The seeds of two Amaranth species were studied. The starch contents were 543 and 623 g kg?1 while crude protein contents were 154 and 169 g kg?1 for Amaranthus caudatus and Amaranthus cruentus seeds, respectively. The effect of several treatments, including cooking, popping and germination and flour air classification on the protein and starch properties were studied. Air classification decreased the starch content and increased the protein content, while heating increased the protein but did not affect the starch content. Germination decreased both starch and protein contents. Amylose content was increased by air classification and heating, but was not affected by germination. It was found that all treatments increased the starch swelling power and reduced the falling number. The resistant starch content was increased in the high protein flour (HPF) fraction and germinated flour compared with the raw flour, while its content decreased in the heat treated seed flours. These processes also affected the starch gelatinization temperature and peak viscosity. The thermal properties of the starch flour were not affected by air classification while gelatinization energy was decreased significantly (by 52.0 and 90.0% and by 70.0 and 95.0%) in cooked and popped A caudatus and A cruentus seed flours, respectively. The gelatinization energy was highest in germinated seeds dried at 90 °C with values of 2.67 and 3.87 J g?1. Air classification reduced the level of all protein fractions. Thermal treatment decreased the water‐soluble fraction (albumins + globulins) and alcohol‐soluble fraction (prolamins) in both species. The levels of all fractions except the water‐soluble fraction (albumins + globulins) were reduced significantly in both species by germination, which mainly increased the amount of aspartic acid, serine and alanine, while the amounts of threonine, arginine and tyrosine decreased in both species. The polypeptide bands of the HPF in both species were unchanged compared with the raw seed flours, but more intensive coloured bands were observed. Effect of extrusion on the functional, rheological, thermal, and morphological properties of the modified cereal flours from different cereals was assessed. Rice flour, wheat flour, and flour, in combination (rice: wheat, 50:50) were passed through twin screw extruder to obtain modified cereal flours at variable conditions (barrel temperature: 175 and 190°C, feed moisture: 14 and 16% and screw speed: 500 rpm). Functional properties (water absorption index, water solubility index, swelling index, and viscosity) improved in modified cereal flours as compared to the unmodified flours. Modified flours showed lower paste viscosity as compared to unmodified flours, which was a desirable property for modified flours to be utilized as a functionality ingredient in food products. Processed flours recorded higher onset (To), peak (Tp), and endset (Te) temperature and showed higher enthalpy change (?H) than the raw cereal flours. Degree of gelatinization was higher in flours processed at higher barrel temperature and feed moisture. The morphological pattern of modified flours was determined by scanning electron microscopy. The starch surface of cereal flours (modified and unmodified) differed from each other with respect to their morphological pattern.  相似文献

As measured by the Brabender viscoamylograph, alkali-cooking and soaking of maize in water (nixtamalization) caused large increases in viscosity, as compared with native flour. Marked effects of cooking time on the pasting properties of nixtamal were also observed. As assessed by the blue value method, nixtamalization does not cause extensive gelatinization of the starch. This was supported by differential scanning calorimetric studies, which yielded similar gelatinization endotherms for untreated maize and nixtamal flours. However, no endotherm peak appeared in tortilla samples made from this nixtamal. Furthermore, untreated maize and nixtamal flours contained many unswollen starch granules.  相似文献

以普通小米和糯小米为原料,探讨大豆分离蛋白含量对米粉性质的影响。结果表明:大豆分离蛋白含量与糯小米粉黏滞曲线成正相关,而与普通小米粉黏滞曲线呈负相关。含大豆分离蛋白9%的糯小米粉衰减值为746 cP,含大豆分离蛋白3%的普通小米粉衰减值为487.5 cP;二者的糊化温度约为75℃;糯小米粉的峰值黏度比普通小米粉出现的早,但谷值黏度、回生值均低于普通小米粉;糯小米粉和普通小米粉在85℃时的可溶指数最大;大豆分离蛋白添加量与2种小米粉的凝沉性无明显关系,普通小米粉的凝沉性是糯小米粉的2倍。  相似文献

