入世，中国葡萄酒业准备好了吗？——烟台张裕集团董事长孙利强访谈

2001年11月24-27日，北京市顺义区商委、卫生局、饮食行业协会联合举办了顺义区餐饮业经营者统一培训班，由专家给餐饮业经理讲授中国入世的应对措施。参加培训的经理们纷纷表示此次活动非常及时，唯一遗憾的就是时间太短了。顺义区饮食行业协会秘书长岳保东告诉记者，中国成功加入世界贸易组织，面对新形势，餐饮业的不少老板对于WTO还只是一个模糊的概念，渴望详细了解入世规则，明确如何把握好经营方向盘，迫切希望专家为他们指点迎接挑战的具体措施。为此，顺义区商委、2中国入世卫生局、饮食行业协会便举办了以《WTO与北京餐饮业》…

Acrylamide formation in fried potato products – Present and future,a critical review on mitigation strategies

Acrylamide is proven to be carcinogenic in rodents and a ‘probable’ human carcinogen, with increasing evidence of positive associations with human cancers. Thus, authorities and industry urge to find solutions for acrylamide formation, while no legal limits have yet been established for this contaminant in foods. Most of the acrylamide dietary exposure results from potato products, coffee, bakery products and chocolate. Acrylamide is formed in potato products during industrial processing, retail, catering and home preparation. This review summarizes the research to date on acrylamide levels, mechanisms of formation, assessment of acrylamide intake and health risk, and possible mitigation strategies from farm to fork in fried potato products. Furthermore, relevant issues regarding the implementation of mitigation strategies on an industrial scale are discussed and evolution of risk management summarized. In conclusion, ‘lab scale studies’ in acrylamide mitigation research should be interpreted with utmost care. This leads to the pertinent question “What is the next step to reduce acrylamide exposure while maintaining the expected product quality for the consumer?”     

Prediction of fatty acid composition using milk spectral data and its associations with various mid-infrared spectral regions in Michigan Holsteins

Fatty acid composition in milk is not only reflective of nutritional quality but also potentially predictive of other attributes (e. g. including the cow's energy balance and its relative output of methane emissions). Furthermore, a higher ratio of long-chain to short-chain fatty acids or mean carbon number has been associated with negative energy balance in dairy cows, whereas enhanced nutritional properties have been generally associated with higher levels of unsaturation. We set out to directly compare Bayesian regression strategies with partial least squares for the prediction of various milk fatty acids using Fourier-transform infrared spectrum data on 777 milk samples taken from 579 cows on 4 Michigan dairy herds between 5 and 90 d in milk. We also set out to identify those spectral regions that might be associated with fatty acids and whether carbon number or level of unsaturation might contribute to the strength of these associations. These associations were based on adaptively clustered windows of wavenumbers to mitigate the distorting effects of severe multicollinearity on marginal associations involving individual wavenumbers. In general, Bayesian regression methods, particularly the variable selection method BayesB, outperformed partial least squares regression for cross-validation prediction accuracy for both individual fatty acids and fatty acid groups. Strong signals for wavenumber associations using BayesB were well distributed throughout the mid-infrared spectrum, particularly between 910 and 3,998 cm⁻¹. Carbon number appeared to be linearly related to strength of wavenumber associations for 38 moderately to highly predicted fatty acids within the spectral regions of 2,286 to 2,376 and 2,984 to 3,100 cm⁻¹, whereas nonlinear associations were determined within 1,141 to 1,205; 1,570 to 1,630; and 1,727 to 1,768 cm⁻¹. However, no such associations were detected with level of unsaturation. Spectral regions where there were significant relationships between strength of association and carbon number may be useful targets for inferring the relative proportion of long-chain to short-chain fatty acids, and hence energy balance.

由四川省泸州市、宜宾市,贵州省遵义市组成的中国白酒金三角区域酿酒历史悠久,拥有丰富的酒文化旅游资源和深厚的酿酒历史文化。本文通过实地考察和文献研究相结合的方法,旨在通过对中国白酒金三角酒文化旅游现状的研究、旅游资源的梳理和使用情况分析,总结和探析该区域酒文化旅游的进一步开发前景,以及对地区和企业发展的促进作用。中国白酒金三角酒文化旅游资源丰富而深厚的文化内涵,孕育了众多的中国白酒著名品牌。未来以"酒产业+旅游"相融合的全域旅游为基本模式,通过政府牵头、协会参与、企业搭台、专业旅游企业的共同参与,规划先行,区域联动打造旅游精品项目,同时通过不断提升景区级别,加强世界遗产申报力度等,推动中国白酒金三角酒文化旅游的快速发展。     

Mycotoxin exposure and human cancer risk: A systematic review of epidemiological studies

In recent years, there has been an increasing interest in investigating the carcinogenicity of mycotoxins in humans. This systematic review aims to provide an overview of data linking exposure to different mycotoxins with human cancer risk. Publications (2019 and earlier) of case–control or longitudinal cohort studies were identified in PubMed and EMBASE. These articles were then screened by independent reviewers and their quality was assessed according to the Newcastle–Ottawa scale. Animal, cross‐sectional, and molecular studies satisfied criteria for exclusion. In total, 14 articles were included: 13 case–control studies and 1 longitudinal cohort study. Included articles focused on associations of mycotoxin exposure with primary liver, breast, and cervical cancer. Overall, a positive association between the consumption of aflatoxin‐contaminated foods and primary liver cancer risk was verified. Two case–control studies in Africa investigated the relationship between zearalenone and its metabolites and breast cancer risk, though conflicting results were reported. Two case–control studies investigated the association between hepatocellular carcinoma and fumonisin B1 exposure, but no significant associations were observed. This systematic review incorporates several clear observations of dose‐dependent associations between aflatoxins and liver cancer risk, in keeping with IARC Monograph conclusions. Only few human epidemiological studies investigated the associations between mycotoxin exposures and cancer risk. To close this gap, more in‐depth research is needed to unravel evidence for other common mycotoxins, such as deoxynivalenol and ochratoxin A. The link between mycotoxin exposures and cancer risk has mainly been established in experimental studies, and needs to be confirmed in human epidemiological studies to support the evidence‐based public health strategies.

Nutritional biomarkers for objective dietary assessment

The accurate assessment of dietary exposure is important in investigating associations between diet and disease. Research in nutritional epidemiology, which has resulted in a large amount of information on associations between diet and chronic diseases in the last decade, relies on accurate assessment methods to identify these associations. However, most dietary assessment instruments rely to some extent on self-reporting, which is prone to systematic bias affected by factors such as age, gender, social desirability and approval. Nutritional biomarkers are not affected by these and therefore provide an additional, alternative method to estimate intake. However, there are also some limitations in their application: they are affected by inter-individual variations in metabolism and other physiological factors, and they are often limited to estimating intake of specific compounds and not entire foods. It is therefore important to validate nutritional biomarkers to determine specific strengths and limitations. In this perspective paper, criteria for the validation of nutritional markers and future developments are discussed.
