One potential source of starch is the tropical legume baby lima bean (Phaseolus lunatus) that contains around 56—60% of starch. The objectives of this work were to evaluate this starch's physicochemical and functional properties and compare it with the properties of other starches. The chemical composition of lima bean starch was: 10.16% moisture, 0.20% protein, 0.67% fiber, 0.14% ash, 0.54% fat, 98.43% starch and 0.013% phosphorus. The amylose content was higher (32.7%) than that of other cereal and tuber starches but similar to other legume starches. The average granule size (diameter 17.9 μm) was comparable to that of corn starch and of other legume starches. The granule was heterogeneous, presenting an oval shape. The gelatinization temperature was 80.16 °C (range 75—87 °CC), which is similar to other legume starches but higher than that of corn starch. The molecular size (alkali number 3.22), was smaller than that of potato starch but similar to that of corn starch. Compared to corn starch, the gels were firmer and presented a higher degree of retrogradation even at high concentrations. The water solubility was positively correlated with the temperature: i.e., 1.8, 3.4, 8.5 and 12.3% at 60, 70, 80 and 90 °C, respectively. The swelling power had the same behaviour: 2.6, 3.3,12.8 and 19.9 g of water/per gram of starch at 60, 70, 80 and 90 °C, respectively. The amylogram showed that the viscosity (680 Brabender units) and stability were higher than those of commercial corn starch (252 Brabender units). The use of this starch in the preparation of syrups with high glucose contents, as well as in baked and canned products that require heating, is suggested.  相似文献

The proximate, nutritional and functional properties of raw and electron beam-irradiated (0–30 kGy) Mucuna seeds were investigated. Irradiation increased crude protein and crude carbohydrates significantly than crude lipid, crude fibre and energy. Raw seeds were rich in minerals and were not affected by irradiation except for magnesium and phosphorus. Amino acids of raw seeds were comparable to soyabean and FAO/WHO reference pattern and except for 30 kGy, no significant changes were seen in amino acid profile. Raw seeds were rich in unsaturated fatty acids and some of them decreased on irradiation, while linoleic acid steadily elevated (0–14.35 mg g−1 lipid). In vitro protein digestibility was dose dependent and significantly increased up to 15 kGy. Water and oil absorption capacities and foaming capacity significantly increased on irradiation, while protein solubility decreased (15 and 30 kGy) with an improvement of gelation property of seed flour. The cooking time of seeds significantly reduced on irradiation.  相似文献

以红小豆为材料,采用水磨法提取红小豆淀粉,以玉米淀粉、红薯淀粉作对照,对其颗粒特性以及糊化黏度特性等理化特性进行研究。实验结果表明,红小豆淀粉颗粒呈椭圆卵形,颗粒完整,表面光滑,粒径较长,偏光十字明显,具有类似树木年轮的轮纹结构,脐点位于颗粒中心。与对照相比,红小豆淀粉具有较低的糊化温度,较高的糊黏度,较差的冷热稳定性,易发生老化。pH、蔗糖对红小豆淀粉糊的黏度性质有影响。  相似文献

探讨猫豆乙醇提取物(MPEE)对胰岛素抵抗3T3-L1脂肪细胞糖脂代谢的影响。用含高浓度葡萄糖和高浓度胰岛素的DMEM培养基制备胰岛素抵抗3T3-L1脂肪细胞模型。模型细胞经不同浓度MPEE处理24 h后检测培养液中的葡萄糖消耗量、游离脂肪酸(FFA)、甘油、三酯甘油(TG)及肿瘤坏死因子(TNF-α)和白介素6(IL-6)水平。实时定量PCR(q RT-PCR)检测细胞中葡萄糖转运蛋白(GLUT-4)、激素敏感脂肪酶(HSL)和炎性介质[TNF-α、IL-6、单核细胞趋化蛋白-1(MCP-1)、C反应蛋白(CRP)]的m RNA表达。MPEE可促胰岛素抵抗模型细胞对葡萄糖的消耗,降低细胞中TG含量,减少FFA和甘油溢出。同时,MPEE还能抑制模型细胞TNF-α和IL-6分泌,及炎性介质(TNF-α、IL-6、MCP-1、CRP)的m RNA表达。此外,MPEE能上调细胞中GLUT-4的表达,并降低HSL的m RNA表达。结果显示,MPEE可有效刺激3T3-L1脂肪细胞消耗葡萄糖,促TG分解,减少FFA和甘油的溢出。调控细胞糖、脂代谢来改善胰岛素抵抗,并降低胰岛素抵抗发生时的炎症水平。  相似文献

