Dietary and life-style characteristics and the presence of 13 subjective symptoms were surveyed by a questionnaire in 2869 school children, 9 and 11 years old, in urban and rural districts in Kyoto Prefecture. 1. School children in the urban districts consumed a greater variety of foods than those in the rural districts, with the 9 years old having a greater variety than the 11 years old. 2. There appeared to be no difference in the number of subjective symptoms between the two districts. The 11 years old children complained of more subjective symptoms than the 9 years old. 3. Children consuming less varieties of foods or with undesirable dietary and life-style characteristics generally complained of many subjective symptoms. The obese children seemed to take juice, instant-foods, meats, foods cooked with oil more frequently than the non-obese children. From these results, the need for desirable dietary and life-style characteristics for maintaining school children in the good physical condition is apparent.  相似文献

OBJECTIVE: To examine whether using an encoding strategy and/or providing more support at the time of retrieval improves the accuracy of 24-hour dietary recalls among the elderly. DESIGN: Posttest-only control group design. SETTING: The sample was recruited through advertisements and at senior centers and a low-income apartment building in rural central Pennsylvania. SUBJECTS: Study participants were 21 men and 73 women aged 58 years old and older. Everyone completed the study. INTERVENTION: The treatment group was unobtrusively guided in use of an encoding strategy before consuming the prepared meal. MAIN OUTCOME MEASURES: A 24-hour dietary recall and recognition tests were administered the next day for the foods consumed at the meal and for serving sizes of 5 of the foods. Memory tests were also administered. STATISTICAL ANALYSES PERFORMED: Linear regression was used to examine differences between the treatment and control groups and to identify variables that explained variation in the number of foods correctly recalled or recognized. The Chi 2 test was used to examine correct vs incorrect recall or recognition of the serving sizes of the 5 foods between the groups and to identify explanatory variables for this task. RESULTS: Subjects remembered more foods when they used an encoding strategy and when recognition replaced free recall; they performed best when both strategies were used. Use of this encoding strategy did not improve accurate recall or recognition of serving sizes of 5 foods; however, performances did improve when recognition replaced free recall. CONCLUSIONS: Among older adults, use of an encoding strategy and provision of support at the time of retrieval enhances memory of foods consumed but not of amounts consumed. To strengthen memory of foods consumed, older adults need to perform effortful memory tasks when they are eating.  相似文献

A retrospective study of the records of children admitted to Port Moresby General Hospital with diarrhoea during 1992 and 1993 was carried out to determine the morbidity, mortality and risk factors associated with persistent diarrhoea. 858 admissions of children under five years of age who had diarrhoea were identified from the ward admission registers, and case records for 724 were studied. Persistent diarrhoea occurred in 20%, and nearly half of these were in the 12-23 months age group. Children with persistent diarrhoea had a case fatality rate of 4.9%. Seasonality was similar for both persistent and non-persistent diarrhoea. In the crude analysis children of 12 months and older had a greater risk of developing persistent diarrhoea than those less than 12 months (odds ratio for children 12-23 months was 2.0 and for children 24-59 months 1.7; confidence intervals were 1.2-3.1 and 1.0-2.9 respectively); however, this difference was not found after logistic regression analysis. Poor nutritional status was a significant risk factor for persistent diarrhoea and remained so after controlling for confounding variables (odds ratio 2.7; confidence interval 1.8-4.0).  相似文献

OBJECTIVES: Assessing the quality of the total diet is a relatively new focus of studies in nutritional epidemiology. New indexes of healthful eating patterns have been largely limited to US populations. This study used evaluative criteria developed in the United States to assess diet quality and dietary diversity of French adults. METHODS: Habitual dietary intakes of a representative sample of 837 adults (361 men and 476 women) in the Val-de-Marne Dèpartement were evaluated. Evaluative measures of diet quality included a modified diet quality index (DQI), a dietary diversity (DD) score, and a dietary variety score (DVS). The 5-point DQI assessed compliance with the key guidelines of the US Department of Agriculture (USDA) for healthy people. The DD score counted the number of major food groups consumed whereas the DVS counted the total number of foods consumed on a regular basis. RESULTS: Few French adults consumed diets consistent with the USDA dietary recommendations. Only 14% of respondents derived less than 30% of energy from fat and only 4% derived less than 10% of energy from saturated fat. As a result, 63% of the sample had DQI scores of either 0 or I. In contrast, close to 90% of respondents scored a maximum of 5 in DD. Persons whose diets met US dietary recommendations also had the lowest DVSs. CONCLUSIONS: Methodologic factors and cultural biases may account for some of the observed differences between French and US data. Nevertheless, studies of diet quality and diversity are a promising new approach to the study of the total diet and associated health outcomes and may provide new insight into the French paradox.  相似文献

