Commercial hard red spring, hard red winter, soft white and durum wheat brans were used to evaluate the particle size effect of wheat bran on bread baking performance and bread sensory quality. Three different particle size bran samples were obtained from each bran by grinding, not by sifting, the bran samples. The bran samples were similar in chemical composition, but different in particle sizes. Results of baking experiments showed that breads containing fine bran had lower specific loaf volume and darker crumb colour than breads containing coarse or medium size bran. Sensory test panellists found that fine bran contributed smoother crust appearance and less gritty mouthfeel than the coarse bran. The sensory panel also indicated that breads containing soft white wheat bran had significantly better flavour and mouthfeel than breads containing hard red spring wheat bran. © 1999 Society of Chemical Industry  相似文献

Four different types of wheat bran were extracted and analyzed for phenolic acids using the Folin–Ciocalteu method and HPLC. The extracts and their hydrolysis products were also evaluated for their antioxidant activities. The total phenolic content of the red wheat bran was higher than that of the white wheat. We found that the majority of the phenolic acids existed in a bound form in wheat bran. These phenolic acids can be released by hydrolyzing the bran under alkaline or acidic conditions; however, the former was more efficient in the release of free phenolic acids than the latter. Ferulic, vanillic, and syringic acids were the major individual phenolic acids in the studied wheat bran. The main portion of the total ferulic acid was from alkaline hydrolysis. The alkaline hydrolysable fractions had greater antioxidant activities, while the acid hydrolysable fractions showed lower activities in both the red and white bran. The antioxidant activity of bran extract was stronger than that of free phenolic acids.  相似文献

The effect of the type of bran, level of addition, particle size and addition of wheat germ on the chemical composition of high-fiber toast bread was investigated. The bran and germ fractions were found to be high in ash, protein, fat and total dietary fiber contents. The wheat germ had a protein content of 27.88% compared with 11.35, 12.69 and 15.76% for white flour, whole wheat flour and red fine bran, respectively. The chemical composition of high-fiber breads, in terms of minerals, protein, fat and dietary fiber contents, was found to be far superior than that of the whole wheat flour (control) bread sample. Considering these results, it can be concluded that high-fiber toast bread, with lighter crumb color and improved sensory and nutritional qualities than the whole wheat flour bread, can be produced using white flour, and equal proportions of coarse and fine bran at 20%, germ at 7.5%, and sodium stearoyl-2-lactylate at 0.5% levels.  相似文献

Bran extrusion is mainly under study and works should be performed to know the effect on dough and bread. This study was designed to investigate the effect of bran extrusion (addition of 2.5 g/100 g to 20 g/100g bran) on the rheological characteristics of bread dough, behaviour during fermentation, and bread quality. Extruded bran increased dough development time and tenacity to a greater extent than non-extruded bran, and minimized the loss of stability if over-mixing occurred. Extruded bran, due to its greater gas production, also reduced loss of dough height during fermentation to a greater extent than untreated bran. However, breads with extruded bran showed a higher volume and lower initial firmness than breads with normal bran if improver was added. However, no differences were found in the organoleptic evaluation. Bran extrusion therefore modified dough rheology but did not negatively affect bread quality. It could even improve the quality of breads with bran when improvers are added.  相似文献

Wheat bran has numerous health benefits, but its poor processing and sensory properties limit its application in the staple food industry. Fermentation by S. cerevisiae changes the performance of wheat bran. However, high levels of ferulic acid (FA) inhibit S. cerevisiae. The effects of solid-state fermentation of S. cerevisiae with high resistance to FA on the physicochemical properties of wheat bran and the quality of bran-rich Chinese steamed bread (CSB) were investigated. The results showed that the growth of S. cerevisiae was inhibited by FA in a dose-dependent manner. Short-term adaptation strategies efficiently improved the tolerance of S. cerevisiae to FA stress. Compared with the parental strain (PS), fermentation of the short-term adapted strains (adapted strains) significantly increased the FA, total phenol, and soluble dietary fiber content in wheat bran. Wheat bran fermented by the adapted strains had a higher antioxidant capacity than wheat bran fermented by PS. In addition, compared with the PS, the wheat bran fermented by the adapted strains can decrease the hardness, improve the specific volume, and the quality of CSB. Thus, solid-state fermentation of the adapted strain is a potentially effective method to improve the nutritional and physicochemical properties of wheat bran as a cereal food ingredient.  相似文献

