Three medium‐ and long‐chain triacylglycerols (MLCT) with different contents of medium‐chain fatty acids (MCFA) (10% to 30%, w/w) were prepared and evaluated for their anti‐obesity potential in C57BL/6J mice. The group fed with a high fat diet of MLCT containing 30% (w/w) MCFA showed significantly decreased body weight and fat mass (P < 0.05) relative to the control mice fed an obesity‐inducing high fat rapeseed oil diet. In addition, serum parameters including triacylglycerols, total cholesterol, glucose, high‐density lipoprotein cholesterol, low‐density lipoprotein cholesterol, apolipoprotein A1 and apolipoprotein B in the treatment group fed with 30% (w/w) MCFA were close to those of mice fed with a low fat rapeseed oil diet, but significantly different (P < 0.05) from those of the obesity control group. Moreover, the intake of MLCT with high content of MCFA reduced the size of adipocytes. In addition, the visceral fat and liver weights, as well as the liver triacylglycerol for 3 treatment groups were lower than those of the obesity control group. These results demonstrate the great potential of MLCT with high content of MCFA in weight loss.  相似文献

Although early studies suggested that coffee consumption might increase risk of some cancers, more comprehensive epidemiological and experimental data now generally indicate either neutral or beneficial effects. In this review, we summarize the current evidence for associations between breast, prostate, colorectal, and liver cancers and the consumption of coffee, and discuss the experimental evidence for potential chemopreventive mechanisms of coffee and coffee constituents. The epidemiological evidence consistently indicates that coffee protects against liver cancer, and also point toward protective effects for risk of colorectal cancers (with relative risks of 0.50 (95% CI: 0.42–0.59) and 0.83 (95% CI: 0.75–0.92), respectively, in the most recent meta‐analyses). There seems to be no association between the overall risk of breast and prostate cancer and coffee intake. However, for subgroups such as postmenopausal breast cancers, advanced prostate cancers, and breast and prostate cancer survivors, an inverse association with coffee intake is indicated. Potential mechanisms for chemopreventive effects of coffee phytochemicals includes inhibition of oxidative stress and oxidative damage, regulation of DNA repair, phase II enzymatic activity, apoptosis, inflammation, as well as having antiproliferative, antiangiogenetic effects and antimetastatic effects. The experimental evidence for effects of coffee and coffee constituents on each of these processes is discussed.  相似文献

The antioxidant capability of coffee polyphenols to inhibit red‐meat lipid peroxidation in stomach medium and absorption into blood of malondialdehyde (MDA) in humans was studied. Roasted‐ground coffee polyphenols that were found to inhibit lipid peroxidation in stomach medium are 2‐ to 5‐fold more efficient antioxidant than those found in instant coffee. Human plasma from ten volunteers analyzed after a meal of red‐meat cutlets (250 g) revealed a rapid accumulation of MDA. The accumulation of MDA in human plasma modified low‐density lipoprotein is known to trigger atherogenesis. Consumption of 200 mL roasted coffee by ten volunteers during a meal of red‐meat cutlets, resulted after 2 and 4 h in the inhibition by 80 and 50%, respectively, of postprandial plasma MDA absorption. The results obtained in vitro simulated stomach model on MDA accumulation were predictive for the amount of MDA absorbed into circulating human plasma, in vivo. Timing the consumption of coffee during the meals may make it a very active functional food.  相似文献