Approximately half of the families in Pakistan reported having at least one smoker in 1992. Smokers were less educated, poorer and more likely to come from a rural background than non-smokers. The proportion of family earnings in poor families with marginal incomes, may be substantial. We conducted this survey to determine the prevalence of cigarette smoking in males over 15 years of age in Azam Basti, an urban squatter settlement of Karachi where 31% of the children less than 5 years old were malnourished. A pretested, structured questionnaire was administered to males aged fifteen years and above, from randomly selected homes in Azam Basti. In our sample of 102 persons the respondents were 38 years old on average, and earned about Rs. 4,500 (US $130) per month. Persons with 10 or more years of education were thrice as likely to have never smoked as compared to those with less than ten years of schooling, (OR = 3.6, 95% confidence interval 1.2, 11.4). Current smokers were more than twice as likely as non-smokers to have monthly household incomes less than Rs. 5000 (US $140) (OR = 2.4, 95% confidence interval 0.8, 7.3). Smoking is common in urban squatter settlements in Pakistan. Parental smoking and its relationship with malnutrition in children under five is not well documented or publicized, even though there is evidence that it has a contribution. We propose that primary health care programs consider smoking prevention and cessation as community based interventions.  相似文献

Measurements were made of the intake of a WHO/UNICEF glucose-based and a rice cereal-based oral rehydration solution (ORS) by children with diarrhoea. Twenty children who presented to the Children's Outpatient Department at Port Moresby General Hospital with acute diarrhoea and mild dehydration were randomly assigned to an ORS and measurements were taken over the following 3 hours. For data analysis, the patients were paired by weight. Testing the means of the paired samples by t test showed that there was no significant difference between the amount of rice ORS and the amount of glucose ORS taken over 3 hours.  相似文献

A state-wide nutritional health survey of Missouri residents conducted in 1973 included hemoglobin, hematocrit, and serum iron determinations on approximately 1,164 persons and dietary iron intake estimates, based on a diet history, for 530 persons. Based on the criteria used for interpretation of the Ten-State Nutrition Survey data, over 19% of all preschool age white children and over 10% of the white children six to 10 years old had low or deficient hemoglobin levels. Between 8 and 17% of the white males between 10 and 60 years old and over 30% of the white males over 59 years old were anemic. Between 3 and 9% of all white females over 9 years of age had low or deficient hemoglobin levels. The levels of anemia for most age and sex groups of Negroes were at least twice as great as for corresponding groups of white persons. Low or deficient hemoglobin levels within the age and sex groups were associated with low hematocrit and serum iron levels; suggesting that some of the anemia was a reflection of iron deficiency. Estimates of the dietary intake of iron indicated that less that 20% of the females 10 to 35 years old and less than 60% of older females and boys under 17 years of age were consuming the Recommended Dietary Allowances. Over 35% of the preschool children and females between 10 and 60 years old were consuming less than two-thirds of their Recommended Dietary Allowances for iron. At least part of the iron deficiency was, therefore, indicated to be related to insufficient dietary intake.  相似文献

