The main goal of the present research effort was to evaluate the physical-chemical properties of blends of lard and soybean oil following enzymatic interesterification catalyzed by an immobilized lipase from Thermomyces lanuginosa (Lipozyme™ TL IM). Lipase-catalyzed interesterification produced new triacylglycerols that changed the physical-chemical properties of the fat blends under study. Solid fat content (31.3 vs 31.5 g/100 g), consistency (104.7 vs 167.6 kPa), crystallized area (0.6 vs 11.8) and softening point (31.8 vs 32.2 °C) of lard increased after interesterification, and this was mostly due to the increase of SSS (saturated) + SSU (disaturated-monounsaturated) triacylglycerols. These contents (SSU + SSS) increased in lard after interesterification from 42.9 to 46.7 g/100 g. The interesterified blends exhibited lower values for the physical properties when compared with their counterparts before enzymatic interesterification. The interesterification of blends of lard with soybean oil increased the amounts of UUU (triunsaturated) and SSS triacylglycerols and reduced the amounts of UUS (diunsaturated-monosaturated) triacylglycerols. The interesterified blends of lard and soybean oil demonstrated physical properties and chemical composition similar to human milk fat and they could be used for the production of a human milk fat substitute.  相似文献

The objective of our study was to determine the effects of altering the ratio of stearic (C18:0; SA) and oleic (cis-9 C18:1; OA) acids in supplemental fatty acid (FA) blends on FA digestibility and milk yield of dairy cows. Eight multiparous Holstein cows (mean ± SD; 157 ± 11.8 d in milk) were randomly assigned to treatment sequence in a replicated 4 × 4 Latin square design with 14-d periods. Digestibility and production data were collected during the last 4 d of each period. The treatments were an unsupplemented control diet (CON), and 3 diets incorporating FA supplement blends at 1.4% of diet dry matter (DM) containing (as a % of total FA) 50% SA and 10% OA, 40% SA and 20% OA, or 30% SA and 30% OA. The FA blends were balanced to contain 33% palmitic, 5% linoleic, and <0.5% linolenic acids. The FA supplements replaced soyhulls in the CON diet. Preplanned contrasts were as follows: (1) overall effect of FA treatments [CON vs. the average of the FA-supplemented diets; (50:10 + 40:20 + 30:30)/3], (2) the linear effect of OA inclusion in the supplemental FA blend, and (3) the quadratic effect of OA inclusion in the supplemental FA blend. There was no effect of treatment on DM intake, but the replacement of soyhulls in the FA treatments decreased neutral detergent fiber intake. Overall, compared with CON, FA treatments increased DM and neutral detergent fiber digestibility, and increasing OA within FA treatments quadratically increased digestibility of DM and neutral detergent fiber. Overall, FA treatments increased the intake of total, 16-carbon, and 18-carbon FA, decreased the digestibility of total and 18-carbon FA, but increased absorption of total, 16-carbon, and 18-carbon FA. Within FA treatments, increasing OA linearly increased the digestibility of total, 16-carbon, and 18-carbon FA, as well as the absorption of total, 16-carbon, and 18-carbon FA. Overall, FA treatments increased the yields of milk, energy-corrected milk, and milk fat, and tended to increase milk protein yield. Compared with CON, FA treatments had no effect on the yield of de novo milk FA and increased the yields of mixed and preformed milk FA. Within FA treatments, increasing OA did not affect the yields of milk or milk components, linearly decreased the yield of de novo FA, and quadratically affected the yield of mixed and preformed milk FA. Overall, FA treatments increased plasma nonesterified fatty acids but did not affect β-hydroxybutyrate or insulin. Within FA treatments, increasing OA quadratically affected plasma nonesterified fatty acids, and tended to linearly increase β-hydroxybutyrate and quadratically affect insulin. In conclusion, supplemental FA blends containing different ratios of SA and OA did not affect DM intake but increased the yields of milk and milk components. Supplemental FA blends also increased digestibility of DM and neutral detergent fiber and decreased digestibility of total and 18-carbon FA compared with CON. Although increasing OA within FA supplements did not alter milk production, increasing OA within FA supplements increased total, 16-carbon, and 18-carbon FA digestibility and FA absorption. Further research is required to determine longer term effects of SA and OA on nutrient digestion and partitioning and opportunities for maintaining or improving FA digestibility with increasing SA intake and availability in the small intestine.  相似文献