Endosperm cell walls of the milled rice flour derived from aged and unaged rice were degraded and removed selectively using several commercial enzymes. Amylography of these cell wall degraded flours showed that the distinct difference between the gelatinization properties of aged rice flour and unaged rice flour had disappeared after the removal of the cell wall. The possible role of “structure-maintaining components” in the formation of the characteristic cooking properties of the aged rice during storage is discussed based on these results and also on the microscopic observation of the gelatinization process of the flour.  相似文献

This study aimed to characterize the interactions between cereal flour (rice, wheat, and barley) and “nata puree” (NP), a disintegrated bacterial cellulose (BC) in the presence of a water-soluble polysaccharide, with powder-dispersion activity. Pasting properties of cereal flour with additives were analyzed using a Rapid Visco Analyzer, and disintegrated BC in water (BCW), three water-soluble polysaccharides: (1,3)(1,4)-β-glucan, tamarind seed gum, and birchwood xylan, and the corresponding NPs were used as additives. For rice flour, additional BCW or NPs increased the initial and the peak viscosity. The addition of water-soluble polysaccharides produced the opposite trend: viscosity increased from the peak time to the end of measurements. For wheat flour, the addition of BCW or NP delayed the peak time and increased peak viscosity; the increase was maintained till the end of measurements. For barley flour, the additional BCW or NP caused a higher gelatinization rate and increased viscosity at the starch-retrogradation stage. Next, static gelatinization of a rice flour suspension in NP was successfully accomplished before placing it in a vessel; NP concentration in the gel significantly affected the firmness. Thus, the dynamic and unique interactions between various cereal flours and cell-wall polysaccharides in NPs can increase the flours'' potential; static gelatinization of cereal flour with NP could expand flours'' application range in both current and next-generation cooking.  相似文献

以燕麦粉为原料,分别利用植物乳杆菌(L.p)和旧金山乳杆菌(L.s)两种乳酸菌对其进行发酵,研究燕麦淀粉在发酵过程中各种物化及热力学特性的变化。结果表明:燕麦粉经过两种菌发酵后pH 值下降,且L.p 发酵的燕麦粉pH 值下降的速率和产酸量都大于L.s。但是到发酵后期,两种乳酸菌发酵的燕麦粉pH 值相近。发酵燕麦淀粉的溶解度和溶胀力都随着温度的升高而增加,在不同温度下,其溶胀力和溶解度在发酵过程中的变化趋势不同,经L.P 发酵的样品的溶胀力低于L.s,但溶解度大于经L.s 发酵的样品。快速黏度分析仪(RVA)和差示扫描量热仪(DSC)分析得到发酵过程中燕麦淀粉的变化:发酵后燕麦淀粉糊化过程中峰值黏度随着发酵时间的延长而降低,糊化起始温度提前,糊化所需时间延长,糊化焓升高,且L.s 发酵样品的糊化焓值高于L.p。发酵后燕麦淀粉的直链淀粉含量在发酵过程中呈上升趋势,L.p 发酵的样品的直链淀粉的含量高于L.s。  相似文献

Differential scanning calorimetry (DSC) was used to study the effect of chlorine treatment of wheat flour on the heat of gelatinization of the wheat flour and starch. The DSC thermograms were corrected for heat capacity changes and thermal lag. An endothermic transition occurred in both flours and starches at a temperature commonly associated with starch gelatinization. The enthalpy (ΔH) for the starches was concentration dependent. The chlorine treatment did not affect significantly the transition temperatures nor enthalpies of either the flour or the starch isolated from it. Addition of sucrose delayed the onset of gelatinization and increased the ΔH for both treated and untreated wheat flours and starches.  相似文献

