The paper analyses the results of the research on drying a variety of giant pumpkin (Justynka – 957). The research involved drying kinetics of pumpkin as well as changes in the volume of 10 mm pumpkin cubes, dried at the temperature of 80 °C, using free (natural) convection and in the forced convection in the tunnel dryer, with the drying factor speed of 1.2 m s−1 and in the fluid bed dryer. Drying kinetics of pumpkin pieces dried in the tunnel dryer, fluid bed dryer and during two-stage initial drying in the tunnel, and in the fluid bed dryer were examined. Measurements results were used to verify the theoretical models of drying kinetics of the first period taking volume shrinkage into consideration, and the second period of the examined processes.  相似文献

Characterization of microwave vacuum-dried durian chips   总被引:1,自引:0,他引:1  
Durian CV. Monthong was subjected to microwave vacuum drying (at 13.33 kPa) to produce durian chips. Various levels of microwave power (3.88 W g−1, 5.49 W g−1 and 7.23 W g−1) were used. Prior to the microwave vacuum drying, the sliced durian was either chilled at 4 °C or frozen at −18 °C. Both pretreatments yielded non-significant difference in dissipation factor (p > 0.05). Among several thin layer models, the Page model was found to be the best for explaining the drying characteristics of durian chips. An increase in the microwave power intensity produced a clear increase in the drying rate and did not affect lightness and yellowness of the durian chips (p > 0.05). The structure and hardness of the dried durian chips were comparable to that of conventionally fried durian chips. In addition, microwave vacuum drying reduced the fat content of the durian chips by at least 90%, compared with conventionally deep fried durian chips.  相似文献

We evaluated the finished product quality and infrared (IR) drying characteristics of fresh and sugar-infused blueberries dried with a catalytic infrared (CIR) dryer. IR drying tests were conducted at four product temperatures (60, 70, 80, and 90 °C) to evaluate the drying rate and the color and texture of the finished product. Fresh blueberries dried with convective hot air drying at 60 °C were used as control for comparison. The experimental data of moisture changes during IR drying were modeled with eight different models, including Page, modified Page, Thompson, Newton, Wang and Singh, and Henderson and Pabis, and two models developed in this study. The Thompson model showed the best fit to all experimental data. The CIR drying produced firmer-texture products with much reduced drying time compared with hot air drying. For fresh blueberries, CIR drying conserved drying time by 44% at 60 °C. The effective moisture diffusivity ranged from 2.24 × 10−10 to 16.4 × 10−10 m2/s and from 0.61 × 10−10 to 3.84 × 10−10 m2/s for fresh and sugar-infused blueberries, respectively.  相似文献

The mutagenic heterocyclic amines (HAs) originate in processed proteinaceous food. The effects of ageing (non-aged - i.e. 24 h post mortem vs. 14 and 28 days post mortem kept at 1 °C) and final internal temperature on cooking (Ti, 65 and 80 °C) on the content of HAs in grilled steaks (two-plated grill, temperature of 220 °C) were studied. HA precursors (creatine, creatinine, and free amino acids) and ageing indicators, such as instrumentally measured colour values, pHultimate values and length of myofibrilar fragments on raw and cutting values on grilled beef Longissimus dorsi muscles were determined. The muscles originated from eight commercially slaughtered Simmental bulls, 19-20 months old. The content of HAs was determined by a solid-phase extraction procedure. Meat ageing is accompanied by large changes in the chemical composition and structure of muscle tissues. In general, all the ageing indicators and precursors of HAs were influenced by ageing time at the 5% level or less. Creatine content declined significantly (non-aged: 6.00 mg g−1, 14 days: 5.82 mg g−1, and 28 days: 5.55 mg g−1) and creatinine increased with days of ageing (non-aged: 0.19 mg g−1, 14 days: 0.24 mg g−1, and 28 days: 0.26 mg g−1). Higher contents of total free amino acids were determined after 14 and 28 days of storage (28.18 μmol g−1 and 37.59 μmol g−1) than in non-aged beef (19.00 μmol g−1). In this study, two HAs were determined: MeIQx (2-amino-3,8-dimethyl-imidazo[4,5-f]quinoxaline) and PhIP (2—amino-1-methyl-6-phenylimidazo-[4,5-b]pyridine). The content of HAs increases with ageing. At lower Ti, more MeIQx was formed; at higher Ti, more PhIP was formed. MeIQx was present in all samples while PhIP was found only in samples grilled to higher Ti. Samples treated to Ti = 80 °C generally contained less HAs (non-aged meat: 0.20 ng g−1, 14 days: 0.26 ng g−1, and 28 days: 0.28 ng g−1) than samples treated to Ti = 65 °C (non-aged meat: 0.19 ng g−1, 14 days: 0.36 ng g−1, and 28 days: 0.39 ng g−1) on account of MeIQx thermolability.  相似文献

