The antioxidant activity of water and ethanol extracts of clove (Eugenia carophyllata) buds and lavender (Lavandula stoechas L.) was studied. The antioxidant properties of both extracts of clove and lavender were evaluated using different antioxidant tests; reductive potential, free radical scavenging, superoxide anion radical scavenging and metal chelating activities. The both extracts of clove and lavender exhibited strong total antioxidant activity. At the concentrations of 20, 40, and 60 μg/ml, water extract of clove and lavender showed 93.3%, 95.5%, 97.9%, 86.9%, 92.3%, and 94.8% inhibition on lipid peroxidation of linoleic acid emulsion, respectively. At the same concentrations, ethanol extract of clove and lavender exhibited 94.9%, 95.5%, 98.2%, 92.5%, 93.8%, and 96.5%, respectively. Comparable, 60 μg/ml of standard antioxidant such as butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), and α-tocopherol exhibited 96.5%, 99.2%, and 61.1% inhibition on peroxidation of linoleic acid emulsion, respectively. The both extracts of clove and lavender had effective reductive potential, free radical scavenging, superoxide anion radical scavenging, and metal chelating activities at all tested concentrations (20, 40, and 60 μg/ml). Those various antioxidant activities were compared to standard antioxidants such as BHA, BHT, and α-tocopherol. In addition, total phenolic compounds in the both extracts of clove and lavender were determined as gallic acid equivalent.  相似文献

大麦麸皮含有以原飞燕草色素等原花色素为主的多酚类物质。该多酚类提取物和原飞燕草色素具有抑制亚油酸氧化能力,用TBA法和硫氰酸铁法比较,其效果等于或低于BHA和BHT,但高于生育酚和抗坏血酸。与儿茶素类比较,原飞燕草色素对红细胞空壳、微粒体和LDL脂质抗氧化作用及对超氧化物和DPPH自由基消除作用,均优于原矢车菊色素,而与(-)-ECG和(-)-EGCG相当。此外,原飞燕草色素具有比原矢车菊色素更强抑制MNNG和Trp-p-1抗突变性,但略低于(-)-EGCG和(-)-EGC。  相似文献

In this study, carrots were treated with ascorbic acid (0.1%) in a glucose (1.0%) solution (AA-Glu), and then freeze-dried and hot-air-dried to investigate the effects on their antioxidant content after 30 days of storage. The antioxidant components were extracted from the carrot samples using methanol. To assess antioxidative properties, tests measured the samples’ reducing power, α,α-diphenyl-β-picrylhydrazyl (DPPH) radical scavenging activity, and ferrous ion chelating power. The above antioxidative properties of carrot extracts were compared with α-tocopherol and butylated hydroxyanisole (BHA). The analysis of antioxidant compounds included the total amount of ascorbic acid, total amount of phenolics, total amount of flavonoids, and carotenoids. The analysis showed that the samples immersed in AA-Glu solution prior to drying exhibited a higher antioxidative property than those not immersed.  相似文献

Yellow wine (YW) has been claimed to have beneficial effects on the prevention of cancer and cardiovascular disease, which are related to the oxidation activity in vivo. In this study, the antioxidant activity of YW and its concentrate and volatile compounds (VC) was determined in terms of total antioxidant, reducing capacity, free radical scavenging, metal chelating and superoxide anion radical scavenging activities. These various antioxidant activities were compared with synthetic antioxidant, such as butylated hydroxyanisole (BHA) and butylated hydroxytoluene (BHT). The total phenolic compounds were also determined. Results indicated that YW and its concentrate exhibited similar strong total antioxidant activity. The inhibition percentage of 100 μl of YW and its concentrate on peroxidation of 2.5 ml of linoleic acid emulsion was 97.99% and 95.74%, and both of them also had effective reducing capacity, 1,1-diphenyl-2-picryl-hydrazyl (DPPH) radical scavenging and superoxide anion radical scavenging activities, but had very low metal chelating activity on ferrous. However, the VC in YW had little antioxidant activities. Results indicated that active antioxidants were nonvolatile and resided in the concentrate after evaporation. Phenolic compounds may play a very important role in the antioxidant function. However, identification of specific antioxidant components should be further investigated.  相似文献

麦胚是面粉生产的副产物,由于含有多种功能成分,往往被用作功能辅料来提高食品的营养价值。本文利用多种评价体系对麦胚水提物和醇提物的抗氧化性做了研究,并以BHT和抗坏血酸作为参照,结果发现:麦胚提取物显示了很强的DPPH自由基清除能力、羟基自由基清除能力、过氧化氢清除能力、络合能力、还原能力和脂质体自由基的清除能力,并且抗氧化能力随着浓度的增加而增加。实验结果表明,小麦胚芽提取物可以作为某些食品的抗氧化剂使用。  相似文献

