Quality and safety parameters of Atlantic bonito gravad during 42 days of storage at 7 ± 1 °C were analysed using monitoring sensory quality, microbial contamination, nucleotide degradation products, biogenic amines (BA), trimethylamine (TMA) and thiobarbituric acid reactive substances (TBARS). The shelf‐life of vacuum packed Atlantic bonito gravad was found to be 28 days. Total viable count (TVC) did not exceed 6 log CFU g?1. Malonodialdehyde (MDA) content did not surpass 10 mg kg?1. Nine biogenic amines were detected. Histamine level at the end of the storage was 355.3 mg kg?1. TMA increased from 53.9 to 619.1 mg kg?1. Among indicators based on the products of nucleotide degradation, the H value is best correlated with the sensory assessment. It can be concluded that the storage temperature of bonito gravad must be below 7 °C to prevent the threat to safety and quality posed by biogenic amines, especially histamine.  相似文献

The viability and β‐galactosidase activity of four Lactobacillus strains in milk drink containing gums during 28 days of refrigerated storage at 4 °C were assessed. The population of Lactobacillus rhamnosus GGB101 and Lactobacillus rhamnosus GGB103 were maintained, whereas the population of Lactobacillus reuteri DSM20016 and Lactobacillus reuteri SD2112 significantly decreased. The recommended level of 6 log CFU g?1 was exceeded for all tested trains throughout storage. The highest viable number of Lactobacillus rhamnosus GGB103 (8.76 ± 0.03 log CFU mL?1) was obtained in the product containing carrageenan–maltodextrin. The addition of guar–locust bean–carrageenan led to 20‐fold increase in the level of β‐galactosidase activity for L. rhamnosus GGB101 (1208 ± 2.12 Miller units mL?1) compared to the control (61 ± 2.83 Miller units mL?1). Our results suggested that gums could be added to milk to improve viability and enhance β‐galactosidase activity of Lactobacillus.  相似文献

Three GRAS antimicrobials including, lauric arginate (LAE), bacteriophage P100 (phage P100) and bacteriocin nisin, were evaluated either singly or in combinations for the reduction of initial load of Listeria monocytogenes in cold‐smoked salmon (CSS). The stability of phage P100 in the presence of LAE (200 ppm) and nisin (500 ppm) or at 10× and 100× of these concentrations was determined at 4 °C or 30 °C for 24 h in a broth model. Phage P100 was found to be highly stable in the presence of these antimicrobial agents as plaque‐forming units (PFU) did not vary between control and antimicrobial‐treated phage. The survival of L. monocytogenes in the presence of phage P100, nisin and LAE showed remarkable reduction within 24 h both at 4 °C or 30 °C in broth. Treatment of CSS containing 3.5 log CFU cm?2 L. monocytogenes with phage P100 (10PFU mL?1), nisin (500 ppm) and LAE (200 ppm) showed strong listericidal action and reduced the L. monocytogenes by 2–3 log CFU cm?2 after 24 h. Among the combined treatments, phage P100 + LAE or nisin + LAE exhibited the most listericidal action in which L. monocytogenes cells were reduced to undetectable level within 24 h in CSS.  相似文献

The objective of this study was to increase quality and limited shelf‐life of boza (3–15 days), a traditional Balkan origin fermented beverage using lysozyme (LYS) and/or nisin (NIS). For this purpose, the effectiveness of NIS, LYS and LYS:NIS combinations was first tested in a broth medium at 4 °C for 3 weeks on Lactobacillus plantarum, one of the frequently isolated lactic acid bacteria in boza. Stability of LYS and NIS in boza, their effects on LAB counts, and chemical and sensory properties of boza were then evaluated during cold storage at 4 °C. Results of LAB counts as well as pH, d ‐ and l ‐lactic acid, and titratable acidity measurements showed that LAB in boza containing NIS (250 μg g?1) or LYS:NIS (500:250 μg g?1) could be controlled without reducing LAB counts below 6 log CFU mL?1 during 2 weeks shelf‐life. In contrast, LYS (500 μg g?1) alone could not control LAB in boza to delay its acidic spoilage. Positive effects of NIS and LYS:NIS application on quality of boza were also proved with sensory analysis by panelists and e‐nose measurements. This work showed that use of natural GRAS agents in preservation of fermented beverages containing probiotic LAB is possible without affecting their characteristic aroma and flavour.  相似文献