Kinetics and modeling of whole longan with combined infrared and hot air   总被引:2,自引:0,他引:2  
The aim of this research was to evaluate the effects of operating variables on the drying behavior of whole longan undergoing a combined infrared and hot air drying process, to determine its kinetic parameters, and to develop drying kinetic models. The single-layer drying experiments were carried out at infrared powers of 300, 500 and 700 W, drying air temperatures of 40, 60 and 80 °C, and air velocities of 0.5, 1.0 and 1.5 m/s. The samples were dried until attaining a final moisture content of 0.2 kg water/kg dry solid. The results show that the drying had a short constant rate period followed by a falling rate period in all cases. The drying rate and product temperature were significantly influenced by infrared power, temperature and velocity of ambient air. In the constant rate period, the mass transfer coefficient varied from 3.646 × 10−3 to 1.914 × 10−2 m/s. It increased with increasing infrared power, but decreased as air velocity and air temperature increased. In the falling rate period, theoretical and semi-empirical drying kinetic equations were used to describe the drying kinetics of the product. It was found that the overall effective diffusion coefficient and drying constant varied from 7.012 × 10−11 to 6.681 × 10−10 m2/s and 0.026 to 0.234 h−1, respectively. Both parameters increased with increasing infrared power and air temperature, but decreased with increasing air velocity. Combined regression equations developed to predict the drying kinetic parameters (hD, Deff and k) for all three models gave a fairly good fit.  相似文献

In this study, sulphurated and nonsulphurated Hacihaliloglu apricots (Prunus armenica L.) which is the most widely produced cultivar in Turkey were used to study the effects of different hot air drying temperatures (50, 60, 70, and 80 °C) and sun drying on color and β-carotene content of apricot. The time required to obtain the desired final dry matter in hot air drying was lower than sun drying. Sulphuration also decreased drying time at all drying conditions. Color values and β-carotene content of hot air dried samples were favorable in comparison to air drying. β-carotene content in dried apricots at 70 and 80 °C was 7.14, 7.17 mg 100 g−1 dry matter and 6.12, 6.48 mg 100 g−1 dry matter for sulphurated and nonsulphurated apricots, respectively. A good relationship was found between treatments (drying temperatures and drying times) and β-carotene content for sulphurated and nonsulphurated apricots (R2=0.9422 and 0.9129, respectively).  相似文献

The influence of the drying method on volatile compounds of Origanum vulgare was evaluated. The drying methods tested were convective (CD) at 60 °C and vacuum-microwave (VMD), as well as a combination of convective pre-drying and VM finish-drying (CPD–VMFD). The volatile compounds of fresh and dried oregano were extracted by steam-hydrodistillation and analyzed by GC–MS. Oregano drying kinetics was described by a simple exponential model for CD and CPD–VMFD, while VMD kinetics consisted of two periods: linear until a critical point and exponential beyond that point. Thirty-four compounds were tentatively identified, with carvacrol, thymol, and γ-terpinene, being the major components. The total volatiles concentration of fresh oregano (33.0 g kg−1) decreased significantly during drying, independently of the method used (CD: 10.2 g kg−1, CPD–VMFD: 13.1 g kg−1, and VMD: 27.9 g kg−1). The final conclusion was that VM dehydrated Polish oregano was of better aromatic quality than that dried using hot air.  相似文献