以水栒子果肉总黄酮的粗提物为原料,测定其体外抗氧化能力。利用匀浆法提取水栒子果肉黄酮,比色法测定其含量。采用1,1-二苯基-2-三硝基苯肼(DPPH)自由基清除法、2,2-吖嗪双(3-乙基-7-苯并噻唑啉磺酸)二铵盐(ABTS)自由基清除法、超氧阴离子自由基清除法(SRSA)、还原能力测定法和铁离子还原/抗氧化能力法(FRAP),对其进行体外抗氧化活性研究。结果表明,水栒子果肉总黄酮的自由基清除能力和还原能力随总黄酮浓度的升高而增强,DPPH自由基清除能力和超氧阴离子自由基(O-2·)清除能力与特丁基对苯二酚(TBHQ)相当,高于丁基羟基甲苯(BHT)、丁基羟基茴香醚(BHA)、VC、VE;ABTS清除能力高于BHT、VC、VE,略低于TBHQ和BHA;还原能力与TBHQ相当,高于BHT、VE,略低于BHA和VC;铁还原能力与TBHQ相当,高于BHT、VC、VE,低于BHA。水栒子果肉黄酮有较强的体外抗氧化能力,具有很好的开发潜力。  相似文献

In this study, the antioxidant activity of proteins isolated from jellyfish, Rhopilema esculentum Kishinouye (R. esculentum), was determined by various antioxidant assays, including superoxide anion radical-scavenging, hydroxyl radical-scavenging, total antioxidant activity, reducing power and metal chelating activity. Butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), α-tocopherol, vitamin C and mannitol were used as standards in those various antioxidant activities. The crude protein (CP) and the protein fractions isolated by Sephadex chromatography, first peak (FP) and second peak (SP), had very low reductive power and metal chelating abilities compared to EDTA, but they showed strong scavenging effects on the superoxide anion radical, hydroxyl radical and varying total antioxidant activity. FP and SP exhibited stronger scavenging effects on the superoxide anion radical than BHA, BHT or α-tocopherol. The EC50 values of FP and SP were 6.12 and 0.88 μg/ml, respectively, while values EC50 of BHA, BHT and α-tocopherol were 31, 61 and 88 μg/ml, respectively. CP, FP and SP showed far higher hydroxyl radical-scavenging activities than did vitamin C or mannitol. The EC50 values of CP, FP and SP were 48.76, 45.42 and 1.52 μg/ml, but EC50 values of vitamin C and mannitol were 1907 and 4536 μg/ml, respectively. In a β-carotene–linoleate system, SP and CP showed antioxidant activity, but lower than BHA. Of the three samples, SP had the strongest antioxidant activity. So, SP may have a use as a possible supplement in the food and pharmaceutical industries.  相似文献

Resveratrol, a natural product, is known to affect a broad range of intracellular mediators. In the present study, we clarified the antioxidant activity of resveratrol by employing various in vitro antioxidant assays such as DPPH?, ABTS?+, DMPD?+, O2?? and H2O2 scavenging activities, total antioxidant activity, reducing abilities, and Fe2+ chelating activities. Resveratrol inhibited 89.1% of the lipid peroxidation of linoleic acid emulsion at 30 µg/mL concentration. On the other hand, BHA, BHT, α-tocopherol, and trolox exhibited inhibitions of 83.3, 82.1, 68.1, and 81.3% against peroxidation of linoleic acid emulsion at the same concentration, respectively. In addition, resveratrol had effective DPPH?, ABTS?+, DMPD?+, O2?? and H2O2 scavenging activities, reducing power, and Fe2+ chelating activities. The present study found that resveratrol had effective in vitro antioxidant and radical scavenging activity. It can be used in pharmacological and food industry due to its antioxidant properties.Industrial relevanceAntioxidants are often added to foods to prevent the radical chain reactions of oxidation and they act by inhibiting the initiation and propagation step leading to the termination of the reaction and delay the oxidation process. At the present time, the most commonly used antioxidants are BHA, BHT, propylgallate and tert-butyl hydroquinone. Besides that BHA and BHT are restricted by legislative rules because of doubts over their toxic and carcinogenic effects. Therefore, there is a growing interest on natural and safer antioxidants in food applications, and a growing trend in consumer preferences for natural antioxidants, all of which has given more impetus to explore natural sources of antioxidants. A variety of foods and beverages of vegetable origin contain several nonflavonoid classes of phenolic compounds synthesized by plants. Among them, resveratrol has been identified as the major active compound of stilbene phytoalexins and is presumed to be beneficial for human health. Resveratrol is naturally occurring in the fruits and leaves of edible plants, peanuts, mulberries, grapes and red wine. Resveratrol is currently in the limelight all over the world due to their beneficial effects on the human body. Resveratrol can be used for minimizing or preventing lipid oxidation in pharmaceutical products, retarding the formation of toxic oxidation products, maintaining nutritional quality and prolonging the shelf life of food products and pharmaceuticals instead of BHA and BHT and other antioxidant compounds because of their safer usage.  相似文献