Objective: Health advocates have focused on the prevalence of advertising for calorie-dense low-nutrient foods as a significant contributor to the obesity epidemic. This research tests the hypothesis that exposure to food advertising during TV viewing may also contribute to obesity by triggering automatic snacking of available food. Design: In Experiments 1a and 1b, elementary-school-age children watched a cartoon that contained either food advertising or advertising for other products and received a snack while watching. In Experiment 2, adults watched a TV program that included food advertising that promoted snacking and/or fun product benefits, food advertising that promoted nutrition benefits, or no food advertising. The adults then tasted and evaluated a range of healthy to unhealthy snack foods in an apparently separate experiment. Main Outcome Measures: Amount of snack foods consumed during and after advertising exposure. Results: Children consumed 45% more when exposed to food advertising. Adults consumed more of both healthy and unhealthy snack foods following exposure to snack food advertising compared to the other conditions. In both experiments, food advertising increased consumption of products not in the presented advertisements, and these effects were not related to reported hunger or other conscious influences. Conclusion: These experiments demonstrate the power of food advertising to prime automatic eating behaviors and thus influence far more than brand preference alone. OBJECTIVE: To evaluate the impact of breakfast consumption patterns on the nutritional adequacy of diets of young adults and determine possible ethnic and gender differences. DESIGN AND SETTING: Cross-sectional survey of young adults in Bogalusa, La. SUBJECTS: Twenty-four-hour dietary recalls were collected from October 1988 through October 1991 on 504 young adults (mean age=23 years, 58% women, 70% white). STATISTICS: Analysis of variance and logistic regression techniques were used to investigate the relationship of breakfast consumption, ethnicity, and gender on dietary adequacy. The P values are from an analysis of variance model that adjusted for gender and ethnicity. RESULTS: Thirty-seven percent of young adults skipped breakfast. Of those who ate breakfast, 75% ate at home, 10% ate a fast-food breakfast, and 15% reported other sources. Mean energy intake from breakfast was 485 kcal; men consumed more energy than women (P<.001), and blacks consumed more energy than whites (P<.01). The breakfast meal provided an average of 13% of energy from protein, 55% from carbohydrate, 14% from sucrose, 34% from fat, and 12% from saturated fat. Whites consumed a breakfast higher in carbohydrate and sucrose than blacks, who consumed a breakfast higher in fat and saturated fat. Variations in breakfast foods consumed explained the racial differences in the nutrient composition of the breakfast meal. Young adults who skipped breakfast had lower total daily intakes of energy (P<.0001), protein per 1,000 kcal (P<.05), and saturated fat per 1,000 kcal (P<.01) than those who consumed breakfast. For all vitamins and minerals studied, a higher percentage of young adults who skipped breakfast did not meet two thirds of the Recommended Dietary Allowance than those who consumed a breakfast. APPLICATIONS: Encouraging consumption of breakfast, along with selection of more healthful breakfast food choices or snacks that are culturally appropriate, may be important strategies for improving the nutritional quality of young adults' diets.  相似文献

A baseline cross-sectional study was done to evaluate the nutritional status of the population of the Mohale Dam catchment area before construction of the dam commenced. In this article we report on the anthropometric, clinical and dietary assessment of the children less than 15 years of age in the study population. A two stage stratified sampling technique was used to randomly select 29 of the 83 villages in the study area. Children under 15 years of age from 395 households, representing approximately 50% of households in the selected villages, were included in the study. Anthropometric measurements of body height and weight in relation to age and sex indicated undernutrition varying, with few exceptions, from high to very high levels in children under 15 years. Stunting, indicating chronic undernutrition, was of particular concern in children, even from the first year of life. Very few clinical signs of nutritional deficiencies were found except for a goitre prevalence of 17.5% in 10 to 14 year old children. This was supported by the very low urinary iodine excretion (median 1.3 micrograms/dL) which indicated a severe iodine deficiency. Dietary evaluation showed high initiation rates of breastfeeding as well as a long duration of breastfeeding. Complementary foods were introduced at an early age, resulting in low exclusive breastfeeding rates. Regular meals were reported but qualitative analysis of the diet showed that a too small variety of foods were eaten, with an irregular intake of protein-rich foods and milk. Quantitative data on 3- < 5-year-old children showed that micro-nutrient intakes were low and that the energy intake of these children was inadequate. The results showed that these nutritionally vulnerable children should be monitored for the impact of the dam construction on their nutritional status.  相似文献

Halving the malnutrition of under five of years has been set as one of the goals to be achieved by the year of 2000 by Chinese government. So it is important to know the present status of child malnutrition and its trend of changing, in order to predict the possible outcome of the achievement of the goal. According to the Child Survey carried out by the State Statistic Bureau (SSB) in 26 provinces and autonomous regions and 3 municipalities in 1992, the prevalence of malnutrition of under five was: moderate and severe underweight, stunting and wasting were 17.9%, 34.7% and 4.7% respectively. But there are significant differences among urban and rural children and between different provinces. The highest prevalence rate usually occurred in the second year of life of the children, and this may be the result of inadequate weaning food provided to the children. As compared with the data collected in 1987 by SSB in 9 provinces and autonomous regions, an impressive improvement in underweight has occurred within these 5 years. The average declined prevalence was 20.5%. It is specially true for urban children. To stunting, there was also improvement for urban children but not in the rural, resulting and over all increasing of prevalence by 5.9%. To wasting, the prevalence for urban children was low and remained at the same level while there was some what increase in the rural. So, according to these results, with constant economic development and more attempt made in areas and groups at risk, the goal to decrease malnutrition in half in terms of underweight could be reached by the year of 2000.  相似文献

