The effect of storage on dry-cured ham quality was studied. Sixteen vacuum-packaged boneless dry-cured hams and sixteen vacuum-packaged dry-cured ham cuts were stored in darkness under refrigeration (4±2°C; 8 months) or freezing (-18±1°C; 24 months), respectively. Instrumental colour and texture, physico-chemical and biochemical parameters, sensory profile and consumer acceptability and purchase satisfaction were measured throughout storage. The overall quality of refrigerated boneless dry-cured hams and frozen dry-cured ham cuts showed only limited changes throughout long-term storage. Significant changes involved loss of odour and flavour, increased adhesiveness and modification of hardness, the Semimembranosus muscle became tender while Biceps femoris became harder, leading to a higher textural homogeneity. In agreement with those changes, the overall acceptability assessed by a trained panel decreased throughout storage, though this was significant regarding only frozen hams. However, consumer evaluation of acceptability, as well as satisfaction with hypothetical purchasing, did not vary significantly throughout storage.  相似文献

Dry-cured Iberian ham slices were stored under vacuum and under four different modified atmospheres (60/40 = 60%N2 + 40%CO2; 70/30 = 70%N2 + 30%CO2; 80/20 = 80%N2 + 20%CO2; argon = 70%argon + 30%CO2) at 4 ± 1 °C during 120 days. Gas composition, moisture content, pH, colour, pigment content, and lipid stability were measured, as well as sensory and microbial analysis were carried out throughout storage. A loss of intensity of red colour (a*-values) was observed during storage in ham slices (P < 0.05). Consistently, MbFe(II)NO content also decreased throughout storage (P > 0.05). Slices of ham packed in 40%CO2 (60/40) and 30%CO2 (70/30) showed lower a*-values than the rest of the batches after 60 days (P < 0.05), though differences were not evident after 120 days (P > 0.05). TBARs values showed an upward trend during the storage of packaged slices (P < 0.05). Vacuum-packed slices showed the lowest TBARs values and those packed with 40%CO2, the highest. Sensory attributes did not vary significantly (P > 0.05) throughout storage under refrigeration and packed either in vacuum or in modified atmospheres. No safety problems were detected in relation to the microbial quality in any case.  相似文献

Quality aspects of sliced dry-cured beef “Cecina de León” preserved in vacuum and gas mixtures (20%/80% CO2/N2 and 80%/20% CO2/N2) were studied. The evolution of microbiological, physicochemical and sensory parameters were analysed during storage (210 days) at 6 °C. Although microbial counts at 60 days of the gas-packaged samples were lower than the vacuum-packed ones, they were never higher than the spoilage limit (7 log ufc/g). A slight increase (p < 0.05) in pH was observed throughout storage of “Cecina de León” packaged under vacuum and in gas mixtures. However, a decrease (p < 0.05) in aw was observed during storage of “Cecina de León” packaged under vacuum but aw did not vary (p > 0.05) during storage in the gas-packaged samples. No changes were observed (p > 0.05) in lightness (L*), redness (a*) and yellowness (b*) in vacuum and gas packaged samples during storage. However, sensorially evaluated colour showed lower values in gas packaged samples during 30 days storage. This difference was decisive in establishing the shelf-life of “Cecina de León” slices preserved in gas mixtures (20%/80% CO2/N2 and 80%/20% CO2/N2). Therefore, from a microbiological point of view, gas mixtures are more effective in extending the shelf-life of “Cecina de León” slices. It is concluded that vacuum packaging allows longer storage than gas-packaging as it maintains a good visual appearance of “Cecina de León”, the main parameter in consumers’ perception of meat quality.  相似文献

Consumption of fresh-cut produce has sharply increased recently causing an increase of foodborne illnesses associated with these products. As generally, acidic fruits are considered ‘safe’ from a microbiological point of view, the aim of this work was to study the growth and survival of Escherichia coli O157:H7, Salmonella and Listeria innocua on minimally-processed peaches. The three foodborne pathogens population increased more than 2 log10 units on fresh-cut peach when stored at 20 and 25 °C after 48 h. At 10 °C only L. innocua grew more than 1 log10 unit and it was the only pathogen able to grow at 5 °C. Differences in growth occurred between different peach varieties tested, with higher population increases in those varieties with higher pH (‘Royal Glory’ 4.73 ± 0.25 and ‘Diana’ 4.12 ± 0.18). The use of common strategies on extending shelf life of fresh-cut produce, as modified atmosphere packaging and the use of the antioxidant substance, ascorbic acid (2% w/v), did not affect pathogens’ growth at any of the temperatures tested (5 and 25 °C). Minimally-processed peaches have shown to be a good substrate for foodborne pathogens’ growth regardless use of modified atmosphere and ascorbic acid. Therefore, maintaining cold chain and avoiding contamination is highly necessary.  相似文献

