The effects of lutein (100, 200 μg/g muscle), sesamol (250, 500 μg/g muscle), ellagic acid (300, 600 μg/g muscle) and olive leaf extract (100, 200 μg/g muscle) on lipid oxidation (thiobarbituric acid-reactive substances TBARs), colour (CIE L∗, a∗, b∗), pH, texture profile analysis (TPA), water holding capacity (WHC), cooking losses and sensorial properties of fresh and cooked pork patties were investigated. Raw and cooked minced pork (M. longissimus thoracis et lumborum) containing added lutein, sesamol, ellagic acid or olive leaf extract were stored aerobically or in modified atmosphere packs (MAP) for up to 8 and 12 days, respectively. Lutein, sesamol, ellagic acid and olive leaf extract had no significant effect on microbial status, cook loss, pH or WHC. Lipid oxidation was reduced (P < 0.001) in raw and cooked pork patties stored in aerobic packs and in MAP following addition of sesamol, ellagic acid and olive leaf extract. Antioxidant effectiveness in raw and cooked patties was in the order: sesamol = ellagic acid > olive leaf extract > lutein. Lutein increased (P < 0.001) b∗ yellowness values in raw pork patties. Addition of lutein, sesamol, ellagic acid and olive leaf extract to pork had no detrimental effects on the organoleptic properties of cooked patties but altered (P < 0.05) instrumental textural attributes. Results highlight the potential of using natural functional ingredients in the development of functional pork products with enhanced quality and shelf-life.  相似文献

The effect of lutein (200 μg/g meat), sesamol (250 μg/g meat), ellagic acid (300 μg/g meat) and olive leaf extract (200 μg/g meat) on total viable counts (TVC), pH, water holding capacity (WHC), cooking loss, lipid oxidation (thiobarbituric acid-reactive substances, TBARs), colour stability, texture and sensory evaluation of fresh and cooked pork sausages stored in aerobic or modified atmosphere packs (MAP) was investigated. Addition of sesamol, ellagic acid and olive leaf extract reduced (P < 0.001) lipid oxidation in all packaged raw and cooked pork sausages. Antioxidant potency followed the order: sesamol 250 > ellagic acid 300 > olive leaf extract 200 > lutein 200 for both raw and cooked pork sausages. Addition of sesamol increased (P < 0.001) WHC on days 2 and 12 of MAP storage. Meat addition of lutein, sesamol, ellagic acid and olive leaf extract had no detrimental effect on pH, cooking losses, TVCs, tenderness, juiciness, texture or product flavour. Lutein, sesamol, ellagic acid and olive leaf extract were effective as natural functional ingredients in suppressing lipid oxidation and have the potential to be incorporated into functional raw and cooked pork sausages.  相似文献

Conversely, lutein and olive leaf extract reduced (P < 0.001) oxymyoglobin oxidation relative to the control. Green tea (GTE) and grape seed (GSE) extracts are proposed as preservatives for increasing the shelf life of low sulphite raw beef patties. The antioxidant and antimicrobial activities of both extracts were compared with ascorbate. Five groups were established for the patties: Control (with no additives), S (100 SO2), SA (100 SO2 + 400 sodium ascorbate), ST (100 SO2 + 300 GTE) and SG (100 SO2 + 300 GSE) (mg per kg of meat). Patties were stored at 4 °C in aerobic packaging for 0, 3, 6 or 9 days under retail display conditions. Meat spoilage (total viable and coliform counts, pH, lightness, chroma, hue angle, metmyoglobin and TBARS) was determined. The sensory contribution of the extracts to cooked patties was evaluated (colour, odour, flavour and texture). The results pointed to the possibility of using low SO2-vegetable extract combinations to preserve raw meat products. ST, SG and SA delayed microbial spoilage, redness loss and lipid oxidation, thus increasing the shelf life of the raw sulphite beef patties by 3 days. ST, SG and SA also delayed the onset of rancid flavours in cooked patties. No anomalous sensory traits were caused by either extract. Ascorbate, GTE and GSE improved the preservative effects of SO2 on beef patties, especially against meat oxidation. This suggested that the quantity of SO2 added can be reduced to obtain healthier raw meat products.  相似文献

