Lactose, glucose and galactose contents in milk and fermented milk products and their lactose-free alternatives, were determined. Storage of products up to the best-before dates had no effect on carbohydrate composition. Total galactose content in yoghurt, i.e., free galactose plus the galactose moiety of lactose, was 2.3–2.4 g 100 g−1 (94–95% of that in milk), whereas that in Swedish soured milk and kefir was 1.9–2.0 g 100 g−1 (75–79% of that in milk). Lactose levels in lactose-free milk and fermented milk products were below or close to detection limits for all products. Only small differences in total galactose content existed for the lactose-free alternatives of milk, yoghurt and filmjölk, all with average total galactose contents of 1.3–1.4 g 100 g−1 (55–60% of that in milk). In contrast, lactose-free kefir had the same galactose content as milk, 2.4 g 100 g−1.  相似文献

Non-ripened cheese curd with different dry matter (34.5–47.0 g 100 g−1), protein (13.4–30.4 g 100 g−1), and fat (0.5–25.9 g 100 g−1) contents were produced from pre-acidified milk (citric acid, pH 5.8) with different fat-to-protein ratios (0, 0.18, 0.33, 0.79, 1.60) and different curd cooking times (15 min, 30 min, 85 min). From small angle oscillatory temperature sweep and large strain capillary rheology shear experiments it was deduced that the protein content increases and fat decreases maximal loss tangent and storage modulus. This is discussed in relation to suggested changes in casein micelle voluminosity with temperature. A critical shear stress above which the flow behaviour changes from regular to melt fracture behaviour was observed. This is explained by shear jamming and the frequency dependency of the sol–gel transition.  相似文献

Opportunities for the production of milk and dairy products enriched with cis-9, trans-11 conjugated linoleic acid (CLA) were investigated. Eighteen mid-lactation cows were used in a continuous-design for 7 weeks. During the first week, cows received grass silage ad libitum supplemented with 10 kg per day of a cereal-based concentrate (control) that was replaced with a concentrate containing 50 g kg−1 of rapeseed oil (RO). Changes in milk fatty acid composition were monitored on a weekly basis and milk produced was used to manufacture Edam cheese and butter. Inclusion of RO in the concentrate supplement increased the mean levels of trans-octadecanoic, monounsaturated, CLA and polyunsaturated fatty acid in the milk fat from 1.6, 25.7, 0.46 and 2.8 to 4.3, 35.3, 1.02 and 3.9 g 100 g−1 total fatty acids, respectively. In contrast, the mean level of saturated fatty acids decreased from 71.4 to 60.7 g  100 g−1 total fatty acids. Changes in milk fatty acid composition due to RO occurred within 7 days, with responses reaching a plateau after 21 days. Furthermore, the CLA concentrations in the milk fat from individual cows ranged between 0.37 and 0.65 and 0.43 and 2.06 g 100 g−1 total fatty acids for the control and RO diet, respectively. CLA enriched milk was used successfully to manufacture of Edam cheese and butter with softer textures but with acceptable organoleptic and storage properties. Processing milk into butter or cheese had no effect on the CLA concentrations indicating that enrichment of dairy products is dependent on the content in raw milk fat.  相似文献

This study investigated the effect of fat fractionation on the conjugated linoleic acid (cis-9, trans-11-C18 : 2) content of bovine milk fat. Anhydrous milk fat was fractionated into hard and soft fractions using controlled cooling and agitation. Fractionation of milk fat pre-melted at 60°C using a temperature programme of 33–10°C and a cooling rate of 0.58°C h−1 yielded a soft fraction containing 63.2% more conjugated linoleic acid (2.22 g 100 g−1 FAME), which was also enriched in polyunsaturated fatty acids and vaccenic acid (trans-11-C18 : 1) compared with the parent fat. Agitation following fractionation was found to have a negative effect on the conjugated linoleic acid content of the soft fraction. Refractionation of the soft fraction did not increase the yield of conjugated linoleic acid. The conjugated linoleic acid and trans fatty acid content of 26 selected food products ranging in milk fat content from 0 to 100% is reported. Conjugated linoleic acid concentrations ranged from 0 to 16.2 mg g−1 fat and were generally lower than the trans fatty acid content which ranged from 0 to 155.7 mg g−1 fat. Spreads containing vegetable oils contained higher trans fatty acid and lower conjugated linoleic acid contents than milk fat-containing products. This study highlights that a milk fat fraction enriched in conjugated linoleic acid may be achieved by dry fractionation.  相似文献

