Dehydration of Garlic Slices by Combined Microwave-Vacuum and Air Drying   总被引:10,自引:0,他引:10  
Combination of microwave-vacuum drying and air drying was investigated as a potential mean for drying garlic slices. The sample was dried by microwave-vacuum until the moisture content reached 10% (wet basis), and then by conventional hot-air drying at the temperature of 45°C to final moisture content less than 5% (wet basis). Pungency, color, texture, and rehydration ratio of garlic slices dried by this method were evaluated and compared with those dried by freeze drying and conventional hot-air drying. The comparison showed that the quality of garlic slices dried by the current method was close to that of freeze dried garlic slices and much better than that of conventional hot-air dried ones. The lab microwave-vacuum dryer which the materials to be dried could be rotated in the cavity was developed by the authors.  相似文献

In this article, the quality changes of the granular fruits and vegetables dried by vacuum microwave drying, freeze drying, hot air drying, and combined hot air–vacuum microwave drying are investigated, and the quality parameters compared on the basis of vitamin C and chlorophyll contents, shrinkage and rehydration capacity, color, texture, and microstructure changes. The quality parameters of products dried by vacuum microwave drying are slightly lower than those obtained by freeze drying, but much better than those obtained using conventional hot air drying. The quality characteristics of product dried by combined hot air–vacuum microwave are significantly improved compared to those simply hot air–dried.  相似文献

Microwave-vacuum drying, and combined microwave-vacuum with air or vacuum drying were investigated as potential methods for drying green and high-carotenoid vegetables of Chinese chive leaves and carrot slices. The samples were dried by microwave-vacuum until the moisture content reached about 20% (wet basis), and then by conventional air drying at the temperature of 45-50°C or conventional vacuum drying at the temperature of 55-60°C or by continued microwave-vacuum drying at lower power level to final moisture content about 6% (wet basis). The carotenoid retention of carrot slices and chlorophyll retention of Chinese chive leaves, dried by these methods, was evaluated and compared with those dried by freeze-drying and conventional hot-air drying. The comparison showed that the carotenoid retention of carrot slices and chlorophyll retention of chive leaves, dried by the current methods, was very close to or even as much as those dried by freeze-drying and much better than those dried by conventional hot-air. Blanching was not necessary when using microwave-vacuum drying or combined microwave-vacuum with conventional hot-air drying or vacuum drying, because the activity of enzymes which were responsible for the degradation of color was greatly reduced with extremely rapid decreasing of moisture, and because oxygen was absent in microwave-vacuum drying.  相似文献

Effects of impregnated calcium ion and microwave (MW) power on texture, rehydration, shrinkage, color, and other selected indexes of freeze-dried apple slices were investigated. Apple slices were dried by freeze drying and microwave freeze drying (MFD) separately. Vacuum impregnated (VI) and non-vacuum-impregnated apple slices were dried at various microwave power levels. Non-vacuum-impregnated apple slices were found to preserve their mechanical structure better than the VI-treated ones. Microwave application resulted in decreased protopectin fraction as well as total pectin content. As microwave power varied from 1.2 to 2.0 W/g, the total pectin content decreased from 0.810 to 0.521 (expressed as g galacturonic acid/100 g fresh sample). The effect of microwave power in decreasing the drying time was significant. The color of MFD apple slices varied to a minor extent with MW power level over the range of parameters studied.  相似文献

The dried apple is used in the preparation of weaning foods and bakery products. The current drying processes, especially hot air (HA) drying, still face the problem of longer processing time and product quality degradation. The low-humidity air (LHA) drying can be an option to retain product quality in heat-sensitive food such as apple. The present work focuses on the effect of pretreatment of apple slices with potassium metabisulfite and infrared (IR) waves on drying characteristics when subjected to LHA drying and comparing the product quality with conventional hot air and freeze drying (FD). Pretreatment with IR waves reduced the drying time by nearly 23 and 17% in LHA and HA drying, respectively. The results indicated that IR-treated and LHA-dried slices retained nearly 82–90 and 72–74% of ascorbic acid and total phenolic content, respectively and was comparable to FD slices. The drying time for LHA was nearly 37% lesser than that for HA drying. LHA-dried apple slices had better color and rehydration ratio compared to FD- and HA-dried slices.  相似文献

Infrared (IR) blanching and IR assisted hot air (hybrid) drying of carrot slices were attempted and their performance (processing time, retention of vitamin C and rehydration characteristics) was compared with conventional blanching and drying techniques. Intermittent heating of carrot slices using IR radiation (chamber maintained at 180–240 °C) for 8–15 min resulted in desired level of enzyme inactivation. The time required for blanching of carrot slices (10 mm thick) using hot water, steam and IR radiation was 5, 3 and 15 min, respectively. Retention of water soluble vitamin C was higher (62%) in IR blanched carrot as compared to water (43%) and steam (49%) blanching. IR blanching reduced the moisture content by 13–23% (absolute). IR blanched samples dried by hybrid mode took ~45% lesser time compared to water blanched–hot air dried samples. Higher rehydration moisture of dried samples indicated the retention of cell structure during IR blanching. Vitamin C retention was ~39% higher in IR blanched–hybrid dried slices compared to water blanched–hot air dried. The study shows the potential application of dry-blanching and IR assisted hybrid drying in food processing for improving product quality.  相似文献