Application of whey protein isolate and low-methoxy pectin-based fat mimetics in mayonnaise was studied. Fat was partially substituted by different fat mimetics at levels of 50%, respectively, which the fat mimetics were referred to as PFM1 (microparticulate pectin gel), PFM2 (pectin weak-gel), and PFM3 (microparticulated combination of WPI and pectin). The full fat (Ff) (100% oil) mayonnaise without fat mimetic was used as a control experiment. Physicochemical, rheological, texture analysis, and sensory evaluation of the Ff and low fat (Lf) mayonnaises were performed. The results indicated that all Lf mayonnaises had significantly lower energy content, but higher water content than their Ff counterpart. In terms of texture, the formulation with pectin weak-gel as fat mimetic showed similar texture values as those of the Ff sample. Both Ff and Lf mayonnaises exhibited thixothopic shear thinning behaviour under steady shear tests and were rheologically classified as weak gels under small amplitude oscillatory shear tests. Sensory evaluation demonstrated that mayonnaises substituted with low-methoxy pectin were acceptable. This study shows good potential for pectin weak-gel and microparticulated pectin gel to be used as a fat mimetic in mayonnaise.  相似文献

The objective of this study was to evaluate the influence of pH on rheological and viscoelastic properties of solutions based on blends of type A (GeA) or type B (GeB) gelatin and chitosan (CH). Solutions of GeA, GeB, CH, GeA:CH, and GeB:CH were prepared in several pH (3.5–6.0) and analyzed for determination of zeta-potential. Rheological analyses (stationary and dynamic essays) were carried out with blends allowing to study the effect of pH on shear stress, apparent viscosity, loss (G”) and storage (G’) moduli, and angle phase (Tanδ). Zeta potential of all biopolymers decreased linearly as a function of pH. CH presented higher values, and GeB, the lowest one, being the only having negative values at pH > 5. Overall, the pH influenced the rheological and viscoelastic properties of the colloidal solutions: shear stress and apparent viscosity increased as a function of pH. Other assays were carried out at 3% and 5% strain, for GeA:CH and GeB:CH, respectively. In the sol domain, G’ and G” (1 Hz) increased linearly for GeA:CH. But for GeB:CH, they increased in two linear different regions: one function between pH 3.5 and 5.0 and another one between 5.0 and 6.0, being a more important effect was visible in this last domain probably due to the negative net charge of gelatin, above it pI. An effect in two domains was also visible for Tanδ, explained in the same manner as previously. The GeB:CH blends behaved like diluted solutions, and transition temperatures increased as a function of pH.  相似文献

The effect of dietary fat saturation (dFat) and dietary vitamin A (dVitA) level (0 IU vs. 100,000 IU) on performance, carcass characteristics and fatty acid composition in the offspring of two terminal sires: Duroc (DU) and Landrace × Large White (LD × LW) was studied. In the inner backfat layer, the DU-sired pigs had higher C16:0 proportion (P < 0.05) and tended (P < 0.07) to have higher total saturated fatty acids (SFA) and lower C18:1 n-9 proportions than LD × LW-sired pigs. An interaction sire line × dVitA was observed for intramuscular fat (IMF) content (P < 0.005). The effect of supplementation with the high dVitA level in DU-sired pigs was associated with a 20% increase in IMF while no effect was observed in LD × LW pigs. Fatty acid pattern was affected by dFat and sire line. In the inner backfat layer, LD × LW-sired pigs receiving the low dVitA level increased C18:0 proportions by 8% in comparison to animals receiving the high dVitA, whereas in DU-sired pigs the effect of vitamin A was opposite. It is concluded that the effect of dFat and dVitA concentration on IMF content and fatty acid profile of subcutaneous backfat and IMF is variable according to pig genotype.  相似文献