The effect of X‐ray irradiation on the quality of fresh‐cut, refrigerated purple‐fleshed sweet potato (PFSP) cubes was investigated. Packaged sweet potato cubes were treated with 0, 250, 500, 750 or 1000 Gy X‐ray irradiation and stored at 4 ± 1 °C for 14 days. After 14 days, total aerobic bacteria counts were 4.1 and 3.2 log10 CFU g?1, and mould–yeast counts were 3.3 and 3.0 log10 CFU g?1 in 750 and 1000 Gy treated samples, respectively. Doses up to 1000 Gy did not affect the firmness, moisture content and anthocyanin content of PFSP cubes throughout storage. PFSP cubes' flesh colour did not change during the first week of storage, but lightness (L*) increased after 14 days. Also, irradiation doses at 750 and 1000 Gy decreased saturation (C*) significantly, producing duller flesh colour than controls. Results indicate that X‐ray irradiation treatment at doses up to 1000 Gy can reduce microbial populations while maintaining the physical quality and anthocyanin content of PFSP cubes up to 14 days of storage.  相似文献

The behaviour of Listeria monocytogenes and Staphylococcus aureus in raw milk cheese slices packaged under vacuum was evaluated. Artificially contaminated 80-day ripened cheese was portioned, vacuum packaged, and then stored for 28 days at 4 °C and for 56 days at 10 °C. Bacterial counts were obtained before vacuum packaging and then weekly during storage. At the end of ripening, the initial L. monocytogenes count was 4.46 ± 0.89 log cfu g−1; weekly bacterial counts remained substantially unchanged in the samples stored at 4 °C but decreased to 3.54 ± 1.54 log cfu g−1 in those stored at 10 °C. The initial S. aureus count before vacuum packaging was 3.60 ± 0.78 log cfu g−1; it then gradually decreased to 2.60 ± 1.32 log cfu g−1 in the samples stored at 4 °C and to about 1.9 log cfu g−1 in those stored at 10 °C.  相似文献

The antibacterial activity of Mentha spicata and Mentha aquatica essential oils (EO) was tested against Staphylococcus aureus, Lactobacillus reuteri, Bifidobacterium animalis and Clostridium perfringens using agar well and disc diffusion techniques. Results showed that M. spicata EO had the highest inhibition activity against the studied microorganisms. Then, the antibacterial activity of both EO at 1500 and 2500 ppm was examined in industrial liquid kashk during the storage at 4 °C for 20 days. Both EO reduced the S. aureus viable count below 5 log CFU g?1 after 4 days; however, the population of Cperfringens, L. reuteri and B. animalis decreased <1 log CFU g?1 during the storage time. The least deteriorative effect on the lactic acid bacteria was related to M. aquatica. As revealed by organoleptic studies, kashk samples containing M. aquatica EO at 1500 and 2500 ppm were the most preferred samples.  相似文献

This study was aimed at evaluating the effect of coatings with alginate (AL), pectin (PE), carboxymethyl cellulose (CMC) or chitosan (CH) on microbial stability, physicochemical attributes, total phenolics and carotenoids content, antioxidant capacity and sensory properties of fresh‐cut mango during 14 days at 4 ± 1 °C. Coated fresh‐cut mango kept microbial counts below 6 logs CFU g?1, being CH‐coated fresh‐cut mango those that exhibited the lowest microbial counts (1 log CFU g?1) along entire storage. AL, PE and CMC coatings maintained yellow colour of fresh‐cut mango throughout storage. AL and CH coatings, which have different monomers in their chain, improved the content of antioxidant compounds in fresh‐cut mango as related to uncoated. AL‐coated fresh‐cut mangoes were the toughest, among those coated, during 14 days. The highest consumer acceptance was achieved in AL (90.2%) coated fresh‐cut mango. CH would be the most suitable coating to extend the quality of fresh‐cut mango throughout storage.  相似文献

Low‐ (5%) and high‐fat (20%) chicken and turkey hotdogs were formulated in three groups: no antimicrobials (control), chemical preservatives (potassium lactate and sodium diacetate) alone and partial replacement of chemical preservatives by green tea (GTE) and grape seed extracts (GSE), surface inoculated (c. 103 CFU g?1) with Listeria monocytogenes, treated with or without heat treatment (65 °C for 104 s) to determine the growth of L. monocytogenes until spoilage (28 days). Maximum growth inhibitions (c. 2.0 CFU g?1) were observed in the treatments having chemical preservatives and plant extracts regardless of the meat and fat type. Furthermore, plant extracts along with chemical preservatives demonstrated additional inhibitory effect on the growth of L. monocytogenes survivors in chicken hotdog samples followed by postpackaging heat treatment. Results demonstrated that natural GTE and GSE can partially replace the chemical preservatives and further enhance the antilisterial activities when combined with heat treatment.  相似文献