In the present study the combined effect of gamma irradiation (2 and 4 kGy) and modified atmosphere packaging (MAP) (30% CO2/70% N2 and 70% CO2/30% N2) on shelf life extension of fresh chicken meat stored under refrigeration was investigated. The study was based on microbiological (TVC, Pseudomonas spp., Lactic Acid Bacteria, Yeasts, Brochothrix thermosphacta, Enterobacteriaceae), physicochemical (pH, TBA, color) and sensory (odor, taste) changes occurring in chicken samples. Microbial populations were reduced by 1–5 log cfu/g for a given sampling day depending on the specific treatment. The effect was more pronounced in the case of the combination of MAP (70% CO2/30% N2) and the higher irradiation dose of 4 kGy. Of the chemical indicators of spoilage, TBA values for all treatments remained lower than 1 mg malondialdehyde (MDA)/kg meat throughout the 25 day storage period. pH values varied between 6.4 (day 0) and 5.9 (day 25). The values of the color parameters L*, a* and b* were not considerably affected by MAP. Irradiation resulted in a small increase of the parameter a*. Irradiation had a greater effect in extending the shelf life of chicken as compared to MAP. Sensory evaluation showed that the combination of irradiation at 4 kGy and MAP (70% CO2/30% N2) resulted in the highest shelf-life extension by 12 days compared to the air packaged samples.  相似文献

Beef steaks from five Spanish cattle breeds were submitted to three packaging conditions: (a) 15 days under vacuum, (b) 15 days under modified atmosphere (MAP) (60% O2, 30% CO2 and 10% N2), and (c) 10 days under vacuum plus 5 days more under MAP. CIE L*a*b* coordinates, chroma (C*) and hue (H*), relative concentration of myoglobin, oxymyoglobin and metmyoglobin at the meat surface and sensory evaluation of colour were determined 0, 5, 10 and 15 days after packaging. Beef under MAP showed higher lightness (L*) and hue (H*) and lower redness (a*) and chroma (C*) than beef under vacuum. Colour of beef under MAP was not acceptable after 15 days of storage, due to the high metmyoglobin concentration. Yellowness (b*) was the indicator of differences due to ageing and differences in colour between breeds were related to L*, a* and H* values. Packaging conditions had a greater effect on beef colour than breed, but breed differences might change with packaging atmosphere. Both packaging and breed are major factors in packaged beef quality.  相似文献

Wild mussels (Mytilus galloprovincialis), were packaged aerobically under vaccum packaging(VP) and modified atmosphere packaging (MAP (50%/50% CO2/N2: M1, 80%/20% CO2/N2: M2, 65%/35% CO2/N2: M3), and stored at 2 ± 1 °C. Quality evaluation was carried out using microbiological, chemical and sensory analyses. Microbiological results revealed that M2 and M3 delayed microbial growth compared to M1. Of the chemical indices determined, the TVB-N and TMA-N values of M2 remained lower than the proposed acceptability limits of 35 mg N/100 g and 8 mg N/100 g, respectively, up to 8 days of storage. All of the MAP and VP mussel samples exceeded these limits after 12 days of storage. All samples retained desirable sensory characteristics during the first 8 days of storage. Based on microbiological and chemical analyses along with sensory evaluation, M2 and M3 gave a longer shelf-life compared with VP and M1. M2 gas mixture was the most effective for mussel preservation.  相似文献

The effects of packaging method (aerobic packaging (AP), vacuum packaging (VP) or modified atmosphere packaging (MAP)), the form of pastirma (sliced or non-sliced) and storage time (0, 15, 30, 60, 90 or 120 days) on the chemical, microbiological and sensory properties of a Turkish pastirma were investigated. Overall, MAP preserved chemical, microbiological and sensory properties of Turkish pastirma better than AP or VP. Very high correlation coefficients (almost all >0.90) were observed between subjective quality parameters (sensory properties) and objective quality parameters (TBARS, hexanal content, L*, a*, and b*), which suggests that sensory panel was able to determine the quality changes over storage time precisely. Based on the results of this study, MAP should be the preferred choice of packaging in order to preserve overall quality of Turkish pastirma and its implication for pastirma packaging may increase pastirma’s current share in the processed meat product market.  相似文献

