通过研究抗氧化剂、真空包装、充氮包装、添加脱氧剂等手段对葵花籽储藏过程中过氧化值的变化,探讨抑制炒货葵花籽氧化的方法。实验结果表明:炒货抗氧化剂的抗氧化性能优于BHT、BHA、茶多酚、竹叶异黄酮等单体抗氧化剂,并与其添加量呈正相关;添加抗氧化剂、真空包装、充氮包装、添加脱氧剂等方法均能抑制葵花籽过氧化值的升高,其抗氧化效果从大到小依次为:炒货抗氧化剂+脱氧剂>脱氧剂>炒货抗氧化剂>真空包装>充氮包装。采用炒货抗氧化剂结合脱氧剂抑制炒货葵花子的氧化效果最好,能将炒货葵花籽的保质期从2~3个月延长至10个月以上。  相似文献

目的 研究中国市场上以及不同炒籽条件制得的葵花籽油感官特性,剖析葵花籽油香气特点并划分香气类型。方法 联合使用桌布法(Napping)和 极化投影地图(Polarized Projective Mapping,PPM)等剖析了19款小试加工工艺生产的自制以及7款市售的商品等26款葵花籽油的香味特征。结果 (1)经过培训的评价小组使用Napping和PPM方法均可以快速、良好地对多款葵花籽油样品进行评价;(2)PPM方法可以获得与Napping方法相似的结果,26款样品均被分为4种香型,主要特点依次为生瓜子、甜香(炒瓜子)、焦糊和油炸方便面;(3)在PPM实验中,评价员能够将样品进行更精细的区分。结论 Napping和PPM这两种新型感官分析方法在评价葵花籽油香气方面有良好的适用性,建立了葵花籽油描述词库,并将葵花籽油分为生瓜子型、甜香型(炒瓜子)、焦糊型和油炸方便面型等四种香气类型,可为葵花籽油等植物油产品开发、技术改进及质量评价等提供参考。  相似文献

The purpose of this work was to determine chemical composition and antioxidant activity of essential oil of different oregano species from Argentina: ‘Cordobes’, ‘Criollo’, ‘Mendocino’ and ‘Compacto’. The essential oil composition was determined by gas–liquid chromatography and mass spectrometry. Scavenging activity was analysed by DPPH test. The antioxidant activity of the essential oils was determined by an accelerated oxidation test in canola oil. Thirty‐nine compounds were identified in the oregano essential oils. The oregano species showed differences in their chemical composition, radical scavenging activity and antioxidant activity. The main compounds in the studied oregano species were thymol and trans‐sabinene hydrate followed by γ‐terpinene, terpinen‐4‐ol and α‐terpinene. The oregano, ‘Criollo’, was rich in γ‐terpinene and had lower thymol and trans‐sabinene hydrate and higher α‐terpinene and carvacrol contents than the other oregano species. ‘Mendocino’ had higher trans‐sabinene hydrate and limonene than the other oregano species. ‘Cordobes’ and ‘Compacto’ had higher thymol content, radical scavenging activity and antioxidant activity in canola oil.  相似文献

Extra virgin olive oil is highly consumed and well known for its nutritional and health benefits. However, it is fatty food highly susceptible to lipid oxidation. The objective of this study was to evaluate the preserving effect of oregano (Origanum vulgare L. spp vulgare called "oregano compacto") essential oil on physical and chemical properties in extra virgin olive oil during storage. Oregano essential oil composition was analyzed by GC-MS. This essential oil was added into extra virgin olive oil at 0.05%. The samples were stored in 3 different conditions: darkness, light exposure, and temperature (60 °C). Chemical indicators of lipid oxidation (peroxide value, p-anisidine value, conjugated dienes, free fatty acidity, and carotenoid and chlorophyll contents) were measured. High content in carvomenthol (22.52%), terpinolene (19.77%), thymol (13.51%), and γ-terpinene (10.30%) were detected in oregano essential oil. Olive oil samples without oregano essential oil stored at 60 °C and exposure at artificial light had the highest peroxide values during storage. Higher p-anisidine and K232 values after day 7 of storage were detected in temperature, darkness, and light exposure treatments. Light treatment was the main factor that degraded chlorophyll causing loss of color. The highest chlorophyll content (3.87 mg/kg) was observed in olive oil with essential oil at the end of storage. In general, olive oil samples added with oregano essential oil had lower peroxide, conjugated dienes, and p-anisidine values and higher chlorophyll and carotenoid contents during storage. Oregano essential oil retards lipid oxidation process in olive oil prolonging its shelf life. PRACTICAL APPLICATION: Oregano essential oil was and is used with the purpose of flavoring and aromatizing food. This essential oil due to its composition has shown antioxidant activity. Synthetic antioxidants such as butylated hydroxytoluene (BHT) and butylated hydroxyanisole (BHA) are thought to be promoters of carcinogenesis. Extra virgin olive oil is widely consumed because of its nutritional benefits and sensory properties which are very important to be preserved in the product. In this study, the oregano essential oil showed remarkable antioxidant activity in olive oil. Therefore, this essential oil could be considered for the industry as natural antioxidant not only to be used in olive oil but also in other fatty food products to substitute synthetic ones.  相似文献