The physico-chemical characteristics, proteolysis (classical nitrogen fractions, caseins and their degradation products and free amino acids), and lipolysis (fat acidity and free fatty acids) were studied throughout the ripening of three batches of Babia-Laciana cheese, a Spanish traditional variety made from raw goats’ milk. The main compositional characteristics of this cheese at the end of the ripening are its high content of total solids (TS) (78.0±2.4 g 100 g−1 of cheese) and fat (61.1±1.2 g 100 g−1 of TS), the presence of residual lactose (1.6±0.8 g 100 g−1 of TS) and its low content of sodium chloride (1.1±0.7 g 100 g−1 of TS) and ash (2.8±0.5 g 100 g−1 of TS). Its pH values (4.44±0.72) are extraordinarily low. The evolution and final values of the different nitrogen fractions show that this cheese undergoes a very slight proteolysis, a fact which was corroborated when the caseins and their degradation products were quantified: β-casein did not undergo any modification throughout ripening, while only 21% of the αs-caseins were degraded. Free amino acids content increased by a factor of about 7 throughout ripening, resulting in a high content of γ-amino butyric acid and a low content of glutamic acid at the end of the process. Fat acidity increased very slightly, approximately 4.5 times, during ripening, reaching final values of 3.5±2.2 mg KOH g−1 of fat. The total free fatty acids content showed a similar evolution to fat acidity. At the end of the ripening process, the main free fatty acid was C18:1, followed by C16 and C10.  相似文献

A range of analytic methods for quantifying free fatty acids (FFAs) in milk were compared and further correlated to rancid flavour detected by sensory analysis. Proton transfer reaction–mass spectrometry (PTR–MS) and 1H nuclear magnetic resonance (NMR) spectrometry were introduced as novel methods for quantifying individual short chain FFAs. Gas chromatography–mass spectrometry (GC–MS) combined with in-solution derivatisation was used for quantifying all individual FFAs, and Bureau of dairy industries (BDI), acyl-CoA-synthetase–acyl-CoA oxidase (ACS–ACOD) assay, Fourier transform infrared spectroscopy were used to estimate the total FFA concentration in 28 milk samples. High correlations (r between 0.76 and 0.86) to rancid off-flavour were found for all analytical methods, and all the individual FFAs were quantitatively inter-correlated. Furthermore, a high correlation was found between PTR–MS and GC–MS quantification of hexanoic acid. For the BDI method, the sensory thresholds rancid off-flavour in farm bulk milk were 1.95 mmol 100 g−1 fat.  相似文献

A high performance anion-exchange chromatographic method employing pulsed amperometric detection was applied to the determination of endogenous free and total myo-inositol in bovine milk, for which there is limited information. The contents and trend variability of myo-inositol in milk from extensively pasture-fed cows during early lactation and across a production season were therefore evaluated. Free and total myo-inositol in seasonal milk were within the ranges of 2.3–4.5 mg 100 g−1 and 5.3–8.7 mg 100 g−1, respectively. This novel information will both improve understanding of the expression of innate myo-inositol in bovine milk, and provide manufacturers with information that can enhance formulation capability related to the production of cow's milk-based products  相似文献

Gelling characteristics of bigeye snapper (Priacanthus tayenus) surimi functionalised by lecithin at different concentrations were investigated. Lecithin at ≤1 g 100 g−1 had no impact on breaking force and deformation (> 0.05). Expressible drip tended to decrease with increasing lecithin level up to 1 g 100 g−1. Lecithin at 1–3 g 100 g−1 improved the whiteness (P < 0.05). Jointed clusters were formed in the gel microstructure with 1 g 100 g−1 lecithin. Gel without and with 1 g 100 g−1 lecithin had the same texture profile and likeness scores (texture, odour and flavour) (> 0.05). Peroxide value, TBARS content and rancid odour score of gels were changed considerably during refrigerated storage (4 °C/polyethylene bag) for 15 days but lower values of all indices were noticeable in gel with lecithin. Therefore, lecithin at 1 g 100 g−1 was the optimum concentration for stabilising the texture, improving the water holding capacity, whitening the colour and retarding the lipid oxidation of bigeye snapper surimi gel.  相似文献

