Background  

Food frequency questionnaires (FFQ) are used for epidemiological studies. Because of the wide variations in dietary habits within different populations, a FFQ must be developed to suit the specific group. To date, no FFQ has been developed for Japanese children. In this study, we developed a FFQ to assess the regular dietary intake of Japanese children. The FFQ included questions regarding both individual food items and mixed dishes.  相似文献

The aim of this work is to identify major food sources and dietary constituents of Senegalese adults. We conducted a cross-sectional study, using a single 24-hour dietary recall interview. Foods were classified into food groups based on similarities in nutrient content or use. Food groups included foods consumed individually, or as part of food mixtures such as stews, soups, or sandwiches. Median consumption (amount/day) of each food was determined and examined by relevant subgroups. Participants were 50 healthy Senegalese men, aged 20-62 years recruited at the Hôpital Général de Grand Yoff in Dakar, Senegal and from Sendou village, a rural area outside Dakar. A total of 90 foods and beverages were identified and classified into 11 groups. Sixty-five percent of foods identified could be classified as meats, grains, or fruits/vegetables. Fruits and vegetables comprised 42% (38/90) of all foods; meats 12% (11/90); and grains 11% (10/90). Sauces (6%, 5/90), sweets (4%, 4/90), and desserts (4%, 4/90) were also reported. The most common fruits/vegetables reported were potato, carrot, mango, and lettuce; commonly reported grains were bread and rice; and commonly reported meats were fish, beef, and ox. There were no differences in reported daily intake of each food by age, ethnicity, education, or residence. Most foods reported were traditional to the Senegalese diet, despite the increasing availability of Western foods in Senegal.  相似文献

Background

A plant-based diet protects against chronic oxidative stress-related diseases. Dietary plants contain variable chemical families and amounts of antioxidants. It has been hypothesized that plant antioxidants may contribute to the beneficial health effects of dietary plants. Our objective was to develop a comprehensive food database consisting of the total antioxidant content of typical foods as well as other dietary items such as traditional medicine plants, herbs and spices and dietary supplements. This database is intended for use in a wide range of nutritional research, from in vitro and cell and animal studies, to clinical trials and nutritional epidemiological studies.

Methods

We procured samples from countries worldwide and assayed the samples for their total antioxidant content using a modified version of the FRAP assay. Results and sample information (such as country of origin, product and/or brand name) were registered for each individual food sample and constitute the Antioxidant Food Table.

Results

The results demonstrate that there are several thousand-fold differences in antioxidant content of foods. Spices, herbs and supplements include the most antioxidant rich products in our study, some exceptionally high. Berries, fruits, nuts, chocolate, vegetables and products thereof constitute common foods and beverages with high antioxidant values.

Conclusions

This database is to our best knowledge the most comprehensive Antioxidant Food Database published and it shows that plant-based foods introduce significantly more antioxidants into human diet than non-plant foods. Because of the large variations observed between otherwise comparable food samples the study emphasizes the importance of using a comprehensive database combined with a detailed system for food registration in clinical and epidemiological studies. The present antioxidant database is therefore an essential research tool to further elucidate the potential health effects of phytochemical antioxidants in diet.  相似文献

Epidemiological studies show that a high calcium intake reduces the risk of colon cancer. The objective was to study the association between calcium intake and colorectal neoplasia in a clinic-based sample of Hispanics adults from Puerto Rico. As part of this cross-sectional study, a total of 433 subjects were recruited from surgery and gastroenterology clinics at the University of Puerto Rico. Calcium intake was estimated using a food frequency questionnaire (FFQ) of calcium rich foods. Socio-demographics, health history and colonoscopy results were obtained from the primary study. Chi square and odds ratios (OR) for colorectal neoplasia (adenomas and/ or adenocarcinoma) were calculated for total calcium, dietary calcium and for calcium supplement use. In total, 312 (72%) from 433 participants completed the FFQ and had available colonoscopy results; from these, 196 (62.5%) were free of neoplasia and 117 (37.5%) had colorectal neoplasia. Colorectal neoplasia subjects were older, a lower proportion were females and less educated than those without neoplasia (p < 0.01). Total calcium intake (median 1180 mg/d) was greater in those free of neoplasia compared to colorectal neoplasia subjects (median 1036 mg/d; p<0.05). A high total calcium intake and the use of calcium supplements significantly reduced the OR (crude and age adjusted) for colorectal neoplasia; although these associations lost statistical significance after additionally adjusting for gender and educational level. In conclusion, a high calcium intake and the use of calcium supplements may be protective against colorectal neoplasia, although a greater sample may be required to observe significant associations in a multivariate model.  相似文献

