即食食品中单增李斯特菌的半定量风险评估   总被引:1,自引:0,他引:1  
开展某市即食食品中单增李斯特菌的半定量风险评估,参照微生物风险评估程序,对单增李斯特菌开展了危害识别、危害特征描述、暴露评估和风险特征描述。通过剂量反应关系推测易感人群和非易感人群由于摄入即食食品导致单增李斯特菌病的每年发病概率分别为3.71×10-7和3.39×10-9。基于2008~2011年监测各类生食蔬菜、生食水产品、菜肴(沙拉)等即食食品942组数据,构建了即食食品中单增李斯特菌的风险矩阵,由风险可能性和风险损失度计算得到易感人群通过摄入即食食品感染单增李斯特菌的风险等级属于五级风险等级中较小的一级,表明当地居民通过摄入即食食品感染单增李斯特菌病的风险较小。本文可为构建完整单增李斯特菌风险评估体系提供理论参考。  相似文献

目的 了解吉林省市售餐饮食品中单增李斯特菌的污染情况,为食品安全管理、食源性疾病的监测提供科学依据。方法 对2011年-2019年从吉林省9个监测地区采集到的8279件市售食品样本进行单增李斯特菌的分离鉴定。结果 2011年 -2019年从吉林省市售食品中共检测出单增李斯特菌阳性菌株352株,总检出率4.25%;各检测地区间长春市阳性检出率最高(7.63%),其次为四平市(6.03%);12类市售食品中肉及肉质品阳性检出率最高(9.41%),其次为速冻米面食品(6.72%);各类采样地点中超市的阳性检出率最高(6.89%),其次为农贸市场(5.64%)和快餐店(5.08%);散装食品的阳性检出率明显高于预包装食品。结论 2019年吉林省的单增李斯特菌阳性检出率较临近三年呈回升态势;长春市与四平市单增李斯特菌污染情况较其他地区严重;肉与肉制品单增李斯特菌的污染情况最为严重,其次为速冻米面食品;流通环节中单增李斯特菌阳性检出率较高;散装食品的单增李斯特菌污染情况较预包装食品严重。有关部门应针对地区现状、食品类型和包装类型的不同加强管理力度。  相似文献

目的分析散装熟肉制品中单增李斯特菌污染状况。方法根据GB 4789.30-2016《单核细胞增生李斯特氏菌检验》规定的方法对散装熟肉制品的加工用原料、生产环境、各加工环节中产品以及不同销售环境下产品中的单增李斯特菌进行定性和定量检测。结果原料肉的总体带菌率达到21%;生产环境中第三区(远离食品接触面的区域)检出率为2%,其余区域未检出;各加工环节中产品单增李斯特菌检测结果均小于10CFU/g;不同销售环境下产品中单增李斯特菌检测结果小于10 CFU/g的比例为93%,处于10~50 CFU/g之间的样本占比6%,大于50 CFU/g的占比为1%。结论原料散装熟肉制品中单增李斯特菌污染的主要来源,蒸煮等加工环节能有效地杀灭单增李斯特菌。销售环境也关系到散装熟肉制品单增李斯特菌的污染程度,对于未包装的产品,专卖店优于农产品市场。  相似文献

目的 了解2010~2016年云南省市售熟肉制品和餐饮食品中单增李斯特菌污染情况调查分析。方法 在全省16个州市县中选取超市、农贸市场、零售及餐饮环节等为采样点, 随机采取熟肉制品1465份和餐饮食品3674份, 按照GB 4789.30-2010《食品安全国家标准 食品微生物学检验 单核细胞增生李斯特氏菌检验》及《全国食源性致病菌监测工作手册》进行检测和鉴定。结果 1465份熟肉制品中单增李斯特菌检出率为2.18%(32/1465), 3674份餐饮食品中单增李斯特菌阳性率为1.44%(53/3674)。在不同流通环节中, 熟肉制品和餐饮制品中检出率最高的分别为便利店和超市, 分别为9.09%(5/55)和1.67%(3/180)。在不同的监测地区, 熟肉制品和餐饮制品检出率最高均为昭通地区, 分别为7.8%(11/141)和7.17%(18/251)。结论 单增李斯特菌在熟肉制品及餐饮食品中均有检出, 说明云南省的食品中存在一定的单增李斯特菌污染, 对消费者的安全有潜在风险, 相关监管部门应持续加强监管, 预防食源性疾病的发生。  相似文献

