Carotenoid development of red fleshed papaya fruit (Carica papaya L.) was investigated in the course of a complete pre- and postharvest period using HPLC-DAD coupled to mass spectrometry. Esterified xanthophylls such as ??-cryptoxanthin laurate and caprate were the most abundant pigments during incipient carotenoid biosynthesis. Subsequent fruit maturation led to a gradual accumulation of carotenoids, whereas particularly ??-cryptoxanthin laurate and total lycopene contents disproportionately increased, reaching maximum contents of up to 775 and 3168 ??g/100 g of fresh weight (FW), respectively. Total carotenoid contents of fully ripe papaya ranged from 5414 to 6214 ??g/100 g of FW, while corresponding biosynthetic precursors like phytoene, phytofluene, and ??-carotene were only detected in trace amounts. Due to high contents of vitamin A precursors like ??-carotene and ??-cryptoxanthins, edible parts of the ripe fruit contained 132-166 ??g retinol equivalents per 100 g of FW.Furthermore, the development of morphological and physico-chemical fruit traits was characterized revealing significant correlations to carotenoid accumulation. A ripening index derived from several parameters was developed to easily allow exact assignment of ripening stages in studies of carotenoid development during fruit ontogenesis. Additionally, on-tree ripened versus postharvest ripened fruits were compared revealing striking similarity of their physico-chemical parameters and contents of individual carotenoids.  相似文献

The daily intake of total phenolics, total flavonoids and antioxidants in the American diet was estimated from the most common 34 fresh fruit and vegetables and their daily consumption data. Among 14 fruit and 20 vegetables, orange contributed the highest amount of total phenolics [117.1 mg gallic acid equivalent (GAE) person?1 day?1] and antioxidants [146.6 mg vitamin C equivalents (VCE) person?1 day?1]. Orange contributed about 26 and 25% of total phenolics and antioxidant, respectively, in the daily consumption of fruit and vegetables. Apples showed relatively high levels of total phenolics and antioxidant capacity comparable to those of oranges and their phenolics and antioxidants contribution is the second highest. Even though potatoes had lower levels of phenolics and antioxidant capacity, they were third due to the fact that their consumption is the highest (137.9 lb person?1 year?1) in the American diet. Although plums and strawberries were ranked as the group with the highest total phenolics and antioxidant capacity among 34 tested fruit and vegetables, their contributions were relatively low due to their lower daily consumption. Generally, the levels of total phenolics, total flavonoids and antioxidant capacity of fruits were higher than those of vegetables. American daily intake of phenolics, flavonoids and antioxidants from fruits and vegetables was estimated to be 450 mg GAE, 103 mg catechin equivalents and 591 mg VCE, respectively. Although we do not yet know the required minimum daily amounts of antioxidants, when we estimate the daily requirement of antioxidants, we must consider not only the antioxidant concentrations of the particular food, but also the daily intakes of the food. Abstract: Trout‐skin (Oncorhynchus mykiss) gelatin‐based films containing antioxidants (epigallocatechin gallate (EGCG), 50 and 250 ppm w/w) and green tea powder (1% and 20% w/w of gelatin) were tested for tensile strength, elastic modulus, and elongation, and oxygen and water vapor transmission rates, in vitro antioxidant activity using the DPPH (2,2‐diphenyl‐1‐picrylhydrazyl) assay and effect on stabilizing cod‐liver oil held under mild thermal abuse conditions. Cod‐liver oil overlaid with films was stored at 40 °C for 20 d and analyzed for peroxide value (PV) and thiobarbituric acid reactive substances (TBARS). Antioxidant activity was retained in films containing green tea powder, but was reduced (P < 0.05) in EGCG films (20 d, 23 °C). Water vapor transmission rate of the films incorporated with antioxidants did not change significantly (P > 0.05), but the oxygen transmission rate for films with 50 ppm EGCG and 20% green tea powder was significant (P < 0.05). Other physical properties varied with antioxidant incorporation. The TBARS and PV of control oil increased from 0.05 ± 0.01 to 4.71 ± 0.30 g MDA/kg oil and from 3.6 ± 0.2 to 178.3 ± 24.5 millieq peroxides/kg oil, respectively, after 20 d. For cod‐liver oil covered with control or antioxidant‐containing films, TBARS remained below 0.37 g MDA/kg oil and PV below 7 millieq peroxides/kg oil. Incorporation of antioxidants to the films did not reduce oil oxidation (P > 0.05) at the levels tested and this was confirmed by activation energy calculations. The rate of oil oxidation was more dependent upon the inherent oxygen barrier property of the films than the presence of antioxidants. Practical Application: This research has the potential to enhance the utilization of fish skins, a valuable food processing by‐product, as edible films with natural antioxidants to extend the shelf life of foods. The film physical properties and barrier to oxygen and water are investigated.  相似文献

