Polyphenols present in wine may favorably influence human health by means of modifying the metabolic activity and/or composition of gut microbiota. The aim of this study was to evaluate the impact of red wine on colonic metabolism using a novel Dynamic Gastrointestinal Simulator (namely SIMGI), inoculated with human feces of healthy volunteers (n = 2). Main wine phenolic compounds and their metabolites, ammonium and short-chain fatty acids (SCFAs) as well as main microbial groups were monitored in samples from the three colon compartments – ascending, transverse and descending – after feeding the system with red wine (225 mL). Significant increases were found for gallic acid, protocatechuic acid, 3-O-methylgallic acid, 4-hydroxybenzoic acid, 3,4-dihydroxyphenylpropionic acid, vanillic acid, syringic acid and salicylic acid after wine feeding. Concurrently, a decrease in ammonium ion and an increase in the proportion of butanoic acid were observed. In turn, the microbiota metabolic activity was found different between the two individuals and among the three compartments, with the main changes occurring in the ascending colon. These results highlight that red wine modulates the metabolic activity of colonic microbiota in vitro, which could be physiologically relevant, and contribute to our understanding on the complex metabolic fate of dietary polyphenols and polyphenols–microbiota interactions. 相似文献

为探讨不同组分的蓝莓果酒对秀丽隐杆线虫抗氧化性能与抗细胞凋亡的影响,从而确定蓝莓果酒中主要物质的浓度及食用功能特性。以秀丽隐杆线虫(Caenorhabditis elegans)为模式生物,a组在蓝莓果酒的酒精度(体积分数)为14%的基础上,通过改变其原花青素(proanthocyanidin,PC)含量设置6个喂食组,b组在蓝莓果酒的原花青素含量为3mg/mL的基础上,通过改变其酒精度设置7个喂食组,对照组线虫以大肠杆菌OP50喂养,检测各组线虫的抗氧化酶活力以及细胞凋亡情况。结果表明:蓝莓酒中的原花青素是延缓衰老的有效成分,低浓度酒精(10%)也能延缓衰老,但是当酒精度(体积分数)高于10%时,则具有反作用,原花青素浓度为3mg/mL、酒精度(体积分数)为10%的蓝莓果酒对线虫的抗衰老作用最佳。 相似文献

本研究采用HPLC法研究不同酒曲配方对酿造客家黄酒时产生的风味物质有机酸的影响,考察红曲对黄酒发酵过程中有机酸风味、总量的影响。发酵30d时三种酒样的有机酸总量差异明显,采用酒药、麦曲酿制的黄酒(酒样Ⅱ)最高,单用红曲(酒样Ⅲ)次之,红曲、酒药、麦曲复配(酒样Ⅰ)最少,分别为33.83 g/L、27.72 g/L和22.67 g/L。其中,Ⅰ、Ⅱ、Ⅲ号酒样中挥发性酸与非挥发性酸的比例分别为1:4、1:1和2:1;酒样中乳酸含量差异较大,Ⅰ号酒样最高,为11.40 g/L,Ⅲ号酒样最少,为6.02 g/L;乙酸含量在三种酒中较接近,约5.5 g/L;Ⅰ、Ⅱ号酒样中琥珀酸含量较接近约为5 g/L;丙酸在Ⅱ、Ⅲ号酒样中含量大,但在Ⅰ号酒样中未检出。另外,Ⅰ号酒样中还测出少量的苹果酸和柠檬酸。结果表明,在客家黄酒酿造时添加适量红曲,有助于维持客家黄酒的酸味平衡,提升味觉层次感。 相似文献
