The objective of this research was to investigate the acceptability of muscadine grape (Vitis rotundifolia) genotypes (cultivars and selections) and to correlate overall liking to other quality measurements to determine the main drivers of liking. Twenty‐two genotypes grown at the Univ. of Georgia–Tifton Campus were evaluated. Four retail commercial grape genotypes (Vitis vinifera and “Concord”) were also evaluated for comparison. Panelists familiar with muscadine grapes used the hedonic general labeled magnitude scale (HgLMS, –100 = strongest disliking of any kind ever experienced, +100 = strongest liking of any kind ever experienced) to rate overall liking and the liking of appearance, flavor, pulp texture, and skin texture. Puncture testing was done to assess grape berry texture, and compositional attributes soluble solids and pH were also measured. The sensory results indicated that the grapes were variable with overall liking scores from 12.2 to 39.6. The factors highly correlated with overall liking scores were muscadine flavor, pulp and skin liking, while a significant negative correlation was found between skin liking and skin texture and mechanical texture measures. The muscadine grapes with the highest overall liking scores were Ga. 5‐1‐34 and Ga. 2‐8‐21. Principal component analysis confirmed that grapes with a thinner skin and a higher pH tended to group around overall liking and flavor points. These results indicate that even among panelists familiar with muscadine grapes, skin thickness is a negative characteristic. Breeding for thinner skins may be a positive step in muscadines gaining a more widespread appeal in the fresh fruit market.  相似文献

The purpose of this study was to determine the sensory properties and acceptability of lab developed prototypes of conventional, diabetic (with no sugar), and diabetic/reduced calorie milk chocolates (no sugar and 25% calorie reduction) with high-intensity sweeteners, sucralose and stevioside, and partial fat replacement with whey protein concentrate (WPC). PLS was performed in order to relate sensory properties and consumer acceptability and to determine drivers of liking and disliking. There was no difference between conventional, diabetic and diabetic/reduced calorie milk chocolates for brightness, cocoa aroma, cocoa butter aroma, and cocoa flavor (p > 0.05). Acceptability was higher for sucrose substitution by sucralose than by stevioside and partial fat replacement reduced acceptability of flavor even more (p ? 0.05). Crucial attributes which determine consumer acceptability in samples are sweet aroma, melting rate, and sweetness, whereas bitterness, bitter aftertaste, adherence, and sandiness were drivers of disliking.  相似文献

ABSTRACT:  The traditional production of corn tortilla has been modified by new processing technologies to make possible a commercial-scale production; this practice has resulted in products having sensory properties different from those produced by the traditional method. There is no published information on sensory attributes driving acceptance and purchase intent of corn tortillas. Identifying sensory drivers for acceptance and purchase intent of corn tortillas will help commercially produce products that satisfy consumers' expectations. A consumer study was conducted to evaluate acceptance and purchase intent of corn tortillas and determine drivers of acceptance and purchase intent of the products. Ten samples of corn tortillas were selected to represent a variety of corn tortillas available in the Mexican market. Three hundred Mexican consumers evaluated acceptability of appearance, color, thickness, rollability, resistance to tearing, aroma, chewiness, taste and aftertaste, and overall liking using a 9-point hedonic scale. Overall acceptance and purchase intent were determined with a yes/no scale. Analysis of variance and multivariate analysis of variance revealed that consumers were able to differentiate differences in sensory acceptability among 10 samples. For example, 2 homemade and 1 small commercial-scale samples, with an overall liking score of 6.6 to 6.7, were more acceptable than others. Rollability, resistance to tearing, and chewiness were attributes underlying overall differences among 10 samples. Attributes determining overall acceptance of corn tortillas were chewiness and overall liking. Purchase intent was influenced by overall appearance, rollability, chewiness, taste, and overall liking. This study revealed critical sensory attributes and their weights given by Mexican consumers when making decisions for acceptance and purchase intent of corn tortilla.  相似文献