研究2005—2013年河北省即食食品中单增李斯特菌污染状况及耐药特征。方法 单增李斯特菌检验参照(GB/T 4789.30),药物敏感性试验应用微量肉汤稀释法,对15种抗生素进行耐药检测。结果 单增李斯特菌总污染率为1.34%,凉拌菜及沙拉(2.62%)、生食水产品(2.51%)的检出率均高于所测其他食品。136株单增李斯特菌对15种抗生素耐药率为13.97%,以氯霉素耐药率最高(7.35%),其次是四环素和复方新诺明(均为4.41%),强力霉素和环丙沙星的耐药率均为2.94%,所有菌株对青霉素、亚胺培南、头孢噻吩、利福平、氨苄西林-舒巴坦酸敏感。结论 河北省即食食品中存在单增李斯特菌污染,分离菌株存在较严重的耐药情况,且耐药性有增长趋势,应加强即食食品的监管以保证食品安全及公众健康。  相似文献

摘要:目的 掌握吉林省市售食品中单增李斯特菌污染情况,为预防食源性疾病及保障食品安全工作提供科学研究数据。方法 根据国家标准GB 4789.30-2010及《2013年国家食品污染和有害因素风险监测工作手册》进行不同地区、不同类别及不同采样地点的食品中单增李斯特菌的风险监控。结果 2011-2015年在5093件11大类食品中共检出单增李斯特菌294株,总检出率为5.77%。九个监测地区中白山、长春及四平的食品污染高于其他地区。肉与肉制品、速冻米面制品和动物性水产品的阳性检出率偏高,分别为12.43%、5.88%和5.43%。相对餐饮服务环节,流通环节污染率更高。散装与预包装食品检出率无显著性差别。结论 吉林省各地区市售食品存在单增李斯特菌不同程度的污染,需要对存在高污染风险食物的生产加工、运输销售及餐饮服务多个环节加强监督监管。  相似文献

针对散装熟肉制品中单核细胞增生李斯特氏菌(简称单增李斯特菌)监测数据普遍存在的零膨胀和过度离散现象,探讨不同左删失数据处理方法对定量暴露评估的影响。2017年2—12月从上海市某区各大型超市、农贸市场及餐饮环节采集254 份散装熟肉制品进行单增李斯特菌定量检测。将检测结果与标准统计分布及其零膨胀模型相结合,利用R 2.0软件进行数据拟合,根据最优分布结果,确定零售阶段散装熟肉制品中单增李斯特菌的暴露情况。对于单增李斯特菌左删失数据的处理,优先构建零膨胀对数正态分布或零膨胀泊松对数正态分布。零膨胀模型的参数估计结果表明,散装熟肉制品中单增李斯特菌的阳性检出率为2%。本研究结果可为单增李斯特菌左删失数据的处理提供理论依据,并为完整的风险评估体系提供参考。  相似文献

目的 针对一例孕产妇李斯特菌病开展病例调查和溯源分析,探讨感染来源和单增李斯特菌病的发病机制,为防控李斯特菌病提供依据。方法 开展现场流行病学调查,收集病例信息,采集病例血液标本、家庭冰箱内食品及厨房环境样本、家庭附近农贸市场的食品样本,针对不同来源样本中的单增李斯特菌进行检测。结果 病例经常食用从农贸市场购买的中式凉拌菜(5~7次/周),在家自制或二次加工中式凉拌菜。其家庭冰箱冷藏室储存食物生熟不分,且生食水果在冰箱中出现腐烂现象。厨房的两块菜板生熟不分、清洗消毒不及时,厨房操作面存在交叉污染。检测结果显示,11份样本中共分离出3株单增李斯特菌,1株来自该病例的血液标本,2株来自厨房冰箱内食品涂抹和菜板涂抹。提示该病例由于食用污染食品导致感染并通过胎盘屏障感染胎儿。结论 本起事件是丰台区首次在食品和环境中尝试溯源单增李斯特菌病的感染来源。病例家庭冰箱内生肉和胡萝卜、厨房环境涂抹样本中均检出单增李斯特菌,明确了食品与环境交叉污染导致病例单增李斯特菌感染发病;医院的早期识别及处置是避免新生儿不良结局出现的重要保障。  相似文献