This study reported the chemical composition, phenolic content, antioxidant and anti‐lipase activity of oregano and Lippia essential oils. The major compounds found in oregano essential oil were γ‐terpinene (32.10%), α‐terpinene (15.10%), p‐cymene (8.00%) and thymol (8.00%). In Lippia essential oil, α‐limonene (76.80%) and 1,8‐cineole (4.95%) represented the major compounds. Oregano essential oil had higher phenolic content (12.47 mg gallic acid mL?1) and DPPH scavenging activity (IC50 0.357 μg mL?1) than Lippia essential oil (7.94 mg gallic acid mL?1 and IC50 0.400 μg mL?1, respectively). Both essential oils had similar antioxidant indexes (about 1.2) determined by Rancimat. Moreover, oregano essential oil had also higher anti‐lipase activity (IC50 5.09 and 7.26 μg mL?1). Higher phenolic content in the essential oils was related with higher scavenging and anti‐lipase activities. Oregano and Lippia essential oils could be used as natural antioxidants on food products.  相似文献

The antioxidant activity of meat treated (homogenized) with oregano and sage essential oils, during meat storage, was determined using the following assays: a thiobarbituric acid (TBA) assay, a diphenylpicrylhydrazyl (DPPH) assay and a crocin assay. Porcine and bovine ground meat samples were divided into three experimental treatments, namely: control (no antioxidant), oregano (oregano essential oil 3% w/w) and sage (sage essential oil 3% w/w). Subsequently, the samples from each treatment were stored at 4 °C, in the raw and cooked (at 85 °C for 30 min) state, and the antioxidant activity was determined after 1, 4, 8 and 12 days of storage. The results showed that the essential oil treatments significantly reduced the oxidation, while the heat treatment and storage time significantly affected the antioxidant activity of the meat. The role of antioxidants appeared to be much more important in cooked meat than raw and the meat proteins greatly affected the antioxidant activity.  相似文献

Superoxide dismutase (SOD, EC1.15.1.1) is a family of enzymes, which remove superoxide anion (O 2 ·? ) from the cells of living organisms. The aim of this study was to describe antioxidative properties of SOD with regard to the protection of unsaturated fatty acids (UFA) from peroxidative damage and to compare this effect with butylated hydroxytoluene (BHT). In this experiment, Cu, Zn-SOD from hen’s egg yolk with a mass of 15.59 ± 0.38 kDa and pI 6.58 ± 0.10, 6.41 ± 0.08 and 6.30 ± 0.15 was used to protect fatty acids from peroxidative damage in vegetable oil (sunflower oil and olive oil) during 200 days of storage at different temperatures—4, 20 and 35 °C. Antioxidative properties of SOD and BHT were expressed as the ratio of unsaturated to saturated fatty acids (SFA) in samples after 50, 100 and 200 days of storage as well as the percentage content of selected fatty acids in the examined oils. SOD from egg yolk showed the same or better antioxidant properties with regard to the concentration of linoleic acid (C18:2) contained in sunflower oil and olive oil than the corresponding concentrations of BHT during 200-day storage at 4, 20 and 35 °C. The concentration of linoleic acid (C18:2) in the sample with SOD was significantly higher during storage at 35 °C on day 200. At all storage temperatures, the ratio of SFA to UFA in samples with the addition of SOD was statistically higher than in oils stored without the antioxidant. With regard to linoleic acid (C18:2), SOD proved to be a better antioxidant than BHT. The results demonstrated better antioxidant properties of SOD from hen’s eggs compared with the same concentrations of BHT at elevated temperatures (at 20 and 35 °C) in oil with a high content of UFA. No negative antioxidative effect (worse than that of BHT at a corresponding concentration) of the addition of SOD from egg yolk on fatty acid composition of the tested samples was observed. Though further research is necessary, SOD from hen’s egg yolk seems to be a promising natural antioxidant of vegetable oils.  相似文献