Consumption of soy protein has been associated with benefits related to numerous areas of health. Due to the widespread consumption of bread, one means of contributing to the health of individuals is through the incorporation of soy protein into bread. To this end, soy flour (SF) or soy protein isolates (SPIs) in 20% and 12% substitution levels, respectively, were added to flour during bread manufacture. The developed breads were tested using a consumer panel for acceptability, using a refined white bread as a control. These data were compared to attribute intensity data collected by the trained panel to identify specific flavor and texture characteristics affecting liking. The sensory profile of the 20% SF bread was acceptable and comparable to the control bread, despite a significantly stronger beany flavor. No significant differences in sensory properties of the SF and control breads were detected by the trained panel for many sensory attributes. The SPI bread, however, had a sensory profile that was significantly more firm, dense, sour, beany, bitter, and astringent with a strong aftertaste in comparison to the wheat control bread. Consumer liking scores for the SPI bread was significantly lower than the liking of the control and the SF added bread. PRACTICAL APPLICATION: Many soy-enriched foods, while contributing positively to health, are considered unacceptable by consumers. This is due to negative sensory properties, such as beany, painty, and astringent notes, often perceived by consumers. This study provides information on the level of SF that can be included in bread in an amount that does not detract from consumer acceptability. This level also allows for a Food and Drug Administration (FDA) health claim to be made.  相似文献

Tomatoes (Solanum lycoperiscum) are a popular produce choice and provide many bioactive compounds. Consumer choice of tomatoes is influenced by flavor and visual appearance and external texture cues including hand firmness and sliceability. The objective of this study was to determine drivers of liking for fresh tomatoes across 3 stages of consumption. Seven tomato cultivars were ripened to a 6 on the USDA color chart. Trained panelists documented appearance, flavor, and texture attributes of tomatoes in triplicate. Tomato consumers (n = 177) were provided with knives and cutting boards and evaluated tomatoes across 3 stages: appearance (stage 1), slicing (stage 2), and consumption (stage 3). Consumers evaluated overall liking at each stage. Analysis of variance and external preference mapping were conducted. Overall liking was highest during the appearance portion of the test and lowest during the consumption portion (P < 0.05). Drivers of liking at stage 1 were color intensity, even outside color, and overall aroma. Drivers of liking at stage 2 were wetness/juiciness and overall aroma. Wetness/juiciness, seed presence, ripe flavor, and sweet and umami tastes were drivers of liking for tomatoes at consumption (stage 3). Four separate clusters of tomato consumers were identified. Cluster 1 preferred tomatoes with even color, higher color intensity, and flavor intensity. Cluster 2 preferred firm tomatoes. Cluster 3 preferred tomatoes that were soft and at peak ripeness; this cluster also had the highest liking scores for all tomatoes. Cluster 4 consumers generally consumed tomatoes in sandwiches rather than as‐is and preferred tomatoes with even and intense color. Tomato growers can utilize these results to target cultivars that are well liked by consumers.  相似文献