目的对市售豆腐、豆腐皮进行抽样检测。方法 GB 4789.30-2010《食品微生物学检验单核细胞增生李斯特菌检验》进行检验。结果从豆腐、豆腐皮中检出单核细胞增生李斯特菌,35组豆腐豆腐皮中检出单核细胞增生李斯特菌5组检出率14.3%。结论豆腐、豆腐皮检出该菌在阜阳市尚属首次,在2013版《食品安全国家标准食品中致病菌限量》即食豆类制品非发酵豆制品中尚无单核细胞增生李斯特菌限量要求,应加强市售非发酵豆制品卫生监督和预防。  相似文献

Incidence and control of Listeria monocytogenes in foods in Denmark   总被引:5,自引:0,他引:5  
The Danish regulatory policy on Listeria monocytogenes in foods is based on the principles of HACCP and was developed using a health risk assessment approach. The Danish policy focuses examinations and criteria for L. monocytogenes in ready-to-eat foods and is based on a combination of inspection and product-testing. Based on current epidemiological information from several countries, a concentration of L. monocytogenes not exceeding 100 cfu/g of food at the time of consumption, seems to be of low risk to the consumers. In Denmark, ready-to-eat foods have been placed into six categories where absence of L. monocytogenes in 25 g is required in foods heat treated in the final package and in heat-treated as well as preserved, non heat-treated foods which can support growth within the shelf life. This level is necessary in foods capable of supporting growth, in order not to exceed 100 L. monocytogenes per g at the point of consumption. In heat-treated and preserved foods, which are not supportive of growth within the shelf-life and for raw, ready to eat foods, a level below 10 L. monocytogenes per g is regarded acceptable. A level between 10 and 100 L. monocytogenes per g is not satisfactory and a level above 100/g is not acceptable. Data on the qualitative and quantitative occurrence of L. monocytogenes in foods in Denmark are presented and discussed. In 1997 and 1998, greater than 15,000 samples from different categories of food were examined (semi-quantitatively) for the presence of L. monocytogenes. A significant difference could be seen in the number of samples containing more than 100 L. monocytogenes per g, between different categories of foods (1997, P = 0.001; 1998, P = 0.016). In 1997, preserved meat products and preserved fish products and to a lesser extent vegetables and meat or vegetable mayonnaise were more likely to contain high numbers (i.e. above 100 cfu/g) of L. monocytogenes than other food categories. In 1998, preserved meat products, but also heat-treated meat products, vegetables and meat or vegetable mayonnaise had the highest frequency of samples with > 100 L. monocytogenes per g. In a survey performed in 1994 and 1995, 1.3% of ready-to-eat food samples (heat-treated meat products, preserved meat and fish products) were found to be contaminated with L. monocytogenes at a level above 100 cfu/g. The samples included in this survey were primarily products produced by authorized companies and were comprised mainly of vacuum packed products or products packed in modified atmosphere and with long shelf lives, typically above several weeks. The corresponding percentages of positive samples primarily processed in the retail outlets (heat-treated meat products, preserved meat and fish products) in 1997 and 1998 were 0.3% and 0.6%, respectively. The results suggest that ready-to-eat meat and fish products with extended shelf-lives produced by authorized companies are more likely to contain high numbers (> 100 cfu/g) of L. monocytogenes than products processed in the retail sector which often have a shorter shelf life.  相似文献

目的掌握上海市市售食品中食源性致病菌污染状况。方法在全市监测网点抽检各类食品,开展沙门菌等11种食源性致病菌的监测。结果各类食品中食源性致病菌总体检出率为7.6%,检出食源性致病菌的食品包括剩饭(25.0%)、生禽肉(21.7%)、生畜肉(19.0%)、水产品(14.4%)、餐饮即食食品(4.5%)和速冻熟制米面制品(1.7%)。其中,海产品中的副溶血性弧菌、生禽肉中单增李斯特菌、生猪产品中的沙门菌的检出率分别为21.0%,19.8%和11.6%,是本市食源性致病菌风险来源的主要食品品种和项目。熟食卤味、乳制品、鸡蛋、生食蔬菜、冷饮饮料、糕点、非发酵豆制品等食品均未检出食源性致病菌。结论上海市部分市售食品,特别是部分生食品中食源性致病菌仍有一定的检出率,食品加工过程仍应采取烧熟煮透、防止交叉污染等针对性措施,以提高食品安全性。  相似文献