Shrimp oil was encapsulated in nanoliposomes and fortified into skim milk. Shrimp oil nanoliposomes (SONL) were thermodynamically stable when added into skim milk at 10 mL 100 mL−1. Mild bitterness in fortified skim milk caused by the SONL was masked by adding β-glucan at various levels (0.05–0.2 g 100 mL−1). With the addition of SONL, fortified skim milk appeared more reddish in colour due to the presence of astaxanthin. Addition of β-glucan resulted in the increase in viscosity of the fortified milk by forming network of junction zones. During the storage of skim milk fortified with SONL and 0.1 g 100 mL−1 β-glucan at 4 °C for 15 days, no major quality changes took place. Simulated in vitro digestion studies revealed that 45.41 g 100 g−1 eicosapentaenoic acid (EPA) and 48.86 g 100 g−1 docosahexaenoic acid (DHA) from shrimp oil were bioaccessible for absorption in the gut after digestion.  相似文献

Polar lipid (PL) contents in human milk (HM) from two different geographic zones in Spain (central and coastal) were determined. These PLs were also analysed in several infant formulas (IFs), three of which contained milk fat globule membrane (MFGM), an ingredient used to resemble the PL profile of HM. Total PL in HM decreased significantly (p < 0.05) from transitional milk (48.62 mg 100 mL−1) to 6 months (28.66 mg 100 mL−1). In HM, sphingomyelin was the most abundant PL, followed by phosphatidylethanolamine; in IFs the most abundant PL was phosphatidylethanolamine. Only IFs with MFGM (54.79–58.07 mg 100 mL−1) could supply the total and individual PL content present in all lactation periods, with the exception of sphingomyelin, which did not match the content in transitional milk. PL intake by infants fed HM or IFs was determined to be 96–306 and 152–575 mg day−1, respectively.  相似文献

The chemical composition, fatty acid and protein fraction of donkey milk samples from domestic (Arcadian) breed were assessed from the 30th day to the 210th day of lactation. Total fat, proteins and minerals (Ca, Mg, K and P) were affected by the stage of lactation. Fatty acids were significantly influenced, with a decrease of 31.4% in saturated fatty acids, an increase of 53.8% in unsaturated fatty acids, a concomitant elevation of polyunsaturated fatty acids and a low n-6/n-3 ratio (2:1). Analysis by sodium dodecylsulphate-polyacrylamide gel electrophoresis found, on average, 42.8% casein and 57.2% whey protein. The concentration of lysozyme was between 1.20 and 2.54 mg mL−1, while the highest values were detected by the lysoplate method. Finally, low microbial content and somatic cells were also found in donkey milk with overall average log 4.4 cfu mL−1 and log 4.8 cells mL−1, respectively.  相似文献

Commercial samples of fresh and mature Halloumi cheeses made from ovine or bovine milk were studied in order to establish their chemical, microbiological and sensory characteristics. Significant differences were observed between the two types of Halloumi cheese both when fresh and mature. The free volatile fatty acid (FVFA) content of the cheeses increased with maturation from 483 to 1356 mg kg−1 for the ovine product, but lower values (380–1248 mg kg−1) were found in the bovine cheese. During maturation for 40 days, Enterococcus faecium, which dominated the microflora of fresh ovine cheese, was replaced by lactobacilli, including a new species, Lactobacillus cypricasei, which was not found in the bovine samples. Fewer than 100 cfu g−1 lactic acid bacteria (LAB) were present in the fresh bovine cheeses, but a microflora dominated by lactobacilli developed with time. Yeast counts in the mature ovine and bovine cheeses reached 2.3–2.8×105 cfu g−1 and, as some of the yeasts were proteolytic and/or lipolytic, it was assumed that they were having a positive impact of the flavour of the cheeses. The sensory panel distinguished significant differences in texture and flavour between the fresh and mature samples of both ovine and bovine cheeses and, overall, there was a significant preference for the ovine brand.  相似文献

