The aim of this study was to assess the feasibility of shea butter stearin (SBS) as cocoa butter equivalent (CBE). In this work, the optimal ratio of SBS and cocoa butter (CB) was evaluated by the solid fat content and deviation solid fat content. Emulsifiers added to SBS and CB blends were first screened based on β polymorph level, and mixture regression experiment was designed to obtain the optimized compound emulsifiers ratio, finally the characterization of shea butter chocolate was evaluated by sensory evaluation and texture profile analysis (TPA). The best compatibility was obtained when the mixture ratio of SBS and CB was 20:80, where ΔSFC within a range of 1.5 was shown. The appropriate compound emulsifiers were soy lecithin: polyglycerol polyricinoleate: Tween 60 = 1:1:1. Both sensory evaluation and TPA test showed SBS and CB blends could improve the taste and texture of chocolate with proper emulsifiers addition.  相似文献

The effects of different shearing conditions on the crystallisation of cocoa butter (CB) with the addition of other confectionery ingredients (sugar and lecithin) were investigated. Differential scanning calorimetry (DSC), X‐ray diffraction (XRD) and polarised light microscopy (PLM) were conducted to measure the thermal, polymorphic and microstructural properties, of these mixtures, respectively. Both shearing conditions and ingredients have a pronounced impact on the thermal and polymorphic behaviour of CB, and its microstructure. In the absence of shear, the addition of lecithin delayed the polymorphic transformation in CB and results in slightly bigger crystal clusters. When both sugar and lecithin are added to nonsheared CB, they retard the formation of stable polymorphism. Moreover, sugar particles tended to agglomerate in the absence of lecithin under static conditions. With the application of shear, a more homogenous microstructure of the samples was observed. Shear significantly increases the crystallisation rate, polymorph transformation and the formation of a higher number of smaller crystals at both the presence and absence of lecithin.  相似文献

Cocoa butter replacer (CBR) was prepared by enzymatic interesterification of hydrogenated and solid fraction (SF) of tea seed oil at weight percent ratio of 30:70, using sn‐1,3 specific lipase from Thermomyces lanuginosus. Dark chocolate samples were then prepared with the prepared CBR as a replacement for 5%, 10%, 15% and 20% of cocoa butter (CB) and the effect of the replacement on hardness (as a key quality factor in chocolate) of the chocolate samples was investigated. Results showed that chocolate samples containing 5% and 10% of interesterified sample (EIS), had the closer texture to that of CB chocolate than other samples. The solid fat content (SFC) profiles also revealed that blending 10% of EIS with CB in chocolate formulation dose not affect the sharp melting point of CB. Based on the results taken from bloom formation, polymorphic structure and sensory evaluation, adding up to 10% of EIS in chocolate formulation reduces the bloom development without adverse affecting the desirable β crystal formation and sensory qualities in the chocolate samples.  相似文献

The current concern for cocoa butter fat as major ingredients of chocolate intake in the World has raised the question of the high price of cocoa butter among all other vegetable fats. Productions of natural cocoa butter fats are decreasing day by day due to the decrease of cocoa cultivation worldwide; moreover, cocoa fruit contains only a little amount of cocoa butter. Therefore, the food industries are keen to find the alternatives to cocoa butter fat and this issue has been contemplated among food manufacturers. This review offers an update of scientific research conducted in relation to the alternative fats of cocoa butter from natural sources. The findings highlights how these cocoa butter alternatives are being produced either by blending, modifying the natural oils or fats from palm oil, palm kernel oil, mango seed kernel fats, kokum butter fat, sal fat, shea butter, and illipé fat.  相似文献

This paper describes the preparation of samples and the evaluation techniques applied to determine the Solid Fat Content (SFC) by means of pulsed nuclear magnetic resonance (NMR) in confectionery fats characterized by distinct polymorphism (cocoa butter, cocoa butter equivalents and their mixtures). Due to the deviation of SFC values in certain softer cocoa butter equivalents at the temperature of 20 °C, an internal method devised at Karlshamns Oils & Fats AB is applied as well. When compared to the official IUPAC 2.150 (b) method, Karlshamns' method involves a lower temperature and a prolonged period of time at the stage of the final SFC stabilization in the pre-treatment of fat samples. The calculation of SFC in the analysed samples for the purposes of this paper was carried out by employing both methods (the indirect method and a serial procedure). The results are presented graphically. Differences were reflected in the SFC of the fats and their mixtures that were under observation depending on the method and temperatures applied. The obtained results indicated a considerable advantage of employing the Karlshamns method since the results yielded by this method are more lucid. Moreover, the behaviour of fats in the production process can be more easily predicted on the basis of these results.  相似文献

