Extra virgin olive oil is considered to be a high quality oil for health and nutrition and is widely consumed by the Mediterranean population. Presence of natural photosensitizers in olive oil may compromise its nutritional quality if stored in clear plastic or glass container under fluorescent light. In this study, the oxidative stability of commercial extra virgin olive oil (EVOO) and its chlorophyll and tocopherol stripped counterpart (SEVOO) stored at 60C in the dark and under fluorescent light (2650 lux) was evaluated. A column chromatographic procedure using silicic acid, Celite 545, activated charcoal and powdered sugar (sucrose), and eluted with hexane, provide an effective means for stripping extra virgin olive oil from its minor components. Minor components, mainly tocopherol and other phenolic compounds as well as carotenoids in SEVOO, influenced their oxidative stability in the dark. Meanwhile, natural pigments such as chlorophyll played a major role in the photooxidation of EVOO. Therefore, commercial extra virgin oil should be protected from direct light exposure in order to protect it from the oil from photooxidative deterioration.  相似文献

ABSTRACT: An experimental investigation was carried out on several in‐oil preserved vegetables to evaluate the quality and genuineness of different oils used as liquid medium. The results obtained showed that the lipids released by vegetables to the oils are negligible, and that the routine analyses are not fully effective to assess the quality of the oils. More reliable results may be achieved from the percent determination of trans isomers, and from the classes of oxidation, polymerization, and hydrolysis substances contained in the polar compounds. In sunflower seed oils, much higher contents of trans isomers (p < 0.001), triglyceride oligopolymers, and oxidized triglycerides (p < 0.01) have been observed as compared to olive and extra virgin olive oils.  相似文献

Abstract: An experimental investigation was carried out to evaluate the quality of taralli as a function of the type of oil used in their dough formulation. To this end, 4 types of oil (extra virgin olive oil, olive oil, olive‐pomace oil, and refined palm oil) were utilized to prepare taralli to investigate on the lipid fraction degradation and evaluate the taralli acceptability by consumers. The data obtained pointed out that taralli manufactured with extra virgin olive oil were significantly more appreciated than those made with refined oils due to their visual appearance and odor. Moreover, with respect to the other kinds of oil, the use of extra virgin olive oil led to significantly lower values (P < 0.05) of specific absorption at 232 and 270 nm (K232 and K270, respectively) and of triacylglycerol oligopolymers. It also proved to present a much lower content in oxidized triacylglycerols and diacylglycerols than olive‐pomace oil and refined palm oil, respectively. Furthermore, trans fatty acid isomers were absent in taralli made with extra virgin olive oil but were constantly present in those produced with refined oils.  相似文献

Commercial olive and soybean oils have been analyzed periodically in order to evaluate the influence of storage conditions on quality. The following parameters were determined every 10 days of storage: peroxide, saponification and acid values, absorption coefficients K270 and K232, phenols, chlorophylls and carotenoids contents, DPPH scavenging ability, and total antioxidant activity. Edible oils were exposed to daylight and stored at room temperature in different containers with the same surface area of exposure to air either in clear glass or opaque glass bottles. Changes in oils properties were also examined after the addition of Vit-E as an antioxidant in oil samples. The results showed a gradual loss of quality during storage, especially in clear glass bottles. The addition of the antioxidant, however, significantly reduced the deterioration and oxidation rate in the oil. The best containers for commercial packing of oil were opaque glass bottles containing antioxidant products.  相似文献

The objective of this study was to evaluate the effect of Bunium persicum and Rosmarinus officinalis essential oils on the oxidation of virgin olive oil during accelerated storage. The synergistic effect between citric acid and antioxidants of natural and synthetic types was investigated. The B. persicum and R. officinalis essential oils significantly retarded the oxidation of virgin olive oil. Their antioxidant capacity was comparable to butylatedhydroxytoluene and better than β-carotene. Here we show that when natural and synthetic antioxidants are combined with citric acid, they produce an extra antioxidant effect, hence the manifestation of synergy. Generally, the essential oils of B. persicum and R. officinalis can be applied to increase the oxidative stability of virgin olive oil.  相似文献

