Results of an experimental study are presented and discussed for pulsed vacuum drying (PVD), infrared-assisted hot air-drying (IR-HAD), and hot air-drying (HAD) on drying kinetics, physicochemical properties (surface color, nonenzyme browning index, red pigments, rehydration ratio, water holding capacity, and ascorbic acid), antioxidant capacity (ferric reducing antioxidant power and 2,2-diphenyl-1-picrylhydrazyl radical scavenging capacity), and microstructure of red pepper. As expected, the drying time decreased with an increase in drying air temperature, IR-HAD needed the shortest drying time, followed by HAD and PVD. The effective moisture diffusivity (Deff) of red pepper under PVD, HAD, and IR-HAD was computed to be in the range 1.33–5.83?×?10?10, 1.38–6.87?×?10?10, and 1.75–8.97?×?10?10 m2/s, respectively. PVD provided superior physicochemical properties of dried red pepper compared to samples dried by HAD and IR-HAD. In detail, PVD yielded higher rehydration ratio, water holding capacity, red pigment and ascorbic acid content, brighter color, lower nonenzyme browning index, and comparable antioxidant capacity compared to samples dried by HAD and IR-HAD at the same drying temperature. Furthermore, PVD promoted the formation of a more porous structure, while HAD and IR-HAD yielded less porous structure. The current findings indicate that PVD drying has the potential to produce high-quality dried red pepper on commercial scale.  相似文献

Abstract

The influence of different drying techniques on guava was investigated, including phenolic components and antioxidant activities. Through drying processes, total phenolic content (TPC) increased and formation of small molecular phenolic acids (multi-methoxy benzoic acid and sinapic acid) was promoted. UPLC-ESI-QTOF-MS determination showed flavanol compounds, hydrolyzable tannins, ellagic acid conjugates and cinnamic acid derivatives were four predominant phenolics of guava. Drying treatments caused degradation of catechin and its derivatives. Contrarily, drying treatments contributed to higher contents of procyanidin trimers. Moreover, thermal drying treatments led to degradation of macromolecular tannins and formation of smaller molecular tannins and ellagic acid conjugates, while simultaneously reduced the stabilities of most intrinsic ellagic acid conjugates. Furthermore, drying processes increased the yield of cinnamic acid dihexose, probably generating from lignin or phenolics–carbohydrate complex. Freeze drying and hot air drying showed better performance on retention of TPC and enhancement of antioxidant activity (AA).  相似文献

Effect of air drying and freeze drying on polysaccharides of lychee with three cultivars was determined in terms of polysaccharides yield, antioxidant capacity and hypoglycemic action. The results show that Guiwei lychee pulp had the highest crude polysaccharide yield among three lychees. However, Feizixiao lychee had the lowest EC50 concentration and the highest FRAP (Ferric reducing antioxidant power) value. Moreover, Guiwei lychees dried by air drying had the best effect for improving glucose tolerance of normal mice and diabetic mice. Three freeze dried lychees had no significant effect. The effect of air dried Guiwei samples on decreasing TG was the best and it was even better than dapagliflozin group. Only freeze-dried Guiwei lychee could significant decrease the TC content in blood among all lychee samples. In a word, Feizixiao lychees had the best antioxidant capacity and Guiwei lychees had the best hypoglycemic effect. Air drying was better drying method for lychee polysaccharides than freeze drying in this study.  相似文献

Onions, rich in flavonoids, with antioxidant, antibacterial, and other biological activities, are often used as extraction of raw materials to obtain health products with high flavonoids content. However, the amount of raw material consumption is large due to low yield of extracts from fresh onions. As a result, dried onions often are used as extraction materials. The effects of air drying (AD), freeze-drying (FD), and microwave freeze-drying (MFD) on the flavonoids extraction yield of onions were investigated. The most effective and economical method was hot AD. On the other hand, the flavonoids extraction rate of onions dried by MFD was the fastest. FD could also obtain high extraction rate, but it cost the highest energy consumption. In order to obtain relatively rapid, economic, and effective extraction of onion flavonoids, onions can be dried by MFD or AD method.  相似文献

ABSTRACT

Phenolic compounds have been reported to show both antioxidant and pro-oxidant properties. The effects of spray drying conditions on the balance between antioxidant and pro-oxidant properties of orange peel extract have been evaluated in this work. The inlet drying temperatures (ranging between 100 and 175°C) gave no significant effect on the redox recoveries. On the other hand, the main air flow rate (between 28 and 38?m3/h) and feed pump rate (between 4 and 7?mL/min) significantly affected the pro-/antioxidant recovery ratio. The ratios of pro-/antioxidant recovery were found to be between 1.00 and 1.13, and the pro-oxidant and antioxidant recoveries in this study were found to be between 87–96 and 83–93%, respectively.  相似文献

