Food quality and safety are major concerns in the food industry. Antimicrobial packaging can be considered an emerging technology that could have a significant impact on life and food safety. Antimicrobial agents in food packaging can control the microbial population and target specific microorganisms to provide greater safety and higher quality products. In this work, a lactic acid grafted chitosan film was synthesized. Silver nanoparticles were loaded into the chitosan lactate (CL) film by equilibration in a silver nitrate solution, which was followed by citrate reduction. The presence of silver nanoparticles was confirmed with transmission electron microscopy, X‐ray diffraction, Fourier transform infrared spectroscopy, and thermogravimetric analysis of the film. The silver‐nanoparticle‐loaded CL film was investigated for its antimicrobial properties against Escherichia coli. This newly developed material showed strong antibacterial properties and thus has potential for use as an antibacterial food‐packaging material. © 2009 Wiley Periodicals, Inc. Nanocomposite films for food packaging applications were developed using bacterial cellulose (BC) nanofibers in different amount in a poly(vinyl alcohol)/starch (PVA/St) matrix. In search of a better method to reduce the harmful ingredients in food packaging, the cellulose nanofibers were obtained by the mechanical defibrillation of BC pellicles thus avoiding the addition of chemicals in the final packaging material. Improved mechanical performances were obtained starting from just 1% BC nanofibers in PVA/St. Atomic force microscopy images showed a uniform dispersion of BC nanofibers on the surface of nanocomposites. A twofold increase of both tensile strength and modulus was obtained for 2 wt % BC in the composite. BC nanofibers have greatly improved the barrier properties of PVA/St matrix, a twofold increase of water vapor permeability being obtained for only 2 wt % BC nanofibers in the composite film. Aseptic packaging of foods – fundamentals and state of the art . During the last two decades, a highly successful development has taken place in this area and aseptic packaging is today considered a normal component of technology in many areas of food industry. Aseptic packaging of food can be divided into two main areas of application: 1. Packaging of presterilized and sterile products. 2. Packaging of unsterilized products to avoid the external contamination. In most case, destruction of the microorganisms and spores attached to the surface by a lethal factor obeys the general logarithmic time law. For aseptic packaging of a given product, it is necessary to coordinate 4 factors, viz. the packaging material, the sterilization process for the packaging material surface, the packaging machine itself, and the operating environment of the machine: among these factors, the sterilization process is of greatest importance.  相似文献

以真实纸塑包装-化学物-食品体系为依据,基于一维Fick扩散理论,考虑化学物在纸和塑料涂层内具有不同的扩散系数及纸的厚度为有限厚,引入纸和塑料涂层界面处的分配系数,给出初始条件和边界条件,建立迁移预测模型,得到解析解。同时,对模型进行简化处理,分析其用于双层同种塑料-化学物-食品体系的使用通用性,并与Laoubi-Vergnaud模型进行对比分析,结果发现所建模型不仅可用于纸塑复合包装材料中化学物的迁移预测,同时还可用于双层同种塑料包装材料中化学物的迁移预测。  相似文献

The term bio‐active packaging refers to a packaging material that has been modified by the attachment or immobilization of bioactive components on the food contact surface. This article describes a novel, economical, and feasible technique for embedding bioactive components in energy curable food contact resins. While the technique is versatile and potentially applicable to any antimicrobial or bioactive compound; the proof of concept discussed in this article has focused on enzyme immobilization. Glucose oxidase (GOx) and catalase were used as representative enzymes. These oxidoreductases are very sensitive to inactivation by extrinsic factors and therefore present a challenging model for immobilization. Embedding of activity occurred via UV polymerization of commercial polymer coatings. The efficiency of immobilization and the performance of bioactive packaging were tested in both food simulants and actual food products. In both cases immobilization resulted in food contact surfaces with high retained enzyme activity as demonstrated by oxygen removal. © 2007 Wiley Periodicals, Inc. J Appl Polym Sci, 2008  相似文献

A very common material for food packaging is steel, in the form of metallic containers (cans), in particular for beverage packaging. The corrosion degradation of the packaging must be carefully controlled, not only because the packaging integrity must be preserved, but also in order to avoid any significant contamination of the food or drink, compromising the flavour. In order to increase the coating performance and the food compatibility, new organic coatings are under development with very high protective properties, with the final aim to increase the shelf life of the product. An electrochemical characterisation is often used to study the protective performance of organic coatings on metal substrate for various applications. Some different coatings for food packaging were considered in the present study, including materials with different chemical composition and different pigments content. The protective properties were quantified using electrochemical impedance spectroscopy (EIS) measurements, comparing the electrochemical substrate activity with electrochemical noise (EN) and scanning Kelvin probe (SKP) measurements. The influence of mechanical deformations on the protective properties was also investigated. The results obtained on the studied coatings confirmed the validity of the electrochemical approach and showed that, in general, the coatings containing pigments (TiO2) have better performance than clearcoats, while comparing the different polymers, epoxy–phenolic coatings have a better corrosion protection than epoxy–melamine coatings.  相似文献
