Recent interest in the commercial production of cider in Ontario, Canada revealed a lack of information on cider prepared from apples grown in North America. A study was conducted using locally grown culinary and dessert varieties of apples, since there is a lack of true cider varieties grown in Ontario. Four processing methods (treatments) were evaluated with respect to their effect on juice and cider characteristics; the chemical and microbiological characteristics of the juices and still ciders are reported. Sulphite addition to the juice at the time of juice extraction had no effect on the characteristics evaluated. Storage of fruits at 13 °C until they showed signs of shrivelling or senescence decreased juice yield and affected titratable acidity and pH levels of juices and ciders. Freezing fresh apples and thawing prior to processing produced juices that did not undergo keeving and had higher mould and yeast populations; methanol was present in juices and ciders from thawed apples. The significant effects of storage and freezing on apple juice characteristics should be taken into account when considering a delay in the processing of apples for cider production. © 2003 Society of Chemical Industry  相似文献

The amino acid profile in dessert apple must and its effect on the synthesis of fusel alcohols and esters in cider were established by instrumental analysis. The amino acid profile was performed in nine apple musts. Two apple musts with high (>150 mg/L) and low (<75 mg/L) nitrogen content, and four enological yeast strains, were used in cider fermentation. The aspartic acid, asparagine and glutamic acid amino acids were the majority in all the apple juices, representing 57.10% to 81.95%. These three amino acids provided a high consumption (>90%) during fermentation in all the ciders. Principal component analysis (PCA) explained 81.42% of data variability and the separation of three groups for the analyzed samples was verified. The ciders manufactured with low nitrogen content showed sluggish fermentation and around 50% less content of volatile compounds (independent of the yeast strain used), which were mainly 3‐methyl‐1‐butanol (isoamyl alcohol) and esters. However, in the presence of amino acids (asparagine, aspartic acid, glutamic acid and alanine) there was a greater differentiation between the yeasts in the production of fusel alcohols and ethyl esters. High contents of these aminoacids in dessert apple musts are essential for the production of fusel alcohols and most of esters by aromatic yeasts during cider fermentation.  相似文献

Total Polyphenols in Apples and Ciders; Correlation with Chlorogenic Acid   总被引:1,自引:0,他引:1  
The chlorogenic and caffeic acid combined in apple juice cultivars and ciders correlated very well with total phenol content (P 0.001; r = 0.989; n = 22). The same correlation was found when analyzed strictly by cultivar (P 0.001; r = 0.986; n = 10). Analysis used automated Folin Ciocalteu (FC) colorimetry values for total phenols and reversed-phase HPLC (280 nm detection) for chlorogenic and caffeic acid before and after fermentation. Concentrations were between 8 and 1012 mg/L (as chlorogenic acid) in different cultivars. The total chlorogenic acid by HPLC represented only 6.2 to 10.7% of the total polyphenol (calculated as chlorogenic acid) by FC in the apple cultivars for all samples. Total peak areas correlated very well with total phenol content by FC (P 0.001; r = 0.994; n = 22).  相似文献

Scope : The aim of this study was to determine the amounts of polyphenols and D ‐(?)‐quinic acid reaching the ileostomy bags of probands (and thus the colon in healthy humans) after ingestion of apple smoothie, a beverage containing 60% cloudy apple juice and 40% apple puree. Methods and results : Ten healthy ileostomy subjects each ingested 0.7 L of apple smoothie (a bottle). Their ileostomy bags were collected directly before and 1, 2, 4, 6 and 8 h after smoothie consumption, and the polyphenol and D ‐(?)‐quinic acid contents of the ileostomy fluids were examined using HPLC‐DAD and HPLC‐MS/MS. The total polyphenol and D ‐(?)‐quinic acid content of the apple smoothie was determined to be 1955.6±124.6 mg/0.7 L, which is very high compared to cloudy apple juices. The most abundant substances found in the ileostomy bags were oligomeric procyanidins (705.6±197.9 mg), D ‐(?)‐quinic acid (363.4±235.5 mg) and 5‐caffeoylquinic acid (76.7±26.8 mg). Overall recovery of ingested polyphenols and D ‐(?)‐quinic acid in the ileostomy bags was 63.3±16.1%. Conclusions: The amounts of polyphenol and D ‐(?)‐quinic acids reaching the ileostomy bags are considerably higher after apple smoothie consumption than after the consumption of cloudy apple juice or cider. These results suggest that the food matrix might affect the colonic availability of polyphenols, and apple smoothies could be more effective in the prevention of chronic colon diseases than both cloudy apple juice and apple cider.  相似文献