A randomized, double‐blinded, placebo‐controlled and crossover study was conducted to simultaneously measure the effects, 3 h after consumption and after 4‐wk daily exposure to plant sterols‐enriched food product, on in vivo nitrite and nitrate production in healthy adults. Eighteen healthy participants (67% female, 35.3 [mean] ± 9.5 [SD] years, mean body mass index 22.8 kg/m2) received 2 soy milk (20 g) treatments daily: placebo and one containing 2.0 g free plant sterols equivalent of their palmityl esters (β‐sitosterol, 55%; campesterol, 29%; and stigmasterol, 23%). Nitrite and nitrate concentrations were measured in the blood plasma and urine, using stable isotope‐labeled gas chromatography‐mass spectrometry. L‐arginine and asymmetric dimethylarginine concentrations in blood serum were measured using commercially available enzyme immunoassays. Nitrite and nitrate concentrations in blood plasma (nitrite 5.83 ± 0.50 vs. 4.52 ± 0.27; nitrate 15.78 ± 0.96 vs. 13.43 ± 0.81 μmol/L) and urine (nitrite 1.12 ± 0.22 vs. 0.92 ± 0.36, nitrate 12.23 ± 1.15 vs. 9.71 ± 2.04 μmol/L) were significantly elevated after 4‐wk plant sterols supplementation Placebo and 3‐h treatments did not affect the blood plasma and urinary concentrations of nitrite and nitrate. Circulating levels of L‐arginine and asymmetric dimethylarginine were unchanged in the placebo and treatment arms. Total plant sterols, β‐Sitosterol, campesterol, and stigmasterol concentrations were significantly elevated after 4‐wk treatments compared to the placebo and 3‐h treatments. Blood plasma nitrite and nitrate concentrations correlated significantly with the plasma total and specific plant sterol concentrations. Our results suggest that dietary plant sterols, in the combination used, can upregulate nitrite, and nitrate production in vivo.  相似文献

Chagalapoli (Ardisia compressa K.) is a tropical fruit of deep purple color with a high content of pigments. Anthocyanins, polyphenol composition, antioxidant activity and physicochemical characteristics of chagalapoli fruits (CF) are analyzed. The proximal and mineral composition is similar to that found in common berries (strawberry, blackberry and blueberry). A high content of total phenolics (1051.3 ± 43.5 mg of gallic acid equivalents/100 g of FW) is present, among which anthocyanins predominated (796.0 ± 2.3 mg of cyanidin 3-O-glucoside equivalents/100 g FW). Twelve anthocyanins were separated and ten of them identified by HPLC–DAD–MS. The main anthocyanins were malvidin-3-O-galactoside (35%), delphinidin 3-O-galactoside (28%) and petunidin 3-O-galactoside (19%). Other polyphenols identified included: flavonols, flavan-3-ols (catechin and proantocyanidin dimers) and hydroxycinnamoyl derivatives. The antioxidant activity of CF was 40% higher than that found in common berries, which were simultaneously analyzed. The high content of anthocyanins in CF and its peculiar anthocyanin profile make this under-utilized fruit a promising source of pigments and phenolic nutraceuticals.  相似文献