Velvet bean (Mucuna pruriens) protein hydrolysates were produced with gastrointestinal enzymes. Functional properties such as nitrogen solubility, emulsifying capacity and emulsion stability, foam capacity and stability of the hydrolysates were determined. Angiotensin I-converting enzyme inhibitory, antioxidant and antithrombotic capacities were evaluated to determine the biological activity of hydrolysates. For pepsin, degree of hydrolysis (DH) increased sharply between 5 min (22.33 %) and 60 min (28.07 %), respectively, with a maximum DH of 33.50 % (90 min). For pancreatin, DH increased sharply between 5 min (25.08 %) and 90 min (34.92 %), respectively, with a maximum DH of 37.23 % (120 min). For sequential system pepsin–pancreatin, DH increased sharply between 5 min (25.21 %) and 60 min (32.82 %), respectively, with a maximum DH of 34.14 % (120 min). Hydrolysates with the lowest DH and the highest DH were selected to assess the functional and biological potential. Mucuna pruriens limited hydrolysates can be considered a useful food additives to provide functional properties, while M. pruriens extensive hydrolysates can be used as nutraceutical ingredients.  相似文献

Preparation and physicochemical properties of winged bean starch have been studied. Gelatinization temperature range was 60–70°C and it exhibited single stage swelling and low solubility. The extensive solubility in dimethylsulfoxide may be due to heterogeneous bonding forces within the granule. The amylolytic susceptibility of native and gelatinized starch with human salivary α-amylase and glucoamylase was studied. The starch was found to be non-ionic. Nutritional composition, antioxidant activity, alpha amylase inhibitory activity and fermentation ability of Rawana and Oshada FM varieties were measured against Basmati and BG-300 rice varieties. The results showed that both soluble and insoluble dietary fiber (DF) contents were higher (P<0.05) in Rawana and Oshada than Basmati and BG-300. Moreover, soluble and insoluble DF contents of Oshada were higher (P<0.05) than Rawana. Total flavonoid content (TFC) of Rawana was similar to Basmati and BG-300. However, Oshada had the highest TFC. Total phenolic contents (TPC) of both FM varieties were higher (P<0.05) than both rice varieties. Oshada had a higher (P<0.05) TPC than Rawana. Both FM varieties showed a higher (P<0.05) 2, 2-diphenyl-1-picrylhydrazyl (DPPH) scavengingactivity than BG-300 and Basmati. Similarly, 2, 2’-azino-bis-3-ethylbenzothiazoline-6-sulphonic acid(ABTS) scavenging activity was higher (P<0.05) in both FM varieties than Basmati and BG-300. Furthermore, ABTS scavenging activity was higher (P<0.05) in Oshada than Rawana. Alpha amylase inhibitory activity of Rawana and Oshada were higher (P<0.05) than Basmati and BG-300. However, the IC50 values of both FM varieties were greater (P<0.05) than acarbose which is a drug used to treat type II diabetes. The results of the microbial fermentation study revealed that Rawana and Oshada produced a higher amount of hydrogen and carbon dioxide than rice varieties during the incubation at 39 °C with unadapted caecal microflora. Therefore, these results indicate that both FM varieties, particularly Oshada variety has more beneficial nutritional and health related protective effects than Basmati and BG-300 rice varieties in vitro.  相似文献