The aim of this work was to study the effect of bread-making on the content of endogenous folate of white and whole-grain bread fortified with either Swiss chard or spinach at 20 g/100 g and 40 g/100 g measured by HPLC (H4-folate and 5-CH3-H4-folate); and to assess the sensory acceptability of folate-fortified breads compared to non-fortified breads. The fortification of breads with 20 g/100 g and 40 g/100 g vegetables significantly (p < 0.001) increased the total folate content (from 19.9 to 57.9 μg/100 g in white bread and from 37.4 to 75.5 μg/100 g in whole-grain bread). Moreover, 40 g/100 g Swiss chard- and spinach-fortified breads obtained higher scores in overall acceptability than 20 g/100 g fortified or control bread for both white and whole-grain breads. The consumption of two servings (56 g each) per day of 40 g/100 g fortified bread would meet the daily folate requirements by 14.3–21.8% in adults and 9.6–14.5% in some special states like women of child-bearing age.  相似文献

黑小麦麸皮酚酸物质的定性分析与阿魏酸含量测定   总被引:2,自引:2,他引:0  
对黑小麦麸皮中的主要酚酸物质进行制备和定性分析,并测定阿魏酸含量。采用乙醇和氢氧化钠溶液处理黑小麦麸皮,提取样品中的游离态酚酸(free phenolic acids,FPA)和结合态酚酸(conjugated phenolic acids,CPA)。通过液质联用(LC/MS)和紫外光谱(UV)等方法对提取的酚酸物质进行定性分析。紫外光谱显示,游离态和结合态酚酸具有与阿魏酸相似的分子结构。LC/MS检测结果显示,游离态和结合态酚酸的相对分子质量分别为224和194。由此判断黑小麦麸皮中的游离态酚酸FPA主要为芥子酸,结合态酚酸CPA主要为阿魏酸。采用高效液相色谱(HPLC)对黑小麦麸皮中的结合态阿魏酸含量进行测定。结果表明,紫粒黑小麦麸皮的阿魏酸含量为2.07 mg/g,与蓝粒黑小麦麸皮的阿魏酸含量(2.12 mg/g)相近,其含量高于当地种植的普通小麦麸皮的阿魏酸含量(1.17 mg/g)。  相似文献

The effect of bran type, level of addition, particle size, addition of wheat germ, as well as other additives like improvers and dough conditioners, on the instrumental texture and baking quality of high-fiber toast bread (white pan bread) has been investigated. the specific loaf volume decreased significantly (3.45 cc/g) when the bran level was raised to 30%, but at 20% bran addition, the specific loaf volume was superior to that of the control bread. the specific loaf volume of test breads remained higher than the control bread up to a level of 7.5% wheat germ addition. Additives like ascorbic acid (50 ppm) and sodium stearoyl-2-lactylate (0.5%) further improved the baking quality of test bread samples. the objective texture values (measured as compression force, kg) indicated that the test bread with bran addition up to 20% and germ up to 7.5% possessed a softer texture (0.80 kg) than the control bread (1.02 kg). In comparison with control bread, the panelists gave higher sensory scores for all attributes of test bread samples containing up to 20% red coarse bran or up to 30% red fine bran. A similar trend in sensory quality of test samples containing up to 7.5% wheat germ was also observed. High-fiber toast bread made from white flour, equal proportions of coarse and fine bran at 20%, wheat germ at 7.5%, plus sodium stearoyl-2-lactylate at 0.5% levels, was found to possess softer texture and improved sensory quality than the whole wheat flour bread.  相似文献

The health benefits of whole grain consumption can be partly attributed to the inclusion of the bran or outer-layers of the grain rich in dietary fibre. Fibre is fermented in the colon, leading to the production of beneficial metabolites, such as short-chain fatty acids (SCFA). The effect of five different types of bread on the SCFA production was studied in an in vitro model of human colon. Additionally, the postprandial effects of two selected breads on the SCFA plasma concentrations were investigated in men. A higher in vitro production of butyrate was induced by wholemeal wheat bread with bioprocessed bran than by native bran. The increase in butyrate seemed to be in exchange for propionate, whilst the total SCFA production remained similar. However, differences between the two breads in the postprandial butyrate concentrations could not be detected in peripheral blood of men, probably due to an effective utilisation by colonocytes.  相似文献

