BACKGROUND: Considering the economic importance of tomato and its nutritional benefits to human health, a study was conducted on how different environmental factors (temperature, solar radiation and vapour pressure deficit (VPD)) influence hydrogen peroxide detoxification and several stress indicators in cherry tomato (Solanum lycopersicum cv. Naomi) fruits grown in two experimental Mediterranean greenhouses of parral (low‐technology) type and multispan (high‐technology) type. RESULTS: Three fruit samplings were made at the beginning, middle and end of the fruit production period. Values of temperature, solar radiation and VPD peaked at the third sampling in both greenhouses, being higher in the parral‐type greenhouse, while there was a reduction in market production at the third sampling. Peroxidation (malondialdehyde content and lipoxygenase activity) increased significantly at the third sampling, indicating the presence of oxidative stress caused by the rise in temperature, solar radiation and VPD. The ascorbate content, the activities of superoxide dismutase, catalase and ascorbate peroxidase and other stress indicators (proline and sucrose degradation) also increased at the third sampling. CONCLUSION: This study showed that conditions of higher environmental stress occurred at the third sampling and in the parral‐type greenhouse, leading to the accumulation of ascorbic acid in cherry tomato fruits and therefore to higher nutritional quality. Considering the economic importance of the tomato and its nutritional benefits to human health, a study was made of how two different environmental factors (temperature and overall solar radiation) influence the nutritional quality of cherry tomatoes during the plant full production cycle. Solanum lycopersicum L. cv. Naomi plants were grown in an experimental greenhouse. Three fruit samples were taken over the full production period: first sampling at the beginning of harvest (7 January 2004), second at mid‐harvest (22 March 2004) and third at harvest end (30 May 2004). Values for temperature and overall accumulated solar radiation peaked at a maximum in the third sampling, without lowering the yield with respect to previous samplings. Regarding the antioxidant activity in the exocarp fraction of the cherry tomato fruits, the results showed that the increase in temperature and solar radiation diminished the lycopene and β‐carotene contents in the third sampling, inducing defective pigmentation (sunscald). This occurred simultaneously with an increase in lipid peroxidation during the third sampling, quantified as lipoxygenase activity and malondialdehyde content. Finally, in relation to ascorbate metabolism, the higher temperatures and stronger solar radiation at the third sampling increased the oxidation of reduced ascorbate (AsA) due to intensified ascorbate peroxidase (APX) and ascorbate oxidase (AO) activities and a depression of the enzyme dehydroascorbate reductase (DHAR). In conclusion, the results indicate that despite the oxidation of AsA by APX and AO, the minimal regeneration of the latter, together with the greater lipid peroxidation with increasing temperature and solar radiation in the greenhouse, explained the lower content of antioxidants in the exocarp and therefore the loss of nutritional quality of the cherry tomato fruits grown under these conditions. BACKGROUND: There is little information available concerning the effect of sanitizing agents, including ultraviolet (UV‐C) light, on nutritional composition of fresh‐cut produce. In this study, the influence of UV‐C light irradiation (3.2–19.2 kJ m?2) on the nutritional quality of fresh‐cut tomato cv. Durinta grown under either low (2.4/2.8 dS m?1) or high (4.9/7.7 dS m?1) electrical conductivity (EC) of the hydroponic nutrient influx/efflux solution was investigated. RESULTS: When grown under low EC UV‐C light treatment reduced development of microbial population of fresh‐cut tomato, increased phenolic content and delayed degradation of vitamin C after 7 days of storage at 4–6 °C. UV‐C light irradiation had no significant effect on appearance, color or lycopene content of fresh‐cut tomato. In recently harvested intact