以‘金世纪’单一苹果品种及‘金世纪’、‘嘎啦’、‘澳洲青苹’混合(1∶1∶1)苹果品种为原料酿造苹果酒,并对其进行理化指标、多酚物质、香气成分测定及感官品评。结果表明,两种苹果酒理化指标差异不显著(P>0.05);混合发酵苹果酒中的酚类物质总量(61.88 mg/L)显著高于单独发酵苹果酒(56.90 mg/L)(P<0.05),其中以原儿茶酸、儿茶素、原花青素、表儿茶素和绿原酸为主。香气主要以醇类和酯类物质为主,两种苹果酒中醇类物质含量分别为216.83 mg/L和78.85 mg/L;酯类以乙酸乙酯、乙酸丙酯、乳酸乙酯和乙酸己酯为主,前三者在混合发酵苹果酒中含量均显著高于单独发酵苹果酒(P<0.05),使其香气更加浓郁和复杂。混合发酵苹果酒在澄清度、回味、香气、风味平衡方面更好,但在色泽方面稍差。因此,混合苹果品种发酵更适合于苹果酒的酿造。  相似文献

Patulin is a mycotoxin produced primarily by Penicillium expansum, a mold responsible for rot in apples and other fruits. The growth of this fungus and the production of patulin are common in fruit that has been damaged. However, patulin can be detected in visibly sound fruit. The purpose of this project was to determine how apple quality, storage, and washing treatments affect patulin levels in apple cider. Patulin was not detected in cider pressed from fresh tree-picked apples (seven cultivars) but was found at levels of 40.2 to 374 microg/liter in cider pressed from four cultivars of fresh ground-harvested (dropped) apples. Patulin was not detected in cider pressed from culled tree-picked apples stored for 4 to 6 weeks at 0 to 2 degrees C but was found at levels of 0.97 to 64.0 microg/liter in cider pressed from unculled fruit stored under the same conditions. Cider from controlled-atmosphere-stored apples that were culled before pressing contained 0 to 15.1 microg of patulin per liter, while cider made from unculled fruit contained 59.9 to 120.5 microg of patulin per liter. The washing of ground-harvested apples before pressing reduced patulin levels in cider by 10 to 100%, depending on the initial patulin levels and the type of wash solution used. These results indicate that patulin is a good indicator of the quality of the apples used to manufacture cider. The avoidance of ground-harvested apples and the careful culling of apples before pressing are good methods for reducing patulin levels in cider.  相似文献

Acrolein can be at the origin of an important organoleptic defect in beverages made from apples. Its content was investigated in freshly distilled Calvados and cider. The specificity of 3-methylbenzothiazolone hydrazine (MBTH) towards carbonyl compounds was used in order to derive acrolein in azines. Azines were separated and detected by gas chromatography coupled with a nitrogen-phosphorus Detector. Results showed that acrolein concentrations could be quickly determined in either Calvados or cider. Accuracy of quantification was better than 6% for concentrations about 1 mg/l in freshly distilled Calvados and 10% for concentrations about 10 μg/l in ciders. Acrolein content was found between 0.7 and 5.2 mg/l in samples of freshly distilled Calvados whereas it was between 7 and 15 μg/l in samples of cider. This method of quantification was applied to study disappearance kinetics of acrolein in cider. Acrolein content was found to decrease rapidly during the first hours and to change very slowly after a few days. Its behaviour during a distillation was also investigated showing that in spite of its high volatility it could also be found in the last fractions of distillation.  相似文献