The starch and protein content of substituted and complete triticales were quantitated and evaluated for their contribution to the functional properties of flours by means of the amylograph, farinograph, and the breadmaking test. Although no clear differences were observed in the starch and protein contents of the two triticale genotypes, a detailed analysis of their components revealed compositional differences between them. The amylose content was lower in the substituted triticales Duron S and Alamos 83 than in the complete types Tarasca 87 and Brumby II (P ≤ 0.05). Among the protein fractions, only the albumin and the total polymeric protein, although with an opposite effect, significantly contributed to the rheological properties of triticale doughs evaluated with the farinograph and in the breadmaking test. The SDS-PAGE test showed that the substituted triticales contained an additional HMW-GS band that was not observed in the complete triticales. Amylograph peak temperatures and maximum viscosities, farinograph development times, and loaf volumes of triticale doughs were higher in substituted triticale flours than those of the complete ones. This study demonstrated that the triticale genotypes can be differentiated not only by quantitating their starch and protein composition, but also by testing their functional dough properties.  相似文献

Starch has been isolated and purified from the moth bean. The yield was about 33.5% of starch from the whole legume seeds. The amylose content of the starch was found to be 26.4%. The gelatinization temperature range was 62–72 °C. The starch exhibited single stage swelling and low solubility pattern. The extensive solubility in dimethylsulfoxide may be attributed to heterogeneous bonding forces within the granule. Some nutritional and anti-nutritional characteristics of mucuna (Mucuna utilis (Wight) Burck) bean seeds were studied. The mature seeds contained 264 g crude protein, 63 g crude fibre, 41 g crude fat, 37 g ash and 595 g carbohydrates kg?1 DM. The essential amino acid profile compared well with the FAO/WHO scoring pattern except for a deficiency of sulphur-containing amino acids. Mineral composition was similar to those reported for most tropical grain legumes. Raw mucuna seed samples contained moderately high levels of anti-tryptic activity (2170 trypsin units inhibited g?1 DM), but this was completely destroyed by cooking. The other anti-nutritional factors (phytate, cyanide and tannins) are probably of little nutritional significance provided that the beans are properly processed. The in-vitro protein digestibility of raw and cooked beans were 71·5 and 80·3 %, respectively. In view of the high L-DOPA contents reported in some mucuna cultivars, overconsumption of mucuna beans should be viewed with some caution until suitable processing methods are developed.  相似文献

Great Northern bean starch, irradiated at doses of 2.5–20 kGy, had increased free and total acidity, concomitant with a pH decrease from 6.9 to 3.9 and a rapid increase of reducing value. The swelling power of the bean starch decreased with irradiation dose. A rapid increase of water and 80% ethanol solubility at 25°C was observed at doses ≥10 kGy. No differences were detected on damaged starch or changes in X-ray diffraction pattern. ESR spectra of the irradiated bean starch after 9 and 11 mo storage (?40°C) showed the presence of long life radicals, which could be stabilized after adding water.  相似文献

Starch was extracted from dry chips of three varieties of cassava using wet milling and dry milling methods. The physicochemical and functional properties were compared with those from fresh root. The starch obtained exhibited lower peak viscosities, breakdowns and setbacks, and higher pasting and peak temperatures than that from fresh root. Most thermal properties (onset and peak temperatures of gelatinization and retrogradation; conclusion temperatures, enthalpies and peak height indices of retrogradation; and degree of retrogradation) were found to be higher than those of fresh‐root starch. Moreover, swelling power, paste clarity and freeze‐thaw stability of the former were inferior to those of the latter. Both types of starches exhibited increased rate of syneresis with increase in freeze‐thaw cycles. Differences observed in properties of starches derived from dry chips by wet and dry millings were very minimal. No indication of major change in granule structure was noted for dry‐chip starch that would alter the properties relative to fresh root starch. Higher fiber content and annealing due to exposure to heat and moisture of the former accounted for most of the variations of properties as compared to the latter. With the advanced technology used in starch manufacturing industry today it would be possible to obtain starch from dry chips with similar quality from fresh root. This would enable the industry to overcome the cycle of glut and low season, and allow them to remain open for longer period of time in a year.  相似文献