We examined the influence of chitosan on lipid oxidation and color stability of ground beef stored in different modified atmosphere packaging (MAP) systems. Ground beef patties with chitosan (1%) or without chitosan (control) were packaged either in high-oxygen MAP (HIOX; 80% O2 + 20% CO2), carbon monoxide MAP (CO; 0.4% CO + 19.6% CO2 + 80% N2), vacuum (VP), or aerobic packaging (PVC) and stored at 1 °C. Chitosan increased (P < 0.05) redness of patties stored in PVC and CO, whereas it had no effect (P > 0.05) in HIOX. Chitosan patties demonstrated lower (P < 0.05) lipid oxidation than controls in all packaging. Control patties in PVC and HIOX exhibited greater (P < 0.05) lipid oxidation than those in VP and CO, whereas chitosan patties in different packaging systems were not different (P > 0.05) from each other. Our findings suggested that antioxidant effects of chitosan on ground beef are packaging-specific.  相似文献

Cholesterol oxidation products (COPs) constitute a known health risk factor. The antioxidant effect of a lyophilized aqueous Melissa officinalis extract against cholesterol degradation and COPs formation during a heating treatment was evaluated in a model system (180 °C, 0–180 min) at a ratio of 2 mg extract/100 mg cholesterol. Furthermore, the plant extract was subsequently added to beef patties alone or incorporated within an oil-in-water olive oil emulsion to assess its effectiveness during cooking. Melisa extract protected cholesterol from thermal degradation in the model system, yielding higher remaining cholesterol and lower COPs values throughout the whole heating process. Maximum total COPs were achieved after 30 and 120 min of heating for control and melisa-containing samples, respectively. In cooked beef patties, even though the olive oil emulsion was used as flavor-masking approach, melisa extract off-flavor limited the maximum dose which could be added. At these doses (65 μg/g and 150 μg/g without and with the emulsion, respectively), no additional protective effect of melisa over the use of the emulsion was found. Addition of natural extracts into functional foods should definitively take into account sensory aspects.  相似文献

Fatty acid synthase (FAS) has been recognized as a potential therapeutic target for obesity. In this study, for the first time, the inhibitory effect of pomegranate husk extract, punicalagin and ellagic acid on FAS was investigated. We found them potently inhibiting the activity of FAS with half-inhibitory concentration values (IC50) of 4.1 μg/ml (pomegranate husk extract), 4.2 μg/ml (4.50 μM, punicalagin) and 1.31 μg/ml (4.34 μM, ellagic acid), respectively. Moreover, they all exhibited time-dependent inactivation of FAS. Punicalagin and ellagic acid inhibited FAS with different mechanisms compared to previously reported inhibitors, through inactivating acetyl/malonyl transferase and β-ketoacyl synthase domains, respectively. Additionally, 100 μg/ml pomegranate husk extract, 5.24 μg/ml (5 μM) punicalagin and 4.5 μg/ml (15 μM) ellagic acid effectively reduced lipid accumulation inside FAS over-expressed 3T3-L1 adipocytes. Since FAS plays a key role in the biosynthesis pathway of fatty acid, these findings suggest that pomegranate husk extract, punicalagin and ellagic acid have potential in the prevention and treatment of obesity.  相似文献

To determine the effects of cow biological type on colour stability of ground beef, M. semimembranosus from beef-type (BSM) and dairy-type (DSM) cows was obtained 5 d postmortem. Three blends (100% BSM, 50% BSM + 50% DSM, 100% DSM) were adjusted to 90% and 80% lean points using either young beef trim (YBT) or beef cow trim (BCT), then packaged in high oxygen (High-O2; 80% O2) modified atmosphere (MAP). The BSM + YBT patties had the brightest colour initially, but discoloured rapidly. Although DSM + BCT patties had the darkest colour initially, they discoloured least during display. Metmyoglobin reducing ability of ground DSM was up to fivefold greater than ground BSM, and TBARS values of BSM was twofold greater than DSM by the end of display (4 d). Though initially darker than beef cow lean, dairy cow lean has a longer display colour life and may be advantageous to retailers using High-O2 MAP.  相似文献

This study was conducted to determine if glutinous rice flour (GRF) could be a functional food additive to potentially replace corn starch (CS), soy protein isolate (SPI) and/or sodium tripolyphosphate (STPP) to improve the physicochemical and organoleptic characteristics of seasoned beef patties. GRF had a lower cook loss among the treatment groups due to an increase in fat and moisture retentions (p < 0.05). GRF lowered texture profile values for hardness, gumminess, springiness, and chewiness (p < 0.05) of the patties, which are generally beneficial for this product. The beef patties with GRF were juicier and more tender than the control and other treatments (p < 0.05). Hedonic scores for juiciness, tenderness and overall acceptability were the highest for the beef patties with 1 and 3% GRFs, suggesting that GRF may be an effective functional ingredient to improve the textural quality of seasoned beef patties.  相似文献

