目的研究紫外线照射处理的方法对馒头品质及保质期的影响。方法通过对馒头进行感官评价确定馒头的品质,通过测定馒头表面的微生物数量确定馒头的保质期。结果紫外线照射时间和紫外照射灯管数能够明显延长馒头的保质期。在紫外线照射时间7 s,紫外灯管数3根,紫外照射距离为5 cm时,微生物生长受到明显抑制,馒头的保质时间从20 h延长至40 h,而且对馒头的感官评价基本没有影响,具有良好的安全性。结论紫外线照射处理对馒头的品质影响较小,但能够明显延长馒头的保质期。 相似文献

采用四乙酰乙二胺(TAED)作为棉纤维H2O2漂白的活化剂,探讨了碱浓度、TAED浓度及漂白时间对漂白效果的影响.实验表明,在加入1~2 g/LNa2CO3漂白15~30 min后再加入适量TAED(TAED与H2O2的摩尔比为0.5:1时反应最完全)漂白20 min,TAED可以大大提高H2O2在较低温度(70℃)和pH值6~7条件下漂白的效果.TAED也可促进常规高温漂白时H2O2的分解,提高织物白度. 相似文献

该文研究新型玉米浸泡工艺和玉米浸泡过程中菌群的结构组成与变化规律。利用H2O2与乳酸协同浸泡玉米,通过正交试验确定最优浸泡条件,并利用Miseq高通量测序技术对浸泡过程中的细菌进行多样性分析。正交试验表明,玉米浸泡的最优条件为初始乳酸浓度0.6%、乳酸作用时间16 h、H2O2浓度3%、H2O2作用时间22 h,在最优条件下,淀粉得率由传统工艺的56.02%提高到68.53%,浸泡时间缩短32 h。Miseq高通量测序分析结果表明,浸泡初期细菌结构组成较为丰富,一段时间后,乳酸杆菌Lactobacillaceae生长繁殖成为优势菌种并伴随运算的分类单位(operational taxonomic unit,OTU)水平的降低,浸泡末期Lactobacillaceae进入衰亡期,其他细菌数量明显增加。对浸泡液中细菌的群落结构与环境相关性进行分析,发现引起菌落结构差异的影响因素依次为乳酸含量、葡萄糖含量、浸泡液pH值、浸泡温度。 相似文献

研究了TiO2/H2O2/超声波协同作用对二甲酚橙溶液降解率的影响以及影响降解率的主要因素.结果表明:当二甲酚橙初始质量浓度为20 mg/L,pH值为1,TiO2用量为0.4 g/L,H2O2:用量为0.4 mL/L时,经TiO2/H2O2/超声波协同作用后,二甲酚橙的降解速率大大加快,降解效果也比较好,降解率可达92%. 相似文献

ABSTRACT: The aim of this study was to apply the protocol for the shelf life prediction of bakery products proposed by Calligaris and others (2007a) on bread sticks. The methodology comprises 4 steps: (1) evaluation of the physical properties of fat; (2) performing the accelerated shelf life test; (3) evaluation of sensory acceptance limit and the relevant chemical index limit; (4) setting up the shelf life prediction model. The results allow validating the shelf life prediction methodology proposed. In fact, the peroxide number was found to be a representative index of the quality depletion of bread sticks during their shelf life. In addition, once again by accounting for the changes in the fat physical state, it is possible to set up a modified Arrhenius equation able to describe the temperature dependence of peroxide formation. Finally, a mathematical model to simply and quickly calculate the shelf life of bread sticks has been developed. 相似文献

为提高麦麸中可溶性膳食纤维含量,改善含麸面制品食用品质,使用木聚糖酶对挤压麦麸进行半固态酶解改性处理,并将改性麦麸回添至面粉中制作含麸馒头,探讨改性麦麸最适添加量及其对含麸馒头的比容、质构和风味的影响。结果表明:当酶解时间4 h、木聚糖酶添加量1000 U/g麦麸、液料比1.0:1 mL/g时,改性麦麸中可溶性膳食纤维的含量达到6.24%,与原麦麸相比提高了89.09%;当改性麦麸添加量为7.5%时含麸馒头的比容达到最大(3.08 mL/g),馒头品质最佳;与原麦麸相比,加入改性麦麸后,馒头的硬度和咀嚼性分别降低了41.19%和42.35%,比容升高了25.00%,均与空白组无显著性差异。麦麸的改性处理不仅有效增加了2-甲基吡嗪等令人愉快的挥发性风味成分浓度,同时降低了二乙二醇、二甲醚等原麦麸的不良风味。因此,挤压麦麸经过半固态酶解处理后,能有效改善含麸馒头的品质,同时使其具有浓郁的麦香味,为麦麸在主食面制品中的应用提供了新思路。 相似文献

The aim of this research is the examination of the decolorizing effect of hydrogen peroxide, on sugar beet fibers, which oxidizes the precursors of colored matter and the colored products from enzymatic reactions, by creating uncolored compounds. The advantage of hydrogen peroxide is that its surplus separates into water and hydrogen under the effects of temperature, light, and ions of alkaline and heavy metals and so, non-sucrose compounds do not get into the system. The color change of sugar beet dietary fibers is examined depending on the hydrogen peroxide concentration (in the range from 5 to 20 g H2O2/1,000 cm3), the pH value (in the range from 5 to 11), and the time of reaction (in the range from 1 to 12 h) at a temperature of 30 °C. To obtain the best effects of decolorized dietary fibers in white bread production the quality of the raw material is defined. The parameters for the preparation of the bread are chosen (the amount and particle size of the fibers, the amount of water and the mode of its addition) as are the additives, which results in good-quality white bread with sugar beet fibers. 相似文献