In vitro starch digestibility, expected glycemic index (eGI), and thermal and pasting properties of flours from pea, lentil and chickpea grown in Canada under identical environmental conditions were investigated. The protein content and gelatinization transition temperatures of lentil flour were higher than those of pea and chickpea flours. Chickpea flour showed a lower amylose content (10.8–13.5%) but higher free lipid content (6.5–7.1%) and amylose–lipid complex melting enthalpy (0.7–0.8 J/g). Significant differences among cultivars within the same species were observed with respect to swelling power, gelatinization properties, pasting properties and in vitro starch digestibility, especially chickpea flour from desi (Myles) and kabuli type (FLIP 97-101C and 97-Indian2-11). Lentil flour was hydrolyzed more slowly and to a lesser extent than pea and chickpea flours. The amount of slowly digestible starch (SDS) in chickpea flour was the highest among the pulse flours, but the resistant starch (RS) content was the lowest. The effects of fermentation of whole polished rice grains on the physical properties of rice flour and the rheological characteristics of rice noodles were investigated. Natural fermentation had little effect on the crystalline structure of rice starch, as measured by X‐ray diffraction, but the ratio of the crystalline to the amorphous regions increased. The thermal properties of rice flours were determined using differential scanning calorimetry and a rapid viscosity analyser (RVA). The gelatinization temperature, Tp, and the RVA peak viscosity of rice flour decreased, while the gelatinization enthalpy, ΔH, increased after fermentation. The FTIR spectra of fermented and control rice flours were similar. Fermented rice starch granules had slight superficial corrosion when examined using scanning electron microscopy. Fermentation may thus change the amorphous region of the starch granule as well as the chemical components and thereby modify both physical properties of rice flour and rheological characteristics of rice noodles.  相似文献

为研究挤压糊化处理对苦荞粉理化性质的影响,利用单螺杆挤压机对苦荞粉进行挤压糊化处理,得到糊化 度分别为37.7%、56.3%、74.3%及94.2%的苦荞粉,并对其基本成分、水合特性、糊化特性、热力学特性及微观结 构进行测定。结果表明:随着糊化度增加,淀粉、蛋白质及灰分质量分数总体无显著变化(P>0.05),总黄酮和 脂肪质量分数显著减少(P<0.05),颜色变深;破损淀粉质量分数、吸水性指数及保水性显著增加(P<0.05); 快速黏度分析结果表明挤压处理苦荞粉峰值黏度、谷值黏度、最终黏度、回生值下降,峰值时间缩短;扫描电子显 微镜结果表明,苦荞粉颗粒为圆形或不规则多边形,而挤压糊化处理后苦荞粉颗粒没有固定形态,表面粗糙且有裂 纹和小孔。上述理化性质的研究可为进一步的机理及应用研究提供参考。  相似文献

The rheological and cooking properties of gluten-free noodles prepared with dry- and wet-milled rice flours were characterized. Dry-milled rice flour with a higher degree of starch damage exhibited greater water hydration properties than wet-milled rice flour at room temperature. However, the pasting results of rice flour suspensions demonstrated that wet-milled rice flour showed a higher value of peak viscosity due to its great swelling power upon starch gelatinization. The similar thermo-mechanical tendency was observed in a rice dough system by Mixolab. In the planar extensional test, the noodle dough sample prepared with dry-milled rice flour exhibited higher elongational viscosity which could be favorably correlated to more resistance of dry-milled rice noodle strands to extension. When rice noodles were cooked, increased cooking loss was observed in dry-milled rice noodles which was attributed to great water solubility derived from a higher degree of starch damage.  相似文献

The effects of blanching on physicochemical properties of flours and starches prepared from two varieties of sweet potatoes (Mun‐Kai and Negro) were studied and compared. The pasting temperature and peak viscosity of starches, respectively, were 74 and 80 °C and 381 and 433 RVU. The pasting temperature (74.0‐94.8 °C) of flours was greater than that of starch, depending on the variety and blanching process. However, the peak viscosity (ca. 103‐120 RVU) of flours was lower than that of the corresponding starches. Partial gelatinization of starch granules was observed as a result of a 1‐min blanching. Composition of starch and flour was found to affect swelling power and solubility. The starch content of starches, flours from unblanched sweet potato and flours from 1‐min blanched sweet potatoes were 97; 66.3 and 74.9; as well as 36.6 and 40.4%, respectively. Amylose content of flours and starches varied from 17.2‐20.8%.  相似文献