This paper reports separate studies of the effect of pre-treatments (CaCl2, low methoxyl pectin (LMP), and combined solutions) and the effect of freezing method (at four different rates) and thawing mode (at two different rates) on objective parameters, structure and sensory characteristics of fresh raspberries and blackberries. After that, the effect of a complete freezing process combining the best pre-treatments with the best freezing/thawing conditions found for each fruit was investigated. Kramer Shear Cell (KSC), back extrusion, compression and multiple penetration tests were used to measure fruit texture objectively. For calcium and LMP pre-treatments, which were applied separately, texture parameters were significantly higher in samples treated at the highest concentrations (100 mM of CaCl2 for both fruits and 0.3 and 3% of LMP for raspberry and blackberry, respectively) compared to fresh controls. Blackberry structure was more susceptible than raspberry structure to the effect of pre-treatments. For the combined pre-treatments, the highest texture parameters were found in the samples treated with CaCl2 (100 mM) and LMP (0.1%) in the case of raspberries and CaCl2 (100 mM) and LMP (3%) in the case of blackberries. Combined pre-treatment did not increase firmness with respect to that of samples treated only with calcium, which indicates that CaCl2 preserved the raspberry structure more efficiently during processing. Fruits frozen by forced convection with liquid nitrogen vapour at –40 °C were significantly firmer. Raspberries should be thawed at 5 °C, whereas blackberries may be thawed at room temperature. Sensory analysis showed that the blackberry structure was more resistant to freezing. In both fruits, over the complete process parameter values were again highest in the samples treated with 100 mM CaCl2, applied either separately or in combination with LMP. In raspberry, panellists detected no significant differences between sensory texture parameters of the different samples, and in blackberry, panellists found no significant differences between any of the sensory characteristics. Multiple penetration maximum force (F MP) was the parameter that best expressed product firmness for both fresh and frozen raspberries, whereas compression slope (S C) best reflected changes in blackberries. Flaxseed has recently gained attention as a functional food. The effect of adding flaxseed (7.3%, 11.6%, and 15.5%) to muffins on consumer acceptability was evaluated by a focus group, hedonic scoring, and food action rating scale (FACT). The majority of consumers (82.6%, P < 0.001) rated the control muffin (0 % flaxseed) higher than the flax muffin for appearance, color, flavor, texture, overall acceptability, and food acceptance. Flaxseed muffin (11.6%) was “neither liked nor disliked” to “liked slightly” in overall acceptability. This may have been accounted for by the observation that many persons aged 18 to 25 y did not think they needed to consume “health foods”. This “indifferent” and in some cases “negative” attitude toward the flax muffins, which they considered a “health food”, may have influenced the ratings the flax muffins received. Texture and flavor were strongly and positively correlated (P < 0.01) to overall acceptability. A flaxseed muffin provided at least 16% fiber of the daily recommended value.  相似文献

Rib‐eye steaks, from 3 forage‐finished systems (S1, S2, and S3) and 1 commercial steak (C), either cooked by 1‐sided‐grilling or 2‐sided‐grilling, were evaluated for sensory acceptability [overall appearance (ORA) and overall appearance of fat (OAF) for raw steaks; overall appearance (OCA), overall beef aroma (OBA), overall beef flavor (OBF), juiciness, tenderness and overall liking (OL) for cooked steaks] and purchase intent by Hispanic, Asian and U.S. consumers. They also indicated preferred degree of doneness and cooking methods. Cross‐cultural differences in preferences and consumer acceptability of rib‐eye steaks were observed. Grilling was the most preferred cooking method. Hispanics and Asians preferred medium and/or medium well, while U.S. consumers preferred medium and/or medium rare. For cooked steaks, the population effect was significant for all sensory attributes; Asians generally scored lower than did Hispanics and U.S. consumers. C and S3 generally had higher scores for all sensory attributes across 3 populations. Purchase intent for all forage‐finished steaks was higher for Hispanics and U.S. consumers compared to Asians (50.0% to 77.8% compared with 43.2% to 65.9%). Attributes influencing purchase intent of forage‐finished steaks differed among populations: tenderness (odds ratio = 1.4) for Hispanics, OCA (odds ratio = 1.5) for Asians, and OBF (odds ratio = 1.3) for U.S. consumers. Overall, this study demonstrated that the type of forage‐finished system and ethnic differences influenced sensory acceptability and purchase intent of forage‐finished rib‐eye steaks.  相似文献

The aim of this study was to evaluate consumer acceptability of biscuits when saturated fat was replaced by olive or sunflower oil and to determine the sensory characteristics responsible for changes in acceptability. Ninety seven consumers evaluated the acceptability of six biscuit samples varying in the fat source (dairy shortening, olive oil and sunflower oil) and fat content (10.6% and 15.6%). Using a Check All That Apply question (CATA), consumers also evaluated sensory properties of biscuits. Results indicated that the replacement of saturated fat (dairy shortening) by vegetable oils had an effect on biscuit acceptability which depended on biscuit fat content. According to biscuits' acceptability data, three different clusters of consumers were identified. By using a multiple factor analysis, the relationship among sensory CATA data and acceptability of each cluster explained the different acceptability patterns of consumers. For most of consumers acceptability was related to attributes “crispy”, “easy to chew” and “biscuit flavour” which, for one group were perceived in shortening biscuits and, for another in both olive and shortening biscuits. However, for the third group of consumers, acceptability was only related to flavour attributes like “roasted flavour” or “biscuit flavour” that were perceived in vegetable oil biscuits which were the preferred biscuits while, shortening biscuits were disliked and perceived as having an “off flavour”.  相似文献