This study examined the ability of near infrared reflectance spectroscopy (NIRS) to estimate the concentration of polyunsaturated fatty acids and their biohydrogenation products in the subcutaneous fat of beef cows fed flaxseed. Subcutaneous fat samples at the 12th rib of 62 cows were stored at − 80 °C, thawed, scanned over a NIR spectral range from 400 to 2498 nm at 31 °C and 2 °C, and subsequently analysed for fatty acid composition. Best NIRS calibrations were with samples at 31 °C, showing high predictability for most of the n−3 (R2: 0.81-0.86; RMSECV: 0.11-1.56 mg g− 1 fat) and linolenic acid biohydrogenation products such as conjugated linolenic acids, conjugated linoleic acids (CLA), non-CLA dienes and trans-monounsaturated fatty acids with R2 (RMSECV, mg g− 1 fat) of 0.85-0.85 (0.16-0.37), 0.84-0.90 (0.21-2.58), 0.90 (5.49) and 0.84-0.90 (4.24-8.83), respectively. NIRS could discriminate 100% of subcutaneous fat samples from beef cows fed diets with and without flaxseed.  相似文献

The foaming of ripe bananas and the forced air-drying characteristics of the resulting banana foam mats were studied. Fresh banana puree with a density of 0.93 g/ml was foamed to a density of 0.50 g/ml after 12 min of whipping by the addition of 10 g/100 g soy protein as a foam inducer. Glyceryl monostearate did not induce foaming while commercially available food ingredients, Dream Whip and Gelatine induced foaming but such foams were not suitable for subsequent drying. Banana foam mats were dried at temperatures from 45°C to 90°C in a forced air, cabinet dryer, to a hard, porous and brittle solid which was amenable to grinding so as to produce a dehydrated banana powder. The transient drying behaviour of such mats was described by a capillary model of the form ln(M/M0)=−Kt and over the bulk of the moisture ratio range, 0.05?M/M0?1.0. The drying time (t) was directly related to the thickness of the foam mats. K values increased from 0.248 to 0.809 h−1 as the drying air temperature was raised from 45°C to 90°C. Increasing the air velocity from 0.62 to 1.03 m/s did not profoundly influence the drying rate.  相似文献

Ten popular species of both edible and medicinal Korean mushrooms were analysed for their free amino acids and disaccharides. The average total free amino acid concentration was 120.79 mg g−1 in edible mushrooms and 61.47 mg g−1 in medicinal mushrooms, respectively. The average total of free amino acids for all mushrooms, edible mushrooms and medicinal mushrooms was 91.13 mg g−1. Agaricus blazei (227.00 mg g−1) showed the highest concentration of total free amino acids; on the other hand, Inonotus obliquus (2.00 mg g−1) showed the lowest concentration among the 10 species of mushrooms. The average total carbohydrates concentration was 46.67 mg g−1 in the 10 species of mushrooms, where the edible mushrooms contained 66.68 mg g−1 and the medicinal mushrooms contained 26.65 mg g−1. The carbohydrates constituents of the 10 mushroom species were mainly mannose (36.23%), glucose (34.70%), and xylose (16.83%).  相似文献

