The study aimed to determine the relationship between perceived mineral character in wine and wine chemical composition. We investigated the sensory properties and chemical composition of sauvignon blanc wines from two major sauvignon-producing countries, New Zealand and France. Sensory experiments employing 16 wines (8 French, 8 New Zealand) were conducted in Marlborough, New Zealand and in three regions of France, namely Bordeaux, Burgundy, and the Sancerre/Loire region. Wine professionals (31 New Zealanders and 32 French professionals) sensorially characterised the 16 wines under three conditions, bouquet only (ortho-nasal olfaction), palate only (nose clip condition), and full tasting (global condition: ortho-nasal olfaction, retronasal olfaction, taste, trigeminal stimulation). Sensory data from the global condition only are reported in this article. Physical and chemical analyses conducted on all wines included wine standard parameters, elemental composition, volatile aroma composition, and measures of organic acids. Major results demonstrate that (i) on average French and New Zealand wines were perceived similarly in intensity of mineral character, although judgments to individual wines differed as a function of participant culture; (ii) French and NZ participants drew on different information to make their sensory judgments; and (iii) several aspects of wine composition associated positively with perception of mineral character while others associated negatively, the significant associations differing as a function of participant culture.  相似文献

The existence of a Chardonnay wine concept was explored in two experiments. In the first experiment, 28 Chardonnay wine experts assessed in terms of a score the degree of representativeness of 48 white wines according to their own Chardonnay wine concept. The samples were 29 wines made from Chardonnay grapes and 19 wines made from other grape varieties (Aligoté, Melon de Bourgogne, Sylvaner, Sauvignon blanc, Chenin, Marsanne and Pinot blanc). Two assessment conditions were conducted: orthonasal and global (orthonasal plus retronasal and mouthfeel perceptions). Globally, scores were higher for Chardonnay wines than for non-Chardonnay ones and the consensus among experts demonstrated the existence of a shared Chardonnay wine sensory concept. The global evaluation led to a better discrimination between Chardonnay and non-Chardonnay wines, indicating that the sensory concept includes olfactive as well as taste and mouthfeel sensations. In the second experiment, the perceptive similarities of a subset of 18 wines (nine among the less representative and nine among the most representative) were studied. Twenty consumers freely sorted the wines according to odour similarity. Results were analysed by means of multidimensional scaling. Except for an extreme wine exhibiting very low representativeness, no clear separation of wines according to a Chardonnay wine concept was observed on the MDS space. However, a regression analysis showed significant correlations between representativeness scores and the first and third dimensions of the MDS space. This suggests that the Chardonnay wine concept is an experts' construct, elaborated by specific weighing of sensory features, partially based on perceptive similarities.  相似文献

The objective of this work is measuring the effect of different volatile extract compositions on the perception of taste, astringency, global intensity and persistence of wine. Six Spanish wines, two from Chardonnay and four from Tempranillo grapes, all of them showing different chemical and sensory characteristics, were selected. Wines were separated into volatile and non-volatile fractions by solid phase extraction and lyophilisation and further liquid extraction, respectively. Eighteen “reconstituted wines” were prepared, combining different volatile extracts and different non-volatile matrices and adjusting ethanol content to 12% (v/v), and were further described by a specifically trained sensory panel. Taste attributes (sweetness, acidity, bitterness), astringency, aroma intensity, global intensity and persistence were assessed in both, original and “reconstituted” wines by using a numerical category scale. The sensory properties of the original wines were retained by their corresponding “reconstituted samples”. The sensory assessment of the “reconstituted wines” showed that the addition of volatile fruity extracts from white wines brought about a decrease in astringency and bitterness and an increase in sweet perception in all cases. While global intensity and persistence of white wine matrices were also increased, they did not change in red wine matrices, which suggests that the volatile fraction plays only a secondary role in these attributes of red wines. Similarly, the effects of replacing the volatile fraction of a red wine by volatile extracts from other red wines were small and inconsistent, which confirms that taste and astringency are primarily driven by non-volatile molecules in these wines.  相似文献

Complexity is often stated as a mark of wine quality but there are no quantitative data supporting this assumption. The effect of partial alcohol reduction on the perceived complexity, temporality of sensations and liking of a Syrah wine was investigated.An Australian Syrah wine was partially dealcoholized using the reverse osmosis technique to obtain five wines with different alcohol content (13.5–8%). 71 French wine consumers evaluated their liking for these wines as well as the perceived intensity of overall complexity and eight items reported to be linked to perceived complexity in wine (familiarity, persistence, etc.) using continuous scales, anchored with pictures (Medel, Viala, Meillon, Urbano, & Schlich, 2009). In addition, eight trained panelists described temporality of sensations in the same wines with the Temporal Dominance of Sensations (TDS) method. The overall complexity scale was well understood by consumers with a significant discrimination of wines according to their alcohol content. Wines with higher alcohol content were perceived as more complex, persistent, strong and with many aromas. They were associated to more complex temporal sensory profiles, with many sensations that blend in-mouth along time.  相似文献

Understanding quality perception requires focusing both on product proprieties and consumers’ representations. The goal of this study was to access the representations of perceived extrinsic wine quality of consumers from two different wine regions in two European countries with an important wine tradition: La Rioja-RJ-(Spain) and Côtes du Rhône-CdR-(France).Twenty commercial red wines (ten from RJ and ten from CdR) were evaluated in terms of quality by means of a categorization task. Ninety-five French and 93 Spanish consumers had to categorize the 20 wines according to four levels of quality going from very low to very high quality.Three clusters of French and two of Spanish consumers have been identified. Country-of-origin of wine arises as the most important extrinsic cue for less-involved French and Spanish consumers, while more-involved consumers with higher knowledge in wine are able to interpret and use a wider range of cues. Consumers’ knowledge, involvement and nationality appear to be good predictors of quality perception.These results are relevant for the field of sensory analysis in that they help understanding the construction of quality perception. The wine industry can benefit also from these results, especially when exporting wines. This cross-cultural study may help them to develop marketing strategies able to enhance the quality perception of wines and to make use of different extrinsic factors.  相似文献