Total phenolics content, free radical scavenging activity, reducing power, and antioxidant activity of the pyroligenous acid from a mangrove plant, Rhizophora apiculata were evaluated. Dichloromethane extraction of the raw pyroligneous acid successfully yield 2 extracts, i.e. concentrated pyroligneous acid (CPA) and concentrated pyroligneous acid extract (CPAE). Phenolic contents in CPAE and CPA, expressed as (±)-catechin equivalents/g of the sample were 5465 ± 367 mg and 2502 ± 152 mg, and expressed as gallic acid equivalents/g of the sample were 2919 ± 209 mg and 1348 ± 90 mg, respectively. CPAE exhibited superior free radical scavenging activity with EC50 value = 0.1235 mg/ml, or 80.96% of free radical scavenging capability. The ferric reducing power of CPAE was approximately 3.7, 5.1, 6.1, and 21.3 times higher than that of ascorbic acid, BHA, BHT and alpha-tocopherol. In phosphomolybdenum assay, CPAE showed the greatest antioxidant efficacy (A695 = 1.278) compared to those of CPA and different standards. In addition, the free radical scavenging activity, ferric reducing power and total antioxidative activity of CPAE and CPA showed positive correlation with their total phenolic content with R2 values ranging from 0.9624 to 0.9979.  相似文献

Fringe tree (Chionanthus virginicus L.), a shrub of the eastern part of America, used as a raw material by pharmaceutical industries for cholagoque, diuretic, tonic and the preparation of homeopathic tinctures. The identification of lignans as major antioxidant components and determination of their antioxidant activities are of considerable interest, because of the role they play in pharmacological actions. The potential antioxidant activity of the lignans such as phillyrin, pinoresinol-β-d-glucoside (PDG) and pinoresinol di-β-d-glucoside (PDDG) from root bark of fringe tree (C. virginicus L.) were examined by different antioxidant tests including; 2,2-azino-bis(3-ethylbenzthiazoline-6-sulfonic acid) (ABTS) radical scavenging, 1,1-diphenyl-2-picryl-hydrazyl free radical (DPPH) scavenging, superoxide anion radical (O2 •-) scavenging, total antioxidant activity by ferric thiocyanate method, reducing activity by Fe3+–Fe2+ transformation, hydrogen peroxide (H2O2) scavenging and ferrous metal (Fe+2) chelating activities. Phillyrin, PDG and PDDG, as antioxidants, neutralized the activities of radicals and inhibited the peroxidation reactions of linoleic acid emulsion. The total antioxidant activity was determined according to the ferric thiocyanate method. Butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), α-tocopherol and trolox, which is a water-soluble analogue of tocopherol, were used as the reference antioxidant compounds. Phillyrin, PDG and PDDG showed 67.6, 77.3 and 64.2% inhibition on lipid peroxidation of linoleic acid emulsion, respectively, at the concentration of 20 μg/mL. On the other hand, BHA, BHT, α-tocopherol and trolox exhibited 74.4, 71.2, 54.7 and 20.6% inhibition on peroxidation of linoleic acid emulsion, respectively, at the above mentioned concentration. In addition, phillyrin, PDG and PDDG were effective on DPPH, ABTS•+ and O2 •- scavenging, H2O2 scavenging, total reducing power and metal chelating effect on ferrous ions activities. Also, BHA, BHT, α-tocopherol and trolox were used as references antioxidants for these various antioxidant activities.  相似文献