The objective of this research was to verify the effect of drying conditions on thermal properties and resistant starch content of green banana flour (Musa cavendishii). The green banana flour is a complex-carbohydrates source, mainly of resistant starch, and quantifying its gelatinization is important to understand how it affects food processing and the functional properties of the flour. The green banana flour was obtained by drying unripe peeled bananas (first stage of ripening) in a dryer tunnel at 52 °C, 55 °C and 58 °C and air velocity at 0.6 m s−1, 1.0 m s−1 and 1.4 m s−1. The results obtained from differential scanning calorimetry (DSC) curves show a single endothermic transition and a flow of maximum heating at peak temperatures from (67.95 ± 0.31) °C to (68.63 ± 0.28) °C. ANOVA shows that only drying temperature influenced significantly (P < 0.05) the gelatinization peak temperature (Tp). Gelatinization enthalpy (ΔH) varied from 9.04 J g−1 to 11.63 J g−1 and no significant difference was observed for either temperature or air velocity. The resistant starch content of the flour produced varied from (40.9 ± 0.4) g/100 g to (58.5 ± 5.4) g/100 g, on dry basis (d. b.), and was influenced by the combination of drying conditions: flour produced at 55 °C/1.4 m s−1 and 55 °C/1.0 m s−1 presented higher content of resistant starch.  相似文献

Minor carbohydrates present in carrot (Daucus carota L.) have been studied by GC–MS analysis of their trimethylsilyl derivatives because of their remarkable role in a variety of biological functions. Scyllo-inositol and sedoheptulose (d-altro-2-heptulose), identified for the first time in this paper were present in all the carrots analysed in concentrations ranging 1.5–5.8 and 1.4–24.6 mg g−1 dried weight, respectively. Other minor carbohydrates detected in carrot were myo- inositol (2.2–9.8 mg g−1) and mannitol (traces-1.3 mg g−1). Whereas small amounts (close to 2 mg g−1) of scyllo-inositol were experimentally determined in other vegetables from the Apiaceae family (parsley, coriander and fennel), sedoheptulose was only detected at trace levels.  相似文献

The aim of this work was to study the impact of fortification with commercial pea protein concentrate on the evolution of the moisture content, density, shrinkage and porosity of pasta made from durum wheat semolina during drying. Pasta were processed from durum wheat semolina enriched with pea protein concentrate at 0, 5, 10 and 15 g 100-g-dry matter−1 and dried at low (40 °C) and high (80 °C) temperature. Moisture content, density, shrinkage and porosity and effective moisture diffusivity coefficients were linked through theoretical development. It enabled to study the behaviour of the properties as a function of drying time. The results showed that drying temperature has a greater effect on the studied properties than enrichment with pea protein concentrate. Drying at 80 °C increased radial and total shrinkage compared to drying at 40 °C, but no differences were observed for longitudinal shrinkage. Pasta dried at 80 °C were denser and overall less porous, but had greater internal porosity. The volumetric percentage of water lost during drying replaced by air within the pasta matrix was lower at 80 °C. Scanning electron microscopy analysis showed that the gluten network of pasta dried at 80 °C seems denser and more continuous. Effective moisture diffusivity coefficients of pasta dried at 80 °C were higher at 5 and 10 g 100-g-dry matter−1 enrichment level compared to the control.  相似文献

Four different phytopharmaceutical dosage forms for use in weight control programs were analyzed. Two different ground herbal blends and their correspondent infusions, a capsule and a tincture were investigated for the presence of compounds used as adulterants in these products. A capillary electrophoresis (CE) method was developed and validated. The optimized experimental conditions were: BGE, sodium tetraborate buffer 20 mM, pH 9.2, voltage applied 30 kV, capillary temperature 25 °C, injection sample at 0.5 Psi during 5 s. Ephedrine, norephedrine, caffeine and furosemide were baseline separated in less than 7 min; the migration times were found to be 2.65, 2.90, 3.75 and 6.58 min, respectively. The analysis showed in sample 3 concentrations of 0.45 ± 0.03 mg g−1 (ephedrine), 0.33 ± 0.02 mg g−1 (norephedrine), 1.09 ± 0.41 mg g−1 (caffeine) and 0.80 ± 0.17 mg g−1 (furosemide). Caffeine content in samples 1, 2 and 4 was 0.61 ± 0.06 mg g−1, 15.66 ± 1.05 mg g−1 and 2.27 ± 0.13 mg ml−1, respectively. Linearity was obtained in the concentration range of 1–1000 μg ml−1. Limits of detection (LOD) and quantification (LOQ) were determined as 0.42 μg ml−1 and 1.40 μg ml−1 (ephedrine), 0.47 μg ml−1 and 1.40 μg ml−1 (norephedrine), 0.12 μg ml−1 and 0.48 μg ml−1 (caffeine), 0.22 μg ml−1 and 0.73 μg ml−1 (furosemide).  相似文献