Plum (Prunus domestica) juices were produced from different cultivars with optimised processing technology. High results for dry mass (19–21 °Brix), sugar-free extract (75–105 g/L), total acidity (6–11 g/L), sorbitol (27–52 g/L) and minerals were found. Secondary plant metabolites were present in high amounts as well. By means of HPLC/PDA 1465–2590 mg/L of colourless polyphenols were found. Neochlorogenic acid, chlorogenic acid, (+)-catechin and (−)-epicatechin were the predominant polyphenols. Total anthocyanins were found in amounts of 43–168 mg/L in the fresh juices. They were identified as cyanidin-3-glucoside, cyanidin-3-rutinoside, peonidin-3-glucoside and peonidin-3-rutinoside. A fast decline of the anthocyanin concentrations could be observed during a 6 months storage at 20 °C, which changed the red colour of the juices drastically. Beside high polyphenol concentrations, high antioxidant capacities of the juices were determined as well. The applied processing technology allowed the production of cloud-stable plum nectars.  相似文献

Monitoring the hydrolysis or disappearance of starch by the starch iodine test is a simple procedure for determining the maturity of cider apples, but it does not indicate the exact amount of starch present. So far, studies of starch in apples have dealt exclusively with dessert apples. In this paper the relationship between the visual starch index, the dark‐coloured surface area and the real starch content was studied in two varieties of cider apple commonly used in Normandy (France). Starch determination in cider apples required adapting the protocol provided by the Boehringer enzymatic kit. The work led to proposing a simplified index with five scales instead of 10. This index gives the correspondences between the new and old scales as well as the probable starch contents for each new scale. © 2002 Society of Chemical Industry  相似文献

为分析庆阳各县区8个示范果园的红富士苹果中多酚组成。采用微波-超声-纤维素酶辅助法提取苹果中多酚,福林酚比色法和高效液相色谱法(High performance liquid chromatography,HPLC)测定总酚组成及含量。结果表明,各鲜果中总酚含量为0.723~1.088 mg/g,主要包括绿原酸、对香豆酸、儿茶素、表儿茶素、芦丁、根皮苷这6种多酚,其中绿原酸、对香豆酸和芦丁含量较高,分别为0.106~0.154、0.157~0.256和0.002~0.078 mg/g。庆阳苹果多酚组分多且含量高,营养丰富,食用和药用价值良好。  相似文献

The phenolics in 20 apple cultivars comprising 19 English cider apple varieties and one dessert apple variety were analysed by high‐performance liquid chromatography/tandem mass spectrometry. The cider varieties contained higher levels than the dessert apple and the peel was richer in phenolics than the flesh. The phenolic concentrations ranged between 230 and 4920 mg kg?1 fresh weight in the flesh and between 546 and 6306 mg kg?1 fresh weight in the peel. Fifteen compounds from five different phenolic groups, flavan‐3‐ols, flavonols, anthocyanins, hydroxycinnamates and dihydrochalcones, were detected. The major components in the flesh were 5‐O‐caffeoylquinic acid, procyanidin B2 and (?)‐epicatechin, while (?)‐epicatechin and quercetin glycosides predominated in the peel. 以小国光(Ralls)和富士(Fuji)及其所酿制的新鲜苹果酒为试验材料,采用反相高效液相色谱法测定分析苹果原汁、发酵中酒样和苹果成品酒中11种酚酸、5种黄烷-3-醇的含量。结果表明:苹果和苹果酒中存在4种酚酸(原儿茶酸、绿原酸、咖啡酸、对-香豆酸)、2种黄烷-3-醇(儿茶素和表儿茶素);不同品种的苹果原汁和苹果成品酒中酚类物质的含量都存在显著差异。其中,小国光苹果和小国光苹果酒中的酚类物质总含量较高;对于每个品种,绿原酸都是最主要的酚酸类物质,含量最高的黄烷-3-醇类物质都是表儿茶素。随着发酵过程的进行,苹果酒中酚类物质的含量有不同程度的增加。其增加趋势为S型曲线,即先平缓再较快再平缓。  相似文献