采用DPPH(1,1-二苯基-2-三硝基苯肼)法、BCB(β-胡萝卜素漂白)法和TBARS(硫代巴比妥酸)法对牛至油、香芹酚、柠檬醛和肉桂醛的抗氧化性能进行研究。结果表明,BHT、牛至油、香芹酚、柠檬醛和肉桂醛的DPPH自由基清除反应速度很快,清除能力随其浓度升高而显著增强,并逐渐趋于稳定,其IC50分别为1.2、4.3、3.7、7.2、3.1g/L;采用BCB法测定抗氧化性能时,BHT、牛至油、香芹酚和肉桂醛均表现出优良的抗氧化性能,并且随着浓度的增大,抗氧化性能增强,其IC50分别为0.1、2.2、3.4、1.9g/L;采用TBARS法测定抗氧化性能时,BHT、牛至油、香芹酚、柠檬醛和肉桂醛也表现出较好的抗氧化性能,并且其抗氧化指数随其浓度的增加而提高。由此可知,牛至油、香芹酚和肉桂醛可以作为天然抗氧化剂应用于食品加工中。   相似文献

The composition of essential oils isolated from Thymus albicans and Thymbra capitata collected in Algarve (Portugal), Th. mastichina collected in Algarve and Estremadura (Portugal) and Th. carnosus also collected in Algarve, during the flowering phase, was analysed by gas chromatography (GC) and GC coupled to mass spectrometry (GC-MS). The antioxidant capacity of the oils as well as some of their main components was determined by periodic evaluation of the peroxide values in sunflower oils stored at 60 degrees C. These peroxide values were compared to that of butylated hydroxytoluene (BHT) and control (without adding antioxidants) under the same experimental conditions. The oils of Th. albicans and Th. mastichina, collected in Algarve, were dominated by 1,8-cineole (68% and 45%, respectively), whereas linalool (52%) was the main component from the oils isolated from Th. mastichina collected in Estremadura. Carvacrol (68%) was the major component present in the oils of Thymbra capitata while borneol (18%), terpinen-4-ol (11%) and camphene (9%) were the major ones in the essential oil of Th. carnosus. The essential oils as well as some of their main components showed higher antioxidant capacity than that of the synthetic antioxidant BHT. At the end of the experiment (57 days), BHT showed a percentage of inhibition of 20%, while that of the essential oils ranged from 46% for Th. carnosus, to 59% for Th. mastichina collected in Estremadura.  相似文献

Four commercial varieties of oregano are farmed in Argentina: "Compacto,"Cordobes,"Criollo," y "Mendocino." Oregano essential oil is known for antioxidant properties. The objective of this study was to evaluate changes in the intensities of positive and negative attributes in extra virgin olive oil with addition of essential oil obtained from the 4 Argentinean oregano types. Oregano essential oil was added into olive oil at 0.05% w/w. The samples were stored in darkness and light exposure during 126 d at room temperature. The intensity ratings of fruity, pungency, bitterness, oregano flavor, and rancid flavor were evaluated every 21 d by a trained sensory panel. In general, samples with addition of oregano essential oil in olive oil exhibited higher and lower intensity ratings of positive and negative attributes, respectively, during storage compared with the control samples. The first 2 principal components explained 72.3% of the variability in the olive oil samples. In general, positive attributes of olive oil were highly associated with the addition of oregano essential oil in darkness, whereas rancid flavor was negatively associated with them. Olive oil with oregano "Cordobes" essential oil was oppositely associated with light exposure treatments and negative attribute (rancid flavor) suggesting better performance as natural antioxidant of this essential oil in olive oil. The result of this study showed that the presence of oregano essential oil, specially "Cordobes" type, preserve sensory quality of extra virgin olive oil prolonging the shelf life of this product. Practical Application: Extra virgin olive oil is highly appreciated for its health benefits, taste, and aroma. These properties are an important aspect in this product quality and need to be preserved. The addition of natural additives instead of synthetic ones covers the present trend in food technology. This research showed that the addition of oregano essential oil preserved the intensity ratings of positive attributes in extra virgin olive oil during storage. The essential oil of the oregano variety called "Cordobes" exhibited better protecting effect on sensory properties of olive oil than the other oregano varieties. The addition of oregano essential oil should be considered for the food industry as a natural source of antioxidant additives for preserving sensory properties in extra virgin olive oil and other similar food products.  相似文献