BACKGROUND: Alkylresorcinols (AR) are amphiphilic phenolic compounds found in high amounts in wheat, durum wheat and rye, with different homologue composition for each cereal. The effect of different amounts of added AR from these cereals on bread volume, height, porosity and microstructure was studied. Breads with added rye bran (with high levels of AR) or acetone‐extracted rye bran (with low levels of AR) were also baked, as well as breads with finely milled forms of each of these brans. RESULTS: Breads with high amounts of added AR, irrespective of AR homologue composition, had a lower volume, a more compact structure and an adverse microstructure compared with breads with no or low levels of added AR. AR were also shown to inhibit the activity of baker's yeast. There was no difference in bread volume and porosity between bread baked with rye bran and acetone‐extracted rye bran or with brans of different particle size. CONCLUSION: Irrespective of homologue composition, AR had a negative effect on wheat bread properties when added in high amounts as purified extracts from wheat, durum wheat and rye. Natural levels of AR in rye bran, however, did not affect the volume and porosity of yeast‐leavened wheat breads. Copyright © 2010 Society of Chemical Industry  相似文献

Sorghum bran components could be a potential source of nutrients and phytochemicals for industrial applications. The effect of defatting with hexane and different degrees of decortication on distribution of fatty acids, phenolic compounds, colour (L, a and b) and antioxidant activity (DPPH) of red (RS) and white (WS) sorghums was studied. The decortication process was carried out at time intervals of 1–6 min. Defatted and nondefatted fractions were analysed. The content of polyunsaturated fatty acids (PUFA) was higher than monounsaturated fatty acids (MUFA); the content of MUFA was higher than saturated fatty acids (SFA). Linoleic, oleic and palmitic acids predominated in all fractions. Significant differences in the content of palmitic and linolenic acids between sorghums were found. RS had higher content of palmitic, and WS was higher in linoleic acid. Defatted samples contained lower amounts of phenolic compounds and higher antioxidant activities, than nondefatted samples. RS was a better source of total phenolic compounds and antioxidant activity compared with WS, but WS presented a more suitable profile of fatty acids. In conclusion, fractions of both types of sorghums can be used in cereal‐based products to enhance their phytochemical profile.  相似文献

Changes in the free ferulic acid (FFA) contents and antioxidant properties during bread making processes were determined. Experimental breads were produced from whole meal and white wheat and rye flours, and fermented using either baker’s yeast or sourdough starter. Sourdough fermented bread contained the highest content of FFA. Release of occurred mainly during dough fermentation. A further increase in the ferulic acid content in the bread crumb and a decrease in the crust was observed. Total antioxidant properties of sourdough bread, defined as the sum of lipophilic and hydrophilic compound activities, were significantly (p<0.05) higher than for yeast bread. Sourdough bread contained more methanol soluble phenolic compounds, proteins, tocochromanols, and oxidized products of fatty acids than yeast bread. The equilibrium between the anti- and pro-oxidative compound contents resulted in similar antioxidant properties for bread using both types of fermentation, and to results observed for the flour used for baking.  相似文献

By using an in vitro technique that measures the rate and extent of starch digestion, the starch in a food can be classified as rapidly-digestible starch (RDS), slowly-digestible starch (SDS) and resistant starch (RS). The amount of these fractions in rye bread, wheat bran bread and corn flour bread were calculated from the experimentally determined values obtained by controlled enzymatic hydrolysis and measurement of released glucose by colorimetry, using a glucose oxidase kit. Free glucose and total starch analysis were also carried out to calculate rapidly-available glucose (RAG) content and starch digestibility rate index (SDRI) of breads. RDS content of the rye bread was higher than the wheat-bran bread and corn flour bread (P<0.05). SDS contents of all breads were not significantly different from each other. Wheat bran bread was found to have a significant amount of RS (6.6%; on dry matter basis) when compared to the other breads (P<0.05). A significant negative correlation (r=−0.95, P<0.05) was also found between RS content and SDRI value of breads.  相似文献

The graded flour fractions, which were milled from whole wheat grain from outer to inner parts without removal of germ and bran, are rich in dietary fibers and minerals, the sources of nutrition for human beings. In this study, the whole waxy wheat was milled into five fractions using the gradual milling method and the phenolic contents and antioxidant capacity of these flours were investigated. The total phenolic and flavonoid contents of free and bound phenolic extracts gradually increased in the order from the inner to the outer fractions. The flours milled from the outer parts of grain contained significantly higher amount of phenolics and exhibited significantly higher antioxidant capacity than did the whole grain. Likewise, the inner flour fractions milled from mostly endosperm part had significantly higher amount of phenolics and exhibited significantly higher antioxidant capacity than did the white flour, which was milled by a conventional milling method. Thus, the graded flours from whole waxy wheat should be encouraged to be used for processing whole-grain foods to improve both qualities of end-use products and health benefits.  相似文献