The effect of modified atmosphere packaging (70% O(2)/30% CO(2)) and skin packaging (no oxygen) on protein oxidation and texture of longissimus dorsi was investigated during storage for 14 days at 4°C. High oxygen atmosphere resulted in reduced tenderness and juiciness and SDS-PAGE revealed cross-linking of myosin heavy chain through disulfide bonding, and the content of protein thiols was reduced indicating protein oxidation. Myofibril fragmentation was reduced in meat stored in high oxygen atmosphere indicating less proteolysis and/or cross-linking of proteins. Protein carbonyl content was not affected by the packaging atmospheres. This study shows that packaging in modified atmosphere containing a high level of oxygen can result in protein cross-linking and reduced tenderness and juiciness of the meat.  相似文献

Oxygen-enriched modified atmosphere packaging (MAP) represents an important means to stabilize meat colour but may lead to an increase in lipid oxidation, influencing the acceptability and safety of the product. In this work, the effect on cholesterol and lipid susceptibility to oxidation was investigated in commercial minced beef held under MAP (80% O(2)/20% CO(2)). Cholesterol oxidation products (COPs), peroxide value (PV) and thiobarbituric acid reactive substances (TBARS) were determined, before and after pan frying, at 1, 8 and 15 days since packaging under refrigerated storage (3-4°C). 7α-Hydroxycholesterol, 7β-hydroxycholesterol and 7-ketocholesterol were the more abundant COPs identified. COPs significantly increased in raw beef during storage: after 1, 8 and 15 days since packaging COPs were at the levels of 10.4, 30.7 and 60.5μg/g of fat, respectively. Cooking did not affect cholesterol oxidation in freshly packaged minced beef but led to a rise in COPs amount with respect to raw muscle after 8 and 15 days of storage. The trend in cholesterol oxidation reflected the progressive increase in lipid peroxidation rate brought by MAP conditions.  相似文献

The effect of the fluorescent light exposure and type of packaging (normal atmosphere and oxygen-rich atmosphere) was evaluated on the oxidation parameters (peroxides and cholesterol oxidation products) of raw beef slices placed in packed vessels and refrigerated. The concentration of COPs in meat treated under modified atmosphere ranged from 0.15 to 0.52mg/100g meat (average value of 0.27mg COPs/100g meat), which was twice as much as the average COPs content (0.14mg/100g) of meat packed under air (0.04-0.27mg COPs/100g meat). The main cholesterol oxide was 7k, which represented about one third of the total cholesterol oxides, followed by 7β-OH (20-25% of total COPs), 7α-OH (about 20%) and β-epoxy (12-18%). In normal atmosphere, photoxidation was a superficial process, since an inverse correlation between meat slice weight and COPs content on a lipid basis was observed, unlike in a high oxygen (32%) atmosphere.  相似文献

The effect of packaging in protective atmospheres on the process of lipid oxidation, colour and water retention capacity of pork loin chops during refrigerated storage was investigated. The use of modified atmospheres with a high oxygen concentration (70%) acted as a pro-oxidation factor both for fatty acids and for cholesterol (an increase of 86.4% on the initial COPS content). No significant advantages were found in the use of these atmospheres concerning the colour of the meat. Vacuum packaging was seen to be an interesting alternative in the packaging of pork, due to the fact that it increases oxidative stability, which brings about greater colour stability and therefore increases the shelf life. The only disadvantage of this type of packaging is that it increases initial weight loss (5.1% on day 2 of storage).  相似文献