Point-of-purchase safety-based labeling guidance on the proper storage and handling of refrigerated ready-to-eat (RTE) meat and poultry products could help reduce the risk of listeriosis. Seniors and pregnant women are two population groups at increased risk of listeriosis due to suppressed or compromised immune systems. We conducted 11 focus groups with senior-aged women and women of childbearing age in Colorado and Ohio to assess consumer awareness of Listeria, storage practices of RTE meat products, perceptions regarding the acceptability and usefulness of common date and potential food safety labeling statements on RTE meat and poultry products, and food safety information needs. Storage times for opened and unopened RTE products varied widely, with opened products often being stored longer than recommended. Women in both age groups paid attention to date labels on packages but varied highly in their interpretation of the statements. "Use by" statements were considered clearer and more helpful than "Sell by" or "Best if used by" labels. Proposed food safety-based labeling statements listing "antilisterial" agents used in RTE products were not well received. However, labels giving consumers instructions on how long they could keep RTE products and when to discard them after opening were considered helpful and well received. Participants indicated the need for further information about Listeria and its control. Educational information at point-of-purchase and where seniors and pregnant women congregate are suggested. Manufacturers are encouraged to provide more complete information on the safe storage and use of ready-to-eat meat and poultry products on package labels.  相似文献

Listeria monocytogenes can pose a serious threat in several areas of the nation's food supply including ready-to-eat seafood products. Use of irradiation processing can potentially reduce the risk of listeriosis caused by consumption of ready-to-eat seafood products. This study measured the effect of X-ray irradiation on reducing the population of L. monocytogenes on ready-to-eat, vacuum-packaged smoked mullet. Smoked mullet were inoculated with a five-strain mixture of L. monocytogenes (10(4) CFU/g), vacuum packaged, and irradiated (0, 0.5, 1.0, 1.5, and 2.0 kGy). The packaged fish were then stored at 3 and 10 degrees C for 90 and 17 days, respectively. Radiation doses of 0.5, 1.0, and 1.5 kGy reduced the initial population of L. monocytogenes by 1.1, 1.6, and 2.1 log CFU/g, respectively. The 2.0-kGy dose reduced L. monocytogenes to undetectable levels with no recovery growth at either temperature. Compared to the control, irradiation at 1.5 kGy demonstrated 1.0 and 1.7 log CFU/g less growth at 3 degrees C after 60 days and 10 degrees C after 17 days, respectively. Sensory flavor analysis was conducted to determine if a difference existed between irradiated samples. Panelists indicated that there were no differences among treated and untreated samples. An X-ray dose of 2 kGy effectively eliminated 10(4) CFU/g L. monocytogenes on smoked mullet without changing sensory quality.  相似文献

即食肉制品在生产和消费环节极易受到微生物污染,严重影响其品质和安全。传统热杀菌技术虽然能有效灭活微生物,但会对即食肉制品的营养和感官品质产生不良影响。近年来,非热杀菌技术逐渐受到关注,该技术处理温度低,对食品的风味、色泽和营养成分影响较小,避免了传统热杀菌技术造成的食品品质劣变问题。目前,在即食肉制品中应用较为广泛的非热杀菌技术主要有超高压、辐照、紫外照射、脉冲光照射和冷等离子体。本文综述上述5 种非热杀菌技术对即食肉制品的杀菌作用及对其品质的影响,以期为非热杀菌技术在即食肉制品加工中的应用提供参考。  相似文献