An experimental investigation was carried out with the aim to investigate on the isomerisation of 1,2-diacylglycerols to 1,3-diacylglycerols as a function of the storage conditions, as well as to identify indices useful to evaluate the freshness of the oils. Two oils derived from two different cultivars (Coratina and Ogliarola barese) were stored for two years as follows: in bottles at dark; in clear glass bottles at light; in green glass bottles at light; in bottles at dark, the latter subjected to repeated opening and samplings to simulate domestic use. The obtained results evinced that during the storage period a significant increase in the 1,3-isomers was observed due to an isomerisation from the 1,2 to the 1,3 isomeric form, consequently the 1,3/1,2 ratio increased in both oils. The covariance analysis of the data showed that the isomerisation of diacylglycerols, taking place during time, was affected by the type of oil, probably due to the different initial hydrolysis level, but was not affected by the storage conditions. Among the parameters considered, the total diacylglycerols/1,3-diacylglycerols ratio could be used as freshness index of extra virgin olive oil, since it is not affected by either oil or storage conditions.  相似文献

Extra virgin olive oil is highly consumed and well known for its nutritional and health benefits. However, it is fatty food highly susceptible to lipid oxidation. The objective of this study was to evaluate the preserving effect of oregano (Origanum vulgare L. spp vulgare called "oregano compacto") essential oil on physical and chemical properties in extra virgin olive oil during storage. Oregano essential oil composition was analyzed by GC-MS. This essential oil was added into extra virgin olive oil at 0.05%. The samples were stored in 3 different conditions: darkness, light exposure, and temperature (60 °C). Chemical indicators of lipid oxidation (peroxide value, p-anisidine value, conjugated dienes, free fatty acidity, and carotenoid and chlorophyll contents) were measured. High content in carvomenthol (22.52%), terpinolene (19.77%), thymol (13.51%), and γ-terpinene (10.30%) were detected in oregano essential oil. Olive oil samples without oregano essential oil stored at 60 °C and exposure at artificial light had the highest peroxide values during storage. Higher p-anisidine and K232 values after day 7 of storage were detected in temperature, darkness, and light exposure treatments. Light treatment was the main factor that degraded chlorophyll causing loss of color. The highest chlorophyll content (3.87 mg/kg) was observed in olive oil with essential oil at the end of storage. In general, olive oil samples added with oregano essential oil had lower peroxide, conjugated dienes, and p-anisidine values and higher chlorophyll and carotenoid contents during storage. Oregano essential oil retards lipid oxidation process in olive oil prolonging its shelf life. PRACTICAL APPLICATION: Oregano essential oil was and is used with the purpose of flavoring and aromatizing food. This essential oil due to its composition has shown antioxidant activity. Synthetic antioxidants such as butylated hydroxytoluene (BHT) and butylated hydroxyanisole (BHA) are thought to be promoters of carcinogenesis. Extra virgin olive oil is widely consumed because of its nutritional benefits and sensory properties which are very important to be preserved in the product. In this study, the oregano essential oil showed remarkable antioxidant activity in olive oil. Therefore, this essential oil could be considered for the industry as natural antioxidant not only to be used in olive oil but also in other fatty food products to substitute synthetic ones.  相似文献

Four different types of “focaccia” (Italian flat bread) prepared with the same dough and the same extra virgin olive oil but with different seasonings, were analyzed. Lipids were extracted from each sample using the Folch method. The indices commonly used to assess oil quality, the amounts of trans fatty acids and compounds of triglyceride polymerization, oxidation and hydrolysis, were determined in all the samples to better assess the degree of oxidation and hydrolysis of the oils. The findings showed that, once baked, the oil sampled from the different types of focaccias could not be included in the virgin category. The level of oxidation of the baked samples was greater than that in the uncooked oil. However the results obtained showed that the level of degradation of the extracted oils was lower than that found in edible refined oils and it seemed to be influenced by the topping used to flavour the focaccias.  相似文献

