Does microbial resistance to biocides create a hazard to food hygiene?

Numerous reports are available on microbial resistance to antibiotics as well as to biocides. Instances of cross-resistance between these substance groups have been reported. Resistance, which is a genetically determined phenomenon, has to be distinguished from phenotypic adaptation processes, which are not hereditary. Adaptation can be avoided by rigorous cleaning and disinfection, avoiding concentrations of disinfectants below the microbicidal concentration. Resistance phenomena have to be divided into intrinsic and acquired resistance. Intrinsic resistance is the naturally greater resistance of certain microbial species compared to others. The term acquired resistance is used if certain strains of a microbial species differ significantly in their susceptibility to biocides compared to the average of this species. An overview of existing reports of resistance to different biocidal substances is given. In most of these reports, resistance is defined as an elevated minimum inhibitory concentration. The relevance of these data for disinfection processes, where microbicidal concentrations are applied, is discussed. Rotational use of different types of disinfectants, to avoid development of resistance, has been discussed controversially. Because of the unspecific mechanism of action of biocides, and the lack of scientific evidence for its need, rotational use of disinfectants is not recommended. In conclusion the risk of hazards in food production and processing caused by resistance to biocides is regarded as low.     

Addition of milk or caseinophosphopeptides to fruit beverages to improve iron bioavailability?

A study has been made of the influence of caseinophosphopeptides (CPPs) added to a fruit beverage versus milk based fruit beverages upon iron retention, transport and uptake, using a combined simulated gastrointestinal digestion/Caco-2 cell system. Grape concentrate, orange concentrate, and apricot puree were used for sample formulation. Eight samples were assayed with/without added Fe sulphate (3 mg/100 ml fruit beverage) and/or added Zn sulphate (1.6 mg/100 ml fruit beverage), with/without skimmed milk (11% v/v). The addition of milk to fruit beverages exerted a positive effect on iron retention, transport and uptake versus fruit beverages, and this effect was greater than that of CPPs added to soluble fractions of fruit beverages. The addition of CPPs to soluble fractions of fruit beverages improved iron transport. Iron supplementation increased Fe retention, transport and uptake – the effect being more notable in samples with milk. Zinc supplementation did not affect Fe retention, transport or uptake.

How to make pastas healthier?

Pasta is a worldwide produced and consumed food, which presents convenience and low price for consumers; by adding various ingredients, pasta can turn into a functional food with health benefits. Some of these ingredients are whole grains, dietary fiber, antioxidant compounds, and proteins, which are studied and related to a reduced risk for some noncommunicable diseases. In this review, we present the state of the art of the research and development of functional pastas, as well as indicate the paths to use the beneficial ingredients in an effective and whole approach.

Attitudes toward genetically modified organisms in Poland: to GMO or not to GMO?

Genetically modified organisms (GMOs) are a subject of on-going scientific, political and social discussions in Member States of the European Union (EU) concerning their use, benefits, risks, safety and limitations. EU societies have every right to substantive information and education in biotechnology, yet they appear to be misinformed by contradictory views and sensationalism. The present study investigated the level of knowledge and the attitude of citizens of Poland (n = 1021) towards the various uses of GMOs. As found, the use of GMOs in medicine and pharmacy received slight approval from the surveyed group, and was generally perceived as the greatest benefit of GMOs. In contrast, most respondents were against the production and distribution of GM food products on the Polish market or at least favoured the labelling of any product that contains a GM component. The majority of individuals who were willing to accept GM foods also demanded their labelling. The studied group revealed various concerns related to the safety of GM foods, particularly their potential effect on health and the environment. Generally, the greatest scepticism towards GMOs and GM foods was expressed by farmers, medical workers and school teachers while the greatest enthusiasm was shown by students of medical and life sciences, and researchers/academicians. Importantly, most of those taking part in the survey admitted that their knowledge of GMOs was insufficient, expressed a willingness to improve it, and expected school teachers, academicians and researchers to be actively involved in this process. In conclusion, the present study underlines the urgent need to implement evidence-based educational programmes so as to raise the public understanding of the current possibilities and limitations of GMO-based technology in Poland.