以马铃薯淀粉和豌豆淀粉按照一定的比例进行复配,采用动态流变仪和质构仪测定复配体系的糊化、流变特性及凝胶强度。结果表明:复配体系的糊化温度随着马铃薯淀粉比例的增大而有所下降,由70.1℃降低到64.6℃;在淀粉质量分数为6%的体系中,马铃薯淀粉和豌豆淀粉的比例为1∶5和1∶11时复配体系的弹性模量G′较大(分别为810.1 Pa和814.7 Pa),而在比例为1∶3或1∶5时复配体系的粘性模量G″较大(分别为41.0 Pa和41.6 Pa);马铃薯淀粉和豌豆淀粉的比例为1∶5和1∶11时复配体系的Tanδ较小,此配比的两个复配体系具有较好的凝胶形成能力,且凝胶强度较大(98.5~100.1 g)。   相似文献

The aim of this work was to evaluate the effect of different homogenization pressures on the rheological properties of model dairy emulsions. Solutions of sodium caseinate and whey protein concentrate at 2% + 1% and 2% + 2% (w/v) were emulsified with milk fat at the final contents of 5%, 8% and 15% (w/v). Raw and pasteurized emulsions were subjected to conventional (15/3 MPa) and high pressure (97/3 MPa and 147/3 MPa) homogenization. Differences in viscosity were observed according to fat content, protein ratio, heat treatment and pressure homogenization conditions. Gel networks formed in 8% and 15% fat content emulsions after pasteurization and high pressure homogenization. Gel strength was mostly affected by protein and fat contents.Dynamic high pressure may be used to produce emulsion gels with modulated structures which could be exploited low fat formulations.Industrial relevanceTexture influences people's acceptance of food and may be more important than the flavor in some products. Gelation of emulsions was observed after pasteurization and high pressure homogenization treatments, depending on fat and protein contents. Dynamic high pressure may be an alternative tool to improve viscoelastic properties and mouth feel of emulsions by providing a weak gel structure in the system. The effects of fat content and emulsifier type on the rheological properties of cake batter have been investigated by using a parallel-plate rheometer. The apparent viscosity of cake batter with five different fat concentrations (0, 12.5, 25, 37.5, and 50%) and two types of emulsifier, namely Purawave and Lecigran, was studied as a function of the shear rate. In addition, the time dependency of different cake formulations was investigated. It was found that cake batter with different fat concentrations and emulsifier types exhibited shear thinning and time-independent behavior. Experimental data provided a good fit for the power law model. The increase in fat content and addition of emulsifier caused a decrease in the apparent viscosity. The flow behavior index was not found to be dependent on the composition of cake batter.  相似文献

Diet-induced milk fat depression in dairy cows has been known for many years and several theories have been proposed. One that continues to receive support is the glucogenic-insulin theory. Previous studies testing this theory using a hyperinsulinemic-euglycemic clamp have had variable results attributable to variability in the use of body fat reserves as a source of milk fatty acids. Our objective was to test the glucogenic-insulin theory using cows immediately postpartum, a period when the use of body fat for milk fat synthesis is greatest. During wk 2 postpartum, 5 cows were given a 2-d baseline period and then clamped for 4 d. Insulin was increased more than 2-fold during the clamp while the blood glucose concentration was maintained. Milk yield was not altered by administration of the clamp (38.7 vs. 39.0 ± 1.4 kg/d); however, the milk fat percentage and yield were reduced by 27% and plasma nonesterified fatty acids were reduced by 68%. Analysis of the milk fatty acid composition revealed that the decrease in milk fat yield during use of the clamp was almost exclusively due to reductions in preformed fatty acids; this is the exact opposite of what is observed with diet-induced milk fat depression. Therefore, our results do not support the glucogenic-insulin theory of diet-induced milk fat depression. The results further indicated that reductions in milk fat observed previously with hyperinsulinemic-euglycemic clamps or with glucose or propionate infusions were most likely consequences of the ability of insulin to inhibit lipolysis, thereby limiting the mammary availability of preformed fatty acids mobilized from body reserves.  相似文献