tomatoes, the lycopene and vitamin C contents were 30% higher in tomatoes irrigated with high EC, whereas the phenolic content was unaffected by the salt treatment. After fresh‐cut processing, phenolic and vitamin C contents of fresh cuts produced from tomatoes treated with high EC decreased by > 10%. This decline was initially accelerated in tomato treated with UV‐C light irradiation. CONCLUSIONS: Our results revealed that fresh‐cut tomatoes are affected dissimilarly by UV‐C treatments, depending on the degree of salt stress undergone by plants before harvest. We determined the impact of a sanitizing procedure on nutritional composition, an effect often overlooked but with great significance to ensure overall quality of fresh produce. Our findings revealed the need for more nutritional studies addressing the effect of multiple stress factors from pre‐harvest to post‐processing stages. The objective of this study was to study overall nutritional implication of storage on tomatoes (cv. Tradiro), harvested from a commercial greenhouse in Canterbury, New Zealand. The harvested tomatoes were stored at 7, 15 and 25 °C, for a period of 10 days. The soluble phenolics and ascorbic acid contents of tomatoes showed slight increases during storage, regardless of temperature. The mean lycopene content of tomatoes stored at 15 and 25 °C on the 10th day of storage was, approximately, 2-fold (7.5 mg/100 g) than of the tomatoes stored at 7 °C (3.2 mg/100 g). The soluble antioxidant activity increased from 17–27% during the storage period of tomatoes.  相似文献

BACKGROUND: The feasibility of using modified atmosphere packaging (5 kPa O2 + 5 kPa CO2) to maintain the antioxidant properties of fresh‐cut tomatoes during shelf‐life was assessed through storage at different temperatures (5, 10, 15 and 20 °C). Health‐related compounds, antioxidant capacity, microbiological counts, physicochemical parameters and in‐package atmosphere of tomato slices were determined. RESULTS: Initial lycopene, vitamin C and phenolic contents and physicochemical parameters of tomato slices were well maintained for 14 days at 5 °C. Lycopene and total phenolic contents were enhanced over time in tomato slices stored at 15 and 20 °C. However, this increase in antioxidant compounds of fresh‐cut tomatoes during storage may be associated with excessive amounts of CO2 (R2 = 0.5679–0.7328) in the packages due to microbial growth. Although keeping tomato slices at temperatures above 10 °C increased their antioxidant content, the shelf‐life of the product was reduced by up 4 days. CONCLUSIONS: A storage temperature of 5 °C is appropriate for maintaining the microbiological shelf‐life of fresh‐cut tomatoes for up to 14 days and also allows the antioxidant properties of tomato slices to be retained over this period, thus reducing wounding stress and deteriorative changes. BACKGROUND: Lycopene, a phytochemical, has attracted a great deal of interest over the past few years. This has triggered research on the biological properties of lycopene and on the numerous factors that control these properties. Therefore, the aim of the study was to investigate lycopene content and antioxidant activity of fresh, sun‐dried and canned tomatoes. In addition, in vitro bioavailability of lycopene was determined. RESULTS: Lycopene contents of fresh, sun‐dried and canned tomatoes were found to be 1.74, 5.51 and 3.55 mg 100 g?1, respectively, on a fresh wet basis. The highest lycopene bioavailability was obtained for sun‐dried tomatoes (58.05%) and this was followed by fresh (28.67%) and canned tomatoes (21.83%). Fresh tomatoes showed the highest antioxidant activity against ABTS radical oxidation. This was followed by sun‐dried tomatoes and canned tomatoes. The inhibition effect of intestinal dialysates of the samples on ABTS radical oxidation was between 51.34% and 92.96%. CONCLUSION: Maintenance antioxidant activity and existence of lycopene following an in vitro digestion process were the main findings, which might contribute forthcoming studies in this scientific field. BACKGROUND: Two extraction methods employing tetrahydrofuran and phosphate buffer (pH 7.4) respectively were used to process