The objective of this study was to determine the health benefits of extra‐virgin and refined olive oils, which are high in mono‐unsaturated fatty acids (MUFAs) and polyphenolic compounds using the pig as a model. Thirty‐two cross‐bred pigs were individually penned, allocated to one of four dietary treatments and fed ad libitum for 28 days. Two of the experimental diets consisted of a basal diet containing 12% tallow and either 7% sunflower oil (TSO) or 7% extra‐virgin olive oil (TEVO) on a w/w basis. The remaining diets contained 19% extra‐virgin olive oil (EVO) or 19% of refined olive oil (RO). On days 7, 14 and 28 fasted and 3‐h post‐prandial blood samples were taken. Body composition was measured at the beginning and end of the study using dual energy X‐ray absorptiometry. Daily gain, feed intake and lean and fat deposition were not significantly different between the treatments. However, the daily increase in bone mineral density was higher in pigs fed diets containing olive oil (1.23 vs 2.54, 6.28, 5.20 mg cm?2 per day for TSO, TEVO, EVO and RO, respectively, P = 0.050). Both fasting and non‐fasting plasma triglycerides were lower (P = 0.003) in pigs fed MUFA‐rich diets, while the cholesterol profile was not significantly different between the treatments. The results from in vitro copper‐induced lipid peroxidation, expressed in terms of conjugated dienes, showed that low density lipoprotein (LDL) particles in postprandial serum from pigs fed olive oil were moderately more resistant to oxidative modification. In conclusion, these data demonstrate that both extra‐virgin and refined olive oils attenuate postprandial hypertriglyceridaemia, moderately affect oxidation susceptibility and increase bone mineral density in growing pigs. Extraction technology has a great effect on quality of olive oils. This paper studied 18 months of storage of two Sardinian extra virgin monovarietal oils obtained with a traditional and with a low oxidative stress technology. Oil samples were subjected to the following chemical analyses: acidity, peroxide value, ultraviolet light absorption K232 and K270, carotenoids, chlorophylls, tocopherols and total polyphenols. The antioxidant capacity of oils, polyphenol extract and oil extract (remaining after polyphenol extraction) was also determined as radical scavenging activity. The results show that both extraction technologies resulted in minor changes in legal and quality indices during storage, due surely to the high quality of the oils as well as to the very good storage conditions used. Oils obtained with the low oxidative stress technology showed lower peroxide value and acidity and resulted in up to 103% higher total polyphenol content as well as increased radical-scavenging activity, with respect to oils obtained with the traditional technology.  相似文献

Changes in quality parameters, antioxidant compounds, oxidative stability and antioxidant activity during 18 months of storage of a monovarietal extra‐virgin olive oil from Bosana cultivar , and exposed to light and dark, were studied. Analysis of data showed that all the parameters underwent significant changes during storage: free acidity, peroxide and ultraviolet (UV) spectrophotometric indexes remained below the limits reported in the EEC Regulations 2568/91 and 1989/03 , and these are: 0.8% for acidity, 20 meq O2/kg for peroxide and 2.50 and 0.22 for K232 and K270, respectively. Phenol andα‐tocopherol content decreased during storage (42.0 and 29.6%, respectively) while chlorophylls and carotenoids underwent a decrease until 8 months of storage (49% and 30%, respectively); after that, the values remained constant. Oxidative stability and antioxidant activity had not changed dramatically during 18 months. Phenols were significantly correlated to the antioxidant activity of the oil, while oxidative stability measured by Rancimat did not show any correlation with carotenoids, chlorophylls, phenols andα‐tocopherol. Regarding exposure conditions, storage in the dark was better in retaining the quality of the oil, as expected.  相似文献

The lipid fraction of bakery products undergoes a significant degradation during baking, with an increase in undesirable oxidised substances, that can act as catalysts for further oxidative reactions during storage reducing the product shelf life. The use of extra virgin olive oil in bakery products rich in fat in place of refined oils was studied, assessing the evolution of the oxidative and hydrolytic degradation during storage. Two‐way analysis of variance, followed by Tukey's HSD test for multiple comparisons, covariance and principal component analyses were carried out to compare the effect of the type of oils. The data obtained showed that the evolution of the oxidation levels in the analysed samples during storage was related to the type of oil used in the production process. Particularly, the use of extra virgin olive oil led to significantly lower values of hydroperoxides, ultraviolet absorption constants, triacylglycerol oligopolymers and oxidised triacylglycerols.  相似文献

The flavour changes and extent of oxidation in crisps that had been exposed to light were studied by flavour difference assessment and peroxide value. When the crisps were examined immediately after illumination, both mean flavour difference ratings and peroxide values increased with the duration of exposure. When the crisps were stored for different periods after a fixed duration of exposure, an increase of flavour difference was observed without concomitant increase in peroxide value. The observation that the storage in the dark after illumination is different to exposure to light alone is significant because actual conditions of storage of food products usually involve both light and dark periods.  相似文献