The objectives of this study were (i) to evaluate the survival of coliforms, Escherichia coli, and enterococci in refrigerated apple cider; (ii) to develop simple and inexpensive presumptive methods for detection of these bacteria; (iii) to perform a field survey to determine the prevalence of these bacteria on apples and in apple cider; and (iv) based on our results, to recommend the most useful of these three indicator groups for use in verifying apple cider processing plant sanitation and hazard analysis critical control point (HACCP) programs. Eight of 10 coliform strains (5 E. coli, 1 Enterobacter aerogenes, and 2 Klebsiella spp.) inoculated into preservative-free apple cider (pH 3.4, 13.3(o) Brix) survived well at 4 degrees C for 6 days (< or = 3.0 log10 CFU/ml decrease). Of 21 enterococci strains (Enterococcus faecalis, E. faecium, and E. durans), only 2 E. durans and 3 E. faecium strains survived well. Simple broth-based colorimetric methods were developed that detected the presence of approximately 10 cells of coliforms or enterococci. In three field studies, samples of unwashed apples (drops and picked), washed apples, and freshly pressed cider were presumptively analyzed for total coliforms, E. coli, and enterococci using qualitative and/or quantitative methods. Drop apples were more likely than picked apples to be contaminated with E. coli (26.7% vs. 0%) and enterococci (20% vs. 0%). Washing had little effect on coliform populations and in one field study was associated with increased numbers. Total coliform populations in cider ranged from < 1 CFU/ml to > 738 most probable number/ml, depending on the enumeration method used and the sample origin. E. coli was not recovered from washed apples or cider, but enterococci were present on 13% of washed apple samples. The qualitative coliform method successfully detected these bacteria on apples and in cider. Based on its exclusively fecal origin, good survival in apple cider, and association with drop apples, we conclude that E. coli is the most useful organism for verifying apple cider sanitation and HACCP programs.  相似文献

Volatile aroma components and contents of organically and conventionally produced apples of the cultivars Elstar, Jonagold, Jonagored and Braeburn were studied. In three cultivars investigated, the aroma contents of organically produced apples were significantly lower (Elstar 16%, Jonagold 29%, Jonagored 68%). For Braeburn, no statistically significant difference was observed. In particular, the main aroma components were present at much lower concentrations in organically produced apples. In all apple cultivars, these were hexanal, trans-2-hexenal, 2-methylbutylacetate and hexylacetate. twenty-three aroma components were identified in total, in different relative ratios in the different apple cultivars: saturated esters, saturated and unsaturated aldehydes and alcohols. Some components identified in the conventionally produced cultivars were not present in the organically produced cultivars at all. The aroma components were extracted from juice freshly prepared from the apples by stir bar sorptive extraction (SBSE) technique and characterised by FID gas chromatography and EI/CI TOF mass spectrometry.  相似文献

对以红富士苹果为原料 ,分别添加 0 3、0 4、0 5g/LCaCl2 的澄清苹果汁进行了研究。清汁中接种酿酒酵母Aw(Saccharomycescerevisiae ,Aw) ,于 2 0℃控温发酵 ,陈酿、澄清后进行理化、感官分析与风味物质测定。研究显示 ,添加CaCl2 显著地提高了果汁的澄清度、加快了果汁澄清速度。果汁处理时间低于 12h时 ,CaCl2 加量以 0 4g/L为宜 ;处理时间在 18~ 2 2h ,CaCl2 加量为 0 3~ 0 5g/L。经CaCl2 增加酸度 ( 1 49~ 1 5 7g/L)、降低 pH值 ( 0 19~ 0 2 4)、对酵母酒精发酵、发酵过程中滴定酸和 pH的变化趋势无显著影响。CaCl2 处理的果汁发酵的苹果酒滴定酸度高、残糖低 ,总浸出物低 ,酒精浓度与未处理苹果酒接近 ;口味纯正、爽口 ,色泽好 ,果香味突出。  相似文献