tomatoes. The antioxidant contents and antioxidative properties of extracts of four tomato cultivars were measured. To evaluate the overall antioxidative capacity of the tomato extracts, an antioxidative performance index (API) was used, defined as the average of four antioxidative assays, i.e. relative reducing power, ferrous ion‐chelating ability, 2,2‐diphenyl‐1‐picrylhydrazyl free radical‐scavenging activity and superoxide radical‐scavenging activity. RESULTS: A linear correlation between the total antioxidant content (TAC) and API of tomato extracts was found that was independent of the extraction method and tomato cultivar. CONCLUSION: The concept of representing multiple antioxidant activities by a single index is useful for evaluating the overall antioxidative capacity of antioxidants in tomatoes. BACKGROUND: Previous studies with commercial kiwifruit cultivars have demonstrated that the taste of fruit with higher dry matter content (DM) is more liked by consumers. A unique replicated trial of kiwifruit genotypes (10 high/low DM × small/large‐fruited genotypes) has provided an opportunity to consider how the genetic propensity for a kiwifruit to accumulate DM affects fruit flavour and texture. In the present study, eating‐ripe fruit from each of the genotypes were assessed using a trained sensory panel and the relationships between these sensory attributes and fresh weight, DM, flesh firmness and soluble solids content (SSC) were explored. RESULTS: The genotypes provided a diversity of flavour and texture attributes, each of which varied in perceived intensity of the sensory experience. High‐DM genotypes had higher SSC and were perceived as sweeter than low‐DM genotypes. Sweet taste was closely associated with the perception of the tropical flavour and high‐DM genotypes were found to have more tropical notes. Fruit size was associated with fruit texture, and small fruit were characterised by a firmer and more fibrous core. Large high‐DM fruit were perceived as juicier than those of all other genotypes. CONCLUSIONS: Genotypes were perceived differently from one another, and differences in fruit size and DM content were reflected in fruit sensorial properties. This study is unique in demonstrating interactions between fruit size, DM and sensory properties. These findings could be relevant not only to kiwifruit but to fruiting crop breeders in general, because of the demonstrated potential for effects of fruit size and DM content on sweetness, flavour and fruit texture. BACKGROUND: Soluble sugars and cell wall polysaccharides are well known for contributing to a range of ‘quality’ characteristics of fresh vegetables such as flavour, texture and healthy properties. Red‐ripe berries of 14 cultivars of cherry tomatoes and four cultivars of high‐pigment tomato hybrids, cultivated in the south of Italy, were analysed for their content of these important qualitative parameters. RESULTS: Sakura appeared to be the cultivar with the highest amount of soluble sugars (53 g kg?1 fresh weight (f.w.)), mainly glucose and fructose, and, hence the ‘sweetest’ among cherry tomatoes. High‐pigment tomatoes, especially HLY02 and HLY13, showed a soluble sugar content much lower than cherry tomatoes, as expected for industrial, normal‐size tomatoes. Variations in the fructose/glucose ratio, of between 0.68 and 1.48, were evidenced among the different tomato cultivars. Cell wall polysaccharides isolated from whole fresh red‐ripe berries of each cultivar were analysed chemically. The amount of matrix polysaccharides (0.9–3.4 g kg?1 f.w.) and cellulose (0.16–1.86 g kg?1 f.w.), as well as their glycosidic composition, showed significant differences among the different cultivars. Cellulose to matrix polysaccharide ratio was highly variable and ranged between 0.06–1.44 and 0.17–0.77 in cherry and high‐pigment tomato cultivars, respectively. CONCLUSION: The differences evidenced in the total soluble sugar and cell wall polysaccharide composition, not only among different types of tomatoes but also different cultivars within the same typology, may play a fundamental role in the quality of tomatoes and deserve further investigations. 人们长久以来一直认为加工后的果蔬因Vc损失而导致其营养价值低于新鲜果蔬。而通过我们的研究发现苹果中Vc对总的抗氧化剂活性的贡献率小于0.4%,而大部分该活性来自于植物活性物质的结合,这意味着尽管有Vc损失,但加工过的果蔬还能保留其抗氧化剂活性。结果表明,尽管有Vc损失,热处理提高了总的抗氧化剂活性和番茄中生物可利用番茄红素含量,并且没有引起总酚类和总类黄酮含量的显著变化,从而提高了番茄的营养价值。  相似文献