The effect of added menadione (vitamin K3) to stored corn and wheat germ oil on the dissolution and dimerization of natural tocopherols and auto‐oxidation of triacylglycerols were investigated. Samples of corn and wheat germ oils pure and with added menadione were stored at +20°C in brown and transparent glass bottles. During storage their peroxide value, changes of the content of fatty acids and dissolution of tocopherols were measured. Destruction of individual tocopherols in tested oils with added menadione stored in both dark and transparent glass bottles was greater than in these oil samples without menadione. However, the degradation of individual tocopherols was different in each oil. Addition of menadione to the both oils resulted in accelerated the process of auto‐oxidation of these oils. The corn oil stored in transparent bottles was oxidized faster than the one stored in brown bottles. The pro‐oxidant activity of menadione was additionally activated by light. In contrast, in the cause of germ oil, the process of auto‐oxidation was very fast regardless of sort of container. Addition of menadione to the plant oils influenced the dissolution of natural tocopherols but did not influence the dimerization of tocopherols. As from the experiment, the addition of menadione to the oils decreased their nutritive value.  相似文献

The hydrolytic and oxidative degradation of olive oil and extra‐virgin olive oil, used as covering liquids in canned dried tomatoes, was studied during storage by means of conventional (acidity, peroxide value, p‐anisidine value) and non conventional (polar compounds) analyses. The effects of the addition of spices were also considered. The hydrolysis and oxidation of olive oil increased faster and was higher than that of extra‐virgin olive oil in terms of absolute values but some other indices, such as percentage of oligopolymers and percentage of oxidized triglycerides, increased faster in extra‐virgin olive oil than in olive oil. The antioxidant effect given by a higher concentration of polyphenols in the extra‐virgin olive oil was shown by a reduced amount of secondary oxidation. However, olive oil and extra‐virgin olive oils showed similar behaviour in terms of peroxide formation.  相似文献

The beneficial health effects of extra virgin olive oil are due to both its high content of monounsaturated fatty acids and its high content of phenolic compounds, which have recently attracted research interest. In this context, the aim of this work was to examine the in vitro antioxidant and antiproliferative activities of the phenolic extract obtained from extra virgin olive oil from O. europea cultivar ‘Frantoio’ (samples 1–4), one of the main varieties cultivated in Italy. The total phenolic content was determined by Folin–Ciocalteu method and instead the phenolic profile was obtained by HPLC coupled to a diode array detector and mass spectrometry. Extra virgin olive oil extracts exhibited high antioxidant activity through different mechanisms of action and these activities are related to the phenolic content. Sample 3 demonstrated the strongest free radical scavenging activity with IC50 value of 56.5 μg/mL. The reducing ability measured with FRAP assay revealed that samples ranged from 91.3 to 156 μM Fe(II)/g. The same interesting trend was observed with Trolox equivalent antioxidant capacity value. Moreover, the virgin olive oils showed a good oxidative stability ranging between 19 to 32 h. Antiproliferative activity evaluated by SRB assay revealed that phenolic extracts from the cultivar ‘Frantoio’ showed a strong antiproliferative activity against CORL-23 cell line with an IC50 value of 14.5 and 55.9 μg/mL for samples 3 and 1, respectively, and these results are comparable to the positive control vinblastine. Overall, these results showed that extra virgin olive oils from the cultivar ‘Frantoio’, may represent an interesting source of phenolic compounds as functional components that could be consumed in diets and/or used for the elaboration of functional food and pharmaceutical industries.  相似文献

本文研究了特级初榨橄榄油中掺入不同比例橄榄果榨油(精炼橄榄油)、菜籽油、玉米油和大豆油的光谱特征,采用荧光光谱和紫外光谱,对掺假样品及纯油样品进行了快速检测。结果表明,特级初榨橄榄油的光谱特征与其他植物油之间差异较大,且掺假体积与吸光度之间存在良好的线性关系(R2>0.89),实现了特级初榨橄榄油的定性鉴别与定量检测,建立了特级初榨橄榄油质量控制体系及其掺假检测分析技术,最低检出限为1%,线性范围为5%~100%(v/v)。系统聚类分析将所有特级初榨橄榄油准确地分为一个亚类,也佐证了此方法的稳定性与可靠性。这种简单快捷的检测技术,有助于特级初榨橄榄油实时、在线橄榄油检测分析技术的研发,为我国橄榄油品质鉴定及产业发展提供有利的技术保障。  相似文献