This study reports the use of upgraded ultrasonic velocity profiling with pressure difference methodology; extended from previous work demonstrating true in‐line rheological and solid fat content (SFC) characterisation of complex opaque fat blends, subjected to scaled dynamic processing conditions. The experimental results have successfully confirmed previous non‐invasive, in‐line measurements for instantaneous velocity and rheological profiling of complex opaque fat blends [International Journal of Food Science and Technology 43 (2008) 2083]. A method for in‐line measurements under dynamic processing conditions to obtain the SFC of a fat blend was developed and successfully tested for a 30% palm stearin and 70% rapeseed oil system over a temperature range of 10–40 °C. These measurements correlated well with standard SFC values from pulsed‐nuclear magnetic resonance (p‐NMR) measurements deviating not more than +/– 2% SFC points from the standard p‐NMR values.  相似文献

Two experiments with 72 slaughter pigs in each were conducted. Entire males and females were individually fed restricted. Palm kernel-, soybean- and fish-oil were used in varying combinations, giving different dietary fat levels (29-80 g/kg) and iodine values ranging from 50 to 131. Shoulder fat was analysed for fatty acid composition (inner and outer layer), firmness and colour. A clear dose-response relationship was seen between fatty acids in diets and in shoulder fat. Interestingly, the very long chain n-3 fatty acids seemed to be deposited more efficiently when additional fat was included in the diet. Both high and low dietary iodine values changed towards less extreme iodine values in fat. Low-fat diets enhanced de novo synthesis of fatty acids. Males revealed a higher percentage of PUFA and a lower percentage of C18:1 and MUFA. Fat firmness, but not colour, was influenced by sex and dietary fat source.  相似文献

The relationship between texture and appearance characteristics and the moisture, intramuscular fat (IMF) content and fatty acid composition of dry cured Iberian ham was studied using principal component analysis. Intramuscular fat content positively influenced the proportion of oleic acid (R=0.5578), and exhibited a negative relationship with linoleic and arachidonic acids (R=−0.5215 and −0.5770 respectively). IMF content also had a positive influence on some texture and appearance traits of ham, such as oiliness, brightness, juiciness and marbling. However, it was negatively related to dryness, fibrousness and hardness. Moisture displayed no relationship with juiciness, dryness or any other textural or appearance trait. Therefore, within the ranges of fat content and moisture found in the present study, IMF content has a stronger influence on the texture of ham than the degree of dehydration.  相似文献

The current study evaluated the impact of octenyl succinic anhydride (OSA)‐esterified pearl millet (Pennisetum typhoides) starch as a fat replacer (0.5, 1.0, 1.5 and 2.0%) on various characteristics of reduced‐fat yoghurt (1.5% fat). Firmness, flow point, storage and loss modulus increased with increasing levels of the OSA starch. The Herschel–Bulkley model was best fit for elucidating their pseudoplastic behaviour. Syneresis decreased considerably, whereas sensory acceptability improved with increasing OSA starch level. Owing to this reduced syneresis, improved structural strength and sensory acceptability, OSA‐esterified pearl millet starch functions as a fat replacer in reduced‐fat yoghurt.  相似文献

Milk processing conditions can exert a large influence on the quality of acid‐coagulated cheeses. Herein, we evaluated the influence of milk fat content and coagulant type on Ricotta yield and physical, chemical and sensory properties. Fat‐free Ricotta was hard and whiter than reduced‐fat or full‐fat Ricotta. Ricotta produced from low‐fat and whole milk showed no differences in acceptability, indicating that fat content could be substantially reduced without impairing quality. Milk coagulation by citric acid decreased Ricotta moisture, firmness and yield, whereas calcium chloride produced a white Ricotta with desired firmness and high consumer acceptability.  相似文献