液化后的CTCBE如果在室温下自然缓慢冷却凝固则导致容器以横向力炸裂,而以冷冻方式使之快速冷却固化,则容器完好无损,CB则不会出现类似情况。为了解这一现象与CTCBE结晶行为的关系,拟用X粉末衍射和差示扫描量热法对乌桕类可可脂和天然可可脂在不同条件下的结晶行为进行了研究。结果表明过 冷度和诱导晶核对乌桕类可可脂和天然可可脂的结晶行为有不同的影响。对乌桕类可可脂而言,过冷度对有诱导晶核存在的结晶行为无明显影响,相反对无诱导晶核的结晶行为则有较大影响。天然可可脂则不然,过冷度的变化对有或没有诱导晶核存在的结晶行为均有很大影响;如果过冷度相同,则有或没有诱导晶核存在的结晶行为无太大差异。  相似文献

Cocoa butter equivalent (CBE) was synthesised from blends of illipé butter stearin (IBS) and palm mid-fraction (PMF) via enzymatic interesterification (EIE). IBS was blended with PMF in three wt ratios (70:30, 60:40 and 50:50) and the EIE reactions were performed at 50°C for 30 min using an sn-1,3-specific lipase from Rhizopus oryzae as a catalyst. The triacylglycerol (TAG) compositions, slip melting points (SMP), crystallisation and melting thermograms, solid fat content (SFC) curves, and crystal microstructure of the blends before and after EIE were studied and compared with cocoa butter (CB). After EIE, the contents of POP and StOSt decreased, whereas the POSt content increased in all blends. Blend EIE 60:40 exhibited the POP and StOSt contents that situated within the ranges of POP and StOSt contents of CB. It also showed SMP, melting peak and melting completion temperatures, melting enthalpy and crystal microstructure most similar to CB. Most importantly, its SFC curve completely matched that of CB. Consequently, EIE 60:40 was chosen for further investigation and it was found to be fully compatible with CB and crystallised into the same polymorphic form (β) as CB. Therefore, EIE 60:40 has a high potential for use as a commercial CBE.  相似文献

Although cocoa butter (CB) is an ideal fat for use in chocolate, it softens with heat and is not suitable for use in warm climates. CB extenders or improvers, preferably from stearic acid‐rich fats, are good candidates to increase the heat‐resistance property of CB and chocolate. In the present investigation, one such fat, kokum, is used as an improver to increase the hardness of chocolate. Kokum fat is added in various proportions replacing CB in dark and milk chocolate formulations and its effects on rheology, hardness and triglyceride composition were studied. The results revealed that up to 5% kokum fat addition by weight of the product did not significantly affect the plastic viscosity or yield stress of milk or dark chocolate. Hardness of both dark and milk chocolate increased with increase in addition of kokum fat. The solids fat content at and above 30 °C increased with increase in level of kokum fat with CB, especially at and above 15%. These physical properties are due to increase in 2‐oleodistearin triglycerides with addition of kokum fat with CB. The results revealed that kokum fat could be used up to 5% by wt of the product to increase the heat‐resistance property of chocolate so that it can be used in warm climates. A series of confectionery coating fat (CCF) and cocoa butter (CB) dispersions in corn oil were prepared and tempered to a range of temperatures (10, 12 and 15 °C and 26, 27.5 and 29 °C respectively) to produce samples with solid fat contents (SFC) between 0 and 9%. The ultrasonic velocity in the CCF samples increased with increasing SFC and decreased with temperature, however the CB samples were too attenuating to allow velocity measurements. The ultrasonic reflectance at the surface of both sets of dispersions decreased linearly with SFC but at the same level of solids was less for CB than CCF suggesting some dependence on other aspects of fat structure. The microstructures and thermal properties of the fat systems are compared in an attempt to understand these structural differences. Finally ultrasonic reflectance is shown to respond to changes in a chocolate melt during tempering.  相似文献

Avocado fat is a semi-solid substance with potential functional lipid characteristics. A study was carried out to evaluate the effect of addition of palm stearin and cocoa butter on the solidification behavior of avocado fat to formulate a mixture to become similar to lard. A total of three mixtures were prepared: avocado fat:palm stearin:cocoa butter (88:7:5), avocado fat:palm stearin:cocoa butter (86:7:7), avocado fat:palm stearin:cocoa butter (84:7:9; w/w), and identified by the mass ratio of avocado fat to palm stearin and cocoa butter. The fat mixtures were compared with lard in terms of the fatty acid and triacylglycerol compositions using gas chromatography and high-performance liquid chromatography, thermal properties using differential scanning calorimetry and solid fat content using p-nuclear magnetic resonance. Although there were considerable differences between lard and the fat mixtures with regard to fatty acid and triacylglycerol compositions, some similarities were seen with regard to thermal properties and solid fat content profile. Of all the fat mixtures, avocado fat:palm stearin:cocoa butter (84:7:9) displayed closer similarity to lard with respect to thermal transitions at –3.59°C and its solid fat content profile showed the least difference to that of lard throughout the temperature range measured.  相似文献