To evaluate the effect of supplementing the diet of Comisana sheep with by-products from industrial tomato manufacture on the fat composition and conjugated linoleic acid (CLA) content of milk fat, two groups of 50 ewes each were fed either total mixed ration standard (TMRS) or total mixed ration with added tomato by-products (TMRA). Milk fat composition was determined by high-resolution gas chromatography (HRGC). The milk fat content for the animals fed the TMRA diet increased by 6.41% (P < 0.01) after six weeks, compared with the animals fed the TMRS diet. The CLA content in the milk fat for the group of animals fed the TMRA diet was 19.8% (P < 0.05) higher than for those fed the TMRS diet, and reached 1.33 g 100 g?1 fat, while the polyunsaturated fatty acid (PUFA) content increased by a 6.43% (P < 0.05) and reached 7.12 g 100 g?1 fat. The fatty acid composition showed an increase in the amount of polyunsaturated fatty acids. The n ? 3:n ? 6 ratio increased by 13% in the milk from sheep fed with the TMRA diet. These observations were confirmed by triglyceride analysis, which showed a decrease in the amount of short-chain (C28–C32) and medium-chain (C34–C42) triglycerides after six weeks, while the opposite was observed for the long-chain triglycerides (C44–C54).  相似文献

Partial replacement of NaCl by KCl (25% and 50%) in Minas Padrão cheese was investigated for the physicochemical characteristics, sensory evaluation, fatty acid profile, and texture parameters. Salt replacement did not affect the moisture content, protein, fat, ash, water activity, chloride, pH, and proteolysis. A significant reduction in sodium levels was observed, ranging from 369.12 mg 100 g−1 to 210.05 mg 100 g−1, while the control treatment (100% NaCl) presented 608.67 mg 100 g−1. Proteolysis indexes increased throughout ripening. Hardness and chewiness increased, as a result of pH reduction and syneresis in cheese, which caused a decrease in moisture content. The fatty acid profile was affected by sodium reduction, with an increase in short chain, medium-chain, and polyunsaturated fatty acids. In relation to the acceptance test, no significant differences were observed for the cheese with a substitution of 25% sodium chloride with potassium chloride when compared with the control.  相似文献

Kyoho (Vitis labruscana) skin is one of the valuable and eco-friendly agricultural waste and a potential source of phenolic compounds. Therefore, we attempted to develop Kyoho skin functional tea and evaluated its nutritional-functional properties as affected by drying temperatures (30, 40, 50 and 60 °C). Kyoho skin functional tea reported negligible protein (0.02 mg g−1), fat (0.04–0.19%) and calories (0.36–0.70 cal g−1). Total phenolic and flavonoid contents ranged from 0.25 to 0.56 mg GAE mL−1 and 0.03 to 0.19 mg QE mL−1, respectively. Kyoho skin functional tea showed functional properties including antioxidant activity (63.33–79.78%) and anthocyanins (0.25–0.34 mg per 100 mL). The sensory evaluation of Kyoho skin functional tea (dried at 40 °C) rated as acceptable (>6) with attractive colour (>6). Overall, these findings recommended the possibility of using Kyoho skin to develop functional teas, which may strengthen the global beverage industries.  相似文献

Supercritical fluid extraction (SCFE) of cholesterol from whole milk powder (WMP) was investigated in this study. The combined effects of temperature (40–80 °C) and pressure (150–250 bar) on the efficacy of cholesterol extraction (mg 100 g?1), modifications in the fat content (FC) (%) and solubility index (SI) (%) of WMP were studied and optimised by the application of response surface methodology (RSM). Variations in the free fatty acids (FFAs) (mg oleic acid per 100 g of milk fat) and lightness value (L*) were also investigated after SCFE process. About 55.8% reduction in cholesterol was achieved at the optimised condition of 68 °C, 207 bar with 40 min static time and 2 h dynamic time at flow rate of 6 L min?1. Extraction at the optimised conditions maximised the yield of cholesterol while retaining the FC, SI, FFA and L* at moderate limits of 23.7%, 85.1%, 7.7 mg per 100 g milk fat and 95.4, respectively.  相似文献