The effect of short-term frozen storage prior to thawing on the quality of freeze-chilled chicken fillets was investigated, as was the effect of modified atmosphere packaging (MAP). Four process treatments were used: (1) fresh chicken chilled at 4 degrees C without previous freezing, (2) freeze-chilled for 7 days and thawed at 4 degrees C, (3) chilled at 4 degrees C packaged under MAP (70% N(2)-30%CO(2)), and (4) packaged under MAP, freeze-chilled for 7 days and thawed at 4 degrees C. Microbiological, chemical and sensory analyses were conducted on samples for a period up to 15 days. Freeze-chilled fillets gave a lower total viable count (TVC) at a given sampling day than chilled fillets. MAP, as expected, delayed microbial growth. The Pseudomonads were the dominant microbial species in fillets under aerobic conditions. MAP reduced the populations of Pseudomonads by 2-4 log cfu/g. Lactic acid bacteria (LAB) and Enterobacteriaceae increased progressively for all treatments throughout storage. Yeasts and molds were inhibited by MAP and by freeze chilling. Total volatile basic nitrogen (TVB-N) values increased rapidly for the chilled fillets but remained significantly lower for the freeze-chilled and the MA-packaged samples. MAP and especially freeze chilling enhanced drip loss. MAP did not affect redness or yellowness of product while freeze chilling decreased product redness. Lightness was not affected by either MAP or freeze chilling. Based on taste, which proved to be the most sensitive sensory attribute, shelf life of product ranged from 6 to 7 days for all treatments leading to the conclusion that freeze chilling is a suitable technology for fresh chicken fillets enabling their distribution as a frozen product and upon subsequent thawing at their final destination, their retail display as chilled products. MAP in combination with freeze chilling had a negligible effect on product quality.  相似文献

The effect of modified atmosphere packaging of buffalo meat on the structural parameters viz., fibre diameter, sarcomere length and myofibrillar fragmentation index and physical parameters viz., pH, drip loss and colour scores were studied. The buffalo meat was packed under aerobic, vacuum and modified atmosphere (80% oxygen+20% carbon dioxide) and stored at 4±1°C upto 21 days. The results obtained revealed that vacuum-packed buffalo meat had the lowest fibre diameter and myofibrillar fragmentation index and the highest sarcomere length, vacuum thus appears to enhance ageing. Buffalo meat packed in modified atmosphere had a low drip loss and a desirable colour. The modified atmosphere packed and vacuum-packed buffalo meat was acceptable for upto 14 days at 4±1°C.  相似文献

The combined effect of oregano essential oil (0.1% and 1% w/w) and modified atmosphere packaging (MAP) (30% CO2/70% N2 and 70% CO2/30% N2) on shelf-life extension of fresh chicken meat stored at 4 degrees C was investigated. The parameters that were monitored were: microbiological (TVC, Pseudomonas spp., lactic acid bacteria (LAB), yeasts, Brochothrix thermosphacta and Enterobacteriaceae), physico-chemical (pH, TBA, color) and sensory (odor and taste) attributes. Microbial populations were reduced by 1-5 log cfu/g for a given sampling day, with the more pronounced effect being achieved by the combination of MAP and oregano essential oil. TBA values for all treatments remained lower than 1 mg malondialdehyde (MDA) kg(-1) throughout the 25-day storage period. pH values varied between 6.4 (day 0) and 5.9 (day 25). The values of the color parameters L*, a* and b* were not considerably affected by oregano oil or by MAP. Finally, sensory analysis showed that oregano oil at a concentration of 1% imparted a very strong taste to the product for which reason these lots of samples were not scored. On the basis of sensory evaluation a shelf-life extension of breast chicken meat by ca. 3-4 days for samples containing 0.1% oregano oil, 2-3 days for samples under MAP and 5-6 days for samples under MAP containing 0.1% of oregano oil was attained. Thus oregano oil and MAP exhibited an additive preservation effect.  相似文献

目的 探究自发气调包装对不同品种青椒贮藏品质的影响。方法 以贵州主栽的“改良螺丝椒王”和“黔椒8号”品种为实验材料,使用MP20气调包装袋对其进行包装处理,贮藏于(10±0.3)℃的环境内32d,每隔8 d进行一次相关指标的测定,研究贮藏期间不同品种间青椒品质变化。结果 随着贮藏时间的延长,青椒果实的腐败率、失重率和转红指数均呈上升趋势,相比之下,“黔椒8号”的贮藏性能优于“改良螺丝椒王”。两个品种共检测出48种挥发性物质,主要以醛类、酯类为主;在贮藏末期,“黔椒8号”对醛类和酯类物质的保留率高于“改良螺丝椒王”,风味损失较少。根据化合物的香气活性值得出,两个辣椒品种共有的关键特征呈香物质为:(E,E)-2,4-癸二烯醛、水杨酸甲酯、肉豆蔻醛、正己醛、2-己烯醛和β-紫罗兰酮,其含量均随着贮藏时间的延长而下降。贮藏期间,“改良螺丝椒王”特有的挥发性物质为3-蒈烯和反式-2-壬醛,“黔椒8号”特有的挥发性物质为1-己醇和环己醇。结论 在低温下采用MP20气调包装袋进行包装的“黔椒8号”的贮藏效果最佳。  相似文献

