3 year camels had significantly (P < 0.05) higher Type I and lower Type IIB fibres compared to those from 10–12 year camel samples. These results indicated that age and ES had a significant effect on camel meat quality.  相似文献

Intermediate moisture products made from blanched apple flesh and green tea extract (about 6 mg of monomeric flavan 3-ols added per g of dry apple) or blanched apple flesh (control) were produced, and their quality attributes were investigated over storage for two months at water activity (aw) levels of 0.55 and 0.75, at 30 °C. Products were evaluated for colour (L, a, and b Hunter’s parameters), phytochemical contents (flavan 3-ols, chlorogenic acid, dihydrochalcones, ascorbic acid and total polyphenols), ferric reducing antioxidant potential, 2,2-diphenyl-1-(2,4,6-trinitrophenyl)hydrazyl radical-scavenging activity and ability to inhibit formation of fructose-induced advanced glycation end-products.  相似文献

The effect of different ultra-high pressure homogenisation (UHPH) treatments on physicochemical and sensorial properties of orange juice was studied in comparison with thermal pasteurisation (90 °C, 1 min). UHPH treatments consisted on combinations of two inlet temperatures (10 or 20 °C) and three pressures (100, 200 and 300 MPa). Effect of treatments was assessed on general quality parameters (colour, pH, °Brix, titratable acidity, reducing sugars and non-enzymatic browning index), particle size distribution and cloud stability. None of the UHPH treatments caused significant differences in the °Brix, reducing sugars, pH and non-enzymatic browning index with respect of fresh or pasteurised juice. Only titratable acidity was significantly lower when inlet temperature of UHPH treatments was 20 °C. UHPH treatments significantly reduced the particle size and in consequence the cloudiness and the total colour value (∆E*) increased. The overall consumer acceptability of UHPH and pasteurised juices was similar.  相似文献

The inactivation kinetics of the enzymes peroxidase, polyphenoloxidase and inulinase and changes in the color parameters L, a and b of garlic cloves cut in slices, were studied during steam blanching at 100 °C and water at 80 and 90 °C. The garlic cloves were peeled, cut into slices and distributed uniformly in metal baskets and one batch placed in an autoclave generating steam at a temperature of 100 °C; and the others in water baths at 80 and 90 °C. The best blanching conditions were in steam for 4 min, where no changes in texture were observed, and the enzymatic activities were reduced by 93.53%, 92.15% and 81.96% for peroxidase, polyphenoloxidase and inulinase, respectively. Under these conditions the inulin concentration reduced by 3.72%. The color parameter L increased with increase in blanching time, the samples becoming lighter in color, and the parameters a and b decreased, obtaining slices that were greener and bluer.  相似文献

This study aimed to evaluate the effects of osmotic dehydration sheet (ODS) packaging on the quality parameters of beef biceps femoris muscle samples stored at 4 °C for 0, 1, 3 and 7 days. Quality indices such as Hunter color values (L, a and b, the percentage of metmyoglobin (Met-Mb%), K value (freshness index), and the contents of adenosine triphosphate (ATP)-related compounds (ARCs), thiobarbituric acid reactive substances (TBA-RS) and volatile basic nitrogen (VBN) were measured. ODS gave lower a and b values and lower Met-Mb% compared with control samples wrapped in polyvinylidene chloride film (PVDCF) (P < 0.01), but had no effect on L (P < 0.01). As a result, with higher levels of osmotic dehydration produced by the ODS, the percentage of weight loss and the total contents of ARCs and inosine monophosphate of the samples also increased (P < 0.05). The K values of ODS samples were also significantly lower than PVDCF-wrapped samples (P < 0.05). Low performance ODS wrapping reduced the TBA-RS values below those found with PVDCF and high performance ODS processing (P < 0.01). Moreover, the use of ODS had no effect on VBN values. Thus, although the bright red of beef samples changed to a dark purple color and the weights of samples decreased, the ODS approach has potential as a tool for decreasing the deterioration of other quality indices such as Met-Mb%, TBA-RS, ARCs, K values and the VBN content of cold-stored beef.  相似文献

Effect of aqueous chlorine dioxide (ClO2) treatment on browning of fresh-cut lotus root (FLR) was investigated to explore the feasibility to apply ClO2 for browning inhibition of fresh-cut products. Cut lotus roots were treated in ClO2 solutions at different concentrations (10, 50 and 100 mg/l) for different time (5, 10 and 15 min), followed by chilled storage for 8-10 days at 4 °C. Color parameters (L, a and b), polyphenol oxidase (PPO) activity and overall visual quality (OVQ) were measured at one-day interval during storage. Results showed that higher ClO2 concentration and longer treatment time can provide better inhibitory effects on the browning of FLR. ClO2 concentration, treatment time and storage time were three significant factors (P < 0.05) and some significant interactions were observed. PPO activities were largely inhibited by 100 mg/l ClO2 treatment for 10 min. The 100 mg/l ClO2 treatment maintained high OVQ scores during 10-day storage; while 50 mg/l ClO2 treatment was acceptable for maintaining OVQ during 4-day storage. ClO2 treatment was demonstrated to be a promising alternative approach to control browning and improve OVQ of FLR.  相似文献