Tropical highland blackberry (Rubus adenotrichus Schltdl.) is a good source of antioxidants and contains appreciable levels of phenolic compounds, mainly ellagitannins and anthocyanins. This study examined the influence of three ripening stages on phenolic contents. Major anthocyanin pigments increased from 0.20 (red fruit) to 1.34 mg g−1 fresh weight (FW) (fully ripe fruit), whereas ellagitannins and ellagic acid derivatives dropped from 3.8 to 2.2 mg ellagic acid equivalents g−1 (FW). Flavonols also dropped from 5.1 to 2.0 mg quercetin equivalents 100 g−1 (FW). Consequently, values for total phenolic compounds ranged from 5.8 to 5.2 mg gallic acid equivalents g−1 (FW), showing no specific trend. Antioxidant activity (H-ORAC) increased from 38.29 to 64.00 μmol of Trolox equivalents g−1 (FW) during ripening. When compared with other commercial cultivars, R. adenotrichus stands out for high H-ORAC value, although comparatively it possesses low anthocyanin content and average total phenolic content.  相似文献

BACKGROUND: Apricot is one of the most popular Prunus species grown in the temperate zone and great variation in the contents of primary and secondary metabolites has been reported in its fruit. However, little is known on the phenolic profiles and antioxidant potential of important local cultivars. The objective of the study was to identify valuable parental lines for breeding of cultivars with high health‐promoting effects. RESULTS: Primary metabolites (sugars, organic acids) and secondary metabolites (phenolics) were quantified by high‐performance liquid chromatography–mass spectrometry (HPLC/MS) in fruit of 13 apricot cultivars: total sugars ranged from 59.2 to 212.5 g kg?1 fresh weight (FW) and total organic acids from 4.2 to 20.8 g kg?1 FW. Four hydroxycinnamic acids and three flavonols were quantified; their content was significantly higher in skin compared to pulp. Similarly, antioxidative potential was significantly higher in skin and ranged from 125.4 to 726.5 mg ascorbic acid equivalents kg?1 FW. A positive correlation between total phenolic content and antioxidant potential was determined. Multivariate analysis subdivided the cultivars into five major groups, mostly influenced by the content of individual and total phenolics as well as the antioxidant potential of apricot skin and pulp. CONCLUSION: In regard to high phenolic content in connection with antioxidant potential, three cultivars stand out as the richest in analyzed quality parameters: ‘Mula Sadik’, ‘Bergeron’ and ‘Chuan Zhi Hong’. BACKGROUND: Plum has a very short storage life. The role of pre‐ or post‐harvest applications of putrescine (PUT) and low temperature storage on fruit ripening and quality was investigated in plum fruit (Prunus salicina Lindl. cv. Angelino). RESULTS: Pre‐ or post‐harvest PUT treatments [(0.1, 1.0 or 2.0 mmol L?1) + 0.01% Tween‐20 as a surfactant] delayed and suppressed the climacteric ethylene production and respiration rate irrespective of the method used to apply PUT. PUT‐treated fruit following low temperature storage (0 ± 1 °C; 90 ± 5% RH), at the ripe stage exhibited higher fruit firmness and titratable acidity (TA), while soluble solids content (SSC), levels of ascorbic acid, total carotenoids and total antioxidants were lower than in untreated fruit. Fruit both sprayed with PUT and stored in low temperature for 6 weeks, at the ripe stage showed reduced respiration rate, delayed changes in the SSC:TA ratio and levels of total carotenoids compared to post‐harvest PUT application. CONCLUSION: Pre‐harvest application of 2.0 mmol L?1 PUT 1 week before the anticipated commercial harvest was more effective in delaying plum fruit ripening and can be used to extend the storage (0 ± 1 °C) life of plums for up to 6 weeks with minimum losses in fruit quality. The fruit quality characteristics, phenolic compounds and antioxidant capacities of 24 sweet cherry (Prunus avium L.) cultivars grown on the mountainsides of the Etna volcano (Sicily, Italy) were evaluated. High-performance liquid chromatographic methods were used to identify and quantify sugars, organic acids and phenolics. A total of seven phenolic compounds were characterised as hydroxycinnamic acid derivatives (neochlorogenic acid, p-coumaroylquinic acid and chlorogenic acid) and anthocyanins (cyanidin 3-glucoside, cyanidin 3-rutinoside, pelargonidin 3-rutinoside and peonidin 3-rutinoside). The total anthocyanin content ranged from 6.21 to 94.20 mg cyanidin 3-glucoside equivalents/100 g fresh weight (FW), while the total phenol content ranged from 84.96 to 162.21 mg gallic acid equivalents/100 g FW. The oxygen radical absorbance capacity (ORAC) assay indicated that fruit of all genotypes possessed considerable antioxidant activity. The high level of phenolic compounds and antioxidant capacity of some sweet cherry fruits implied that they might be sources of bioactive compounds that are relevant to human health.  相似文献