Nutritional assessment by diet analysis is a two-stepped process consisting of evaluation of food consumption, and conversion of food into nutrient intake by using a food composition database, which lists the mean nutritional values for a given food portion. Most reports in the literature focus on minimizing errors in estimation of food consumption but the selection of a specific food composition table used in nutrient estimation is also a source of errors. We are conducting a large prospective study internationally and need to compare diet, assessed by food frequency questionnaires, in a comparable manner between different countries. We have prepared a multi-country food composition database for nutrient estimation in all the countries participating in our study. The nutrient database is primarily based on the USDA food composition database, modified appropriately with reference to local food composition tables, and supplemented with recipes of locally eaten mixed dishes. By doing so we have ensured that the units of measurement, method of selection of foods for testing, and assays used for nutrient estimation are consistent and as current as possible, and yet have taken into account some local variations. Using this common metric for nutrient assessment will reduce differential errors in nutrient estimation and improve the validity of between-country comparisons.  相似文献

Preoccupation to define the nutritional status of Puerto Rican families migrating to the United States, motivated the present research. A total of 526 families residing in the South Bronx, New York, and four communities in Puerto Rico, were therefore studied. Results in regard to nutrient intake suggest that the mothers' diets appear to be adequate in the South Bronx as well as in Puerto Rico, except in iron consumption, in the latter. Furthermore, the data show an apparent tendency to overconsumption of certain foods in both the South Bronx and Puerto Rico, particularly of the protein group, as well as a high consumption of sugar and carbonated beverages in Puerto Rico. Dietary data were corroborated through nutritional anthropometry, conforming a tendency for overweight and obesity among the women studied. Detailed information on the dietary changes occurred during the last five years, is provided. Educational programs such as EFNEP, availability of new foods, and the food preferences of children in their homes, seem to be influencing factors in the dynamics of food modifications within societal groups in transition.  相似文献

ABSTRACT: BACKGROUND: Due to the absence of a current and validated food frequency questionnaire (FFQ) for use in New Zealand adolescents, there is a need to develop one as a cost-effective way to assess adolescents' food patterns. This study aims to examine the test-retest reliability and relative validity of the New Zealand Adolescent FFQ (NZAFFQ) to assess food group intake in adolescents aged 14 to 18 years. METHODS: A non-quantitative (without portion size), 72-item FFQ was developed and pretested. Fifty-two participants (aged 14.9 +/- 0.8 years) completed the NZAFFQ twice within a two-week period for test-retest reliability. Forty-one participants (aged 15.1 +/- 0.9 years) completed a four-day estimated food record (4DFR) in addition to the FFQs to enable assessment of validity. Spearman's correlations and cross-classification analyses were used to examine relative validity while intra-class correlations were additionally used for test-retest reliability. RESULTS: Weekly intakes were estimated for each food item and aggregated into 34 food groups. The median Spearman's correlation coefficient (SCC) between FFQ administrations was 0.71. SCCs ranged from 0.46 for fruit juice or cordial to 0.87 for non-standard milk. The median intra-class correlation coefficient (ICC) between FFQ administrations was 0.69. The median SCC between food groups from the FFQ and the 4DFR was 0.40 with the highest SCC seen for standard milk (0.70). The exact agreement between the methods in ranking participants into thirds was highest for meat alternatives (78%), but lowest for red or yellow vegetables and potatoes (27%). The mean percent of participants misclassified into extreme thirds for food group intake was 12%. CONCLUSIONS: Despite a small sample size, the NZAFFQ exhibited good to excellent short-term test-retest reliability and reasonable validity in ranking the majority of the food group intakes among adolescents aged 14 to 18 years. The comparability of the validity to that in the current literature suggests that the NZAFFQ may be used among adolescent New Zealanders to identify dietary patterns and rank them according to food group intake.  相似文献

Background

The repeatability of a risk factor measurement affects the ability to accurately ascertain its association with a specific outcome. Choline is involved in methylation of homocysteine, a putative risk factor for cardiovascular disease, to methionine through a betaine-dependent pathway (one-carbon metabolism). It is unknown whether dietary intake of choline meets the recommended Adequate Intake (AI) proposed for choline (550 mg/day for men and 425 mg/day for women). The Estimated Average Requirement (EAR) remains to be established in population settings. Our objectives were to ascertain the reliability of choline and related nutrients (folate and methionine) intakes assessed with a brief food frequency questionnaire (FFQ) and to estimate dietary intake of choline and betaine in a bi-ethnic population.

