Total microbial count reduction (TMR), total anthocyanins (TAR), and ascorbic acid retention (AAR) after the operation at different PAA concentrations (0–100 mg L?1), contact times (10–120 s), and temperatures (4–40°C) were used for multiple optimisation using Derringer′s desirability function. Two optimization scenarios (OP 1 and OP 2) were studied. OP 1 was proposed with the goal to maximize TMR with 90% TAR and AAR; and OP 2 maximizing TAR and AAR with TMR of 2 log UFC g?1. The optimized variable levels obtained were the following: 100 mg L?1 PAA, 24 °C and 50 s for OP 1 and 20 mg L?1 PAA, 18 °C and 52 s for OP 2. Additional validation experiments showed agreement between predicted and experimental results. OP 2 conditions are recommended to fresh‐cut strawberries washing disinfection because of an acceptable TMR, higher TAR and AAR, better sensory attributes, and the economic convenience of lesser PAA consumption.  相似文献

BACKGROUND: The increasing consumption of produce all over the world has resulted in increasing concern by the regulatory agencies with respect to the level of safety performed by the processors. The objective of the present study was to investigate the hazards involved in the various steps of fresh‐cut lettuce processing (reception/selection of raw material, washing, rinsing, sanitisation and final product) by means of microbiological analyses of microbial groups used as indicators of hygienic conditions and of pathogens. RESULTS: High microbial loads of mesophilic and psychrotrophic bacteria and Pseudomonas spp. were found in the ram reception (~6 log colony‐forming units (CFU) g?1), which were reduced by a single logarithmic cycle for the last two microbial groups after the sanitisation step (P < 0.05), the latter being ineffective against the first microbial group (P > 0.05). Lower counts of yeasts and moulds, total coliforms (35 °C) and faecal coliforms (44 °C) were observed in the initial step (3.49–4.53 log CFU g?1, 0.65–1.55 log most probable number (MPN) g?1 and 0.50–0.90 log MPN g?1 respectively), these values increasing significantly after the sanitisation step for yeasts and moulds (~5 log CFU g?1) but remaining unaltered for coliforms (P > 0.05). Salmonella spp. were not found in any of the experiments carried out, while the presence of Escherichia coli was observed in the final product. CONCLUSIONS : Practices compromising the hygienic quality of the final product during commercial storage were observed and corrective measures suggested. BACKGROUND: The feasibility of using modified atmosphere packaging (5 kPa O2 + 5 kPa CO2) to maintain the antioxidant properties of fresh‐cut tomatoes during shelf‐life was assessed through storage at different temperatures (5, 10, 15 and 20 °C). Health‐related compounds, antioxidant capacity, microbiological counts, physicochemical parameters and in‐package atmosphere of tomato slices were determined. RESULTS: Initial lycopene, vitamin C and phenolic contents and physicochemical parameters of tomato slices were well maintained for 14 days at 5 °C. Lycopene and total phenolic contents were enhanced over time in tomato slices stored at 15 and 20 °C. However, this increase in antioxidant compounds of fresh‐cut tomatoes during storage may be associated with excessive amounts of CO2 (R2 = 0.5679–0.7328) in the packages due to microbial growth. Although keeping tomato slices at temperatures above 10 °C increased their antioxidant content, the shelf‐life of the product was reduced by up 4 days. CONCLUSIONS: A storage temperature of 5 °C is appropriate for maintaining the microbiological shelf‐life of fresh‐cut tomatoes for up to 14 days and also allows the antioxidant properties of tomato slices to be retained over this period, thus reducing wounding stress and deteriorative changes. Ultraviolet C (UV‐C) irradiation is a widely used nonthermal sterilisation method used to ensure the quality and safety of fresh and fresh‐cut produce. However, research focus of UV‐C has recently shifted from safety of sterilisation damage towards improvements in quality. Red cabbage (Brassica oleracea var. capitata f. rubra) is a widely consumed fresh‐cut vegetable. In this study, the effects of UV‐C irradiation on the antioxidant capacity, antioxidant enzyme activity and colour of fresh‐cut red cabbage were evaluated. The UV‐C decreased the L*, a* and b* values, and it turned the colour darker and increasingly blue. UV‐C increased the activity of four antioxidant enzymes and also stimulated the accumulation of flavonoids, glutathione and ascorbic acids. The antioxidant activity of UV‐C treatment was higher than in the control group. These results suggest that an appropriate dose of UV‐C may improve the antioxidant properties of fresh‐cut red cabbage.  相似文献