Scope Xanthohumol (XN), a dietary flavonoid found in hops, may have health‐protective actions against cardiovascular disease and type 2 diabetes. Yet, there are limited data on the pharmacokinetics (PK) of XN. This study provides PK parameters for XN and its major metabolites in rats. Methods and results A PK study was conducted in male jugular vein‐cannulated Sprague‐Dawley rats. Rats (n = 12/group) received an intravenous (IV) injection (1.86 mg/kg BW) or an oral gavage of a low (1.86 mg/kg BW), medium (5.64 mg/kg BW), or high (16.9 mg/kg BW) dose of XN. Plasma samples were analyzed for XN and its metabolites using LC‐MS/MS. The maximum concentration (Cmax) and area under the curve (AUC0‐96 h) of total XN (free and conjugated) were 2.9±0.1 mg/L and 2.5±0.3 h* mg/L in IV group, 0.019±0.002 mg/L and 0.84±0.17 h* mg/L in the oral low group, 0.043±0.002 mg/L and 1.03±0.12 h* mg/L in the oral medium group, and 0.15±0.01 mg/L and 2.49±0.10 h* mg/L in the oral high group. Conclusion The bioavailability of XN is dose‐dependent and approximately 0.33, 0.13, and 0.11 in rats, for the low‐, medium‐, and high‐dose groups, respectively.  相似文献

Litsea garciae, known locally in Sabah, Malaysia as Pengolaban, is an underutilized edible fruit endemic to Borneo. This study was conducted to determine the antioxidant activity and total phenolic, total flavonoid, and total anthocyanin contents of different parts (i.e., flesh, stem cap, and seed) of the fruits. All samples were freezedried and extracted using 80% methanol and distilled water. For 80% methanol extract, stem cap of pengolaban displayed the highest free radical scavenging activity and ferric reducing activities as compared to other parts of the fruit. Total phenolic and total flavonoid content were highest in stem cap with the values of 8.29±0.70 mg gallic acid equivalents/g and 6.90±0.61 mg rutin equivalents/g, respectively. Total anthocyanin content was highest in flesh of the fruit with the value of 4.12±0.10 mg cyanidin-3-glucoside equivalents/100 g. The same trend of antioxidant and phytochemical content were also observed in the distilled water extract. These findings suggested that pengolaban has an acceptable high amount of phytochemicals which has a potential as natural antioxidant that can contribute to human health.  相似文献

The aim of this study was to propose a membrane process for processing of a native Mexican fruit with limitations for its commercialization. The clarification of Xoconostle juice was performed using a hollow fiber membrane. The operating conditions were determined (T = 25 °C, Qf = 58 L/hr, TMP = 138 kPa); the process presented high productivities in terms of permeate flux (12.0–19.7 kg/m2/hr). The proposed method achieved high retention of turbidity (87.50%); whereas low retentions of pH (0.98%), total soluble solids (10.17%), carbohydrates (33.17%), polyphenols (2.10%), betalains (5.52%), and antioxidant activity (15.74%) were observed. Finally, a clear juice (3.79 ± 1.3 NTUs) was obtained with high antioxidant activity (21.40 ± 1.1 TEAC), high phenolic (27.50 ± 0.2 mg gallic acid/L) and betalain contents (18.80 ± 0.6 mg/L). An enhancement on color properties was observed (redness grade, h° = 10.14 ± 2.0).