Abstract

Broccoli is considered one of the attractive raw materials for dehydrated vegetables owing to its high nutritional value. However, information about how drying methods affect the physicochemical and nutritional properties of broccoli is limited. In this study, broccoli pieces were subjected to freeze drying (FD), hot air drying (HAD), microwave vacuum drying (MVD), vacuum drying (VD), MVD combined with HAD (MVD?+?HAD), and MVD combined with VD (MVD?+?VD). Quality attributes of dehydrated broccolis were contrasted in terms of color, texture, volume shrinkage, nutritional components, antioxidant activity, and rehydration capacity. Results demonstrated that FD better preserved the nutrients while HAD displayed the worst effect. The combination of MVD?+?HAD and MVD?+?VD resulted in higher retention of nutritional compositions, better antioxidant activity, and lower energy consumption than that of HAD. Furthermore, combined drying processing exhibited similar rehydration capacity but lower hardness compared to that of HAD.  相似文献

ABSTRACT

This study determined the proximate composition, phytochemical and antioxidant activity of the edible red seaweed, Kappaphycus alvarezii, under different drying conditions, namely, oven dried, sun dried, vacuum dried, and freeze dried. The proximate composition of K. alvarezii has shown no significant difference (p?>?0.05) in macronutrient components except fat content. Phytochemical studies conducted on total phenolic content and total flavonoid content showed that vacuum-dried extracts demonstrated the highest total phenolic content at 12.97?mg?PGE?g?1 DE. In vitro antioxidant activities of seaweed extract by ferric-reducing antioxidant potential and 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity proved that oven-dried extracts showed the highest ferric-reducing antioxidant power value, 272.95?µM TE mg?1, and highest scavenging activity, EC50 9.55?mg?mL?1. In general, sun-dried extracts showed lowest antioxidant among all treatments.  相似文献

Quality control still remains a big issue, affecting herbs, formulations, and even the practice of Traditional Chinese Medicine. A promising solution to the problem is to take advantage of innovative process techniques including alternative drying methods within the pharmaceutical processing. Nowadays, vacuum belt drying (VBD) has gained more and more importance in food and pharmaceutical processing. In this work, Panax notoginseng extract was made into powder by the gentle VBD as well as by classical spray drying (SD), freeze drying (FD), and vacuum drying (VD). Certain chemical and physical properties of the dried powders such as moisture content, drying time, porosity, density, saponins content, pH value and hydroxyl radicals scavenging activity were evaluated. The results showed the qualities of dried products were influenced to different extent by drying methods certainly. Vacuum belt drying was suggested to dry P. notoginseng extract for its high quality assurance of hygroscopic products and suitable for sticky or high viscous products.  相似文献

Stabilization of rice bran after milling is a necessary step to avoid subsequent oxidation of lipids in the bran. Selected moving-bed drying methods, i.e., hot-air fluidized bed drying (HAFBD), superheated-steam fluidized bed drying (SSFBD), and infrared vibrated bed drying (IRVD), were used to reduce the moisture content of the bran and, at the same time, inactivate deleterious enzymes, which are the cause of oxidation. Drying kinetics, oxidative stability parameters (i.e., lipase activity, free fatty acid content, and peroxide value), oil extraction yield, and contents of phenolic compounds and γ-oryzanol as well as color changes of the bran were determined. SSFBD could reduce the drying time by 8–22 and 76–79% in comparison with HAFBD and IRVD, respectively. Drying method significantly affected the total phenolic content (TPC) and total color changes but did not significantly affect the γ-oryzanol content of the bran. SSFBD resulted in the lowest levels of all oxidative stability parameters and to the highest TPC and oil extraction yield. SSFBD at 140°C resulted in the bran with the longest shelf life of 55 days and is suggested as an alternative method to shorten the stabilization process and maintain the stability of rice bran.  相似文献

The objective of this study was to investigate the effect of different microwave drying techniques on the drying kinetics and product quality of dried green soybean. Experiments were conducted using microwave vacuum drying (MVD), pulse-spouted vacuum microwave drying (PSMVD), pulse-spouted microwave drying (PSMD), and microwave freeze drying (MFD). Parameters of apparent density, color, processing temperature, expansion ratio, rehydration ratio, texture, and microstructure of the dried products were determined. The results showed that the MFD green soybean had a small change on bright color, compared with the fresh samples, but the drying time was the longest among the four methods. The bright color value of PSMVD/PSMD/MVD, respectively, was 79.77, 71.43, and 55.45, and drying time of them was slightly different. The PSMVD/PSMD showed advantages over MVD by improving the product quality.  相似文献

