优化芝麻香油粉末油脂的制备工艺。以大豆分离蛋白和辛烯基琥珀酸淀粉钠为复合壁材,芝麻香油为芯材,蔗糖脂肪酸酯和单硬脂酸甘油酯复配作为乳化剂,采用真空冷冻干燥的方法制备芝麻香油粉末油脂。最佳的包埋工艺:大豆分离蛋白与辛烯基琥珀酸淀粉钠质量比为5︰1,壁材与芯材质量比为5︰1,乳化剂含量占2%,固形物含量为35%,此时包埋率为88.2%,表面含油率为7.3%。新型的芝麻香油粉末油脂,克服了芝麻香油易腐败氧化、营养损失等缺点,提高了芝麻油的利用价值。  相似文献

以大豆分离蛋白(SPI)、麦芽糊精和黄原胶为壁材,以蒸馏单甘酯和蔗糖脂肪酸酯为复合乳化剂制备微胶囊化榛仁油粉末油脂,对榛仁油微胶囊化的乳化工艺进行研究.结果表明,较佳的乳化工艺为:壁材比(大豆分离蛋白:麦芽糊精:黄原胶)10:3:1、芯材/壁材1:2、复合乳化剂含量0.4%(单甘酯/蔗糖酯4:6),乳化温度75℃.  相似文献

以阿拉伯胶、大豆分离蛋白、明胶、变性淀粉、羧甲基纤维素作为壁材,以喷雾干燥法制备微胶囊。研究结果表明:变性淀粉、大豆分离蛋白和明胶的产率和效率相对较高。变性淀粉所制备的微胶囊表面光滑;阿拉伯胶大豆分离蛋白和明胶所制备的微胶囊的表面都出现明显的凹陷;羧甲基纤维素所制备的微胶囊的表面呈现褶皱。变性淀粉微胶囊,阿拉伯胶微胶囊,大豆分离蛋白微胶囊,明胶微胶囊,羧甲基纤维素微胶囊的体积平均粒径D(4,3)分别为38.31、37.78、35.00、30.68、21.80μm,且粒径越小,容重越低,壁材是影响微胶囊的物化性质的主要因素。  相似文献

以大豆分离蛋白和麦芽糊精作为复合壁材,单甘酯和蔗糖酯作为复合乳化剂,研究红瓜子油微胶囊化的乳化工艺。结果表明,微胶囊化红瓜子油的最佳乳化条件为:剪切乳化时间5 min、壁材比(大豆分离蛋白与麦芽糊精)1︰3、芯壁比3︰5、复合乳化剂用量0.5%(单甘酯与蔗糖酯质量比4︰6)、乳化温度70℃。在此工艺条件下乳化稳定性为96.5%。  相似文献

研究了非离子型小分子乳化剂卵磷脂、单甘酯和蔗糖酯对以大豆蛋白为主要壁材包埋鸡油脂效果的影响。结果表明3种乳化剂均能降低大豆分离蛋白溶液的表面张力,但是卵磷脂、单甘酯对大豆分离蛋白乳状液的稳定性影响不大,而蔗糖酯可以提高大豆分离蛋白乳状液的稳定性,但是三者的存在均使产品的表面油含量增大,微胶囊效率降低。扫描电子显微镜照片显示使用单甘酯和蔗糖酯的微胶囊产品颗粒表面出现孔隙。而使用卵磷脂的微胶囊产品无此现象。结果说明乳状液油水界面膜的强度是影响微胶囊产品包埋效率的重要因素。  相似文献

选用β-环糊精、变性淀粉HI-CAP100两种碳水化合物和大豆分离蛋白、明胶两种蛋白质类壁材进行组合初步筛选薏苡仁油微胶囊的壁材,再利用单因素试验研究了壁材的配比、芯壁比、乳化液壁材含量、乳化剂添加量对微胶囊包埋率的影响,最后通过L_9(3~4)正交试验确定了壁材的最佳配比。结果表明:大豆分离蛋白/变性淀粉HI-CAP100壁材组合在选用的6组壁材组合中综合表现出了良好的潜质,通过工艺优化得到了微胶囊的最佳配方:大豆分离蛋白占壁材质量分数为5%,芯壁比为60%,壁材含量为30%,乳化剂添加量为1.0%,由此得到的薏苡仁油微胶囊的包埋率为78.52%。  相似文献