Whipping capabilities are the most important indices of dairy aerated emulsions for their use in cakes, desserts and toppings. However, poor whipping capabilities may occur because of included soft fats. Monoglycerides, namely glyceryl monostearate (GMS), glycerol monooleate (GMO) and glycerin monolaurate (GMLa), are the suggested improvers in controlling whipping process through changing partial coalescence behaviours of fat globules. Effects of the three monoglycerides on two crucial whipping factors, that is, fat crystallisation and interfacial properties, were analysed in the present study. It is found that low levels of monoglycerides (<0.25%) showed little effects on the development of partial coalescence, while positive performance was observed in those formulated with increased concentrations ranging from 0.50 to 0.75%. In comparison with GMO, monoglycerides with saturated species significantly improved density and ordering of fat crystal networks and reduced interfacial protein concentrations, contributing to the development of partial coalescence and bubble structures during whipping. Rheology analyses further strongly supported that GMS and GMLa strengthened fat crystal network structure, thereby improving shaping property and heat resistance of foam. The results provided a theoretical basis for improving whipping capabilities of aerated emulsions.  相似文献

Reduced- and low-fat cheeses are desired based on composition but often fall short on overall quality. One of the major problems with fat reduction in cheese is the development of a firm texture that does not break down during mastication, unlike that observed in full-fat cheeses. The objective of this investigation was to determine how the amount of fat affects the structure of Cheddar cheese from initial formation (2 wk) through 24 wk of aging. Cheeses were made with target fat contents of 3 to 33% (wt/wt) and moisture to protein ratios of 1.5:1. This allowed for comparisons based on relative amounts of fat and protein gel phases. Cheese microstructure was determined by confocal scanning laser microscopy combined with quantitative image analysis. Rheological analysis was used to determine changes in mechanical properties. Increasing fat content caused an increase in size of fat globules and a higher percentage of nonspherical globules. However, no changes in fat globules were observed with aging. Cheese rigidity (storage modulus) increased with fat content at 10°C, but differences attributable to fat were not apparent at 25°C. This was attributable to the storage modulus of fat approaching that of the protein gel; therefore, the amount of fat or gel phase did not have an effect on the cheese storage modulus. The rigidity of cheese decreased with storage and, because changes in the fat phase were not detected, it appeared to be attributable to changes in the gel network. It appeared that the diminished textural quality in low-fat Cheddar cheese is attributed to changes in the breakdown pattern during chewing, as altered by fat disrupting the cheese network.  相似文献

The viscoelastic properties of acid milk gels containing small amounts of different fats were investigated. Skim milk was reconstituted from ultra low-heat skim milk powder and emulsions made with 2% (v/v) sunflower oil, olive oil, groundnut oil, or anhydrous milk fat using a pressure homogenizer. Acidification at 20 °C for 14 h to pH ∼4.6 was achieved by adding glucono-δ-lactone to the emulsion. Stress relaxation testing enabled determination of the firmness and the solid-like properties, i.e., elasticity. Regardless of the physical state of the fat, emulsion gels exhibited higher firmness than fat-free gels, despite the low fat level used. The firmness of the gels containing this small quantity of fat was more sensitive to temperature than was the firmness of fat-free gels. The relaxation time was higher in the presence of fat crystals. Modifications in the rheological properties of gels containing fat were attributed to fat droplets acting as active filler particles.  相似文献

目的分析16种市售坚果中脂肪含量及脂肪酸组成,比较不同品种坚果间脂肪含量、饱和脂肪酸和不饱和脂肪酸组成的差异。方法采用气相色谱分析法测定坚果中37种脂肪酸的含量,用最小显著性差异法(least-significant difference,LSD)法进行多重比较。结果坚果的平均脂肪含量为(55.6±0.86)g/100 g,变化范围为40.2~71.3 g/100 g,碧根果脂肪含量显著高于其他品种坚果脂肪含量(P0.05);坚果中的不饱和脂肪酸含量为72.77~95.47 g/100 g脂肪,平均值为(86.68±0.12)g/100 g脂肪,显著高于饱和脂肪酸4.53~22.19 g/100 g脂肪,平均值为(11.31±0.16)g/100 g脂肪(P0.05),东北榛子中单不饱和脂肪酸总含量最高,为84.34 g/100 g脂肪,而纸皮核桃中的多不饱和脂肪酸总含量最高,为74.17 g/100 g;坚果中不含短链脂肪酸和中链脂肪酸。结论坚果中不饱和脂肪酸含量较多,富含ω-6和ω-3脂肪酸,营养价值较高。  相似文献