The mechanism of the antimicrobial action of Spanish oregano (Corydothymus capitatus), Chinese cinnamon (Cinnamomum cassia), and savory (Satureja montana) essential oils against cell membranes and walls of bacteria was studied by the measurement of the intracellular pH and ATP concentration, the release of cell constituents, and the electronic microscopy observations of the cells when these essential oils at their MICs were in contact with Escherichia coli O157:H7 and Listeria monocytogenes. E. coli O157:H7 and L. monocytogenes, two pathogenic foodborne bacteria, were used as gram-negative and gram-positive bacterial models, respectively. Treatment with these essential oils at their MICs affected the membrane integrity of bacteria and induced depletion of the intracellular ATP concentration. Spanish oregano and savory essential oils, however, induced more depletion than Chinese cinnamon oil. An increase of the extracellular ATP concentration was observed only when Spanish oregano and savory oils were in contact with E. coli O157:H7 and L. monocytogenes. Also, a significantly higher (P < or = 0.05) cell constituent release was observed in the supernatant when E. coli O157:H7 and L. monocytogenes cells were treated with Chinese cinnamon and Spanish oregano oils. Chinese cinnamon oil was more effective to reduce significantly the intracellular pH of E. coli O157:H7, whereas Chinese cinnamon and Spanish oregano decreased more significantly the intracellular pH of L. monocytogenes. Electronic microscopy observations revealed that the cell membrane of both treated bacteria was significantly damaged. These results suggest that the cytoplasmic membrane is involved in the toxic action of essential oils.  相似文献

With strong dissolution abilities of ionic liquids to plant cell walls, an integrated microwave-assisted ionic liquids pretreatment followed by hydro-distillation method (MILP–MHD) was performed for the efficient extraction of essential oil from the rare Dryopteris fragrans. Under optimal conditions, this innovative MILP–MHD provided the remarkable superiority of much higher yield (0.91%) of D. fragrans essential oil (DEO) within much shorter extraction duration (14.2 min) than those of the reported solvent-free microwave extraction technique (0.33% and 94 min). Furthermore, the antioxidant efficacy of DEO in the stabilization of sunflower oil was determined and found to be comparable to the commonly-employed α-tocopherol (VE) but a little lower than the synthetic antioxidant butylated hydroxytoluene (BHT). Therefore, MILP–MHD is a potential and highly efficient technique for the extraction of valuable essential oils in flavor food industries and DEO can be explored as a potent natural antioxidant additive for edible oils or lipid foods storage.  相似文献

本文研究高粱糠乙醇提取物对葵花籽油、大豆油、花生油、玉米油的抗氧化作用,采用Schaal烘箱法,通过测定过氧化值、茴香胺值和脂肪酸组成的变化全面评价高粱糠提取物的抗氧化能力,并比较了高粱糠提取物与合成抗氧化剂BHA、BHT的抗氧化能力。结果显示,在加速氧化过程中,高粱糠乙醇提取物能显著(p<0.05)延缓4种植物油过氧化值与茴香胺值的增加,抑制多不饱和脂肪酸的分解,且随高粱糠提取物浓度的增加,其抗氧化能力逐渐增强。当高粱糠添加量为0.08%时,其抗氧化能力显著优于0.02%BHA,当添加量达0.16%时,其抗氧化能力显著优于0.02%BHT。本研究对高粱糠提取物在油脂抗氧化领域的应用提供了有力的理论依据。   相似文献