为研究不同品种糯米粉特性与速冻汤圆品质之间的关系,选取在实际生产中具有代表性的11种糯米粉,通过测定其基本成分指标、糊化特性指标和所制得的速冻汤圆品质特性指标,采用相关性分析、主成分分析对糯米粉的特性和速冻汤圆的品质关系进行了研究。相关性分析结果表明:淀粉含量和感官评价之间呈显著正相关(p<0.05),和澄清率之间呈极显著正相关(p<0.01);白度和脂肪含量、回生值之间呈极显著正相关(p<0.01)。糯米粉淀粉含量高于68.5%,脂肪含量高于0.94%时,汤圆外观色泽和白度较好、感官评分较高;峰值黏度、最终黏度和澄清率呈显著(p<0.05)正相关性;糊化温度和硬度、胶弹性、咀嚼性呈极显著(p<0.01)正相关。峰值时间在3.5~4.5 min之间,糊化温度在67.8~73.6 ℃之间,峰值黏度大于1615 cp,最终黏度大于923.67 cp,回生值在360 cp以下的糯米粉制得的汤圆品质较好。主成分分析结果表明,根据方差贡献率提取出了4个因子,可反映82.256%的原始变量信息,其中崩解值、糊化温度、灰分、内聚性对这四个因子贡献率较大,在糯米粉评价方面起着重要作用;该结论可为速冻汤圆加工生产中糯米粉的选择提供一定的理论参考。  相似文献

The effects of sun‐, cabinet‐, and drum‐drying on the behaviour of submerged culture lactic‐fermented pure cassava, maize and finger millet and composites of maize–finger millet and cassava–finger millet were investigated in a Brabender amylograph. The cereal flours and maize–finger millet composite had higher onset and peak gelatinization temperatures but lower peak viscosities than cassava or cassava–finger millet composites. Fermentation alone or in combination with drying increased the viscosity of the flours, except for the fermented and drum‐dried cassava–finger millet composite flour. This increased viscosity of uji on fermentation and drying makes it more difficult to cook. Fermented and drum‐dried flours recorded high initial viscosities, at 30 °C, when the amylograph was switched on. Copyright © 2003 Society of Chemical Industry  相似文献

Unripe banana flour is a potential commercial ingredient in various food products for increased resistant starch and reduced gluten contents. In the present study, the pasting (rapid visco-analysis), gel texture (penetration test), thermal (differential scanning calorimetry), colour (tri-stimulus colour indices) and the resistant starch properties of unripe banana flour produced from different dessert banana varieties (n?=?10) cultivated in South Africa, were analysed and juxtaposed to wheat and maize flour. The functional properties varied significantly (p?≤?0.05) between banana varieties, and from wheat and maize flours, to various extents. Selected functional property ranges of unripe banana, wheat and maize flours, respectively included; flour colour index (63.16–76.42, 77.34 and 80.96), paste viscosity (405.5–556.6, 124.7 and 115.6 RVU), gelatinization temperature (64.67–71.21, 71.11 and 69.95?°C), gel firmness (7.24–11.44?×?10??2 N, 3.49?×?10??2 N and 6.56?×?10??2 N) and resistant starch content (19.9–47.4, 2.8 and 2.2% w/w). Multivariate analysis (principle component analysis) showed that the unripe banana flours from different varieties were distinguished from each other based on the pasting temperature. The unripe banana flours were distinguished from both wheat and maize flour based on breakdown and peak paste viscosities. The breakdown viscosity was the most positively related measure to the resistant starch content with a linear regression R-squared value of 0.898, indicating a significant role played by granule structure in resistance to enzymatic hydrolysis. The present research demonstrates that selection of appropriate dessert banana variety is important when replacing staple flours (wheat and maize) with unripe dessert banana flour as a functional ingredient.  相似文献