对天然植物五倍子浸提物没食子酸(GA)进行改性,得到没食子酸丙酯(PG),并采用亚铁还原能力法(FRAP)、1,1-二苯基-2-三硝基苯肼(DPPH)自由基法、2-联氨-双-3-乙基苯并噻唑啉-6-磺酸(ABTS)自由基法对其抗氧化活性进行评价。结果显示,FRAP值由大到小排序为:PG(FRAP值0.506)>TBHQ(FRAP值0.412)>BHA(FRAP值0.409)>BHT(FRAP值0.067);DPPH自由基清除能力由强到弱的顺序为:PG(IC50值4.2 μmol/L)>BHT(IC50值53 μmol/L)>TBHQ(IC50值87 μmol/L)>BHA(IC50值816 μmol/L);ABTS自由基清除能力由强到弱的顺序为:PG(IC50值 4.2 μmol/L)>BHA(IC50值44 μmol/L)>BHAT(IC50值45 μmol/L)>TBHQ(IC50为50 μmol/L)。结果表明,PG的抗氧化活性均强于其他三种抗氧化剂,可作为新兴食品抗氧化剂应用。  相似文献

In this study, the antioxidant activity of water and ethanol extracts of fennel (Foeniculum vulgare) seed (FS) was evaluated by various antioxidant assay, including total antioxidant, free radical scavenging, superoxide anion radical scavenging, hydrogen peroxide scavenging, metal chelating activities and reducing power. Those various antioxidant activities were compared to standard antioxidants such as butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), and α-tocopherol. The water and ethanol extracts of FS seeds showed strong antioxidant activity. 100 μg of water and ethanol extracts exhibited 99.1% and 77.5% inhibition of peroxidation in linoleic acid system, respectively, and greater than the same dose of α-tocopherol (36.1%). The both extracts of FS have effective reducing power, free radical scavenging, superoxide anion radical scavenging, hydrogen peroxide scavenging, and metal chelating activities. This antioxidant property depends on concentration and increasing with increased amount of sample. In addition, total phenolic compounds in the water and ethanol extracts of fennel seeds were determined as gallic acid equivalents. The results obtained in the present study indicated that the fennel (F. vulgare) seed is a potential source of natural antioxidant. Although, the tests presented here show the usefulness of FS extracts as in vitro antioxidants it still needs to be that this extracts show their activity in emulsions, biological systems, health implications or dry foods.  相似文献

研究二氢杨梅素(DMY)对植物油脂抗氧化作用。采用紫外可见分光光度计和烘箱强化贮藏法,考察DMY对DPPH自由基清除能力和对山茶油、亚麻籽油、紫苏籽油和油酸的抗氧化作用。结果表明:DMY对DPPH自由基清除能力明显高于TBHQ、BHT、BHA和TP;当抗氧化剂添加量为0.05%时,不同抗氧化剂在山茶油和油酸中抗氧化作用强弱顺序为TBHQDMYBHABHTTP;不同抗氧化剂在紫苏籽油和亚麻籽油中抗氧化作用强弱顺序为TBHQBHABHTDMYTP;DMY还能协助增强其他抗氧化剂的作用;DMY对4种植物油脂抗氧化效果强弱顺序为山茶油油酸亚麻籽油紫苏籽油。  相似文献

分别采用普鲁士兰法测定还原力、硫氰酸铁法测定亚油酸氧化抑制能力、比色法测定1,1-二苯基-2-苦基肼[DPPH·]自由基清除能力、化学发光法测定超氧阴离子自由基[O2-.]清除能力,对仙人掌不同溶剂提取物的抗氧化性进行体外试验评价。结果表明仙人掌皮粉甲醇提取物还原力最大,[DPPH·]自由基和[O2-·]清除能力最高,其中仙人掌皮粉甲醇提取物在[DPPH·]自由基的半抑制率IC50为1.865mg/mL,在亚油酸氧化抑制能力中30mg/mL仙人掌水提物最强。  相似文献

目的:测定芹菜籽精油(Celery seed essential oil)对几种常见食品污染微生物的抑菌活性以及抗氧化作用。方法:采用琼脂扩散法及肉汤稀释法测定精油的抑菌作用、采用DPPH(对二苯代苦味肼基)法、ABTS(2,2-联氮-二(3-乙基-苯并噻唑-6-磺酸)二铵盐)法、清除超氧离子法和抗亚油酸脂质过氧化法测定芹菜籽精油的清除自由基、抗氧化作用。结果:芹菜籽精油对于多种病原性微生物有良好的抑制作用,尤其对于革兰氏阳性菌,抑制效果尤为明显。并且,芹菜籽精油具有良好的清除自由基、抗氧化的作用,其作用要强于丁基羟基苯甲醚(BHA)和二丁基羟基甲苯(BHT)。  相似文献