Practical applications

Nowadays, the interest of food industry is focusing on the development of functional foods as well as looking for new valuable sources rich in bioactive compounds. Until now, many native Mexican fruits have not been processed in agro‐food industry, that is, Xoconostle fruit is one of the natural products not strongly processed. The processing of its derivative products, as fresh juice, can offer benefits to exploit a bit more its well‐known functional properties to human health. The enhancement of the quality of this natural juice preserving its nutritional and biological properties can be carried out using pressure‐driven membrane processes. Based on (a) the high productivity of the applied methodology for juice processing, (b) the high removal of turbidity, (c) the enhancement of physical characteristics (colorimetric), and (d) the preservation of its natural chemical substances, the membrane filtration seems to be a good alternative to going further in the commercialization of the fruit.  相似文献

The objectives of this study were to assess the effects of a single transdermal administration of flunixin meglumine (FM) in early postpartum Holstein Friesian dairy cows on serum concentrations of inflammatory and metabolic markers, uterine health, and indicators of pain. The hypothesis was that the anti-inflammatory, antipyretic, and analgetic effects of the pharmaceutic agent would reduce systemic inflammation, resulting in improved metabolic and inflammatory profile, diminished incidence of metritis, and reduced expression of pain. A total of 500 cows (153 primiparous, 347 multiparous) from 3 different commercial dairy farms in the northeast of Germany were included in a randomized controlled clinical trial. Farms were preselected based on high haptoglobin concentrations in their fresh lactating cows. Cows were excluded if they had experienced dystocia, stillbirth, or twin birth, or if they showed any signs of milk fever, retained fetal membranes, or fever (>40°C). The cows were treated once with either FM (3.33 mg/kg) or a placebo as control (CON) through transdermal administration between 24 to 36 h postpartum (d 2). General health examinations were performed (daily from d 2–8 and additionally on d 15 postpartum), vaginal discharge was assessed using the Metricheck device (d 8 and 15 postpartum) and serum samples were analyzed for inflammatory and metabolic markers (d 2, 4, and 6 postpartum). Effects of treatment, parity, sampling day, and their interactions were evaluated using mixed effects models. Primiparous cows treated with FM showed lower serum haptoglobin concentrations (0.90 ± 0.08 vs. 1.17 ± 0.07 g/L; ± standard error of the mean) and higher serum albumin concentrations (35.5 ± 0.31 vs. 34.8 ± 0.31 g/L) on d 6 postpartum. They also had a lower risk for purulent vaginal discharge with or without a fever compared with CON cows on d 15 postpartum (odds ratio for CON vs. FM: 1.63, 95% CI: 1.26–2.00), and body temperature was lower throughout the first 15 d in milk (39.1 ± 0.11 vs. 39.2 ± 0.11°C). Multiparous cows treated with FM had lower serum β-hydroxybutyrate concentrations on d 4 postpartum (0.71 ± 0.05 vs. 0.78 ± 0.05 mmol/L) and d 6 postpartum (0.74 ± 0.05 vs. 0.80 ± 0.05 mmol/L). Regardless of parity, FM-treated cows were significantly less likely to abduct their tail from their body (14.3 vs. 23.6%) and show an arched back (27.9 vs. 39.7%) on the day after treatment compared with CON cows. It can be concluded that FM treatment slightly reduced inflammation and diminished the risk for metritis in primiparous cows, improved metabolic profile in multiparous cows, and reduced expressions of pain in all cows.  相似文献

测定了不同产地余甘子果汁中多酚、黄酮和多糖含量。结果表明:广东野生余甘果汁的多酚、黄酮含量和水溶性多糖含量最高,分别为(204.15±6.85)mg/g干物质、(81.11±8.67)mg/g干物质和(19.78±1.22)mg/g干物质。通过测定还原力和自由基清除率,研究了余甘子果汁的抗氧化活性,结果表明:各种余甘子果汁都有清除自由基和抗氧化作用,其中广东野生果汁抗氧化活性较高,浓度为10 mg/mL时,其还原力为1.344±0.14,羟基自由基和超氧阴离子自由基的清除率分别为(91.50±3.53)%、(92.31±1.30)%,其抗氧化性优于同浓度的Vc;由广东栽培的余甘于做的果汁的DPPH自由基清除力最高,浓度为10 mg/mL时,清除率达到(92.09±1.52)%。  相似文献