Lycopene, a natural red pigment found in tomato, is correlated with reduced incidence of some cancers. Forty tomato varieties, including cluster F1 hybrid tomatoes, round breeding line tomatoes (Lycopersicon esculentum Mill) and cherry tomato types (L esculentum var cerasiforme), grown under greenhouse and field conditions were evaluated for their lycopene content using high‐performance liquid chromatography (HPLC) and spectrophotometry. Lycopene content varied significantly among the tomato varieties, with cherry tomato types having the highest lycopene content. Greenhouse‐grown cluster and round tomatoes contained more lycopene (mean = 30.3 mg kg?1) than field‐grown tomatoes (mean = 25.2 mg kg?1), whereas cherry tomato types had a higher lycopene content in field‐grown (mean = 91.9 mg kg?1) than in greenhouse‐grown (mean = 56.1 mg kg?1) fruits. HPLC analysis of lycopene isomeric forms revealed a higher content of all‐trans isomers in all tomato genotypes examined. However, the cis isomeric form was exceptionally higher in the field‐ and greenhouse‐grown cherry tomato L esculentum var cerasiforme cv Gardener's Delight, which contained ~9.3 and 9.9 mg kg?1 cis isomers respectively. BACKGROUND: Tomatoes (Solanum lycopersicum L.) are widely consumed and well known for their health benefits, many of which have been associated with the high levels of antioxidants present in tomatoes. With a growing interest in local and organic foods, it would be helpful to determine whether farmers could naturally improve the quality and antioxidant content of tomatoes for sale in local markets. This study evaluated antioxidant properties, quality attributes, and yield for 10 tomato cultivars grown for 2 years using certified organic and conventional practices. RESULTS: Cultivar and year effects impacted (P < 0.05) all tests conducted, while growing method influenced (P < 0.05) yield, soluble solids content, ascorbic acid, and antioxidant radical scavenging capacity. Even when accounting for year‐to‐year variability, cultivars in the highest groups had 1.35‐ to 1.67‐fold higher antioxidant levels than cultivars in the lowest groups. ‘New Girl’, ‘Jet Star’, ‘Fantastic’, and ‘First Lady’ were always in the highest groups, while ‘Roma’ and ‘Early Girl’ consistently had the lowest antioxidant content. CONCLUSION: Compared to production practices and environmental effects of years that are generally beyond the control of small‐scale producers, choice of cultivar provides the simplest and most effective means of increasing antioxidant properties. Knowledge of tomato cultivars with naturally higher antioxidant levels could assist smaller‐scale producers to grow fruit that may provide a competitive advantage and the opportunity to capitalize on the increasing popularity of locally grown, high‐quality fresh produce. BACKGROUND: The purpose of this study was to achieve rapid improvement of the flavour of soy sauce by increasing the salt stress resistance of Zygosaccharomyces rouxii. Here, we describe genome shuffling to improve the salt tolerance of Z. rouxii while simultaneously enhancing and accelerating flavour formation of soy sauce. RESULTS: A mutant, S3‐2, with a stronger resistance to salt, was selected after three rounds of genome shuffling. S3‐2 not only grew well in peptone/yeast extract/dextrose medium containing a high salt content with wide range of pH, but also exhibited stronger stress resistance to potassium chloride and lithium chloride. In high‐salt liquid fermentation, S3‐2 obviously accelerated flavour formation of soy sauce, thus decreasing the total time required for development of the aroma. In addition, S3‐2 gave high amino acid nitrogen and good flavour. In particular, the ethyl acetate content was 2.38 times that in the control. S3‐2 distinctly improved the formation of 4‐hydroxy‐2 (or 5) ‐ethyl‐5 (or 2) ‐methyl‐3 (2H) ‐furanone by up to 75%. Another important flavour component, 4‐ethylguaiacol, was also detected. CONCLUSIONS: Genome shuffling