Several freeze-drying and spray-drying methods were investigated in relation to the retention of immunoglobulins (Ig) A, IgG, and IgM. Spray drying produced human milk powders with 2% humidity and a good retention of IgG (>88%) and IgM (~70%). However, only 38% of IgA remained after spray drying. For freeze drying, only the highest heating plate temperature used in this study (40°C) brought IgA content down to 55% in powder with 1.75% residual humidity, whereas milk samples undergoing lower temperatures had higher preservation rates (75% for IgA and 80% for IgG and IgM) and higher residual moisture contents. From these results, it can be concluded that IgA is the most sensitive Ig lost during drying processing of human milk. The best method to generate human milk powders without a significant loss of Ig was thus freeze drying at 30°C heating plate temperature, which accelerated the process compared to lower processing temperatures, but still had good overall Ig retention.  相似文献

Three walnut (Juglans regia L.) drying methods (sun drying, direct oven drying, and intermittent oven drying) were employed, and the consequent changes in lipid oxidation attributes, such as acid value (AV), peroxide value (POV), saponification value (SV), fatty acid composition, and antioxidant activity [including reducing power, superoxide anion scavenging activity, 1,1-diphenyl-2-picrylhydrazyl free radical scavenging activity (DPPH), lipoxygenase (LOX) activity, total phenols content (TPC), and total flavonoids content (TFC)] were investigated in this study. Sun drying resulted in the highest AV, POV, and SV, followed by direct oven drying and intermittent oven drying. Antioxidant activities and related compounds, TPC and TFC, were initially increased and then declined during drying, and a significant correlation was found between antioxidant activity and TPC and TFC. The LOX activities of all samples showed an increasing trend, although those of the sun-dried samples were the lowest. The walnuts dried with the intermittent oven drying method contained more linoleic acid than those dried by direct oven drying. Overall, intermittent oven drying appears to be a promising strategy for fresh walnut drying.  相似文献

A significant amount of banana peels is generated as waste annually and shows great potential as a lead material for further utilization in the nutraceutical industry. However, potentiality of banana peel utilization largely depends on the favorable drying condition of the material before it can be used for further processing. Therefore, it is necessary to identify the suitable drying conditions for banana peel. This study investigated the effect of six different drying methods on the quality of banana peels. The results showed that different drying conditions significantly affected the physical, chemical, and antioxidant properties of dried peels. Microwave irradiation at the power level of 960?W for 6?min was the most suitable condition, as these dried peels had good physical properties, minimum loss of bioactive compounds, and antioxidant properties. This was followed by freeze-drying, vacuum oven at 60°C, hot air oven at 120°C, dehumidified air at 60°C, and sun drying. The peels dried by microwave possessed a total phenolic content of 25.26?mg of gallic acid equivalents/g of dry matter (DM) and potent antioxidant capacity [(1,1-diphenyl-2-picrylhydrazyl) of 37.70; 2,2′-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid of 46.35; ferric reducing antioxidant power of 45.94; and cupric ion reducing antioxidant capacity of 64.55?mg of trolox equivalents/g of DM]. Therefore, the study recommends the use of microwave irradiation under the studied condition (power level of 960?W for 6?min) for further processing and utilization.  相似文献

以硝酸铝(Al(NO3)3.9H2O)和正硅酸乙酯(TEOS)为原料,采用溶胶-凝胶(Sol-Gel)技术并结合喷雾干燥(SPD)技术制得超细Al2O3-SiO2二元复合粉体材料,并分别于400℃、800℃、1000℃、1150℃和1200℃煅烧2h;采用全自动比表面积与孔隙率分析仪、TEM、TG-DSC及XRD等仪器研究了热处理温度、pH值(分别为5.5、7和8)以及干燥方法对粉体材料的表面性能、显微形貌、物相组成及Al2O3-SiO2二元系晶体转变过程的影响。结果表明:由Sol-Gel-SPD制备的超细Al2O3-SiO2二元粉体材料的比表面积>448m2.g-1,而经1200℃煅烧2h后所得的超细莫来石的比表面积为34.05m2.g-1;TG-DSC分析表明:采用Sol-Gel-SPD制得的Al2O3-SiO2二元粉体材料的质量损失主要发生在500℃之前;XRD分析表明:粉体试样的开始莫来石化温度为1000℃,铝硅尖晶石(6Al2O3.SiO2)与非晶态SiO2在1150~1200℃完全转化为莫来石;比较不同pH值试样经1200℃煅烧后的TEM照片发现,当pH=7时,得到的超细莫来石粉体粒径最小,为50nm。  相似文献

The color efficiency of ceramic glaze blue pigments obtained by synthesis methods was compared. the fired pigments and enameled samples were characterized by XRD, UV-vis-NIR spectroscopy, CIE-L*a*b* color-measurements, and SEM. The pigments obtained by the Pechini method presented a better solubility in the molten glazes than the pigments obtained by the mechanical mixture of the oxide precursors. The pigments obtained by the Pechini method also developed a bluer color hue than the pigments obtained by the mechanical mixture of the oxide method.  相似文献