Scope : In order to validate the in vivo function of putatively healthy molecules in foods, human intervention studies are required. As the subject's compliance concerning intake or abstinence of a given food is considered mandatory to be monitored by biomarkers, the objective was to identify analytical markers for coffee consumption. Methods and results : Urine samples collected from coffee drinkers were compared with those of non‐coffee drinkers using hydrophilic liquid interaction chromatography (HILIC)/time‐of‐flight mass spectrometry‐based metabolite profiling. Two urinary molecules, found to be contributing most to the dissimilarities between both groups, were identified as N‐methylpyridinium (NMP) and trigonelline and their suitability as coffee‐specific biomarkers was validated by means of a coffee intervention study. After the volunteers (five females and four males) consumed a single dose of coffee, morning urine was collected for 10 days while staying abstinent from any coffee. HILIC‐MS/MS‐stable isotope dilution analysis (SIDA) revealed elevated urinary concentrations of trigonelline and NMP for up to 48 (p=0.001) and 72 h (p=0.002), respectively, after coffee consumption when compared with non‐coffee drinkers. Conclusion : Analysis of urinary NMP allows to check for coffee consumption within a period of 3 days and is proposed as a dietary biomarker which might be used as an analytical probe to control compliance in human intervention studies on coffee.  相似文献

Coffee is probably the most frequently ingested beverage worldwide. Especially Scandinavia has a high prevalence of coffee-drinkers, and they traditionally make their coffee by boiling ground coffee beans and water. Because of its consumption in most countries in the world, it is interesting, from both a public and a scientific perspective, to discuss its potential benefits or adverse aspects in relation to especially two main health problems, namely cardiovascular disease and type 2 diabetes mellitus. Epidemiological studies suggest that consumption of boiled coffee is associated with elevated risk for cardiovascular disease. This is mainly due to the two diterpenes identified in the lipid fraction of coffee grounds, cafestol and kahweol. These compounds promote increased plasma concentration of cholesterol in humans. Coffee is also a rich source of many other ingredients that may contribute to its biological activity, like heterocyclic compounds that exhibit strong antioxidant activity. Based on the literature reviewed, it is apparent that moderate daily filtered, coffee intake is not associated with any adverse effects on cardiovascular outcome. On the contrary, the data shows that coffee has a significant antioxidant activity, and may have an inverse association with the risk of type 2 diabetes mellitus.  相似文献

In this work, we evaluated the occurrence of furan in brews obtained from regular, decaffeinated, and instant coffee and commercial packed capsules. For this purpose, a previously developed automated headspace solid-phase microextraction method coupled to gas chromatography–mass spectrometry (HS-SPME-GC–MS) was used. Initially, the influence of HS-SPME conditions on furan formation was evaluated. In addition, the effect of roasting conditions (temperature and time) used for coffee beans on furan formation was also studied. We found that low temperature and long roasting time (140 °C and 20 min) decreases the final furan content. Furan concentrations in regular ground coffee brews from an espresso coffee machine were higher (43–146 ng/ml) than those obtained from a home drip coffee maker (20 and 78 ng/ml), while decaffeinated coffee brews from a home drip coffee maker (14–65 ng/ml) showed a furan concentration similar to that obtained from regular coffee. Relatively low concentrations of this compound (12–35 ng/ml) were found in instant coffee brews, while commercial packed coffee capsules showed the highest concentrations (117–244 ng/ml). Finally, the daily intake of furan through coffee consumption in Barcelona (Spain) (0.03–0.38 μg/kg of body weight) was estimated.  相似文献

In order to develop products that are acceptable to consumers, it is necessary to incorporate consumers’ intentions into products’ characteristics. Therefore, investigation of consumers’ perceptions of the taste or smell of common beverages provides information that should be useful in predicting market responses. In this study, we sought to develop a time–intensity evaluation system for consumer panels. Using our system, we performed time–intensity evaluation of flavor attributes (bitterness and retronasal aroma) that consumers perceived after swallowing a coffee beverage. Additionally, we developed quantitative evaluation methods for determining whether consumer panelists can properly perform time–intensity evaluation. In every trial, we fitted an exponential function to measured intensity data for bitterness and retronasal aroma. The correlation coefficients between measured time–intensity data and the fitted exponential curves were greater than 0.8 in about 90% of trials, indicating that we had successfully developed a time–intensity system for use with consumer panelists, even after just a single training trial using a nontrained consumer. We classified participants into two groups based on their consumption of canned coffee beverages. Significant difference was observed in only AUC of sensory modality (bitterness compared with retronasal aroma) among conventional TI parameters using two‐way ANOVA. However, three‐way ANOVA including a time course revealed significant difference between bitterness and retronasal aroma in the high‐consumption group. Moreover, the high‐consumption group more easily discriminated between bitterness and retronasal aroma than the low‐consumption group. This finding implied that manufacturers should select consumer panelists who are suitable for their concepts of new products.  相似文献