研究超声波处理对芸豆蛋白(KBP)理化和功能性质的影响.分别探讨了不同超声波功率对芸豆蛋白的紫外光谱、荧光光谱等理化性质及溶解度、吸油性、起泡性能和乳化性能等功能性质的影响.结果表明,超声波处理对芸豆蛋白的紫外光谱和荧光光谱有明显的影响;芸豆蛋白的溶解度随超声波功率增加而逐渐提高,芸豆蛋白400 W时的起泡性和起泡稳定性、500 W时的乳化性和乳化稳定性和200 W时的吸油性最高.说明适宜的超声波功率水平能够改善芸豆蛋白的理化性质和功能性质.  相似文献

The effect of various treatments, such as soaking in different solutions, cooking of raw and soaked seeds, autoclaving of raw and soaked seeds, dehusking of water‐soaked seeds, fermentation of water‐soaked/dehusked seeds, autoclaving of fermented seeds, dry heating of raw seeds and germination, on the levels of mono‐ and disaccharides and α‐galactosides in two varieties of an Indian tribal legume, mucuna bean (Mucuna pruriens var utilis), was investigated. The levels of raffinose, stachyose and verbascose decreased under various treatments. Among the different soaking and cooking/autoclaving treatments, tamarind pulp extract soaking and sodium bicarbonate solution soaking followed by autoclaving procedures were the most effective for removing α‐galactosides (68.4–70.9 and 68.5–68.9% respectively). The lowest reduction of α‐galactosides (8.4–17.2%) was observed in dry‐heated samples. Germination for more than 72 h resulted in the highest reduction of total α‐galactosides (93.6 and 89.6% in white and black varieties respectively). During the germination process, glucose, fructose and sucrose concentrations increased significantly. © 2001 Society of Chemical Industry  相似文献

The antioxidant activities of a methanolic extract of mucuna beans (Mucuna pruriens var utilis) and several non‐protein amino/imino acids, namely L ‐3,4‐dihydroxyphenylalanine (L ‐dopa), L ‐3‐carboxy‐6,7‐dihydroxy‐1,2,3,4‐tetrahydroisoquinoline (compound I), (?)‐1‐methyl‐3‐carboxy‐6,7‐dihydroxy‐1,2,3,4‐tetrahydroisoquinoline (compound II) and 5‐hydroxytryptophan (5‐HTP), were evaluated. By virtue of their hydrogen‐donating ability, all the tested compounds and the mucuna seed extract showed excellent reducing power, with the highest values being recorded for L ‐dopa in a dose‐dependent manner. Similarly, as compared with synthetic antioxidants (BHT and BHA) and quercetin, all the tested compounds and the seed extract were found to be more potent in free radical‐scavenging activity (P < 0.05) against α,α‐diphenyl‐β‐picrylhydrazyl (DPPH?) radicals. Hydroxyl radicals (OH?) and superoxide anion radicals (O2??) were effectively scavenged by the tested compounds, with the exception that no scavenging activity of 5‐HTP was observed on (O2??) up to a concentration of 2 mg ml?1, as was also the case for BHA. Among the tested non‐protein amino/imino acids and seed extract the highest peroxidation‐inhibiting activity (95%) was recorded for 5‐HTP. On the other hand, in the linoleic acid/β‐carotene‐bleaching system, L ‐dopa, compound I and compound II acted as pro‐oxidants, whereas the seed extract showed only weak antioxidant activity as in the linoleic acid emulsion system. Fatty acids, protein and amino acids of African oil bean seed (Pentaclethra macrophylla) and velvet beans (Mucuna uriens) were studied. Crude protein of the defatted seeds were 341g and 196g per kilogram dry matter and the ether extract was 46 and 8%, respectively, for oil bean seed and mucuna. Essential amino acids composition compared fairly with that of isolated soybean protein. Lysine was high at 66.5 and 66.4g/kg crude protein (nitrogen × 6.25) for oil bean seed and mucuna, respectively. Methionine was low but cystine was high. The fat had a high content of saturated fatty acids. It is suggested that the seeds may be a potential source of protein and oil.  相似文献