Russet potatoes (Solanum tuberosum) dehydrated by microwave-vacuum (MVD), heated air (HAD), and freeze drying (FD) were compared by measuring color, texture, rehydration properties, and sensory properties. Scanning Electron Microscope (SEM) images were taken to observe cell damage in the dried potatoes. The MVD potatoes remained intact following rehydration and retained suitable textural and color properties based upon sensory evaluation. The FD potatoes became friable and lost color. Sensory panelists preferred MVD, FD, and HAD in that order. MVD can provide consumers with a dehydrated product that has characteristics similar to or better than those dried by HAD or FD.  相似文献

采用热风干燥、真空冷冻干燥和微波真空干燥对红枣进行干燥处理,结合顶空固相微萃取-气相色谱-质谱(headspace solid-phase microextraction-gas chromatography-mass spectrometry,HS-SPME-GC-MS)和电子鼻对枣片挥发性成分进行了分析,并对比了3种干燥方式对红枣色泽、动力学和挥发性成分的影响。结果表明,热风干燥和微波真空干燥对枣片色泽影响较大,真空冷冻干燥能够更好的保持原始色泽;对动力学方程进行拟合,发现Page 模型为预测红枣3种干燥方式干燥特性最适合的数学模型;干燥对枣片挥发性成分种类及相对含量差异显著,其中干燥前后相同的挥发性成分有19种。挥发性物质主要有酸类、酯类、醇类、醛类、酮类、烃类、杂环类和其他化合物,干燥过后枣片中酸类和烷烃类挥发性成分相对含量显著增加,醛类和杂环类物质显著降低。电子鼻结果表明干燥后枣片香气特征与新鲜红枣有较大的区别,热风干燥和微波真空干燥香味特征较为接近,微波真空干燥枣片的焦甜香特征更为明显。相较于热风干燥和真空冷冻干燥,微波真空干燥效率较高、能耗较低、周期较短,更适于制备干燥枣片。  相似文献

The objective of this study was to compare the drying characteristics and quality of dried okra obtained by vacuum freeze drying (VFD), microwave vacuum drying (MVD), and pulse-spouted microwave vacuum drying (PSMVD). The quality parameters include color (L*, a*, and b*), texture (hardness and fracturability), shrinkage ratio (SR), nutrient retention (chlorophyll, flavonoids, and vitamin C), and sensory score was investigated. Vacuum freeze drying maximally preserved the original properties of samples. And the samples dried by PSMVD showed higher quality and more uniformity compared to MVD. Considering of all aspects comprehensively, such as cost-effectiveness, practicability, and scale-up, PSMVD was a promising technique which would match results obtained by vacuum freeze drying.  相似文献

A combination of electrohydrodynamic drying (EHD) and vacuum freeze drying (FD) is examined as an improved method for dehydrating sea cucumbers. The energy consumption, shrinkage and rehydration ratio, protein content, and sensory properties, such as the color and trimness, of the dried product in the EHD–FD method are measured. Compared with FD, the combined process consumes less drying time and has lower energy consumption than EHD drying alone. Also, the product processed by combined drying displays lower shrinkage, higher rehydration rate and higher protein content, along with better sensory qualities.  相似文献

Electrohydrodynamic (EHD) drying is a novel method of nonthermal drying. A corona discharge using multiple electrodes and a high-voltage electric field of 5.2 kV · cm?1 was produced to investigate the drying enhancement of carrot slices and its effect on color and shrinkage. The EHD setup consisted of 13 stainless steel needle points connected to a DC power supply and a stainless steel plate. EHD+ drying, EHD? drying, oven drying at 55°C, and ambient air drying control at 25°C for 5 h resulted in 79.5, 77.7, 77, and 22.5% total moisture removal from the fresh carrot slices, respectively. The final shrinkage of the EHD± drying was less than that of oven drying but was higher than that of ambient air drying. It was estimated that the energy consumption of oven drying was several times greater than those of EHD± drying. The conventional drying processes changed all color parameters, whereas the color for EHD± dried samples remained almost the same. The carrot slices’ temperature during drying by EHD± was significantly less than that of those dried by oven and ambient air drying.  相似文献

Cabbage samples were processed by air drying, vacuum drying, and freeze drying and then micronized to various particle sizes. It was observed that the drying method used has a significant effect on vitamin C content, color retention, and bulk density of the dried product.