The objective of this study was to determine how long ground coffee beans could be stored at room and freezing temperatures before sensory changes could be detected, and to identify specific attribute changes associated with this storage. Ground beans were stored for 0 (fresh), 1, 2 and 3 weeks at room and freezing temperatures. Coffee was prepared from each of these treatments and difference testing was performed. Paired comparison tests were conducted on the fresh, 1‐ and 2‐week‐stored coffee grounds to examine the attributes of coffee aroma, flavor, bitterness and overall preference. At room temperature storage, results indicated significant (P < 0.05) differences in the coffee prepared from fresh versus the 2‐week‐stored ground beans. Coffee made from freshly ground beans had a stronger coffee aroma, less bitterness and was more preferred compared with the beans stored for 1 or 2 weeks (P < 0.05). At freezer storage, differences were detected between coffee prepared from coffee grounds stored for 1 or 2 weeks. Coffee prepared from grounds stored for 2 weeks had a stronger coffee aroma and was more bitter compared with the other storage times (P < 0.05).  相似文献

Coffee is one of the most widely consumed beverages in the world. It has primarily consumed due to its stimulant effect and unique taste since the ancient times. Afterwards, its consumption has been historically associated with a lower risk of some diseases such as type 2 diabetes mellitus, obesity, cardiovascular disease and some type of cancer and thus it has also consumed due to health benefits. It contains many bioactive compounds such as caffeine, chlorogenic acids and diterpenoid alcohols which have so far been associated with many potential health benefits. For example, caffeine reduces risk of developing neurodegenerative disease and chlorogenic acids (CGA) and diterpene alcohols have many health benefits such as antioxidant and chemo-preventive. Coffee also have harmful effects. For example, diterpenoid alcohols increases serum homocysteine and cholesterol levels and thus it has adverse effects on cardiovascular system. Overall, the study that supports the health benefits of coffee is increasing. But, it is thought-provoking that the association with health benefits of coffee consumption and frequency at different levels in each study. For this reason, we aimed to examine the health effect of the coffee and how much consumption is to investigate whether it meets the claimed health benefits.  相似文献

‘The Vert’ is a special type of green tea widely consumed in West Africa and locally associated with many health benefits. However, limited research has been conducted to evaluate its health benefits, such as its enhanced hypolipidemic potential. The objectives of this study were to (1) evaluate the cholesterol‐ and triglyceride‐lowering effects of West African green tea (WAGT) as affected by diet and tea intake, (2) determine the impact of WAGT consumption on the CHD risk ratio, and (3) explore possible mechanisms through which WAGT improves serum lipid profile. Forty‐five male Wistar rats were randomly assigned to one of nine treatment combinations, three diets (regular, high‐cholesterol, and trans‐fat diets) and three fluid sources (no tea, diluted tea, and concentrated tea). After 6 weeks of feeding, animal blood, liver, and feces were harvested. Total cholesterol, HDLc, LDLc, and triglycerides in serum, liver, and feces were determined. The concentrations of bile acids in feces were also measured. WAGT significantly lowered serum and liver cholesterol (30% and 15%, respectively) and increased serum HDL cholesterol (30%). It also reduced liver enlargement caused by storage of excess lipids in high‐cholesterol diet. Overall, the CHD risk ratio was cut by two‐thirds in rats fed high‐cholesterol diet and WAGT. A marked increase in fecal total lipids, cholesterol (60%), and bile acids (50%) was observed in rats that consumed WAGT compared to the control group. Aim of present study was the getting data on black and green tea and coffee consumption among Russian population in 1995-2003. The consumption of beverages tea and coffee was estimated by 24-hour recall of dietary intake in course of Russian Longitudinal monitoring surveys of economics and health. About 82% of population have consumed the black tea and only 2.2%--the green tea. Mean daily black and green tea intake among all population were 446 ml and 10 ml, correspondingly. The prevalence of black tea consumption was decreased and green tea and coffee consumption were increased from 1995 to 2003.  相似文献