选取河北崇礼、青海马牙、云南白皮豆、云南透心绿4种高产优质蚕豆品种,对其淀粉的理化性质进行分析研究。结果表明:蚕豆淀粉颗粒呈(椭)圆或不规则球形、表面光滑,粒径在12~32μm,24h沉降积为30~32mL,透明度高于谷物淀粉、低于马铃薯淀粉,蚕豆淀粉一次冻融循环后即开始失水,持水力高于小扁豆和豌豆淀粉。蚕豆淀粉中直链淀粉含量(28%~34%)高于小扁豆和鹰嘴豆淀粉。  相似文献

Okenia hypogaea (Schlech. & Cham.) belongs to the family of the Nyctaginacea, which produces a seed that is composed mainly of starch, the probable origin of Okenia hypogaea is Mexico. The aim of this work was to isolate the starch from Okenia hypogaea and to evaluate its chemical composition, along with some physicochemical and functional properties. Okenia gave a starch yield of 36 %; this starch had an amylose content of 26.1 %, with a fat content similar to corn starch, but with a higher ash fraction. Okenia starch possessed a small granule size (1—3 μm), the same as amaranth starch, with similar characteristics of stability and clarity of pastes as corn starch. At 60 °C the water retention capacity of okenia starch was higher than that of corn starch, but at higher temperatures an inverse pattern was found. When the temperature in the experiments increased, solubility and swelling values increased; okenia starch had higher swelling values than corn starch over the range of temperatures assayed. Okenia starch also presented a lower freeze‐thaw stability than corn starch on the first two cycles. Overall, it was concluded that due to its physicochemical and functional properties, it is worthwhile to test the use of okenia starch in the cosmetic and food industry.  相似文献

以9个品种绿豆淀粉为研究对象,研究了绿豆淀粉的化学组成及糊化特性、溶解度、膨胀度和冻融稳定性等功能特性,并分析了直链淀粉含量与功能特性的相关性。结果表明,不同品种绿豆淀粉直链淀粉含量不同,其分布范围为33.10%~44.08%;不同品种淀粉糊化特性参数间有明显差异;潍绿4号和中绿1号绿豆淀粉峰值粘度显著高于其他品种(p0.05),安绿8号具有最低破损值(p0.05),毛绿豆和安绿092具有较低的回生值。绿豆淀粉的溶解度和膨胀度与温度有关,均随温度的增加而增大。不同品种绿豆淀粉糊经一次冻融后析水率均较高,随冻融循环次数的增加,析水率均逐渐增大。相关性分析表明,直链淀粉含量与淀粉糊的最终粘度和回生值之间存在显著正相关(r=0.674,r=0.725;p0.05),与膨胀度之间具有极显著负相关关系(r=-0.805,p0.01)。  相似文献

Mucuna bean (Mucuna pruriens) starch was isolated and subjected to chemical modification by oxidation and acetylation. The proximate analysis of the non‐starch components of the native starch on a dry weight basis was 92 g kg?1 moisture, 5 g kg?1 ash, 2 g kg?1 fat, 7 g kg?1 crude fibre and 19 g kg?1 protein. Chemical modification reduced the values for all the non‐starch components except the moisture level. For all the samples, swelling power and solubility increased as the temperature increased in the range 50–90 °C. The swelling power of mucuna native starch (MNS) and mucuna acetylated starch (MAS) increased with increasing acidity and alkalinity, while that of mucuna oxidised starch (MOS) only increased with increasing pH in the acidic range. The maximal solubility of all the starches was observed at pH 12. All the starch samples absorbed more oil than water. The lowest gelation concentration followed the trend MAS < MNS < MOS. Chemical modification reduced the gelatinisation temperature (Tp), while peak viscosity (Pv), hot paste viscosity (Hv) and cold paste viscosity (Cv) decreased after oxidation but increased following acetylation. The setback tendency of the native starch was reduced significantly after chemical modification. However, the breakdown value of MNS, 65 BU (Brabender units), was lower than that of MOS (78 BU) but higher than that of MAS (40 BU). Differential scanning calorimetry studies of gelatinisation and retrogradation revealed that chemical modification reduced the onset temperature (To), peak temperature (Tp) and conclusion temperature (Tc). Oxidation and acetylation reduced the gelatinisation and retrogradation enthalpies of the native starch. The enthalpy of retrogradation of the starches increased as the length of storage increased.