Risk profiles of pork and poultry meat were carried out using an Excel-based software program, Risk Ranger. It is a semi-quantitative risk estimator answering various questions relating to the probability of exposure to a hazard, susceptibility of the population of interest, severity of the illness caused by the hazard if present and probability of food containing an infectious dose. Therefore, qualitative and quantitative inputs were used to estimate and rank the risk of various hazards/food combinations. Risk scores provided by the tool were characterized as low, medium and high. Also, health risk was estimated separately, where needed, for low and high risk populations. Low risk scores were obtained for Salmonella spp., Listeria monocytogenes and enterohaemorrhagic Escherichia coli (EHEC) for low risk population. High risk scores were obtained for hepatitis E virus (HEV) in raw pork products (both low and high risk populations). Moderate risk scores for Salmonella spp. and L. monocytogenes in processed pork or poultry-meat products (ready-to-eat or to be reheated) and partially cooked pork products were also obtained (low risk population). Scores for Staphylococcus aureus, Clostridium perfringens and Bacillus cereus and various product types were mostly in the "medium" risk category, except for S. aureus/ready-to-eat pork products able to support growth of the organism, which fell into the high risk category. Campylobacter spp. gave moderate risk scores with one exception (raw poultry products), whereas Y. enterocolitica showed combinations of low risk and few of medium risk. High risk pathogen/product combinations identified were: 1) temperature abused, ready-to-eat pork and/or poultry-meat products with extended shelf life and cross-contaminated by L. monocytogenes (high risk population), EHEC (high risk population) or S. aureus (all population), 2) partially cooked or processed intended to be reheated pork products cross-contaminated by L. monocytogenes, served undercooked and receiving improper cooling or reheating (high risk population), and 3) all people consuming undercooked meals cross-contaminated with Campylobacter spp. (e.g. from raw poultry and raw poultry-meat products) and HEV (e.g. from raw pork and raw pork-meat products). Salmonellae gave high risk scores in all food categories (except preserved meat products) for high risk population. Preserved meats (mainly pork) such as dry fermented sausages gave low risk scores. Only Salmonella spp., L. monocytogenes and E. coli EHEC gave moderate risk ratings in case of ingredients likely to be contaminated at an early stage of processing (e.g. animal at slaughter) and inadequate fermentation process. These results may constitute a source of information for hazard assessment during application of a Food Safety Management System.  相似文献

Listeria monocytogenes is a major concern to producers of ready-to-eat foods because of the high mortality rate associated with listeriosis and the widespread nature of the organism. To investigate the prevalence of this pathogen in different ready-to-eat food products on the Belgian market, a variety of 252 ready-to-eat food products, mainly fish and meat products, were analyzed. Overall, L. monocytogenes was detected in 23.4% of the samples. The highest prevalence of L. monocytogenes was found in prepared minced meat (42.1%) and smoked halibut (33.3%). Contamination levels were in most cases low (<10 CFU/g); however, levels higher than 100 CFU/g were detected in some samples of smoked salmon, smoked halibut, and prepared minced meat. A high prevalence of Listeria innocua (15.8%) and Listeria welshimeri (36.8%) was detected in prepared minced meat. L. monocytogenes strains isolated from different contaminated products were subjected to repetitive element sequence-based PCR (REP-PCR) typing to determine possible associations with product type, producer, or market. REP-PCR patterns were analyzed using BioNumerics software, and seven different groups with at least 90% similarity were identified. The cluster analysis indicates that cross-contamination occurred at the producer and retail level. Serotype identification of the strains by PCR revealed that most belonged to the 1/2a(3a) serotype group.  相似文献

目的 了解广西市售食品中沙门菌污染状况和特征,为减少污染和防控食源性疾病提供科学依据。方法 2012—2017年从广西14个市采集14类市售食品共60 174份,其中生鲜类食品5 712份,即食食品54 462份,按照GB 4789.4—2010《食品安全国家标准 食品微生物学检验 沙门氏菌检验》方法进行沙门菌检验。结果 生鲜类食品中生肉及生肉制品、生水产品及其制品、速冻米面制品、鲜蛋类沙门菌检出率分别为10.3%(399/3 883)、6.2%(50/806)、0.5%(2/440)、0.0%(0/583),即食食品中熟肉制品、餐饮食品、生食蔬菜及其制品沙门菌检出率分别为0.6%(58/10 175)、0.3%(39/14 721)、1.0%(5/489),焙烤及油炸类食品、饮料、水果及其制品均为0.1%,熟蛋制品、豆制品、冷冻饮品、调味品均未检出。生肉及生肉制品共检出51种血清型,德尔卑沙门菌为优势血清型(16.2%,70/432),主要在生猪肉中检出。即食食品共检出32种血清型,德尔卑沙门菌为优势血清型(14.5%,11/76),主要在熟肉制品中检出。结论 生鲜类受沙门菌污染最严重的食品是生畜肉和生禽肉,即食食品受沙门菌污染较严重食品是凉拌类食品。应加强从农场到餐桌的食品安全防控,减少食源性疾病的发生。  相似文献