was successfully used to achieve significant improvements in flavour formation. Produce, including tomatoes, has been implicated in several outbreaks of foodborne illness. A number of the sources of contamination for produce grown in open fields are known. However, as an alternative agricultural system, hydroponic greenhouses are reasonably expected to reduce some of these sources. The objective of the present study was to determine the microbiological profile of tomatoes grown in greenhouses at a Mexican hydroponic farm with a high technological level and sanitary agricultural practices (SAPs) in place. Tomatoes and other materials associated with the farm were analyzed for the presence of Salmonella enterica and populations of Escherichia coli, coliforms, and Enterobacteriaceae. Tomatoes showed median levels of 0.8 log CFU per tomato for Enterobacteriaceae, < 0.5 log CFU per tomato for coliforms, and 0.5 most probable number per tomato for E. coli. Despite the physical barriers that the facilities provide and the implemented SAPs, we found that 2.8% of tomatoes were contaminated with Salmonella and 0.7% with E. coli. Other Salmonella-positive materials were puddles, soil, cleaning cloths, and sponges. Samples from the nursery and greenhouses were positive for E. coli, whereas Salmonella was found only in the latter. Although hydroponic greenhouses provide physical barriers against some sources of enteric bacterial contamination, these results show that sporadic evidence of fecal contamination and the presence of Salmonella can occur at the studied greenhouse farm.  相似文献

BACKGROUND: Plum skins are a waste product generated during production of plum juice or pulp. Polyphenols, shown to have various health‐promoting properties, can be recovered from this waste product. Red‐fleshed plum nectar formulations containing plum skin extract in varying amounts were characterised in terms of intensity of sensory attributes, consumer acceptability, colour, polyphenol content and antioxidant activity. Commercial beverages containing red fruits were used as benchmarks. RESULTS: The polyphenolic profile of the plum skin extract was similar to that of the pulp, including anthocyanins, flavonols, flavan‐3‐ols and a phenolic acid. Addition of the extract to plum nectar, which enhanced the colour, polyphenol content and antioxidant capacity, was limited by its negative sensory impact. The formulations were deemed acceptable by consumers, although a decrease in positive sensory attributes (plum flavour, plum aroma and sweetness) and an increase in negative sensory attributes (plant‐like flavour, plant‐like aroma, acidity and astringency) were observed with increasing skin extract content. The formulations compared favourably with commercial beverages in terms of colour total polyphenol content and antioxidant activity. CONCLUSION: Plum skins were successfully used to enhance the functional status of plum nectar. Use of a functional ingredient from plum skins is, therefore, a feasible value‐addition strategy. BACKGROUND: Grapes after harvesting are air dried and pressed in order to concentrate sugars, acids and flavour compounds to produce vino tostado (toasted wine), a wine with intense aroma and flavour notes and high residual sugar concentration. In order to get a better knowledge of the difficulties involved, several fermentations were conducted at 12 and 28 °C using 0, 15 and 30 g hL?1 ammonium sulfate and 0, 25 and 50 g hL?1 exogenous commercial yeast (Saccharomyces cerevisiae var. bayanus) to study the kinetics of sugar consumption and ethanol, acetic acid and glycerol production. RESULTS: Fermentation kinetic parameters were calculated and metal concentrations and antioxidant activity were analysed. CONCLUSION: The spontaneous fermentation at 12 °C and all fermentations conducted with the commercial yeast gave vino tostado of adequate quality, while the spontaneous fermentation at 28 °C was sluggish. High‐temperature fermentations led to sweeter wines with higher volumetric productivities, although low‐temperature fermentations produced better wines in terms of higher glycerol and lower acetic acid levels. Fructose was the only sugar