Fructose, glucose and sucrose, as the major soluble sugars and citric and malic acids, as the major organic acids, were identified and determined in kale (Brassica oleraceae L. var. acephala DC., black cabbage) leaves. Fructose was the predominant sugar (2011 mg 100 g−1 dry wt) identified, followed by glucose (1056 mg 100 g−1 dry wt) and sucrose (894 mg 100 g−1 dry wt). The contents of citric and malic acids were at 2213 and 151 mg 100 g−1 dry wt in the leaves. The 16:0, 18:2n − 6 and 18:3n − 3 fatty acids were the most abundant fatty acids in the leaves. Considering the level of these fatty acids, 18:3n − 3 was found to be the highest (85.3 μg g−1 dry wt), contributing 54.0% of the total fatty acid content. Linoleic acid (18:2n − 6), being the second most abundant fatty acid was present at 18.6 μg g−1 dry wt, contributing 11.8% of the total fatty acid content. In the seed oil of kale, 22:1n − 9 was the most abundant fatty acid (4198 μg g−1 dry wt, 45.7%), with 18:2n − 6 (1199 μg g−1 dry wt, 12.3%) and 18:1n − 9 (1408 μg g−1 dry wt, 14.8%) being the second next most abundant fatty acids. The most abundant amino acid was glutamic acid (Glu) which was present at 33.2 mg g−1 dry wt. Aspartic acid, which was the second most abundant amino acid, was present at 27.6 mg g−1 dry wt and accounted for 10.2% of the total amino acid content of kale leaf. The amino acid content was assessed by comparing the percentages of the essential amino acids in kale leaf versus those of a World Health Organization (WHO) standard protein. The protein of kale leaf compares well with that of the WHO standard. Only one amino acid, lysine, had a score that fell below 100%; the lysine score of kale leaf was 95%. This study attempts to contribute to knowledge of the nutritional properties of the plant. These results may be useful for the evaluation of dietary information.  相似文献

Flavonoids contents, 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical-scavenging activities and the ferric-reducing antioxidant power (FRAP) were compared in three black soybean varieties CRWD, Tainan 3 and Tainan 5. Varietal differences in antioxidant contents existed among the tested varieties. Variety CRWD accumulated more total phenolics (7.49 mg g−1) and isoflavones (1.77 mg g−1) than varieties Tainan 3 (7.05 mg g−1 total phenolics and 1.58 mg g−1 isoflavones) and Tainan 5 (4.38 mg g−1 total phenolics and 0.63 mg g−1 isoflavones). CRWD also accumulated more proanthocyanidins in seed coat than Tainan 3 and Tainan 5. CRWD also demonstrated greater DPPH and FRAP activities than the other two cultivars. Stepwise regressions indicated that both DPPH and FRAP activities were correlated well with the total contents of phenolics and flavonoids, with total phenolics being the most important anti-oxidative factor. The present results indicate that CRWD has greater anti-oxidative responses than Tainan 3 or Tainan 5, and is useful in functional food and other applications.  相似文献