OBJECTIVE: To examine the self-reported importance of taste, nutrition, cost, convenience, and weight control on personal dietary choices and whether these factors vary across demographic groups, are associated with lifestyle choices related to health (termed health lifestyle), and actually predict eating behavior. DESIGN: Data are based on responses to 2 self-administered cross-sectional surveys. The main outcomes measured were consumption of fruits and vegetables, fast foods, cheese, and breakfast cereals, which were determined on the basis of responses to questions about usual and recent consumption and a food diary. SUBJECTS/SETTING: Respondents were a national sample of 2,967 adults. Response rates were 71% to the first survey and 77% to the second survey (which was sent to people who completed the first survey). STATISTICAL ANALYSES: Univariate analyses were used to describe importance ratings, bivariate analyses (correlations and t tests) were used to examine demographic and lifestyle differences on importance measures, and multivariate analyses (general linear models) were used to predict lifestyle cluster membership and food consumption. RESULTS: Respondents reported that taste is the most important influence on their food choices, followed by cost. Demographic and health lifestyle differences were evident across all 5 importance measures. The importance of nutrition and the importance of weight control were predicted best by subject's membership in a particular health lifestyle cluster. When eating behaviors were examined, demographic measures and membership in a health lifestyle cluster predicted consumption of fruits and vegetables, fast foods, cheese, and breakfast cereal. The importance placed on taste, nutrition, cost, convenience, and weight control also predicted types of foods consumed. APPLICATIONS: Our results suggest that nutritional concerns, per sc, are of less relevance to most people than taste and cost. One implication is that nutrition education programs should attempt to design and promote nutritious diets as being tasty and inexpensive.  相似文献

OBJECTIVE: To collect baseline data on energy and nutrient intake and nutrition knowledge, attitudes, and behavior of very young Mohawk children to assist the community in planning an appropriate, targeted nutrition and exercise intervention. DESIGN: Energy and nutrient intake data were collected from 24-hour recalls conducted in the children's homes. Nutrition knowledge, attitudes, and behavior were assessed using a 38-item questionnaire that asked children to report on what foods they like the best, eat most of the time, and think are healthful. The questionnaire was completed in an elementary school on the reservation. Before data collection, we hypothesized that the average diet of the Mohawk children would not meet national dietary recommendations. SUBJECTS: One hundred forty-three children, prekindergarten through third grade (aged 4 to 9 years), completed the 24-hour recalls and the questionnaire. An additional 136 children, also prekindergarten through third grade, completed the questionnaire (n = 279). STATISTICS: Analysis of variance with a Scheffe's multiple-comparison test was used to test for differences among grades and genders for energy and nutrient intake and questionnaire scores. Multiple regression analysis was used to assess the relationship between eating behavior and selected variables. RESULTS: A mean daily energy intake of 1,980 kcal consisted of 34% fat, 13% protein, and 52% carbohydrate with 13 g fiber and 235 mg cholesterol. Food preferences were the strongest predictor of behavior, they explained 71% of the variation in the behavior score. APPLICATIONS: The major finding of this study, that food preferences are the strongest predictor of reported eating behavior in very young Mohawk children, has implications for behavior change interventions. Focusing on changing what children like to eat, through repeated exposure to new foods in a positive social context, is more likely to change what foods they choose than is simple nutrition education.  相似文献

This study investigated the usage consumption pattern and chemical composition of fermented foods consumed in 191 rural households (1030 individuals) in Emene. The result showed that fermented foods were widely used and consumed by most age groups (under 2 years to adults) because of poor socioeconomic status. Fermentation period varied with type of food and was mostly carried out as a means of detoxifying certain foods. Generally, fermented foods contributed substantially to the daily caloric (46.3 to 79.9% for males and 57.5 to 78% for females); calcium (33.8 to 63.5% for males and 48.3 to 55.4% for females); iron (34.4 to 58.6% for males and 47.4 to 74.6% for females); and thiamin (23 to 58.5% for males and 37.5 to 60% for females) intakes. The contributions of fermented foods to protein (10 to 40.7%) and ascorbic acid (1.9 to 18.7%) intakes were however, low. When compared with the FAO recommendations, the daily intakes of protein, calcium, riboflavin, niacin and ascorbic acid by the subjects were low due to large consumption of starchy root crops. Poor financial status was the most limiting factor to adequate nutrient intake. Such results point out the need for nutrition education related to improved methods of preparation and food selection.  相似文献