Four commercial varieties of oregano are farmed in Argentina: "Compacto,"Cordobes,"Criollo," y "Mendocino." Oregano essential oil is known for antioxidant properties. The objective of this study was to evaluate changes in the intensities of positive and negative attributes in extra virgin olive oil with addition of essential oil obtained from the 4 Argentinean oregano types. Oregano essential oil was added into olive oil at 0.05% w/w. The samples were stored in darkness and light exposure during 126 d at room temperature. The intensity ratings of fruity, pungency, bitterness, oregano flavor, and rancid flavor were evaluated every 21 d by a trained sensory panel. In general, samples with addition of oregano essential oil in olive oil exhibited higher and lower intensity ratings of positive and negative attributes, respectively, during storage compared with the control samples. The first 2 principal components explained 72.3% of the variability in the olive oil samples. In general, positive attributes of olive oil were highly associated with the addition of oregano essential oil in darkness, whereas rancid flavor was negatively associated with them. Olive oil with oregano "Cordobes" essential oil was oppositely associated with light exposure treatments and negative attribute (rancid flavor) suggesting better performance as natural antioxidant of this essential oil in olive oil. The result of this study showed that the presence of oregano essential oil, specially "Cordobes" type, preserve sensory quality of extra virgin olive oil prolonging the shelf life of this product. Practical Application: Extra virgin olive oil is highly appreciated for its health benefits, taste, and aroma. These properties are an important aspect in this product quality and need to be preserved. The addition of natural additives instead of synthetic ones covers the present trend in food technology. This research showed that the addition of oregano essential oil preserved the intensity ratings of positive attributes in extra virgin olive oil during storage. The essential oil of the oregano variety called "Cordobes" exhibited better protecting effect on sensory properties of olive oil than the other oregano varieties. The addition of oregano essential oil should be considered for the food industry as a natural source of antioxidant additives for preserving sensory properties in extra virgin olive oil and other similar food products.  相似文献

The effects of microwave heating for 3, 6, and 9 min at a frequency of 2450 MHz on fatty acid composition, tocopherols, iodine value, free fatty acids (%), peroxide value, conjugated dienes and trienes, and hexanal contents of refined hazelnut, soybean, sunflower, and virgin olive oils were investigated. A significant (p < 0.05) decrease was observed in linoleic and linolenic acids contents of soybean oil during exposure to microwave heating. Tocopherol contents of oil samples significantly decreased (p < 0.05) during microwave heating. Free fatty acids of the samples slightly increased and iodine value showed reduction throughout the process. Conjugated dienes contents of samples showed an increasing trend up to the 6 min, followed by a reduction at 9 min. Conjugated triene fatty acids of all the samples significantly increased (p < 0.05) throughout the application. While peroxide value showed increasing trend up to the 3 min and sharply decreased at 9 min, hexanal contents of refined hazelnut, virgin olive, soybean, and sunflower oils increased 63, 28, 55, and 389 fold, respectively, after 9 min exposure to microwave heating. Kinetic analysis of data showed that the reaction orders for peroxide and hexanal formation were zero and first order, respectively, and in the tested oils the reaction rate followed the order: soybean oil ? sunflower oil ? hazelnut oil ? virgin olive oil for peroxide, and sunflower oil ? soybean oil ? hazelnut oil ? virgin olive oil for hexanal formation. It was concluded that hexanal could be considered as a parameter for evaluation of the quality of oils exposed to microwave heating.  相似文献

The purpose of this work was to determine the chemical stability of vegetable oils in the frying process and the consumer acceptance of fried-salted peanuts prepared in different vegetable oils. Fatty acids composition was determined in sunflower, corn, soybean, peanut and olive oils. A chemical study (free fatty acid and p-anisidine values) of these oils at frying temperature (170 °C) was developed during 96 h. Consumer test of fresh products was performed on fried-salted peanuts prepared in the different oils. Peanut oil and virgin olive oil presented oleic acid as predominant fatty acid (44.8% and 64.2%, respectively), making it more resistant to lipid oxidation at frying temperature than the other refined vegetable oils (sunflower, corn and soybean oils). Virgin olive and peanut oils showed less increment of free fatty acids and p-anisidine value than the other oils along the heating essay. In addition, fried-salted peanuts prepared with refined peanut oil showed higher consumer acceptance than those prepared with other vegetable oils such as sunflower, corn, soybean and olive oils. Peanut oil could be used to fry peanuts obtaining products with higher consumer acceptance and shelf-life, thus preventing loss of their sensory and nutritional quality.  相似文献