在分析油脂用量对黄油-代可可脂基奶油品质影响的基础上,通过正交试验研究油脂用量、黄油-代可可脂质量比和均质压力对奶油搅打性能、质构特性、脂肪球部分聚结率、结晶特性等的影响。结果表明,在油脂用量30%、黄油-代可可脂质量比2∶3、均质压力60?MPa的条件下,能保证脂肪部分聚结的发生,并保持搅打稀奶油较好的感官特性、起泡性和结晶特性。60?MPa的均质压力保证了体系的稳定性,使大量游离脂肪球产生从而促进脂肪部分聚结。晶型形成分析结果表明,在优化条件下,原料乳浊液X-射线衍射峰峰形由较宽、较尖锐变为峰形适中均匀,适宜搅打稀奶油的β’晶型晶体明显增多,搅打稀奶油乳浊液在低温条件下发生脂肪结晶,表现为脂肪晶体尺寸增大。  相似文献

Raw materials for cocoa butter substitutes, replacements or equivalents depend mostly on the unsteady supply from wild stands of plants, while there is no current supply of Neotropical origin. Seed fats from Theobroma species (T cacao, T bicolor, T grandiflorum, T obovatum, T subincanum, T speciosum, T sylvestre and T microcarpum, plus the closely related species Herrania mariae) were analysed for fatty acid and triacylglycerol composition by gas and liquid chromatography respectively, for iodine value, for melting point by open capillary tube and for solid fat content (SFC) by nuclear magnetic resonance. All Theobroma species had significantly lower palmitate levels than T cacao, except for T sylvestre and T speciosum, T microcarpum presented highly unsaturated fat (C18:2), while H mariae had high levels of arachidate. Fats from T sylvestre and T speciosum had a similar iodine value to T cacao and a higher melting point. No fat from the other species presented a similar melting profile to cocoa butter. T sylvestre and T bicolor were the most similar to T cacao but had a higher SFC at human body temperature. T sylvestre and T speciosum seed fats had more POP than cocoa butter. Fats from seeds of T speciosum, T sylvestre and T bicolor could be recommended as cocoa butter substitutes, while fats from species of the section Glossopetalum could be employed in products requiring fats with a lower melting point. © 2002 Society of Chemical Industry  相似文献

从结晶热力学、动力学及形态学3个方面考察了5种乳化剂对可可脂结晶行为的影响。结果表明:单甘脂的添加降低了可可脂在25~30℃温度范围内的固体脂肪含量,不利于巧克力的加工。山梨醇酐单硬脂酸酯(Span60)的添加使可可脂晶体的三维球晶生长方式向二维平面晶体生长方式转变,并显著加快可可脂的结晶速率。Span60和聚乙氧基硬脂酸山梨糖醇(Tween60)缩短了可可脂的半结晶时间,而单甘脂、卵磷脂及聚甘油多聚蓖麻酸酯(PGPR)使可可脂的半结晶时间延长。偏光显微镜结果表明乳化剂的添加使得可可脂球晶的直径增大。  相似文献

In previous papers, six cocoa butter equivalent (CBE) samples were considered to carry out a study about the detection of their presence in cocoa butter (CB). In this work the % fatty acid (FA) compositions of triacylglycerol (TAG) subfractions separated by Ag+-High Performance Liquid Chromatography (Ag+-HPLC) from CB, CBE and CB/CBE mixtures were investigated. The fully saturated (SatSatSat) TAG subfractions isolated from CB, CBE and CB/CBE mixtures were the most suitable for the aim of the research. In fact, the multiple regression models obtained using the % FA composition of SatSatSat subfractions permitted to carry out effective CBE detections. In the present work the attempt to improve the statistical approach using as variables the results of the stereospecific analysis of the TAG fraction and of its main subfractions from CB, CBE and CB/CBE mixtures is described.  相似文献

This research describes the interesterification of Malaysian mango seed oil (MSO) and palm oil mid‐faction (POMF) to develop a cocoa butter equivalent. Fat blends, formulated by binary blends of palm oil mid‐fraction and mango seed oil at different ratios ({100:0}, {60:40}, {50:50}, {40:60}, {0:100}), were subjected to enzymatic interesterification. The solid fat content revealed that all interesterified blends except 100% POMF {0:100} melted completely at body temperature. The interesterified {50:50} blend exhibited a slip melting point (30.35 °C) and saponification value (186.89) close to cocoa butter (P < 0.05). Thermal behaviour analysis by differential scanning calorimetry showed fusion and crystallisation behaviour similar to cocoa butter. Moreover, both the blend and cocoa butter scavenging abilities were based on the 2,2‐diphenyl‐1‐picrylhydrazyl assay, with the concentration required to reduce radical absorbance by 50% (IC50) of 43.08% and 41.1%, respectively. Therefore, the MSO: POMF blend may have use as a health‐promoting food in human diets.  相似文献