BACKGROUND: Citrus fruits contain many secondary metabolites displaying valuable health properties. There is a lot of interest in enhancing citrus quality traits, especially carotenoid contents, by agronomic approaches. In this study the influence of carbohydrate availability on maturity and quality criteria was investigated in clementine fruits during ripening. Fruiting branches were girdled and defoliated after fruit set to obtain three levels of fruit load: high (five leaves per fruit), medium (15) and low (30). RESULTS: Considering the soluble solid content/titratable acidity (SSC/TA) ratio, it was found that fruits of the high and medium fruit load treatments reached maturity 1.5 months later than fruits of the control. At the time of maturity the SSC/TA ratio of fruits of all treatments was about 13.6. At harvest, fruits were 23% smaller and total sugar concentration of the endocarp was 12.6% lower in the high fruit load treatment than in the control. In contrast, the concentrations of organic acids and total carotenoids were 55.4 and 93.0% higher respectively. Total carotenoids were not positively correlated with either soluble sugars or total carbohydrates. CONCLUSION: Taken together, the results do not support the common view that carbohydrate availability directly determines carotenoid synthesis by influencing precursor availability. Abstract: Mango (Mangifera indica L.) is a major tropical fruit that has not been exploited for fresh‐cut or minimally processed products on a scale similar to apples, pineapples, or melons. The objective of this study was to investigate the effect of infrared (IR) treatment on total phenolics, carotenoids, ascorbic acid, and antioxidant properties of fresh‐cut cubes from ‘Tommy Atkin’ mangoes. Mango cubes were IR treated (5, 10, 15 min) and evaluated at 4‐d intervals during 16‐d storage at 4 ± 1 °C. Total phenolics, carotenoids, and ascorbic acid content in fresh‐cut control mango cubes were 43.33, 1.37, and 15.97 mg/100 g FW, respectively. IR treatments increased total phenolics (59.23 to 71.16 mg/100 g FW) and decreased ascorbic acid (12.14 to 15.38 mg/100 g, FW). Total carotenoids showed a mixed trend (1.13 to 1.66 mg/100 g, FW). The IR treatment showed a significant positive impact on antioxidant properties (μM TE/100 g, FW) of mango cubes, as assayed by ABTS (261.5 compared with 338.0 to 416.4), DPPH (270.5 compared with 289.4 to 360.5), and ORAC (6686 compared with 8450 to 12230). Total phenolics, carotenoids, ascorbic acid, and antioxidant capacity decreased over 16‐d storage. However, IR treated samples had consistently higher ABTS, DPPH, and total phenolics during storage. It was demonstrated that IR treatment can be effectively used in improving antioxidant properties of fresh‐cut mangoes with minimal effect on the visual appearance. Practical Application: Various methods/treatments are in use for extending the quality of fresh‐cut fruits, including mild heat treatment. This study explored the application of infrared (IR) heat for processing fresh‐cut mango cubes and evaluated its effect on vitamin C and antioxidant capacity during 16‐d storage. This is the first study reporting on the use of IR heat in fresh‐cut fruits. IR treatment was shown to be effective in retaining antioxidant properties of fresh‐cut mango cubes with minimal effect on the visual appearance.  相似文献