Methods

We estimated the FFQ dietary instrument reliability for the Atherosclerosis Risk in Communities (ARIC) study and the measurement error for choline and related nutrients from a stratified random sample of the ARIC study participants at the second visit, 1990–92 (N = 1,004). In ARIC, a population-based cohort of 15,792 men and women aged 45–64 years (1987–89) recruited at four locales in the U.S., diet was assessed in 15,706 baseline study participants using a version of the Willett 61-item FFQ, expanded to include some ethnic foods. Intraindividual variability for choline, folate and methionine were estimated using mixed models regression.

Results

Measurement error was substantial for the nutrients considered. The reliability coefficients were 0.50 for choline (0.50 for choline plus betaine), 0.53 for folate, 0.48 for methionine and 0.43 for total energy intake. In the ARIC population, the median and the 75th percentile of dietary choline intake were 284 mg/day and 367 mg/day, respectively. 94% of men and 89% of women had an intake of choline below that proposed as AI. African Americans had a lower dietary intake of choline in both genders.

Conclusion

The three-year reliability of reported dietary intake was similar for choline and related nutrients, in the range as that published in the literature for other micronutrients. Using a brief FFQ to estimate intake, the majority of individuals in the ARIC cohort had an intake of choline below the values proposed as AI.  相似文献

The purpose of this investigation was to evaluate the dietary score as a valid and rapid alternative procedure for the processing and analysis of food consumption data in Guatemala. The dietary score consists in assigning points to a diet based upon the number of servings the diet provides of each one of the eight groups in which food has been classified. The size of the serving for each food receiving points was estimated based on available data describing the food pattern of Guatemala. The caloric contribution of each of the eight groups to the total caloric intake was also calculated, and information on the caloric and nutrient needs of the Guatemalan population is discussed. In this communication, the dietary score was compared to the percentage of adequacy for energy and nutrients in 392 diets of women, and children between the ages of 24 and 60 months. Half of the dietaries were collected using the 24-hour recall method, while in the other half, the direct weighing method was used. Nutritional adequacy was estimated from food composition tables and based on the recommended energy and nutrient intake figures. In addition, by utilizing the adequacy indices for energy and nutrients, a binary variable was developed to describe the overall adequacy of the diet. This variable describes the probability a diet has of being adequate, given the dietary score obtained. In conclusion, the dietary score was found to be a valid, rapid and efficient alternative for the processing and evaluation of food consumption information, collected by means of either the direct weighing of foods or the 24-hour recall methods.  相似文献

The present study aimed to assess the correlation between food and fatty acid (FA) intake and the serum phospholipid (PL) FA status in European adolescents and explored the percentage of variation in serum PL FA that could be attributed to dietary habits. Participants included 528 adolescents recruited in the HELENA Study. Dietary intake was assessed by two, self-administered, non-consecutive 24-h recalls. PL FA concentrations were measured in fasting venous serum samples. Reduced rank regressions were applied to examine the combined effect of food intakes. Results indicated that the variance in serum PL FA in adolescents, that could be explained by diet varied from 7.0 % for MUFA to 14.2 % for n-3FA. The variance in the long-chain n-3FA was mainly explained by fish intake but also by coffee and tea consumption. In conclusion this study indicated that dietary intake influences the serum PL FA status to a limited amount but that also other factors interfere. However, dietary intake is important as it is among those factors that could be modified. Furthermore, the results suggest that the overall dietary habits should be considered instead of only the consumption of single foods or nutrients, as the medium of the food or concomitant intake of foods and nutrients might interact and as such influence absorption or metabolism.  相似文献