The objectives of this study were to test the influence of a recently developed rumen protected feed supplement containing extruded linseed meal and fish oil (LFO), which was fed to lactating Holstein-Friesian cows for 10 weeks at the rate of 800 g day−1 per animal, on the chemical and fatty acid (FA) composition of raw and ultra-high temperature (UHT) treated milks and to evaluate changes in sensory properties of UHT milk by both instrumental analysis and a panel of human assessors. Inclusion of LFO in the diet did not affect milk yield or the protein and fat contents of raw and UHT milks; however, it improved the FA composition of the milk fat by increasing the concentrations of health-enhancing polyunsaturated FA and beneficially decreasing the n-6/n-3 FA ratio without adversely affecting the sensory properties of the final product (UHT milk).  相似文献

In this study, the chemical composition, total phenolic content and antioxidant activity (DPPH, ORAC and FRAP assays) of A. subrufescens and P. ostreatus, cultivated with handmade and commercials supplements, were compared. Additionally, the compounds ergosterol, saccharopine, and hexitol were identified in A. subrufescens by HPLC-MS/MS. The antioxidant compound p-coumaric acid and dihexoses was found in both mushroom species. A. subrufescens presented higher total phenolic content (73.8 ± 0.6 mg GAE 100 g−1) and antioxidant activity than P. ostreatus (16.6 ± 0.5 mg GAE 100 g−1). The handmade supplement based on the waste of noble grains presented statistically similar phenolic content to the mushrooms cultivated with commercial ones Spawn Mate II SE (86.1 ± 1.4 and 92.9 ± 0.3 mg GAE 100 g−1, respectively). Therefore, the results support the use of handmade supplements based on agro-wastes as a viable alternative to the use of high-cost commercial ones.  相似文献

Fresh low-fat milk was fermented with five mixed lactic acid bacteria for up to 30 h at 42 °C. A protease, prozyme 6, was added 5 h after the beginning of fermentation. The whey was separated from the fermented milk and freeze-dried. As the fermentation time extended to 30 h, soluble protein content increased from 30.9 to 195.9 mg g−1, free amino acid content increased from 2.8 to 192.8 mg g−1, peptide content increased from 6.4 to 402.8 mg g−1 and γ-aminobutyric acid (GABA) increased from 0 to 80.6 mg 100 g−1, while inhibition of angiotensin I-converting enzyme (ACE) increased as indicated by a decrease of IC50 from 1.18 to 0.24 mg mL−1, respectively. The amino acid sequences of two ACE inhibitory peptides were Gly–Thr–Trp and Gly–Val–Trp, of which the IC50 values were 464.4 and 240.0 μm, respectively. The systolic blood pressure and diastolic blood pressure of spontaneously hypertensive rat (SHR) were reduced 22 and 21.5 mm Hg, respectively, after 8 weeks of oral administration of diluted whey (peptide concentration 5 mg mL−1) from the 30 h fermentation.  相似文献

A comprehensive review is presented of the nutrient composition for buffalo, mare, and dromedary camel milks at the level of breed, and species‐level data for yak, mithun, musk ox, donkey, Bactrian camel, llama, alpaca, reindeer and moose milks. Average values of nutrients were calculated and compared. Interspecies values (g 100 g?1) were 0.7–16.1 for total fat, 1.6–10.5 for protein, 2.6–6.6 for lactose, and 67.9–90.8 for water. Reindeer and moose milks had the highest fat and protein concentrations and the lowest lactose contents. Mare and donkey milks had the lowest protein and fat contents, in addition to showing the most appropriate fatty acid profile for human nutrition. Dromedary camel milk was most similar to cow milk in proximate composition. Moose milk was the richest in minerals, having values as high as 358 mg 100 g?1 for calcium, 158 mg 100 g?1 for sodium and 150 mg 100 g?1 for phosphorus. Interbreed differences of 4 g 100 g?1 were observed in total fat in buffalo, yak, mare and dromedary camel milks. Large interbreed differences were also present in the mineral contents in mare, buffalo and dromedary camel milks. By bringing together these compositional data, we hope to usefully widen the biodiversity knowledge base, which may contribute to the conservation and sustainable use of milk from underutilized dairy breeds and species, and to improved food and nutrition security, particularly in developing countries.