Dietitians commonly use 24-hour recall to obtain estimates of the typical food intakes for a population. This study was designed to determine whether using an encoding strategy or support at the time of retrieval improves older adults' 24-hour recall of food items and amounts consumed. The study included 17 older adults ranging from 74 to 91 years of age. Lunch was served to these individuals, and 24-hour dietary recall and recognition of food items consumed at the meal were conducted the following day. Portion sizes for five food items served at the meal, as well as memory tests for recall and recognition and a visual perceptual test, were also administered. Among older adults, use of an encoding strategy did not enhance memory of food items and amounts consumed. However, when the adults were provided support with a visual recognition aid at the time of food item recall, individuals remembered more food items but not amounts consumed. Performance on the Wechsler Memory Scale I and II, Verbal Paired Associates, was found to be a predictor of subjects' performance on 24-hour recall.  相似文献

While adults are known to exhibit biases when making conjunctive probability judgments, little is known about childhood competencies in this area. Participants (aged between four and five years, eight and ten years, and a group of young adults) attempted to select the more likely of two events, a single event, and a conjunctive event containing, as one of its components, the single event. The problems were such that the objective probabilities of the component events were potentially available. Children in both age groups were generally successful when the single event was likely. However, when it was unlikely, a majority of children rejected it, choosing the conjunctive event instead, thereby committing the conjunction fallacy. A substantial minority of adults also committed the fallacy under equivalent conditions. It is concluded that under certain conditions children are capable of normative conjunctive judgments but that the mechanisms underpinning this capacity remain to be fully understood. OBJECTIVE: To describe the beliefs, attitudes, behaviours and knowledge of North Queensland adolescents about food and nutrition. METHODOLOGY: A questionnaire surveyed 791 Year 8 students from private schools. RESULTS: More girls than boys felt guilt about food, sometimes ate from boredom, reported trying to select foods that were good for them and were concerned about the fat content of food; 30% of boys and 17% of girls thought they should be concerned about their food intake only when overweight. Low daily dietary intakes were reported for bread, fruit, vegetables and dairy products with only 24% eating at least one fruit, one vegetable, one dairy product and one core cereal food daily. Fat and sugar intake was high: 41% students ate high fat savoury foods and 53% ate high sugar foods at least seven times during the week. Parents, television and school provided information about food and nutrition to 70-80% of these students, followed by friends and magazines with doctors and teachers providing information on weight and weight loss to 10% of students. CONCLUSIONS: Doctors should be aware of the low intake of recommended foods as well as the high intakes of fat and sugar among adolescents and the gender differences in food related beliefs and behaviours when treating nutrition related diseases and providing guidance for their prevention.  相似文献

BACKGROUND: We designed a data-based semi-quantitative food frequency questionnaire to clarify the relationship between food intake and lifestyle-related diseases among middle-aged Japanese. METHODS: A total of 351 middle-aged individuals were recruited to a one-day weighed diet record survey in 1994. In all, 586 foods were consumed. Intake of 31 nutrients including energy, protein, fat, carbohydrate, vitamins, minerals and dietary fiber by food was computed by multiplying the weight of food consumed by its nutrient content. First, 252 foods with up to 90 cumulative % contribution to nutrient intake were selected. Of these, foods having apparently the same/similar nutrient content were combined into 206 foods by research dietitians. Next, 183 foods with up to 0.90 cumulative multiple regression coefficient and 90 cumulative % contribution were chosen. At this stage an additional food grouping was made. RESULTS: Finally, 102 foods/recipes were included in the questionnaire: rice (2 items), bread and noodles (11), eggs, milk and dairy products (10), soybean, soybean products and other beans (7), meat including beef, pork and chicken (12), fish (5), other fish, shellfish and fish products (10), green-yellow vegetables (8), other vegetables and mushrooms (7), edible roots (2), seaweeds (3), seeds (2), fruits (8), beverages (7) and confectioneries (8). The frequencies were classified into eight categories. Portion size was calculated for the respective foods largely from the one-day weighed diet record. CONCLUSIONS: The developed semi-quantitative food frequency questionnaire substantially covered the intake of 31 nutrients and may be competent to rank middle-aged Japanese efficiently.  相似文献

The present study examined differences in dietary intake and physical activity by smoking status in a sample of 3,250 working adults. Cross-sectionally, current smokers consumed alcohol, dairy products, meat, eggs, and french fries more frequently, and engaged in leisure time physical activity less frequently, than former or never smokers. Over 2 years, current smokers increased their intake of meat, soft drinks, eggs, and total calories from high fat and high calorie foods compared to never or former smokers. Smokers who quit during the 2-year observation period increased their frequency of sweets consumption. Dietary and physical activity variables appear to be weak predictors of postcessation weight change.