Nectarine [Prunus persica (L.) Batsch] is a sought‐after fruit due to its properties. In addition, minimally processed produces are more and more accepted by consumers. Four nectarine cultivars (‘Early Top’, ‘Nectaprima’, ‘Big Top’ and ‘Venus’) were selected to study their suitability for minimal processing. Samples were processed in a clean room at 8 °C, washed them in water (4 °C) and stored at 4 °C in modified atmosphere packaging. The samples were analysed at 0, 3, 6 and 9 days of storage, and quality parameters as well as functional compounds (polyphenols and polyphenol oxidase activity) were studied. Principal component analysis (PCA) was carried out to assess the relationship between nectarine cultivars and determined parameters. In conclusion, ‘Early Top’ and ‘Nectaprima’ cultivars showed the best quality results and therefore a promising suitability for fresh‐cut processing. Nevertheless, the remaining cultivars should not be ruled out due to their functional content, advising additional conservation treatments for them.  相似文献

BACKGROUND: There is little information available concerning the effect of sanitizing agents, including ultraviolet (UV‐C) light, on nutritional composition of fresh‐cut produce. In this study, the influence of UV‐C light irradiation (3.2–19.2 kJ m?2) on the nutritional quality of fresh‐cut tomato cv. Durinta grown under either low (2.4/2.8 dS m?1) or high (4.9/7.7 dS m?1) electrical conductivity (EC) of the hydroponic nutrient influx/efflux solution was investigated. RESULTS: When grown under low EC UV‐C light treatment reduced development of microbial population of fresh‐cut tomato, increased phenolic content and delayed degradation of vitamin C after 7 days of storage at 4–6 °C. UV‐C light irradiation had no significant effect on appearance, color or lycopene content of fresh‐cut tomato. In recently harvested intact tomatoes, the lycopene and vitamin C contents were 30% higher in tomatoes irrigated with high EC, whereas the phenolic content was unaffected by the salt treatment. After fresh‐cut processing, phenolic and vitamin C contents of fresh cuts produced from tomatoes treated with high EC decreased by > 10%. This decline was initially accelerated in tomato treated with UV‐C light irradiation. CONCLUSIONS: Our results revealed that fresh‐cut tomatoes are affected dissimilarly by UV‐C treatments, depending on the degree of salt stress undergone by plants before harvest. We determined the impact of a sanitizing procedure on nutritional composition, an effect often overlooked but with great significance to ensure overall quality of fresh produce. Our findings revealed the need for more nutritional studies addressing the effect of multiple stress factors from pre‐harvest to post‐processing stages. BACKGROUND

Including forage legumes in dairy systems can help address increasing environmental/economic concerns about perennial ryegrass monoculture pastures. This work investigated the effect of substituting fresh‐cut grass with increasing quantities of fresh‐cut white clover (WC) on milk fatty acid (FA) profile and transfer efficiency of dietary linoleic (LA) and α‐linolenic (ALNA) acids to milk fat. Three groups of three crossbred dairy cows were used in a 3 × 3 crossover design. Dietary treatments were 0 g kg?1 WC + 600 g kg?1 grass, 200 g kg?1 WC + 400 g kg?1 grass, and 400 g kg?1 WC + 200 g kg?1 grass. All treatments were supplemented with 400 g kg?1 concentrates on a dry matter basis. Cows had a 19‐day adaptation period to the experimental diet before a 6‐day measurement period in individual tie stalls.