Pulp-enriched cloudy apple juices were manufactured from two apple varieties by blending of apple puree with natural cloudy apple juice in order to enrich bioactive secondary plant substances. Finishing of the puree with a 0.6-mm mesh screen and final product homogenisation revealed as the optimum processing technology for the novel 100% fruit beverage. The presence of large particles originating from the puree prevented long-term cloud stability, but due to the proportion of cloud-stable juice a complete phase separation did not occur. Optimal drinkability was achieved at a viscosity of 11.5 mPa s. Polyphenol compositions and concentrations were determined by means of RP-HPLC/PDA. The results ranged from 109 to 610 mg/l. All samples showed the typical polyphenol pattern of apples with dominating hydroxycinnamic acids followed by flavanols and flavonols. The puree addition to the cloudy apple juices increased the polyphenol concentrations by average 100%. Relatively, the highest increase could be observed for dimeric procyanidins. Different technological variants did not affect significantly the polyphenol concentrations. The dietary fibre contents of the pulp-enriched cloudy apple juices ranged from 5.8 to 9.4 g/l.  相似文献

This study measures and compares the bioactive content and appearance attributes of juices, dietary fibres (DFs) and skin wastes of three apple genotypes (white fleshed (WF), pink fleshed (PF) and red fleshed (RF)). The juices of the PF and RF apples had more appealing and stable colours and much greater total extractable polyphenol content (TEPC) (RF had the highest, 3.40 mg catechin equivalent/mL juice) and vitamin C (PF had the highest, 14.2 mg/100 mL juice), compared with the WF apple. DFs isolated from the three apples using aqueous and ethanolic methods varied in bioactive profiles as a function of genotype. The TEPC and antioxidant activity (AA) of the fibres decreased in the order of PF > RF > WF. The total DF (TDF) in the fibre obtained using the aqueous method decreased in the order of RF?>?PF?>?WF. The ethanolic method yielded higher neutral monosaccharide (NM) and slightly greater TDF contents than the aqueous method. More polyphenol species were detected in the PF fibres, especially those obtained using the aqueous method. The polyphenol content in the apple skin decreased in the order of RF > WF > PF, with PF having slightly more pectic polysaccharides. As a whole, the RF apple appeared to be the best genotype as the potential source for juice, fibre and skin waste extract (SWE) ingredients. The PF apple would be the second best genotype for juice and fibre ingredients. The skin of the RF and WF genotypes would provide a good source of polyphenols. There is potential for promoting RF and PF apple genotypes because of their excellent nutritional values. The aqueous fibre preparation method used herein containing no solvent treatment and freezing steps represents an industrial-scale cost-effective alternative to the conventional ethanolic methods used for producing DFs whilst retaining polyphenols.  相似文献

以冷破碎红富士苹果浆为原料发酵制备低度苹果酒,通过分析不同酵母发酵周期的糖度、酒精度、pH和总酸筛选酵母菌株;在此基础上采用单因素与响应面试验以优化发酵工艺,确定冷破碎苹果浆发酵酒的最佳条件,通过分析酒品指标,与苹果清汁发酵酒的品质进行对比。结果表明,冷破碎苹果浆发酵酒的最佳工艺参数为:SY酵母发酵的初始糖度18%、酵母接种量0.1 g/L、发酵温度20℃;苹果浆发酵酒的残糖(7.5±0.46 g/L)、酒精度(7.8±0.1%)分别与苹果清汁发酵酒的残糖(7.3±0.31 g/L)、酒精度(8.0%±0.1%)差异不显著;苹果浆发酵酒的总酚(74.99±1.23 mg/100 mL)和有机酸(5.33±0.01 g/L)等成分含量高于苹果汁发酵酒(总酚47.5±2.2 mg/100 mL,有机酸5.01±0.03 g/L)。该结果可供苹果酒实际生产借鉴,也为苹果加工产业多元化发展提供思路。  相似文献