对肉桂精油(CEO)的抗氧化和清除游离基活性的比较是基于总体抗氧化能力、清除超氧阴离子自由基能力、清除羟基自由基能力、抗亚油酸脂质过氧化能力、清除DPPH自由基5个方面,并与其他的合成抗氧化剂如BHT、PG做比较。实验结果表明,在一定浓度范围内,CEO的羟自由基清除能力强于BHT和PG;清除超氧阴离子自由基的能力强于PG;清除DPPH自由基能力、抗氧化活性比BHT和PG弱;CEO抑制亚油酸的过氧化能力比BHT和PG略弱。实验表明了CEO在某些方面具有良好的抗氧化效果。  相似文献

Much work has been carried out in recent years on the beneficial effect of phenolic compounds which act as natural antioxidants and help to neutralize free radicals. We analysed the antioxidant activity of the rutin (quercetin-3-rhamnosyl glucoside) using different assays including: total antioxidant activity and reducing power, hydroxyl radical scavenging assay, superoxide radical scavenging assay, 1,1-diphenyl-2-picryl-hydrazyl (DPPH) radical scavenging assay and lipid peroxidation assay which uses egg yolk as the lipid-rich source. Total antioxidant capacity was determined by the assay based on the decrease in absorbance of β-carotene by the sample. Rutin exhibited strong DPPH radical scavenging activity. At the concentration of 0.05 mg/ml, ascorbic acid (Vc), butylated hydroxytoluene (BHT) and rutin showed 92.8%, 58.8%, and 90.4% inhibition, respectively. In addition, rutin had effective inhibition of lipid peroxidation. Those various antioxidant activities were compared to standard antioxidants such as BHT and Vc.  相似文献

An endemic plant of Turkey Salvia halophila Hedge (Lamiaceae) was examined for its antioxidant activity and phenolic compositions. The aerial part of S. halophila was extracted with different solvents in an order of increasing polarity such as hexane, ethyl acetate, methanol, and 50% methanol using a Soxhlet apparatus. Water extract was also prepared from S. halophila by reflux. All solvent fractions were investigated for their total phenolic contents, flavonoids, flavonols, qualitative–quantitative compositions, iron(III) reductive activities, free radical scavenging activities and the effect upon linoleic acid peroxidation activities. The peroxidation level was also determined by the TBA method. The results of activity tests given as IC50 values were estimated from non-linear algorithm and compared with standards via BHT, ascorbic acid, gallic acid. Polar fractions were found more active among the others in free radical activity system whereas non-polar fractions protected the peroxidation of linoleic acid. Rosmarinic acid was the most abundant component, in the extracts.  相似文献

ABSTRACT: Radical scavenging capacity and antioxidant activity of an E vitamer fraction from rice bran were investigated. The E vitamer fraction was prepared by a liquid-liquid extraction method. The free radical scavenging capacity of the E vitamer fraction was measured by the 1,1-diphenyl-2-picrylhydrazyl radical (DPPH) method at the concentration range of 2.5 to 640 ppm, whereas the antioxidant activities were measured by both the reducing power and ferric thiocyanate (FTC) methods at different concentrations (0, 2.5, 10, 40, and 160 ppm). Radical scavenging capacity of the fraction was effective up to 160 ppm, then remained stable. Also, at a concentration of 160 ppm, it was highly effective in inhibiting linoleic acid peroxidation. Similarly, superoxide scavenging and antioxidant activities of the E vitamer fraction were compared with those of the synthetic phenol compounds. Results showed that with a concentration of the E vitamer fraction at 160 ppm, the antioxidant activity was comparable to both butylated hydroxytoluene (BHT, 160 ppm) and butylated hydroxyanisole (BHA, 160 ppm). No significant differences (P > 0.05) were found among them. The E vitamer fraction may be a good substitute for the synthetic phenol antioxidants currently used in industry because the former is more natural and comparatively effective in its radical scavenging capacity and antioxidant activity.  相似文献

采用总酚、总黄酮、1,1-二苯基-2-苦基一肼(DPPH)自由基清除能力、还原能力及亚油酸过氧化抑制能力5种方法评价了降香黄檀籽70%乙醇粗提物的石油醚(PF)、乙酸乙酯(EF)、正丁醇(BF)及水(WF)4个部位的体外抗氧化活性,并对5种方法进行了相关性分析。结果表明:4个部位都具有一定的抗氧化活性,其中乙酸乙酯部位(EF)总酚、总黄酮含量及抗氧化能力最高(P<0.05)。通过相关性分析得知,DPPH自由基清除能力、还原能力、亚油酸过氧化抑制能力与总酚、总黄酮具有良好的线性相关性;此外,还原能力与DPPH自由基清除能力、亚油酸过氧化抑制能力也存在良好的线性相关性。以上结果表明,降香黄檀籽可作为潜在天然抗氧化剂应用于食品或医药工业中。  相似文献