猪油与油溶性乳化剂、水溶性乳化剂及壁材等在一定条件下混合均匀、乳化、均质,经喷雾干燥得粉末化猪油.单因素试验表明,最佳乳化条件为:壁材为大豆分离蛋白、β-环状糊精和可溶性淀粉复合使用,亲油乳化剂为单甘酯,亲水乳化剂为Tween 60,HLB值为6~8,乳化剂用量2%~3%,稳定剂明胶用量1.6%~2.0%,加水量10~15倍于基料,乳化温度70℃,乳化时间20min.在其他条件不变的情况下,通过正交试验研究了乳化剂用量、HLB值、明胶用量和壁材对粉末化猪油的溶解度、产品结块状态的影响.研究结果表明,制备40%含油量的粉末化猪油的最佳配方为:乳化剂用量3%,HLB值6,明胶用量2.3%,大豆分离蛋白、β-环状糊精和可溶性淀粉复合作壁材.  相似文献

以脂肪酸配比合理的混合植物油为芯材,大豆分离蛋白(SPI)和麦芽糊精(MD)为复合壁材,大豆卵磷脂为乳化剂,采用喷雾干燥工艺制备微胶囊化营养油。利用中心组合设计(CCD)对微胶囊营养油的配方进行优化,得到营养油微胶囊的最佳配方为:芯材质量分数为27.28%,固形物质量分数为39.74%,大豆分离蛋白质量分数为40.00%,卵磷脂质量分数为1.47%。在此条件下,得到MEE和MEY的理论最大值分别为91.188%和96.1129%,期望度为0.894。  相似文献

以荆芥油为芯材,以大豆分离蛋白为壁材,利用乳化和喷雾干燥相结合的方法制备粉末荆芥油。确定的最佳制备工艺条件为:采用单甘酯加吐温-60(HLB=8·0)为乳化剂,添加量为1·5%,乳化温度80℃,明胶添加量2%,荆芥油与壁材大豆分离蛋白的比例为0·5:1,乳状液总固形物浓度为30%。喷雾干燥进风温度210℃,出风温度85℃。该条件下制备的荆芥油粉末微胶囊化效率达88·1%,表明该法是一种适宜的粉末荆芥油制备方法。   相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

An internet website (http://cpf.jrc.it/smt/) has been produced as a means of dissemination of methods of analysis and supporting spectroscopic information on monomers and additives used for food contact materials (principally packaging). The site which is aimed primarily at assisting food control laboratories in the European Union contains analytical information on monomers, starting substances and additives used in the manufacture of plastics materials. A searchable index is provided giving PM and CAS numbers for each of 255 substances. For each substance a data sheet gives regulatory information, chemical structures, physico-chemical information and background information on the use of the substance in particular plastics, and the food packaging applications. For monomers and starting substances (155 compounds) the infra-red and mass spectra are provided, and for additives (100 compounds); additionally proton NMR are available for about 50% of the entries. Where analytical methods have been developed for determining these substances as residual amounts in plastics or as trace amounts in food simulants these methods are also on the website. All information is provided in portable document file (PDF) format which means that high quality copies can be readily printed, using freely available Adobe Acrobat Reader software. The website will in future be maintained and up-dated by the European Commission's Joint Research Centre (JRC) as new substances are authorized for use by the European Commission (DG-ENTR formerly DGIII). Where analytical laboratories (food control or other) require reference substances these can be obtained free-ofcharge from a reference collection housed at the JRC and maintained in conjunction with this website compendium.  相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties.  相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials.  相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance.  相似文献