to be consumed during spontaneous fermentations, while both glucose and fructose were consumed during fermentations of the inoculated musts, with preference for each monosaccharide depending on temperature. BACKGROUND: Increasing evidence supports the potential health benefits of herbal extracts displaying antioxidant, anti‐inflammatory and antitumour activities. Environment can have a pronounced effect on phenolic content and antioxidant capacity. The objectives of this study were to evaluate the total phenolic contents and antioxidant capacities of five different herbs grown under greenhouse and field conditions and to assess their potential anti‐inflammatory effects. RESULTS: High total polyphenolic (TPP) content (measured by the Folin‐Ciocalteu reagent method) and high Trolox equivalent antioxidant capacity (TEAC) were observed in all herbs evaluated. Leaves from thyme, sage, spearmint and peppermint grown in the greenhouse showed significantly higher TPP content and TEAC than those grown under field conditions, with a threefold difference being observed in peppermint. Rosemary, spearmint and peppermint extracts showed stronger inhibition of cyclooxygenase COX‐2 than of COX‐1. CONCLUSION: The results show that producing herbs under greenhouse conditions can improve their biological activities by increasing TPP contents and antioxidant capacities. The selective inhibition of COX‐2 activity by rosemary, spearmint and peppermint suggests that they may be useful as anti‐inflammatory agents with fewer side effects than regular non‐steroidal drugs. Normal and misshapen greenhouse‐grown tomatoes (n= 100 for each group) were analyzed separately in order to compare their synthetic auxin residue contents. Sharply elongated blossom‐ends, “hook‐like” and “slice‐like” deformations were the auxin‐induced shape abnormalities most often observed. The greenhouse tomatoes were found to contain only 4‐chlorophenoxyacetic acid (4‐CPA), but no 2,4‐dichlorophenoxyacetic acid (2,4‐D) or β‐naphtoxyacetic acid (BNOA) residues. Seasonal variations in the mean 4‐CPA residues of greenhouse tomatoes were significant (p<0.05) through 1994‐97. Mean 4‐CPA residues of normal and misshapen greenhouse tomatoes were 0.323/pm0.187 mg kg?1 and 0.363/pm0.150 mg kg?1, respectively. The difference was not statistically significant (p>0.05). The average 4‐CPA residue in abnormally shaped fruit is greater than 0.3 mg kg?1. While misshapen fruit always contained residues of at least 0.1 mg kg?1, 95% of normal‐shaped fruit also contained residues exceeding 0.1 mg/kg?1.  相似文献

Different nitrogen forms in organic or mineral fertilizers affect yield, quality and taste of tomatoes. Tomato plants were grown in a greenhouse for 10 weeks and fertilized with two different organic fertilizers (manure or grass and clover mulch) or with three different mineral nutrient solutions (NO3?:NH4+) ratios 4:1 or 1:4). In an attempt to mimic the nutrient supply of the organic production systems, mineral fertilizers with ammonium as the dominating N‐source were combined with two chloride levels. Total nitrogen supply was 650 mg N plant?1 week?1 in all treatments. There was no difference in the yield of red tomatoes between the treatments (mean 1.95 kg FW plant?1). However, the yield of green tomatoes at the final harvest was significantly higher in the mineral nutrient treatments (mean 1.37 kg FW plant?1) compared with the organic treatments (mean 0.88 kg FW plant?1). Plant biomass was higher for the mineral nutrient treatments (mean 1.05 kg FW plant?1) compared with the organic treatments (0.89 kg and 0.72 kg FW plant?1 in the manure and the grass and clover mulch treatments, respectively). Significantly higher scores were achieved for sweetness, acidity, flavour and acceptance for the tomatoes grown with the organic or the ammonium‐dominated treatments compared with the tomatoes grown with the nitrate dominated nutrient solution. It is suggested that ammonium is an equivalent nitrogen source for tomato plants compared with nitrate and that, when tomato plants are supplied with reduced nitrogen forms such as ammonium or organic nitrogen, an improved tomato fruit taste can be observed.