The aim of this study is to examine the drying characteristics of blanched and unblanched sardine during indoor and open sun drying processes. Changes in temperature and relative humidity of the air during drying were recorded. The color, peroxide value (PV), thiobarbituric acid reactive substances (TBARS), free fatty acid (FFA) content, fatty acid composition, and sensory attributes of dried samples were also evaluated once a month for 5 months of storage. High drying rates were obtained in all samples at the start of drying and then decreased with increasing drying time. The highest drying rate and effective water diffusivity (Deff) were observed in blanched sardine during open sun drying. Blanching treatment slowed down the FFA progression during product storage but adversely affected the color, PV, and TBARS content as well as sensory properties. Although sardine dried for a longer time under indoor drying conditions, it attained a stable moisture ratio that was lower than in open sun-dried samples. Indoor drying produced a quality stable product with less lipid oxidation and the desired moisture content, higher polyunsaturated fatty acids and sensory properties. Blanching treatment negatively affected the fish quality and is therefore not recommended for commercial sardine drying.  相似文献

Sesamol is a natural antioxidant found in sesame oil from roasted sesame seeds. Activation energy and antioxidant capacity of sesamol were determined and compared with other free radical scavengers (FRSs) including tert‐butylated‐hydroxyquinone (TBHQ), butylated‐hydroxyanisol (BHA), or α‐tocopherol in a lard model system treated with different heating temperature. Each FRS was added in lard and heated at 90, 120, 150, and 180°C for 48, 24, 8, or 2 h, respectively and antioxidant capacity was evaluated by conjugated dienoic acid (CDA) value, conjugated diene hydroperoxides, p‐anisidine value (p‐AV), and a modified 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) method. Apparent activation energy of sesamol was determined as 12.98 kcal/mol in a lard model system. Antioxidant capacity of sesamol was as good as that of TBHQ and was higher than those of BHA and α‐tocopherol at 90, 120, and 150°C based on CDA, conjugated diene hydroperoxides, and p‐AV assays. The results of a modified DPPH method showed that each FRS showed different distribution of radical scavenging compounds from oxidized lipids (RSOLs) during oxidation. Sesamol may replace synthetic FRSs like TBHQ and BHA in processed foods treated with high temperature. Practical application: Processed foods are frequently treated with high temperature during oven‐drying, roasting, baking, and deep‐fat frying. This study showed that sesamol, one of natural antioxidants, had stronger antioxidant capacities than other synthetic FRSs at the temperature ranges from 90 to 180°C. The results of this study can be applied in food industries producing deep‐fat fried foods including snacks, chips, and French fries to extend the shelf‐life of final foods with high temperature treatment.  相似文献

Abstract

Contents of fructooligosaccharides and inulin along with those of selected sugars in fresh banana of different ripening stages were first determined. Banana was then processed into snacks either by hot air drying (HD) or low-pressure superheated steam drying (LPSSD). Selected physicochemical properties of both fresh banana (moisture content, water activity, flesh-to-peel ratio, total soluble solids content, pH, titratable acidity and firmness) and its snacks (microstructure, texture and color) were investigated. Fresh banana of ripening stage 5 exhibited higher fructooligosaccharides, inulin and sugar contents; its snacks also possessed maximum fructooligosaccharides and inulin contents. Drying methods did not have any significant effect on the contents of these prebiotics. Although snacks from banana of ripening stage 5 possessed higher sugar contents, such contents, when snacks are consumed at the recommended amount, are still lower than the recommend daily intake. Stage-5 LPSSD snack exhibited better texture and color than its HD counterpart, so the former has a potential of being a prebiotic-based snack.  相似文献

ABSTRACT

The objective of this study was to compare the physical characteristics and flavor of dried hawthorns obtained by freeze-drying (FD), microwave freeze-drying (MFD), atmospheric freeze-drying (AFD), and heat pump drying (HPD). The parameters including moisture content, product temperature, rehydration ratio, chroma, hue angle, yellowness index, total color difference, and energy consumption were investigated. The use of fuzzy reasoning for the sensory evaluation of hawthorn quality was also performed. As expected, AFD, FD, and MFD produced better accepted dried hawthorn products than did HPD. Nevertheless, FD consumed the highest energy and had a long drying time, but its product was the best; AFD had a similar energy cost as HPD, but its drying time was the longest; and MFD had a higher energy cost and longer drying time than HPD, but its product quality was similar to that of FD products. As a result, MFD and AFD had potential to replace FD to yield dried hawthorns with high product quality and relatively low cost.  相似文献