Sugars and organic acids in the fruit of two cultivars and three selections of black elderberry (Sambucus nigra L.): ‘Haschberg’, ‘Rubini’, ‘Selection 13’, ‘Selection 14’ and ‘Selection 25’ were quantified. The anthocyanin as well as quercetin profiles of this plant material were also established by the use of HPLC/MS. Significant differences in the concentration of sugars and organic acids were detected between the widely spread cultivar ‘Haschberg’ and all other cultivars/selections; ‘Haschberg’ was the richest in organic acids (6.38 g kg−1 FW), and it contained the least sugar (68.5 g kg−1 FW). The following major cyanidin based anthocyanins were identified in the fruit of black elderberry: cyanidin 3-sambubioside-5-glucoside, cyanidin 3,5-diglucoside, cyanidin 3-sambubioside, cyanidin 3-glucoside and cyanidin 3-rutinoside. The most abundant anthocyanin in elderberry fruit was cyanidin 3-sambubioside, which accounted for more than half of all anthocyanins identified in the berries. The ‘Rubini’ cultivar had the highest amount of the anthocyanins identified (1265 mg/100 g FW) and the lowest amount was measured in berries of the ‘Selection 14’ (603 mg/100 g FW). The ‘Haschberg’ cultivar contained a relatively low amount of anthocyanins in ripe berries (737 mg/100 g FW). From the quercetin group, quercetin, quercetin 3-rutinoside and quercetin 3-glucoside were identified; the latter prevailing in black elderberry fruit. The cultivar with the highest amount of total quercetins was ‘Selection 25’ (73.4 mg/100 g FW), while the ‘Haschberg’ cultivar contained average amounts of quercetins (61.3 mg/100 g FW). The chemical composition of the ‘Haschberg’ cultivar, the most commonly planted, conforms to the standards for sugars, anthocyanins and quercetins and exceeds them in the content levels of organic acids, the most important parameter in fruit processing.  相似文献

Apples (Malus domestica L.) are the most common source of phenolic compounds in northern European diet. Besides pectins, dietary fibers, vitamins, and oligosaccharides they contain phenolic compounds of different classes. Apple powders are convenient functional forms retaining significant amounts of phenolic antioxidants. In this study reducing and radical scavenging profiles of freeze‐dried powders of “Aldas,? “Auksis,? “Connel Red,? “Ligol,? “Lodel,? and “Rajka? were determined and phenolic constituents were identified using ultra high‐performance liquid chromatography coupled to quadrupole and time‐of‐flight mass spectrometers. A negative ionization mode was applied and seventeen compounds: phenolic acids (coumaroylquinic, chlorogenic), flavonoids (quercetin derivatives), and procyanidin derivatives (B1, B2, and C1) were identified in all tested apple samples. Total values of Trolox equivalents varied from 7.72 ± 0.32 up to 20.02 ± 0.52 and from 11.10 ± 0.57 up to 21.42 ± 0.75 μmol/g of dry weight of apple powder in FRAP (ferric reducing antioxidant power) and ABTS (2,2‐azinobis‐(3‐ethylbenzothiazoline‐6‐sulfonic acid) postcolumn assays, respectively. The greatest Trolox equivalent values were determined for apples of “Aldas? cultivar. Chlorogenic acid and procyanidin C1 were the most significant contributors to total reducing and radical scavenging activity in all apple cultivars tested, therefore they could be considered as markers of antioxidant activity.  相似文献

Abstract: Phenolics, flavonoids, anthocyanins, and tannins of pomegranate juices, obtained from 9 Tunisian ecotypes were quantified. Phenolics and flavonoids in the variety Tounsi (TN) (3299 mg gallic acid equivalents [GAE]/L and 636 mg quercetin equivalents [QE]/L of juice, respectively) were higher than in the variety Gabsi (GB) (1570 mg GAE/L and 135 mg QE/L of juice, respectively). The highest anthocyanins quantity was found in GB 2 with 156 mg cyanidin‐3‐glucoside equivalents (CGE)/L. TN 3 ecotype showed the highest tannins quantity with 2550 mg catechin equivalents (CE)/L of juice. TN 1 presented the highest radical‐scavenging activity (2, 2′‐azinobis‐3‐ethylbenzothiazoline‐6‐sulphonate [ABTS], IC50 [50% inhibition concentration] = 525 mg/L), as well as the highest concentration of micronutrient cations (potassium and sodium). A high correlation (R2= 0.80) between antioxidant capacity and proanthocyanin contents was found, this suggests that proanthocyanins are the principal contributor in the antioxidant capacity of pomegranate. Our data suggest also that the high concentrations of K+ and Na+ may play a role in the adaptation of pomegranate to arid environments.  相似文献