The objective of this study was to evaluate the effects of coffee bean roast on the acceptability of a dairy‐based espresso drink. Espresso coffee was made from freshly ground coffee beans with light‐medium roast, between roast (between medium and dark) and dark French roast in order to show the influence of roasting on flavor. Samples were prepared by blending skim milk, soft‐serve ice cream mix, ice and fresh espresso extracts. No significant differences (P < 0.05) were detected in total solids and fat content among treatments. Viscosity for the light‐medium roasted beverage was significantly (P < 0.05) higher than the others. The beverage pH increased with increased darkening of roast. The beverage made with the light‐medium roasted coffee had significantly (P < 0.05) higher preference scores for coffee flavor and overall flavor than beverages made with the between and French roasts. The between and French roasted treatments were shown to have a more intense coffee flavor by trained sensory panelists. Consumers in this study preferred a less intense coffee flavor.  相似文献

Epidemiological and experimental evidence increasingly suggests coffee consumption to be correlated to prevention or delay of degenerative diseases connected with oxidative cellular stress. In an intervention study comprising 33 healthy volunteers, we examined DNA-protective and antioxidative effects exerted in vivo by daily ingestion of 750 mL of freshly brewed coffee rich in both green coffee bean constituents as well as roast products. The study design encompassed an initial 4 wk of wash-out, followed by 4 wk of coffee intake and 4 wk of second wash-out. At the start and after each study phase blood samples were taken to monitor biomarkers of oxidative stress response. In addition, body weight/composition and intake of energy/nutrients were recorded. In the coffee ingestion period, the primary endpoint, oxidative DNA damage as measured by the Comet assay (± FPG), was markedly reduced (p<0.001). Glutathione level (p<0.05) and GSR-activity (p<0.01) were elevated. Body weight (p<0.01)/body fat (p<0.05) and energy (p<0.001)/nutrient (p<0.001-0.05) intake were reduced. Our results allow to conclude that daily consumption of 3-4 cups of brew from a special Arabica coffee exerts health beneficial effects, as evidenced by reduced oxidative damage, body fat mass and energy/nutrient uptake.  相似文献

This study explored the dose‐dependent effect of oat cereal β‐glucan on improving metabolic indexes of obesity mice. C57‐Bl mice were randomized to chow diet (N) group and high fat diet group and other three doses of oat β‐glucan groups (low β‐glucan, medium β‐glucan, and high β‐glucan). Energy intake, glucose, lipids, and appetite related hormones were tested. Dose‐dependent relation was observed on oat β‐glucan doses and body weight change, average energy intake, total cholesterol, HDL cholesterol, plasma neural peptide Y, arcuate neural peptide Y mRNA, and arcuate neural peptide Y receptor 2 mRNA level. Oat β‐glucan helped to increase plasma peptide Y‐Y and intestine peptide Y‐Y expression in obesity mice.  相似文献