Backgrounds and Aims: Individual differences in the perception of wine flavour may contribute to variation in wine consumer behaviour. Two phenotypes shown to associate with the intensity of oral sensations elicited by simple solutions are thermal taster status (TTS) and responsiveness to the bitterant 6-n-propylthiouracil (PROP). Thermals tasters (TTs) perceive ‘phantom’ tastes when the tongue is thermally stimulated. Here, we investigate the effect of TTS and PROP responsiveness on the perceived intensity of oral sensations elicited by wine. Methods and Results: Two white (2008 Pinot Grigio, Italy and 2007 Gewürztraminer, Canada) and two red (2007 Valpolicella, Italy and 2007 Cabernet Sauvignon, Chile) wines were assessed by 20 TTs and 20 thermal non-tasters (TnTs). TTs rated the intensities of sweet, sour, bitter, astringent and overall flavour higher than TnTs, and males (17) tended to rate these sensations higher than females (23). Unexpectedly, PROP responsiveness was not associated with intensity ratings of oral sensations for any wine (P(r) > 0.05). Neither TTS, PROP responsiveness, nor gender was linked with liking scores of the wines. Conclusion: TTS may be an important determinant of individual differences in oral perception of wine. Significance of Study: Understanding how individuals differ in their perception of wine can assist with product development, formulation and marketing.  相似文献

Though the gastronomic sector recommends certain wine–cheese associations, there is little sensory evidence on how cheese influences the perception of wine. It was the aim of this study to dynamically characterize 4 wines as they would be perceived when consumed with and without cheese. The tasting protocol was based on multi‐intake temporal dominance of sensations (TDS) coupled with hedonic rating. In the 1st session, 31 French wine and cheese consumers evaluated the wines (Pacherenc, Sancerre, Bourgogne, and Madiran) over 3 consecutive sips. In the following sessions, they performed the same task, but eating small portions of cheese (Epoisses, Comté, Roquefort, Crottin de Chavignol) between sips. All cheeses were tasted with all wines over 4 sessions. TDS data were mainly analyzed in terms of each attribute's duration of dominance by analysis of variance, multivariate analysis of variance, and canonical variate analysis. Results showed that cheese consumption had an impact (P < 0.1) on dominance duration of attributes and on preference for most wines. For example, in Madiran, all cheeses reduced dominance duration (P < 0.01) of astringency and sourness and increased duration of red fruit aroma. Although the number of consumers was small to make extended general conclusions on wine's preference, significant changes were observed before and after cheese intake.  相似文献

The objective of this study was to assess the influence of the interaction among alcohol, tannins, and mannoproteins on the aroma, flavor, taste, and mouthfeel characteristics of selected commercial Merlot wines. Merlot wines (n = 61) were characterized for wine chemistry parameters, including pH, titratable acidity, alcohol, glucose, fructose, tannin profile, total proteins, and mannoprotein content. Agglomerative clustering of these physicochemical characteristics revealed 6 groups of wines. Two wines were selected from each group (n = 12) and profiled by a trained sensory evaluation panel. One wine from each group was evaluated using the electronic tongue (e‐tongue). Sensory evaluation results showed complex effects among tannins, alcohol, and mannoproteins on the perception of most aromas, flavors, tastes, and mouthfeel attributes (P < 0.05). The e‐tongue showed distinct differences among the taste attributes of the 6 groups of wines as indicated by a high discrimination index (DI = 95). Strong correlations (r2 > 0.930) were reported between the e‐tongue and sensory perception of sweet, sour, bitter, burning, astringent, and metallic. This study showed that interactions among wine matrix components influence the resulting sensory perceptions. The strong correlation between the e‐tongue and trained panel evaluations indicated the e‐tongue can complement sensory evaluations to improve wine quality assessment.  相似文献

ABSTRACT:  During sensory evaluation assessments, visual masking techniques are frequently employed to disguise color differences between samples and minimize perceptual bias. Particularly in wine, the impact of these masking techniques on panelist evaluations has not been well studied. The objective of this study was to study the influence of visual masking techniques on the aroma and flavor assessment of 2 red wines and observe the impact of these techniques on trained and consumer sensory panels. Specific masking techniques included (1) blue wine glass/white illumination; (2) clear glass/red illumination; and (3) clear glass/white illumination. Ten panelists were trained to recognize 7 aroma and flavor attributes, while consumer panelists ( n = 80) evaluated attributes and liking. For the trained panel, the visual masking technique affected only perceived spicy flavor of Syrah ( P ≤ 0.05), with the clear glass/red illumination resulting in more intense spicy flavor compared to the other 2 conditions. Principal components analysis showed that for the 2 red wines evaluated by the trained panel, red illumination resulted in higher spicy attributes and perceived astringency while wines served in blue wine glasses were higher in perceived astringency. For the consumer panel, red illumination resulted in wines higher in perceived astringency and blue wine glasses resulted in wines higher in perceived flavor liking. These results indicated that the visual masking techniques may influence both trained and consumer panel evaluation of aroma and flavor attributes of red wine. However, beyond red wine, this study makes the larger point that the choice of masking technique does impact sensory evaluations.  相似文献