RESULTS

Increasing dietary WC did not affect dry matter intake, milk yield or milk concentrations of fat, protein or lactose. Milk polyunsaturated FA concentrations (total n‐3, total n‐6, LA and ALNA) and transfer efficiency of LA and ALNA were increased with increasing dietary WC supply.

CONCLUSION

Inclusion of WC in pastures may increase concentrations of nutritionally beneficial FA, without influencing milk yield and basic composition, but any implications on human health cannot be drawn. © 2018 The Authors. The efficacies of calcium lactate and chlorine washing treatments of fresh‐cut lettuce and carrots were compared during storage at 4 °C over 10 days. The gas composition of packages, colour, enzyme activity, texture, sensory attributes, microflora and levels of ascorbic acid and carotenoids were evaluated at 1, 3, 7 and 10 days. Calcium lactate treatment was not significantly different to chlorine treatment (p < 0.05) in terms of maintaining colour, texture and acceptability of fresh‐cut lettuce and carrots during the entire storage period. The washing treatments did not affect levels of ascorbic acid of fresh‐cut lettuce or carrots. Carotenoid levels were higher in calcium lactate‐treated carrots than chlorine‐treated samples at the end of storage. Mesophilic, psychrotrophic and lactic acid bacteria counts were not significantly different between treatments for both vegetables. Copyright © 2005 Society of Chemical Industry  相似文献

Seedless watermelon (Citrullus lanatus Thunb. Mansfeld, cv. Millionaire) fruit were exposed to 10 µL L−1 1‐methylcyclopropene (1‐MCP) or air for 18 h. Afterward, the fruit were processed into placental‐tissue pieces, treated with calcium dips (20 g kg−1 CaCl2) or deionized water, and stored in vented containers for 7 days at 10 °C. At intervals during storage, fresh‐cut placental tissue was monitored for respiration, ethylene production, firmness, electrolyte leakage, total soluble solids, titratable acidity and microbial growth. Ethylene production was below detection in fresh‐cut placental tissue, consistent with the low ethylene production in intact watermelon fruit. Respiration rates were significantly enhanced in response to tissue processing, and continued to increase throughout the 7 days of storage. Tissue derived from 1‐MCP‐treated fruit showed enhanced 1‐aminocyclopropane‐1‐carboxylate synthase (ACS, EC 4.4.1.14) activity, suppressed respiratory rates and undetectable levels of 1‐aminocyclopropane‐1‐carboxylate oxidase (ACO) activity during storage. Post‐processing calcium dips (CaCl2) had little influence on ACS activity relative to tissue not receiving calcium, but significantly enhanced ACO activity and maintained firmness of fresh‐cut tissue throughout storage. The data collectively support the conclusion that 1‐methylcyclopropene treatment of intact watermelon fruit is alone unlikely to benefit the storage duration of fresh‐cut watermelon. In this research, some quality changes during storage at 4 °C were assessed in fresh‐cut fruits of a ‘long‐storage tomato’ landrace, packaged in biocompostable materials (PLA Ingeo tray/NatureFlex? film) or in conventional plastics (PET tray + polypropylene film). The effects of dipping in CaCl2 on the shelf‐life extension were also assessed. Plants were cultivated both off‐season (greenhouse) and in‐season (open field). CO2 and O2 concentration, fruit weight loss, firmness, colour, microbial load were measured at 0, 4, 7, 12 days of storage. Headspace gas changes and fruit weight loss were minimised in conventional package. BIO package prevented water condensation, led to max 5% weight loss and made fruits less susceptible to spoilage. Dipping in CaCl2 induced better firmness, especially in biopackage. Off‐season fruits had overall lower quality than in‐season fruits; however, these may contribute to extend the production season, with interesting marketing implications for the agri‐food industry.  相似文献