The daily consumption of dietary omega‐3 PUFA is recommended by governmental agencies in several countries and by a number of health organizations. The molecular mechanisms by which these dietary PUFA affect health involve the enrichment of cellular membranes with long‐chain 20‐ and 22‐carbon omega‐3 PUFA that impacts tissues by altering membrane protein functions, cell signaling, and gene expression profiles. These changes are recognized to have health benefits in humans, especially relating to cardiovascular outcomes. Cellular membrane enrichment and health benefits are associated with the consumption of long‐chain omega‐3 PUFA found in marine oils, but are not generally linked with the consumption of alpha‐linolenic acid, the 18‐carbon omega‐3 PUFA found in plant seed oils. However, the supply of omega‐3 PUFA from marine sources is limited and may not be sustainable. New plant‐derived sources of omega‐3 PUFA like stearidonic acid‐soy oil from genetically modified soybeans and Ahiflower oil from Buglossoides arvensis seeds that are enriched in the 18‐carbon omega‐3 PUFA stearidonic acid are being developed and show promise to become effective as well as sustainable sources of omega‐3 PUFA. An example of changes in tissue lipid profiles associated with the consumption of Ahiflower oil is presented in a mouse feeding study.  相似文献

The aim of this study was to develop a creamy ricotta using a mixture of goat and cow whey as the main ingredients, with the addition of whole goat and cow milk. The nutritional composition, texture and sensory characteristics of the ricotta cheese were evaluated over 14 days of refrigerated storage. There was a decrease in protein and ash content and pH changes during the assessed storage periods. The instrumental texture profile indicated that the creamy ricotta was easily deformable, with minimal inelasticity and a cohesive, soft and delicate texture. The medium‐ and long‐chain fatty acid content was higher than the short‐chain fatty acid content. The flavour and aroma of creamy ricotta were described by the panel as having a soft texture and wet appearance. The use of whey from goat and cow cheese in making creamy ricotta is feasible and does not cause negative impact in the final product.  相似文献

Scope Fish liver, fish liver oil, oily fish and seagull eggs have been major sources of vitamin D for the coastal population of Norway. They also provide dioxin and polychlorinated dioxin‐like compounds (dl‐compounds), which may interfere with vitamin D homeostasis. We investigated whether serum 25‐hydroxyvitamin D (25(OH)D) might be compromised by concomitant intake of dl‐compounds. Methods and results We studied 182 adults participating in the Norwegian Fish and Game Study. Participants who consumed fish liver and/or seagull eggs had higher dl‐compound intake and blood concentrations than non‐consumers (p < 0.001). Vitamin D intake was higher (p < 0.001), whereas serum 25(OH)D was lower (p = 0.029) in consumers than in non‐consumers. Among non‐consumers, vitamin D intake was associated with serum 25(OH)D (β=1.06; 95% CI: 0.48, 1.63). This association was weaker among consumers (β = 0.52; 95% CI: ?0.05, 1.08), but strengthened when adjusted for retinol intake (β = 0.66; 95% CI: 0.12, 1.21). The association between vitamin D intake and serum 25(OH)D did not seem to be compromised by intake of dl‐compounds. Conclusion To secure adequate vitamin D status while keeping the intake of dioxins and dl‐polychlorinated biphenyls low, a healthy diet should include both supplemental vitamin D and oily fish. Despite high nutrient content, dietary fish liver and seagull eggs should be restricted, due to dl‐compounds and possible vitamin A‐D antagonism.  相似文献

