Biogenic amine accumulation was studied in spontaneously fermented sausages (Fuet) manufactured from unfrozen-fresh meat (U-sausages) and frozen-thawed meat (F-sausages). The aim was to investigate whether the frozen storage of raw materials affects the microbial composition and its aminogenic activity during sausage fermentation. Tyramine was the major amine in all sausages. Although the final levels were similar, tyramine accumulated more rapidly in F-sausages, which contained putrescine as the second amine. By contrast, U-sausages accumulated much more cadaverine than putrescine. F-sausages showed a slightly lower pH and free amino acid content as well as higher counts of technological flora (lactic acid and gram positive catalase positive bacteria) and lower counts of enterobacteria. Therefore, to freeze the meat raw materials for few days before sausage manufacture could be a useful practice, especially for the artisan fermented sausages (without starter), because it helps to reduce enterobacteria development and cadaverine production. 相似文献

The content of arsenic and selenium has been analysed in the following marine organisms: cod (Gadus morhua), herring (Clupea harengus), mackerel (Scomber scomber), Norway haddock (Sebastes marinus), lobster (Homarus vulgaris), mussel (Mytilus edulis), clam (Pecten maximus), oyster (Ostrea edulis), squid (Ommastrephes sagittatus) and whale (Balaenoptera physalus). The analyses were performed both on the raw material and in the water-soluble phase after the samples had been boiled (the N liquor). An enrichment of arsenic is observed in the N liquor, compared with the raw material. The results indicate that selenium is also enriched in the N liquor from fish, but not from the invertebrate animals analysed. The N liquor and the water-soluble phase of the enzyme-hydrolysed presscake (the water-insoluble phase after boiling) were fractionated by molecular gel nitration. Fractions from these elutions were analysed for arsenic and selenium. Selenium was present in the fractions with a molecular weight above about 5000. Arsenic was connected with the lower molecular weight fractions, and may be present as more arseno-organic compounds. 相似文献

This paper critiques the attempt by Nigerian Breweries Plc (NB, a subsidiary of Heineken) to increase its use of local raw materials for beer brewing. It argues that the greatest threat to this initiative has been the inconsistent Nigerian Government policies, especially with respect to promoting and encouraging the cultivation of local raw materials for beer production. Policy reversals in this direction have helped to slow down the backward integration initiative of the Nigerian Government aimed at replacing imported barley with local sorghum as the main ingredient for beer production in the country. While NB can help to fund research into the development of high yield sorghum hybrids, the task of ensuring the widespread and proper use of such seeds by local farmers will depend on the existence of a supportive and effective national agricultural policy. The development and operationalization of such a policy cannot be outsourced to multinational beer companies by the Nigerian Government. Copyright © 2016 The Institute of Brewing & Distilling 相似文献