ABSTRACT: Ozone-based processing is a novel technology with potentially fewer adverse effects than in-shell thermal pasteurization of eggs. There are no consumer acceptance studies published on ozone-treated eggs. This study examines consumers’ ability to detect changes between ozone-treated, thermal-treated, and fresh untreated eggs. Consumers (n = 111) evaluated visual attributes of uncooked eggs and a separate group of consumers (n = 132) evaluated acceptability of cooked eggs. Consumers evaluated attribute intensity of the eggs. The yolks and albumens of the thermal-treated and ozone-treated eggs were perceived to be significantly cloudier than the untreated control, while the ozone-treated eggs were more similar to control (P < 0.05). The yolks of ozone-treated eggs were perceived to have significantly lower heights and greater spreads than the others (P < 0.05). Despite these perceptions, overall visual appeal of ozone-treated eggs was not significantly different from control eggs. A separate set of consumers used hedonic scales to evaluate overall liking, appearance, aroma, flavor, and texture of cooked eggs. Just-about-right (JAR) scales were used to rate the color, moistness, and texture. There were no differences on any attribute scores between the treatments, except thermal-treated and ozone-treated were perceived as less moist than the control. There were no adverse effects on consumer acceptance of eggs, treated with ozone, with acceptance the same as an untreated control. These findings are useful as ozone pasteurization can enhance the safety of fresh shell eggs to meet the goals of the U.S. Egg Safety Action Plan. Practical Application: The U.S. Egg Safety Action Plan requires all shell eggs to be pasteurized to prevent foodborne illness. Heat pasteurization partially cooks the egg, so an alternative process uses ozone with less heat. This study shows the ozone pasteurization has no detectable sensory defects.  相似文献

This study aims to investigate three types of deep-fried battered and breadcrumb coatings (fine, medium, and coarse), each coating varying in breadcrumb size. Instrumental testing using X-ray micro-computerized tomography, texture analysis, and acoustic analysis confirms significant differences between each sample in terms of physical and mechanical properties. Four hedonic and 9 sensory attributes were evaluated by 185 consumers for preference and acceptance (9-point scale and just-about-right-scale). Penalty analysis confirmed significant mean drops within all three samples (p < .05), “coarse” having the most and “medium” having the least. This explains “medium” having the overall highest liking score (6.72) and coarse having significantly lower (5.88). Crispness is an important textural attribute representing freshness and quality of deep-fried coatings. However, penalty analysis shows “coarse” coatings with the highest crispness scores, resulting in the greatest significant mean drop (2.01) and lowest overall liking. A combination of flavor, appearance, and texture-related attributes significantly reduce hedonic score (p < .05). Agglomerative hierarchical cluster analysis confirms three clusters of consumers based on liking for either “coarse,” “medium,” or “fine.” Each of these samples has a significant difference in the microstructure. Chi-square test confirms a significant difference in product quality, purchase intent, and met expectations between samples in each cluster group (p < .05). The findings in this research highlight how differences in microstructure of battered and breaded coatings influence textural properties and consumer preference. This can be applied to a wide battered and breaded goods.  相似文献

“Aromas,”“Diamante” and “Selva” strawberries were harvested in early and mid‐season and evaluated for quality attributes, flavor components, fermentative metabolites and physiological characteristics. Preference and flavor tests by consumer panels were also conducted. Cultivar variation was greater than harvest date variation as were differences in color, concentrations of anthocyanins, firmness, total soluble solids, sugars, pH, titratable acidity (TA), organic acids and aroma compounds. “Diamante” and “Selva” had higher aroma quality than “Aromas” fruits. The levels of fermentative metabolites were too low to have an impact on the aroma quality. “Diamante” and “Selva” strawberries had better overall flavor quality and were more preferred by consumers than “Aromas.” These differences were consistent over two harvest dates.  相似文献