BACKGROUND: The comparative effects of organic (citric and lactic) acids, ozone and chlorine on the microbiological population and quality parameters of fresh-cut lettuce during storage were evaluated. RESULTS: Dipping of lettuce in 100 mg L−1 chlorine solution reduced the numbers of mesophilic and psychrotrophic bacteria and Enterobacteriaceae by 1.7, 2.0 and 1.6 log10 colony-forming units (CFU) g−1 respectively. Treatment of lettuce with citric (5 g L−1) and lactic (5 mL L−1) acid solutions and ozonated water (4 mg L−1) reduced the populations of mesophilic and psychrotrophic bacteria by 1.7 and 1.5 log10 CFU g−1 respectively. Organic acid dippings resulted in lower mesophilic and psychrotrophic counts than ozonated water and chlorine dippings during 12 days of storage. Lactic acid dipping effectively reduced (by 2.2 log10 CFU g−1) and maintained low populations of Enterobacteriaceae on lettuce for the first 6 days of storage. No significant (P > 0.05) changes were observed in the texture and moisture content of lettuce samples dipped in chlorine, organic acids and ozonated water during storage. Colour, β-carotene and vitamin C values of fresh-cut iceberg lettuce did not change significantly (P > 0.05) until day 8. CONCLUSION: Lactic and citric acid and ozonated water dippings could be alternative treatments to chlorine dipping to prolong the shelf life of fresh-cut iceberg lettuce. Different selections along the length of a shoot in fresh‐cut bamboo (Phyllostachys heterocycla var pubescens) were used to study the changes of respiratory rate and the contents of total sugar, reducing sugar, total phenol, lignin, cellulose and malondialdehyde (MDA) and the activities of phenylalanine ammonia‐lyase (PAL) and polyphenoloxidase (PPO) during storage at 4 °C. Respiratory rate increased after mechanical stress resulted from cutting, but decreased gradually during storage. PAL activity and PPO activity were higher in the apical and middle sections than in the basal sections of bamboo shoot. The content of total sugar, reducing sugar, MDA, lignin and cellulose changed differently in the three sections during storage. Total sugar and reducing sugar in the basal and middle sections decreased initially, then increased. In the apical section, total sugar and reducing sugar also decreased initially, but remained low thereafter. MDA levels increased sharply after processing but decreased in the apical section after 4 days and remained at high levels in the middle and basal sections during storage. Cellulose and lignin decomposed more rapidly in the apical and middle sections than in the basal section. Lignin content increased in the basal section at the end of the storage. These results suggest that, while softening occurs in the apical and middle sections, lignification also takes place at the same time in the basal section. Slicing is an abiotic stress during fresh‐cut lotus root slices (FLS) preparation. To evaluate the potential ability of slicing to induce antioxidant capacity (AC) in FLS, fresh lotus roots were sliced into 0.4 cm thick slices and stored at 7 °C for 7 days using intact root segments as control. Results showed slicing induced 68.3% higher phenylalanine ammonia‐lyase (PAL) activity and parallel 130.5% more total phenol (TP) accumulation after 7 days storage compared to control. AC values in FLS assayed by FRAP and ABTS●+ were 41.5% and 93.8% more than those in control samples at the end of storage, respectively. Such increases in AC values were mainly attributed to TP accumulation as a positive correlation existed between AC and TP. However, slicing significantly accelerated FLS browning by increasing the polyphenol oxidase (PPO) activity during storage. Nevertheless, FLS was still marketable with the maximum browning index of 1.9 after 7 days storage.  相似文献

Edible coatings based on sodium alginate (AL) and pectin (PE) at 1% and 2%(w/v) enriched with eugenol (Eug) and citral (Cit) at minimum inhibitory concentrations (MIC) (0.10% and 0.15%) and double MIC were used to preserve the quality of fresh‐cut apples ‘Bravo de Esmolfe’. Samples were taken, through 14 day at 4 °C, for analysis of colour CIE(L*h°C*), firmness, °Brix, weight loss, antioxidant activity (TEAC), microbial growth and taste panels. With those quality characteristics, three groups were formed by the principal component and hierarchical cluster analysis, for each coating base (AL or PE). Based on, for each quality parameter measured, the mean closest value to the one at harvest for colour, higher value for firmness, °Brix and TEAC, and lower value for weight loss and microbial spoilage, the best group was selected for AL and PE. From each group, two edible coatings with the highest scores in overall acceptability were selected for fresh‐cut apples: AL2% + Eug 0.1%, AL2% + Cit 0.15% + Eug 0.1%, PE 2% + Cit 0.15% and PE 2% + Eug 0.2%.  相似文献