The thermal stability of heat-shocked and non-heat-shocked spores of the virulence-attenuated Sterne strain of Bacillus anthracis was evaluated at select temperatures in irradiated, raw ground beef (25% fat) heated in a water bath or cooked using two different commercial grills. For the former, 3-g portions of inoculated ground beef were packaged in bags that were completely immersed in a temperature-controlled circulating water bath held at 65 °C (149 °F), 70 °C (158 °F), 75°(167 °F), and 80 °C (176 °F) for a predetermined length of time. For the latter, formed ground beef patties (95-g each) were inoculated with spore stock A or B of the Sterne strain and then cooked on a commercial open-flame gas grill or on a commercial clamshell electric grill to achieve target internal temperatures of either 71.1 °C (160 °F), 82.2 °C (180 °F), or 93.3 °C (200 °F). Cooking ground beef patties on commercial grills, resulted in reductions of ca. 0.8 to 3.5 log10 CFU/g for spore stocks A and B of B. anthracis Sterne after heating to 71.1 °C (160 °F), 82.2 °C (180 °F), or 93.3 °C (200 °F) on either the open-flame gas grill which required ca. 9.6 min to reach the target internal temperatures or on the clamshell electric grill which required ca. 4.0 min to reach the target internal temperatures. In comparison, our data using a water bath system and heating at 65° to 80 °C predict nearly 4 log reductions in spore levels for short times, ~½ min, depending possibly on the temperature. Thus, our data suggest that models based on heating ground beef in a water bath is not a good predictor of reductions of levels of spores of B. anthracis Sterne strain that would be obtained when cooking ground beef patties on commercial grills under conditions that may be typically used by consumers and/or retail establishments. Nevertheless, our data validated that cooking ground beef patties on a commercial grill at a temperature considered to be “well-done” and a temperature (71.1 °C;160 °F) recommended by the USDA/FSIS, is effective at killing spores of B. anthracis Sterne.Industrial relevanceHeating ground beef in a water bath or cooking ground beef patties on commercial grills under conditions simulating those that are used by consumers and/or that occur in retail food service establishments is effective at killing spores of B. anthracis Sterne.  相似文献

Characteristics of beef patties with low-salt (0.5%) and low-fat (<10%) contents were studied during frozen storage as affected by addition of Wakame seaweed (3%) and partial or total replacement of pork backfat with olive oil-in-water emulsion. Patties with Wakame presented less (P < 0.05) thawing and cooking losses and were softer (P < 0.05) than patties without seaweed. A softening effect (P < 0.05) induced by olive oil emulsion was observed only in seaweed-free patties. Lipid oxidation and microbiological counts in reformulated products were not a limiting factor for frozen stability. Wakame incorporation increased (P < 0.05) mineral contents, but all products presented the same Na/K ratio. Observed changes in microstructure were associated with seaweed addition (formation of alginate chains). All products were judged acceptable by the sensory panel. In the course of frozen storage no important changes were found in the target properties due to the different treatments.  相似文献

Salmonella is one of the pathogens that most frequently contaminate pork processing lines. Several hurdles can control this organism in dry fermented sausages, among them is nitrite. However, the traditional use of nitrate/nitrite in the meat industry is being questioned due to their involvement in nitrosamine formation. In this study, minced pork and sausages inoculated with Salmonella Typhimurium were prepared with 150 ppm NaNO3 and 150 ppm NaNO2 (maximum amounts allowed by EU), and with a reduction of 25% and 50%. The absence of nitrate/nitrite favored Salmonella growth, with 2–2.5 log cfu/g higher counts at the end of ripening, compared to nitrate/nitrite added batches. The 50% reduction showed the same inhibitory effect as the maximum amounts. Nitrate/nitrite represented an essential hurdle to control Salmonella even when pH and aw were below the values considered as minimum for its growth. The effect of this reduction on other pathogens should be considered.  相似文献