Abstract: The susceptibility of trans‐fat to the human health risk prompted the Food and Agriculture Organization (FAO) and World Health Organization (WHO) to prepare regulations or compulsory claims for trans‐fatty acids (TFA) in edible oils and fats. In this study, analysis of fatty acid composition and TFA content in edible oils and fats along with the possible intake of trans‐fat in Indian population was carried out. The analysis was carried out as per the Assn. of Official Analytical Chemists (AOAC) methodology and the results were statistically analyzed. The average TFA content in nonrefined mustard and refined soybean oils exceeded by 1.16‐ to 1.64‐fold as compared to the Denmark limit of 2% TFA in fats and oils destined for human consumption. In branded/nonbranded butter and butter oil samples, average TFA limit exceeded by 4.2‐ to 9.5‐fold whereas hydrogenated vegetable oil (HVO) samples exceeded the limit by 9.8‐fold, when compared to Denmark standards. The probable TFA intake per day through different oils in Indian population were found to be less than WHO recommendation. However Punjab having highest consumption of HVO (–15 g/d) showed 1.09‐fold higher TFA intake than the WHO recommendation, which is alarming and may be one of the factors for high cardiovascular disease mortality rate that needs further elucidation. Thus there is a need to prescribe TFA limit for edible oil, butter, and butter oil in India and to reduce the already proposed TFA levels in HVO to safeguard the health of consumers. Practical Application: The probable daily intake of trans‐fatty acid (TFA) especially through hydrogenated vegetable oil (HVO) was assessed. In absence of any specification for TFA and fatty acid composition for edible oils, butter, and butter samples, a pressing need was felt to prescribe TFA limit in India. The study indicates that TFA intake through HVO consumption is higher in States like Punjab than the recommended daily intake prescribed by WHO. Hence, strategies should be adopted to either decrease the consumption of HVO or to modify the industrial processing method of HVO with less content of TFA to safeguard the health of consumers.  相似文献

This study analysed the effects of consuming 30 g per day of ‘Jijona turrón’, a traditional Spanish Christmas nougat‐type confection, on the circulating lipid parameters. Turrón is made of toasted almonds, honey and sugar. To make this product more appealing to consumers who need to control their lipid or glucose levels, a new product containing inulin was developed. Macro‐ and micronutrient contents were similar in both turrón with (JTI) or without (JT) inulin. A study with thirty‐two volunteers was conducted, with a daily consumption of 30 g of either inulin‐containing or not‐inulin‐containing turrón for a total of 5 weeks. At the beginning and at the end of the study, the circulating lipid parameters were quantified. The volunteers consuming both types of products maintained their circulating cholesterol within normal levels; however, consumers of JT presented a slightly but significant 8% decrease in LDL cholesterol level. On the other hand, the group consuming JTI maintained the levels of glycosylated haemoglobin, while volunteers consuming JT presented low but significantly higher levels of glycosylated haemoglobin.  相似文献

Regular cheese contains saturated fat, consumption of which may negatively influence the amount of serum lipids. The American Dietary Guidelines (https://health.gov/dietaryguidelines/2015/guidelines/) recommend consumption of low-fat food. However, we observed a negative association between cheese intake and serum triglycerides and a positive association with high-density lipoprotein cholesterol. Cheese intake was also inversely related to metabolic syndrome and blunted the harmful association of intake of soft drinks with serum lipids. Cheese contains calcium and factors that may inhibit desaturases, thereby partly explaining why cheese might not have negative effects on serum lipids. Thus, opposing forces seem to govern the cheese effect but will any of these prevail? In an exploratory pilot study, 17 healthy subjects participated in a 4-wk crossover trial without washout. During the first 2 wk, 9 subjects were randomly assigned to add 125 g/d of regular cheese to their habitual diet. After 2 wk, cheese intake was discontinued and the subjects were instructed to return to their habitual diet. The other 8 subjects followed their habitual diet during the first 2 wk, and then added 125 g/d of cheese for the next 2 wk. Mean values (mmol/L) before and after 2 wk on habitual (cheese) diet were as follows: serum triglycerides: 0.91 (0.89) and 0.95 (0.91); total cholesterol: 5.25 (5.16) and 5.08 (5.24); low-density lipoprotein cholesterol: 3.18 (3.17) and 3.09 (3.22); and high-density lipoprotein cholesterol: 1.71 (1.64) and 1.61 (1.66). The fatty acid pattern in total serum lipids and desaturase indexes did not change significantly in response to high cheese intake. Thus, an appreciable increase in daily cheese intake for 2 wk may not alter concentrations of serum lipids, estimates of desaturases, or the distribution of serum fatty acids.  相似文献