BACKGROUND: In recent years there has been increasing consumer pressure to avoid the use of agrochemicals such as chlorine on fresh plant products for extending their shelf life. The combined use of eco‐sustainable techniques may be an alternative. The effect of hot water (HW), ultraviolet‐C (UV‐C) light and high oxygen packaging (HO) on the overall quality of fresh‐cut pomegranate arils stored under modified atmosphere packaging (MAP) for up to 14 days at 5 °C was studied. RESULTS: Arils extracted manually, washed with chlorine (100 µL L?1 NaClO, pH 6.5, 5 °C water), rinsed and drained were exposed to single or combined (double and triple) hurdle techniques. The HW treatment consisted of a 30 s immersion in water at 55 °C followed by air surface drying. A 4.54 kJ m?2 dose was used for the UV‐C treatment before packaging. Active MAP with initial 90 kPa O2 was used in the HO treatment. The respiration rate remained relatively constant throughout shelf life, with no differences among treatments. CO2 accumulation was higher within HO packages. HW induced a slight reduction in total soluble solids, while no changes in titratable acidity were found. HO‐treated arils had the highest phenolic content, while the lowest was found in HW‐treated arils. The lowest antioxidant activity was found in HW + UV‐C + HO and the highest in UV‐C + HO and HO treatments. HW alone or in combination with UV‐C and HO inhibited mesophile, mould and yeast growth, while UV‐C + HO was most effective for controlling yeast and mould growth. CONCLUSION: UV‐C and HO either alone or in combination are promising techniques to preserve the quality of pomegranate arils for up to 14 days at 5 °C. © 2012 Society of Chemical Industry  相似文献

Intense light pulses (ILP) treatments have good prospects for becoming an alternative to traditional thermal methods for decontamination of food surfaces. The aim of this work was to evaluate which ranges of the light spectrum are responsible for bacterial inactivation and their effect on the quality of fresh‐cut avocado. Results show that the effectiveness of ILP treatment decreases when the ultraviolet (UV) spectral region is blocked (particularly UV‐C). ILP treatments without UV‐C light (305–1100 nm) and an overall fluence of 10.68 J cm?2 caused reductions of 2.47 and 1.35 log CFU g?1 in the initial counts of inoculated Escherichia coli and Listeria innocua, respectively, in comparison with those treated using only VIS–NIR light (0.83 and 0.68 log CFU g?1, respectively). Treatments applying light of a wavelength between 305 and 1100 nm had a more pronounced impact on colour, texture and headspace gas composition than treatments that did not contain UV light (400–1100 nm).  相似文献

The effects of hot CaCl2 dips on postharvest quality and bioactive compounds of fresh‐cut sweet leaf bush were investigated. The vegetable was dipped in 0.5% or 1.0% (w/v) of CaCl2 solutions at 40 °C for 30 s and the control was the untreated sample. Hot CaCl2 dips significantly delayed the weight loss, maintained the overall quality and inhibited the wiltness (< 0.05). Both hot CaCl2 dips had no effect on the changes in lightness (L*) and delayed the decrease in greenness (‐a*) and total chlorophyll content and the increase in both yellowness (b*) and carotenoid content. Hot CaCl2 dips enhanced total antioxidants, total phenolics content and both AsA‐POD and G‐POD activities from 38.6, 0.44, 15.2 and 22.4 at day 0 to 55.3, 0.55, 50.5 and 362.4 at day 8, respectively. Moreover, hot CaCl2 dips also delayed the loss of DPPH free radical scavenging activity, total flavonoid, ascorbic acid and CAT activity when compared to other treatments during storage. This study showed that hot CaCl2 dip maintains postharvest quality and enhanced bioactive compounds of fresh‐cut sweet leaf bush during storage.  相似文献