Meat high-hydrostatic pressure treatment causes severe decolouration, preventing its commercialisation due to consumer rejection. Novel procedures involving product freezing plus low-temperature pressure processing are here investigated. Room temperature (20 °C) pressurisation (650 MPa/10 min) and air blast freezing (−30 °C) are compared to air blast freezing plus high pressure at subzero temperature (−35 °C) in terms of drip loss, expressible moisture, shear force, colour, microbial quality and storage stability of fresh and salt-added beef samples (Longissimus dorsi muscle). The latter treatment induced solid water transitions among ice phases. Fresh beef high pressure treatment (650 MPa/20 °C/10 min) increased significantly expressible moisture while it decreased in pressurised (650 MPa/−35 °C/10 min) frozen beef. Salt addition reduced high pressure-induced water loss. Treatments studied did not change fresh or salt-added samples shear force. Frozen beef pressurised at low temperature showed L, a and b values after thawing close to fresh samples. However, these samples in frozen state, presented chromatic parameters similar to unfrozen beef pressurised at room temperature. Apparently, freezing protects meat against pressure colour deterioration, fresh colour being recovered after thawing. High pressure processing (20 °C or −35 °C) was very effective reducing aerobic total (2-log10 cycles) and lactic acid bacteria counts (2.4-log10 cycles), in fresh and salt-added samples. Frozen + pressurised beef stored at −18 °C during 45 days recovered its original colour after thawing, similarly to just-treated samples while their counts remain below detection limits during storage.  相似文献

We isolated a substance from fructose–tyrosine Maillard reaction products (MRPs) and investigated its antiproliferative effect on six human cancer cell lines. The ethyl acetate fraction of fructose–tyrosine MRPs showed a strong antiproliferative effect; this fraction was isolated and purified using silica gel column chromatography, semipreparative RP-HPLC, and recycling HPLC. The structure of the purified compound was determined using spectroscopic methods. The isolated compound was identified as 2,4-bis(p-hydroxyphenyl)-2-butenal (C16H14O3, HPB242). HPB242 inhibited cell growth in a dose-dependent manner (10–80 μg/ml) on the six human cancer cell lines. The IC50 values of HPB242 on the six human cancer cell lines were 17.34 μg/ml (MCF-7), 29.21 μg/ml (HCT-116), 34.57 μg/ml (H-460), 34.87 μg/ml (HepG2), 48.77 μg/ml (PC-3), and 55.83 μg/ml (MKN-45).  相似文献

The use of 0.02 or 0.05% chitosan is proposed to reduce from 450 to 150 mg kg 1 the SO2 required to preserve pork burgers aerobically packed and stored at 2 °C for up to 21 days under retail display conditions. The effects of chitosan and/or sulfite addition and the storage time were determined in fresh (color deterioration, lipid oxidation, pH, total viable counts, Escherichia coli and coliforms, Salmonella, appearance and odor) and cooked (appearance, odor, flavor and texture) burgers. The addition of either 0.02 or 0.05% chitosan was not detected by sensory analysis, and extended the shelf life of low-SO2 burgers from 7 to 14 days. Chitosan enhanced the preservative effects of sulfite at a low dose, acting on the main causes of meat deterioration (bacterial spoilage, color stability and lipid oxidation), and provided good sensory properties to fresh and cooked pork burgers.  相似文献

This study was performed to investigate the effects of food-grade reducing agents on counteracting premature browning (PMB) and to determine the relative heat stability of different redox states of bovine myoglobin (Mb). Sodium erythorbate (SE), erythorbic acid (EA), sodium ascorbate (SA), ascorbic acid (AA) and ascorbyl palmitate (AP) were added to ground beef (15% fat) at a concentration of 2.3 mM; patties were prepared and stored at 4 °C and at −18 °C. Surface redness (a* values), lipid oxidation and total reducing activity (TRA) were measured on raw beef, and a* values recorded from cooked internal surfaces. Bovine Mb was purified from biceps femoris muscle and heat capacity was measured using differential scanning calorimetry. All reducing agents decreased lipid oxidation and increased TRA relative to controls (p < 0.05). In general, SE and SA were more effective at maintaining red color in cooked ground beef patties than other reducing agents (p < 0.05). The temperature at peak heat capacity, Tm, of metmyoglobin appeared lower than that of oxymyoglobin and deoxymyoglobin. Reducing agents can maintain Mb in the reduced state, and their addition to ground beef may be one method of preventing PMB.  相似文献

