为对梗丝形态差异性进行评价,通过测量单一形态梗丝周长、面积并采用“小岛法”计算其分形维数及形态指数,以叶丝形态为标准,选取梗丝与叶丝分形维数及形态指数的差异为指标,建立梗丝形态差异性系数模型及评价方法并验证分析。结果表明:①单一形态梗丝拟合方程决定性系数R2均达到0.850,且均方差及残差均较小,表明“小岛法”可准确计算其分形维数。②梗丝形态具有分形特性且不同形态梗丝分形维数具有明显差异,随着分形维数逐渐增大梗丝形态越来越不规则。③所建梗丝形态差异性系数模型$Y_e=4.825 X_{D_i-D^{\prime}}-1.149 X_{\bar{K}-\bar{K}^{\prime}}+0.320$,决定性系数R2达到0.948,F检验达到显著水平表明回归模型具有统计学意义,且模型经验证准确可靠。④初步建立了一种梗丝形态差异性评价方法,以差异性系数e为指标,梗丝形态间差异性小(e≤0.491);较小(0.491 < e≤0.813);适中(0.813 < e≤1.189);较大(1.189 < e≤1.565);大(e > 1.565),该方法可通过定量指标实现对梗丝形态差异性的定性分析。   相似文献

Two imported commercial cheeses (Cheddar and Gouda) were analyzed to characterize their textural changes during a storage period from 176 to 362 days at 4°C. Fractal dimension analysis was used to examine the structure of the cheeses, and a scaling model based on stress values was used to calculate fractal dimension (Df) by the Hausdorff dimension count method. It was found that the variation of Df of two cheeses showed a similar trend. When two cheeses were stored from 176 to 300 days, their Df ranged from 2.37 to 2.43 for Cheddar or from 2.06 to 2.23 for Gouda cheeses. After that, the final values of Df increased obviously to 2.87 (Cheddar cheese) or 2.63 (Gouda cheese) at the end of the storage period. The experiments carried out showed that the variation of Df had a poor relationship with the changes of pH 4.6 soluble nitrogen and two instrumental textural indices (hardness and springiness) of the cheeses, especially in the late storage period, but the inhomogeneous cavities existing in the cheeses could be reflected by their Df.  相似文献

对培养保加利亚乳杆菌的基础培养基进行优选,确定为基础MRS培养基.然后优化培养条件发酵时间为12h,起始pH为6.4,发酵温度为37℃.培养基MRS培养基 7.5%番茄汁 12%麦芽汁 5%海带汁 2%乳清.通过正交试验证明,保加利亚乳杆菌菌体浓度可达到1.0×1012 cfu/mL.  相似文献

ABSTRACT: Ascorbic acid, citric acid, sodium benzoate, kojic acid, and 4-hexylresorcinol were evaluated alone and in combination as inhibitors of melanosis and microbial spoilage in prawns ( Penaeus japonicus ) under non-pressure and high-pressure conditions. Sodium benzoate and kojic acid was an effective combination for the inhibition of prawn melanosis. Alone and in combination with ascorbic or citric acid, 4-hexylresorcinol proved the most effective as inhibitors of melanosis and microbial spoilage in prawns. High-pressure treatment appeared to increase the melanosis process, but it did not alter the effect performed by inhibitors. Lower total count of microorganisms seemed to be obtained with the presence of ascorbic and citric acids under high-pressure treatment.  相似文献

Lycium barbarum has been used as a traditional Chinese medicine (TCM) to nourish liver and kidney, and brighten the eye. The fruits are dried or freshly squeezed for their juice and concentrated for beverages. Among various constituents, a group of polysaccharides (LBP) with a Glycan-O-Ser glycopeptide structure has been most researched and considered to be important for the efficacy of L. barbarum. Studies indicate effects of L. barbarum on aging, neuroprotection, general well-being, fatigue/endurance, metabolism/energy expenditure, glucose control in diabetics, glaucoma, anti-oxidant properties, immunomodulation, anti-tumor activity and cytoprotection. In addition to TCM, L. barbarum can be sold as a dietary supplement or classified as a food based upon the long and safe traditional usage. This review is to provide background and updated information of chemical constituents and efficacies with safety including a new direction for research and current regulatory situation of L. barbarum.  相似文献