Dates (Pheonix dactylifera) harvested from Kutch district of Gujarat, India were processed for the development of dehydrated dates. Dates grown in the Kutch region of Gujarat are harvested before maturation, i.e. Khalal stage to prevent spoilage caused due to rains. The processing and dehydration conditions for the preparation of dehydrated dates from immature date fruits were evaluated. Processing of dates by blanching in water at 96±1 °C and subsequent dehydration at 60±2 °C for 18-20 h resulted in good quality dehydrated dates as compared to the dates dried without heat treatment. The dehydrated dates were found to be acceptable with respect to colour, flavour, taste and overall quality. The dehydrated dates contained a total sugars of 520 g kg−1, reducing sugars of 415.1 g kg−1, tannins 13.5 g kg−1 and ascorbic acid 33.7 mg kg−1. Equilibrium relative humidity (ERH) of the dehydrated dates was found to be 75.9% with an initial moisture content of 159 g kg−1. The dehydrated dates packed in 75 μ low-density polyethylene packaging material were shelf stable for 6 months at room temperature. The dehydrated dates remained acceptable during the storage period.  相似文献

In this study, radish slices were dried as single layers with thickness of 4 and 6 mm in the ranges of 40-60 °C of drying air temperature in a laboratory scale vacuum dryer. The effect of drying air temperature and slice thickness on the drying characteristics was determined. Moisture transfer from radish slices was described by applying the Fick's diffusion model, and the effective diffusivity changes between 6.92 × 10−9 and 14.59 × 10−9 m2/s within the given temperature range. Effective diffusivity increased with increasing temperature. An Arrhenius relation with activation energy values of 16.49 and 20.26 kJ/mol for the thickness of 4 and 6 mm expressed the effect of temperature and sample thickness on the diffusivity. A non-linear regression procedure was used to fit nine thin-layer drying models available in the literature to the experimental moisture loss data. The models were compared based on the coefficient of determination, mean relative percent deviation, root mean square error, and the reduced chi-square between the observed and predicted moisture ratios. The logarithmic model has shown a better fit to the experimental drying data as compared to other models.  相似文献

Native potato proteins consisting mainly of patatin and protease inhibitors were isolated from industrial potato fruit water by expanded bed adsorption (EBA) chromatography. The EBA-refined proteins were dried by different methods and the effect of drying-conditions on solubility, extent of denaturation, rheology and emulsifying properties was investigated. Drying methods include spray drying at varying outlet temperatures, vacuum freeze drying, fluid-bed and atmospherical freeze drying. Solubilities measured in the range pH 4-6 showed that the higher solubility was at pH 6 of around 65%, except for spray drying using an outlet temperature of 165 °C, which showed low solubility for all pH values. Spray drying at 90 °C and atmospheric freeze-drying emerged as the least deleterious methods with respect to retaining esterase and protease inhibitor activities, comparable to the vacuum freeze drying. The values obtained for the complex modulus suggest that potato protein is not a good gel former even when the protein was vacuum freeze dried. Emulsions prepared with xanthan as stabilizer were more stable at pH 6 compared to pH 4 judged from oil particle sizes. This study showed that potato proteins obtained under gentle isolation and drying conditions will provide interesting functional properties for potential application in food systems.  相似文献

This study was performed to determine the most appropriate thin layer drying model and the effective moisture diffusivity of rapeseed. The thin layer drying tests were conducted at three different combinations of drying air temperature levels of 40, 50, and 60 °C and relative humidity levels of 30, 45, and 60%. The thin layer drying characteristics of rapeseed were determined. The Page (1949) model was the most adequate model for describing the thin layer drying of rapeseed. Drying occurred in the falling rate period and the rate of moisture removal from rapeseed was governed by the rate of water diffusion to the surface of the seed. Effective moisture diffusivities were calculated based on the diffusion equation for a spherical shape using Fick’s second law. Effective moisture diffusivity during drying varied from 1.72 × 10−11 to 3.31 × 10−11 m2 s−1 over the temperature range. The dependence of moisture diffusivity on temperature was described by an Arrhenius-type equation. The activation energy for moisture diffusion during drying was 28.47 kJ mol−1.  相似文献