The antioxidant activity of plant extracts (100 and 500 mg/kg) from cloudberry, willow herb and beetroot on thiobarbituric acid (TBA) reactive substances (TBARS) development and hexanal content of cooked pork patties was investigated. Pure quercetin, rutin and caffeic acid were tested in parallel for comparison. The most potent antioxidants on stabilizing oxidation were cloudberry extract and quercetin. The lowest antioxidant activity was found with the addition of pure rutin to the meat. Caffeic acid showed an intermediate activity. At a concentration of 100 mg/kg, beetroot and willow herb extracts showed an antioxidant activity on TBARS and hexanal contents similar to that observed for caffeic acid during 3 days of refrigerated display, while cloudberry extract was as potent as quercetin. At a concentration of 500 mg/kg, beetroot and willow herb extract stabilized hexanal production of cooked pork patties after 6 days of refrigerated storage in a way comparable to that observed for pure quercetin and cloudberry extract. TBARS numbers were well correlated with hexanal content in cooked pork patties on day 3 of refrigerated storage. However, hexanal production and TBARS numbers were not highly correlated in samples with the highest level of beetroot (500 mg/kg). Hexanal production was inhibited by the high level of beetroot, but TBARS production was not, perhaps because the red color of beetroot extract interfered with the determination of the pink TBA chromogen.  相似文献

Non-thermal processed foods are generally cold stored and distributed. The use of ultrasound for food preservation has attracted the interest of many research groups. In the current study, the thermosonication (TS, simultaneous ultrasound and thermal process) inactivation of psychrotrophic Bacillus cereus spores was investigated (24 kHz, 210 μm, 0.33 W/mL or W/g). First, the effectiveness of a 1.5 min TS process at 70 °C in skim milk, beef slurry, cheese slurry, and rice porridge was investigated. The TS was more effective than sole thermal treatment in reducing B. cereus spores in rice porridge, beef slurry and cheese slurry by 7, 6, and 4 fold, respectively. Then, the first-order D- and z-values for TS and thermal processing in skim milk and beef slurry, and the best model to fit TS inactivation of B. cereus spores in beef slurry were determined. The D70 °C-values in skim milk were 2.9 min for TS and 8.6 min for the thermal treatment. And in beef slurry, values of 0.4 min for TS and 2.3 min for thermal were estimated. It was found that the Log-logistic model better described the TS spore inactivation in beef slurry. The ultrasound technology required 20–30 °C lower temperatures for the same spore inactivation, which resulted in better food quality and energy saving gains.  相似文献

Hanging for 24 or 48 hours (h) of intact carcasses in the chill store cooler prior to further processing occurs periodically at processor level due to demand for product. The aim of the study was to investigate the effects of commercial carcass suspension (24 and 48 h) on meat tenderness attributes in modified atmosphere packed beef steaks during chill storage. A secondary objective was to investigate protein oxidation reactions occurring and the subsequent meat tenderness consequences. Carcasses were hung for 24 or 48 h in order to reproduce commercial short term storage of meat at processor level. Experimental gas atmospheres used in packs consisted of; 40%, 50%, 60%, 70% and 80% oxygen, with all packs containing 20% CO2 and the remainder being provided by the filler gas N2. Steaks from the 24 h suspended carcasses were tougher than those from 48 h suspended muscle. Additionally, packaging systems with high oxygen had a negative influence on tenderness (instrumental) and consumer determined juiciness in cooked beef steaks. The carbonyl content and TBARS numbers increased to the greatest extent in high oxygen packed samples. Protein oxidation was directionally and significantly correlated (P < 0.01) to the higher O2 treatments. Protein and lipid oxidation also occurred to a greater extent in the samples from the 48 h treatment, possibly due to physical matrix differences in the meat compared to the 24 h treatment. Meat from the 48 h treatment appeared less red than meat from the 24 h treatment.  相似文献

Substantial numbers of aerobic bacteria but few coliforms or Listeria spp. and no Escherichia coli were recovered from both swab samples and brines circulated in cleaned equipment used for injecting pork loins. After meat was processed for 30 or 60 min, the numbers of aerobic bacteria in brines had increased by >1 log unit, to about 4.5 log cfu ml−1, but coliforms were <2 and E. coli and Listeria spp. were <1 log cfu ml−1. The numbers of bacteria on the surfaces of pork loins before and after injection of the meat were similar. No bacteria were recovered from the deep tissues of the uninjected meat, but aerobic bacteria were recovered at log-mean numbers of 2.1 log cfu g−1 and coliforms at log-total numbers of 1.2 log cfu 25 g−1 from 25 samples of deep tissues of injected meat. Aerobic bacteria were recovered at log total numbers of 1.0 log cfu 25 g−1 from 25 samples of injected pork cooked to a central temperature of 61 °C, but no bacteria were recovered from the deep tissues of meat cooked to 70 °C. The findings suggest that moisture-enhanced pork cooked to a medium rare condition can be microbiologically safe.  相似文献