ABSTRACT:  We developed wine formulations containing plant essential oils and oil compounds effective against foodborne pathogenic bacteria Escherichia coli O157:H7 and Salmonella enterica. HPLC was used to determine maximum solubility of antimicrobials in wines as well as amounts of antimicrobials extracted by wines from commercial oregano and thyme leaves. Activity of essential oils (cinnamon, lemongrass, oregano, and thyme) and oil compounds (carvacrol, cinnamaldehyde, citral, and thymol) in wines were evaluated in terms of the percentage of the sample that resulted in a 50% decrease in the number of bacteria (BA50). The ranges of activities in wines (30 min BA50 values) against S. enterica/E. coli were carvacrol, 0.0059 to 0.010/0.011 to 0.021; oregano oils, 0.0079 to 0.014/0.022 to 0.031; cinnamaldehyde, 0.030 to 0.051/0.098 to 0.13; citral, 0.033 to 0.038/0.060 to 0.070; lemongrass oil, 0.053 to 0.066/0.059 to 0.071; cinnamon oil 0.038 to 0.057/0.066 to 0.098; thymol, 0.0086 to 0.010/0.016 to 0.022; and thyme oil, 0.0097 to 0.011/0.033 to 0.039. Detailed studies with carvacrol, the main component of oregano oil, showed that antibacterial activity was greater against S. enterica than against E. coli and that wine formulations exhibited high activities at low concentrations of added antimicrobials. The results suggest that wines containing essential oils/oil compounds, added or extracted from oregano or thyme leaves, could be used to reduce pathogens in food and other environments.  相似文献

The study aimed to determine the effect of oregano and rosemary essential oils addition to minced gilthead sea bream muscle on lipid oxidation during frozen storage. Each essential oil was added to minced fish muscle at 500 mg/kg concentration which then was stored at ?22 °C for 12 months. Oregano essential oils inhibited the formation of conjugated diene and triene hydroperoxides and thiobarbituric reactive substances when compared with untreated samples after the first month and rosemary essential oils after the first and third month of frozen storage. Oregano and rosemary essential oils could be used as ingredients to prevent oxidation in stored frozen minced gilthead sea bream muscle, when long term preservation is not needed. The rate of lipid oxidation depends on antioxidant source. The rosemary essential oil proved to be more efficient in preventing lipid oxidation of minced gilthead sea bream muscle than oregano essential oil.  相似文献

The effects of different plastic films (polyethyleneterephthalate, polyvinylchloride, polypropylene and polystyrene) on the stability of olive, sunflower and palm oils were studied at 24 and 37°C during 60 days of storage. The changes in peroxide value (PV) and thiobarbituric acid value (TBA) were significantly higher (p≤0.05) in the plastic bottles than in glass. Our study indicates that the plastic permeability has played a major role in oil stability. However, both butylated hydroxyanisole (BHA) and butylated hydroxytoluene (BHT) were found to leach out from plastics films into vegetable oils during storage. The rate of oxidation was not reduced by antioxidant migration from plastic films to oils. Natural antioxidant (vitamin E) retarded the oxidation rate, and this was dependent on its concentration in oils examined. The results showed that the ranking of stability of oil samples is PVC≥PET>PP≥PS. Further, the stability was dependent on the type of oil. Palm oil exibited high stability properties while the highest oxidation rate was observed in sunflower oil. In addition, increasing storage temperature accelerated the oxidation and limited the stability of vegetable oils.  相似文献

Sunflower seeds were cleaned, roasted, decorticated and ground to a smooth thick oily suspension (tahina). Chemical analysis showed that sunflower tahina-like butter contained higher ether extract (62·3%) than sesame tahina (55·3%). Sesame tahina was higher in ash and carbohydrate contents, while the protein content was similar in both. Microscopic examination of stained films indicated that the system in sunflower tahina was essentially a suspension of solid particles in a continuous oil phase (water in oil system). Oil separation in sunflower tahina was followed during storage at room temperature for 90 days. The addition of glycerol monostearate had a pronounced stabilizing action resulting in reducing oil separation from 11·8% to 6·25%. The peroxide value of sunflower tahina oil increased during storage, reaching a maximum value after 60 days' storage, then decreased. The oxidative stability of sunflower oil was increased with the addition of 0·02% butylated hydroxy anisole (BHA) and 0·02% butylated hydroxy toluene (BHT).Organoleptic evaluation showed no significant differences between sunflower and sesame halawas in texture and flavor except that the color of sunflower halawa was distinctly darker. The chemical analysis emphasized the high caloric, as well as nutritive value, of sunflower halawa. The use of Egyptian sunflower seeds in tahina and halawa tahiniamaking would reduce the importation of sesame seeds.  相似文献