Nutritional status is a critical determinant of athletic performance. We question whether currently available studies can give adequate information on nutritional status of endurance athletes. This paper is a critical review of articles published from 1989 to 2003 that investigate nutritional status of endurance athletes. The terms, "nutrition", "diet", or "nutrient", were combined with "endurance athletes" to perform Medline and Pubmed electronic database searches. Two inclusion criteria were considered: (a) study subjects should be adults and (b) articles should report gender-specific values for total energy expenditure and intake of energy, macro and micronutrient from food. Only seven studies fulfilled inclusion criteria. In general, the conclusions of these studies are that endurance athletes have negative energy balance, low intake of carbohydrate, adequate to high intake of protein, and high intake of fat. A critical discussion of the articles' data on vitamins, minerals and trace elements adequacy is conducted using insights and methodology proposed by the newly published assessment and interpretation of Dietary Reference Intakes (DRIs). The studies evaluated give an inappropriate evaluation of the prevalence of adequacy/inadequacy of micronutrient intake among endurance athletes. In this work we indicate potential limitations of existing nutritional data, which reflects the misconceptions found in published literature on nutritional group evaluation. This review stresses the need for a comprehensive and well-conducted nutrition assessment planning to fulfill the existing gap in reliable information about micronutrient adequacy of endurance athletes.  相似文献

Long-chain omega-3 PUFA (LC n−3 PUFA) are beneficial for health. To date there is no specific food frequency questionnaire (FFQ) to assess LC n−3 PUFA intakes. The objective of this study is to validate our newly developed FFQ by comparison with LC n−3 PUFA content of both red blood cells (RBC) and plasma, expressed as a percentage of total FA. Fifty-three healthy male and female subjects were recruited from Wollongong, Australia. Average LC n−3 PUFA intakes (mg/d) were estimated using the new FFQ. RBC and plasma FA were assessed using GC. Spearman correlation coefficients were used to assess the linear relationship between FFQ intakes and both RBC and plasma FA. The results show that there were significant Spearman's correlation coefficients between the FFQ intakes and RBC (and plasma) FA for total LC n−3 PUFA, EPA, and DHA (0.50 (0.54), 0.39 (0.54) and 0.40 (0.48), respectively) but not for docosapentaenoic acid. The FFQ was also an effective ranking tool. The FFQ is a valid method based on erythrocyte and plasma FA as biochemical markers. In conclusion, the new FFQ is a valid method that can be used to estimate the LC n−3 PUFA intake of adults.  相似文献

Protein needs of the elderly may be moderately higher than those of younger adults when expressed as a percentage of total calories. Most experts recommend an intake of ca. 0.8 g protein/kg/day or ca. 12–15% of the total calories. Soya protein appears to be as good as animal protein in meeting the amino acid and protein needs of adult humans when consumed in adequate quantities. Attention must be given to the appropriate heat treatment and processing of soybeans to inactivate non-nutritional factors. The mineral and vitamin content of the diet should be monitored, because some of these nutrients may be altered or removed in the preparation of soya protein fractions or isolates for use in food products. Further research is needed to fully identify the nutritional requirements of the elderly, especially as affected by disease, trauma and drugs. In addition, nutrient interaction and bioavailability should be studied in foods which are processed by new techniques.  相似文献

Results from a nutritional assessment are presented to establish the usual food consumption pattern of 438 children between 4-14 years of age, from a low income urban community in Valencia, Venezuela. Food intake data were collected through multiple 24 hours recalls and converted to individual food item weight in grams. Amounts of energy, macronutrients, iron, calcium, vitamin A, and vitamin C were estimated to compare them to national references. The food pattern was established according to intake frequency per food item and per food groups. Arepa was the most commonly consumed food item, and a main source of kilocalories, protein, carbohydrates, iron, and vitamin A. Unlike coffee, fruits were not among the most commonly consumed foods. Black beans were the main source of protein. Cookies and sodas were among the major sources of energy. Energy and nutrient intake were adequate, except for calcium (67% in preschoolers y 43% in school-aged children). Preschoolers' diet showed a better adequacy for all nutrients (p < 0.005), except for iron which was significantly higher in school-aged children. Since children below 15 years old are still forming food behaviors and habits, they are an ideal group to develop nutritional education strategies to modify harmful patterns such as high intake of sodas, and low intakes of calcium rich foods.  相似文献