The performances of two commercially available packaging systems for prolonging the shelf-life of fresh meat were compared at 1°C and during simulated retail display. Beef and pork loin steaks in modified atmosphere packs (MAP), containing 75% O2 and 25% CO2, developed an initial bright red (beef) or pink (pork) colour, which gradually changed to brownish-red or -pink after 12 days; similar samples in vacuum skin packs (VSP) remained purple-red throughout the storage period. Off-odours developed more rapidly in MAP (8–12 days), possibly due to more extensive growth of Brochothrix thermosphacta and the effects of aerobic conditions on the metabolites of lactic acid bacteria, which predominated in both types of packs. Evidence of rancidity, using thiobarbituric acid assay, was demonstrated in MAP beef after approximately 8 days, but not in VSP. Drip losses in MAP increased after 6 days' storage, but remained generally low in VSP. Physical texture (shear force values of cooked samples) of beef was unaffected by packaging method, but pork in VSP was significantly more tender ( P < 0.001) than in MAP.  相似文献

This study investigated the in situ oxidative process of myofibrillar proteins in boneless pork loin chops (Longissimus lumborum) packaged in an oxygen-enriched atmosphere (HiOx: 80% O2/20% CO2), an air-permeable polyvinylchloride (PVC) overwrap, or a partial vacuum (VP) throughout display at 2 °C for up to 14, 7, and 21 days, respectively. Samples stored in HiOx were susceptible to lipid (TBARS) and protein (carbonyls, sulfhydryls, and aggregation) oxidation, while samples in PVC and VP showed lesser oxidative changes. Water-holding capacity of raw muscle decreased (P < 0.05) when stored in HiOx but not in PVC and VP. Upon salt and phosphate brine marination, HiOx and PVC muscle samples had improved hydration capacity during display compared with non-stored control, but display generally decreased hydration of VP samples. The result was in agreement with myofibril structural changes. Despite the enhanced hydration, HiOx muscle was least capable of withholding moisture upon cooking.  相似文献

The effect of supplementation of vitamin E (2025 IU animal−1 day−1) in the diet of beef bulls on the colour stability of pasteurized beef ham was studied. Control and enriched diets were provided for the last 136 days before slaughter. Pasteurized hams were manufactured from Mm. semitendinosus from eight animals per dietary group. Half of the samples of sliced ham from control (CON) and supplemented (SUP) bulls were packaged under vacuum (VAC) and half in low-oxygen modified atmosphere packs (FOG, gas mixture: CO2/N2=50/50). The packages were kept under constant illumination for 28 days at 8°C. During storage, the number of colony-forming units (CFU) reached a maximum of 5x107 g−1. The microflora was dominated by lactic acid bacteria. The supplementation with vitamin E showed no effect on microbial growth. Lipid oxidation was stable during storage. A significant difference between both dietary groups was detected for the decrease in the redness values during storage. Redness values of CON vacuum-packaged samples decreased (P < 0.01) with time, whereas those for the SUP products only tended to decrease. The redness values of FOG-packed ham were higher than those of VAC-packed ham at the end of the display period, irrespective of the dietary group. Overall, colour appeared to be more stable in the FOG-packed products than in the VAC-packed products. It can be concluded that dietary supplementation of bulls with vitamin E appears to offer only a minor improvement in colour stability over current feeding regimens when the Mm. semitendinosus are used to make cured, pasteurized ham-type products.  相似文献

以普通塑料薄膜保鲜袋作对照,研究不同包装薄膜(0.03mm聚氯乙烯薄膜、0.03mm聚乙烯薄膜、0.03mm微孔薄膜)对鲜切莴笋贮藏期间品质的影响。结果表明:0.03mm厚聚乙烯薄膜包装能有效地控制鲜切莴笋的失重率、褐变度、呼吸强度、Vc损失率,提高鲜切莴笋的感官品质和营养价值。  相似文献