将油橄榄果渣粉以不同比例与小麦粉混匀,得到4种混合粉,研究该4种混合粉的化学组成、糊化特性及其面团流变和质构特性。结果表明,随着油橄榄果渣粉添加量的增加,混合粉的糊化温度逐渐升高,峰值黏度、最低黏度、最终黏度和衰减值显著降低,面团的形成与稳定时间缩短,吸水率、评价值、最大抗延伸阻力、延伸度、拉伸能量、弹性和内聚性减小,其弱化度、硬度、黏附性、胶黏性和回复性增大。当混合粉中油橄榄果渣粉添加量不超过10%时,其具有较好的糊化特性和面团特性,可用于制作面条和面包等食品。  相似文献

The aim of this work was to study the influence of enzyme active and inactive soy flours on the properties of cassava and corn starches. Four starch/soy flour composites were evaluated: cassava/active soy flour (Cas/AS), cassava/inactive soy flour (Cas/IS), corn/active soy flour (Corn/AS) and corn/inactive soy flour (Corn/IS). Starch gelatinization occurred at 58.67°C for Cas and at 64.19°C for corn; gelatinization occurred at higher temperatures when soy flours were present, while ΔH diminished. The presence of AS reduced 80% the retrogradation enthalpy of Cas and 40% that of corn. Cas presented lower pasting temperature than corn starch (67.8 and 76.8°C, respectively) and higher peak viscosity (427.9 and 232.8 BU, respectively). The pasting properties of both starches were drastically reduced by soy flours, and this effect was more noticeable in Cas; AS had higher effect than IS. X‐ray diffraction pattern of retrograded samples showed that both starches recrystallisation (mainly that of Cas) was reduced when AS was added. Tan δ values decreased with AS addition to corn, but they increased when added to Cas. The images obtained using confocal laser scanning microscopy (CLSM) showed that IS was distributed as large aggregates, whereas AS distribution was more homogeneous, especially when incorporated to Cas. These results show that cassava starch interacts specifically with active soy flour (AS, mainly in native state). The delaying effect of AS on cassava starch retrogradation was clearly shown. This finding could be useful in obtaining gluten‐free breads of high quality and low retrogradation rate.  相似文献

This research evaluated the chemical, technological, and thermal properties of rice flour modified chemically using phosphorus oxychloride (0.018; 0.030; 0.059; 0.088 and 0.100 g/100 g flour). The phosphorylated rice flours (PRF) obtained showed a decrease in viscosity, but the stability increased significantly as compared to the unmodified flour. The gel force and adhesiveness values decreased with the increase in phosphate groups incorporated. However, cohesiveness and thermal properties did not show significant differences among the native and modified rice flours, with exception for gelatinization enthalpy values. The phosphorylated flours obtained can be used as ingredient, especially in cream soups, salad dressing, and filling.  相似文献

通过真空干燥、冷冻真空干燥和喷雾干燥制备山药生/熟粉,研究其流变特性、糊化特性和消化性质,初步探究其变化机制。结果表明,山药生粉具有较高的成糊温度,山药熟粉中冷冻真空干燥山药熟粉的峰值黏度最高(3619.50 cP)。不同干燥方法干燥的山药粉均呈非牛顿流体特性,冷冻真空干燥的山药熟粉的粘弹性最高;山药生粉呈现完整的淀粉颗粒形态,山药熟粉的颗粒形貌差异较大。熟化处理使山药粉抗性淀粉含量显著降低(P<0.05)。熟粉中真空干燥山药熟粉的抗性淀粉含量最高(56.11%)。三种干燥方法中,冷冻真空干燥能较好的保留山药粉的原有理化特性。  相似文献