Phytic acid content of eight different types of leavened and unleavened flat breads was determined. It was highest in unleavened and non-fermented whole wheat chapati and lowest in the leavened and fermented white wheat flat bread roghni nan. The effect of baking conditions, bread composition and phytic acid content on in-vitro digestibility of protein was measured using a pepsin multienzyme pH stat technique. The amino acids released were separated by ultrafiltration. The rate of protein digestibility of flat bread and amino acid released depended upon the type of flour used, baking conditions, phytic acid content and other antiproteolytic constituents of breads. Leavening and fermentation of breads resulted in an increase of protein digestibility and availability of amino acids. Addition of soya flour increases the protein digestibility of breads whereas millet flour decreases it.  相似文献

Phytic acid was determined in cereal (brans, flours and milled wheat-products) and breads. The method was based on complexometric titration of residual iron (III) after phytic acid precipitation. The cereal flours showed values ranged between 3–4 mg/g for soft wheats, 9 mg/g for hard wheat and 22 mg/g for whole wheat. Corn, millet and sorghum flours reported a mean of 10 mg/g and oat, rice, rye and barley between 4 and 7 mg/g. Wheat brans had wide ranges (25–58 mg/g). The phytic acid for oat brans was half that of wheat bran (20 mg/g) and higher value (58 mg/g) than that for rice bran. The milling products (semolinas) from hard wheat exhibited 10 mg/g and soft wheat a mean of 23 mg/g. The breads made with single or mixture cereal flours exhibited ranges between 1.5 and 7.5 mg/g. The loss of phytic acid relative to unprocessed flours was between 20% for oat bread and 50% for white bread.  相似文献

ABSTRACT:  Rice bread is a potential alternative to wheat bread for gluten-sensitive individuals. Incorporation of rice bran into bread made from white rice flour adds flavor but also phytic acid, which can reduce the bioavailability of minerals. Breads with varied amounts of defatted bran and yeast were prepared to determine their effects on the phytate and mineral contents of the bread. A completely randomized factorial design was used with bran levels of 3.7%, 7.3%, and 10.5% of the dry ingredients and yeast levels of 1.6%, 3.2%, and 4.7%. Increasing the amount of bran decreased the phytate degradation from 42% at the lowest level of bran to 10% at the highest, and the amount of yeast had no significant effect. The bran contributed substantial amounts of magnesium, iron, and zinc. Breads with the lowest level of bran had phytate-to-zinc molar ratios between 5 and 10, which suggest medium zinc bioavailability. Rice bread is a tasty and nutritious food that is a good dietary source of minerals for people who cannot tolerate wheat bread.  相似文献

The effect of different Cephalaria syriaca products (CSP) (whole Cephalaria syriaca flour (WCSF) and defatted Cephalaria syriaca flour (DCSF)) on the final quality of bran breads was investigated. Five levels of Cephalaria syriaca products (0.16, 0.50, 0.84, 1.17, and 1.51 g/100 g bread) were used in this study. Results of this study showed that addition of CSP (WCSF and DCSF) to wheat bran bread had significant positive impact on bread specific volumes, crumb firmness and bread sensory characteristics, although addition levels (0.16, 0.50, 0.84, 1.17, and 1.51 g/100 g bread) were very low. In general, specific volume, yield of volume, and some sensory characteristics of the bran bread increased when the addition levels of WCSF and DCSF increased, except for the level of 1.51 g/100 g bread CSP addition, in which a slight decrease was observed. Bran breads containing WCSF had significantly higher loaf specific volume, softness of breadcrumb and sensory characteristics than those of breads containing DCSF at all addition levels. Especially, the addition of 1.17 g WCSF significantly improved the quality of bran breads. This study indicates that these two CSP can be used as additives in bran bread production in order to improve the quality of bread.  相似文献

This study was aimed to determine γ-oryzanol content and total phenolics, individual phenolic acid profile and the antioxidant activity of the free and bound extracts of rice milling fractions namely, brown rice, unpolished rice, white rice, chalky rice, raw seed and rice bran. Gamma-oryzanol content of milling fractions which is designated with a simple chromatographic method was in the range of 12.19–3,296.5 mg/kg. The whitening and polishing steps reduced approximately 94% of γ-oryzanol of the brown rice when becoming the white rice. The contribution of bound phenolics to the total phenolic content was approximately 40%. Ferulic and p-coumaric acids were the most abundant phenolic acids in bound phenolic extracts and their amounts were 119.98 and 18.10 μg/g, respectively, in rice bran. The best source of γ-oryzanol, phenolics and antioxidants was clearly rice bran and followed by raw seed and brown rice.  相似文献