Intense light pulses (ILP) treatments have good prospects for becoming an alternative to traditional thermal methods for decontamination of food surfaces. The aim of this work was to evaluate which ranges of the light spectrum are responsible for bacterial inactivation and their effect on the quality of fresh‐cut avocado. Results show that the effectiveness of ILP treatment decreases when the ultraviolet (UV) spectral region is blocked (particularly UV‐C). ILP treatments without UV‐C light (305–1100 nm) and an overall fluence of 10.68 J cm?2 caused reductions of 2.47 and 1.35 log CFU g?1 in the initial counts of inoculated Escherichia coli and Listeria innocua, respectively, in comparison with those treated using only VIS–NIR light (0.83 and 0.68 log CFU g?1, respectively). Treatments applying light of a wavelength between 305 and 1100 nm had a more pronounced impact on colour, texture and headspace gas composition than treatments that did not contain UV light (400–1100 nm).  相似文献

Fresh and soft cheeses provide a suitable medium for the growth of many microorganisms and have been frequently associated with foodborne diseases. This study aimed to evaluate the effects of the bacteriocins bovicin HC5 and nisin on Listeria monocytogenes and Staphylococcus aureus in Minas Frescal cheese, a traditional Brazilian fresh product. The cheese was inoculated with 104 CFU g?1 of both pathogens, and the bacteriocins were added at 600 AU g?1 of each one. After 9 days of storage at 4 °C, L. monocytogenes Scott A were not detected in 25 g samples. Although the bacteriocins reduced the population of S. aureus ATCC 6538, increasing numbers were detected after 15 days of storage at 4 °C. Staphylococcal enterotoxin C was detected in cheeses added of bacteriocins and stored under abusive temperature of 15 °C. The results demonstrate the potential application of combination of bovicin HC5 and nisin in controlling the pathogens growth assessed in Minas Frescal cheese.  相似文献

Two groups of farmed meagre (Argyrosomus regius) sausages were studied regarding quality changes and antioxidant capacity during a 98‐day storage experiment at 2 ± 2 °C. Control sausages contained 3.9% (w/w) of inner pea dietary fibre (IPDF) and the other group contained 0.9% (w/w) IPDF plus 3.0% (w/w) of antioxidant grape dietary fibre (AGDF). The control and AGDF meagre sausages presented a high nutritional value, given their low caloric content, fatty acid profile, amino acid composition and high DF content. Both products were remarkably stable over storage time. The AGDF had an effective antioxidant capacity, proven not only by the radical scavenging activity (90.0–91.0% vs. 82.1–85.4%) and reducing power (8.13–9.10 mg ascorbic acid equivalent g‐1 vs. 4.16–4.24 mg ascorbic acid equivalent g?1) measurements, but also by the lower thiobarbituric acid reactive species (TBARS) values (0.78–1.10 vs. 1.50–2.08 mg malonaldehyde kg?1) over storage time. AGDF seemed to present antimicrobial effect, since on the 63rd day (beginning of significant microbial growth), the control sausages had more than 3 log CFU g?1 and AGDF sausages much <3 log CFU g?1. The sensory assessment pointed to some loss of textural quality, more accentuated in the AGDF sausages.  相似文献

We evaluated the effects of two additive mixtures (sodium ascorbate 1 g kg?1, sodium citrate 1 g kg?1 and sodium acetate 1.75 or 2.5 g kg?1) on the microbiological and physical–chemical characteristics of non‐prepacked beef burgers stored in air at 4 °C or 12 °C for 96 h. Total microbial count reached 7 Log CFU g?1 48 h later in treated samples at 4 °C. The mixture containing the higher acetate concentration led to a smaller increase in Gram‐negatives, in particular Pseudomonas (2 Log of difference towards control samples at 96 h); at 12 °C, a 1.7 Log difference in Enterobacteriaceae was also shown. Total viable basic nitrogen was significantly lower in the treated samples at 12 °C. The addition resulted in pH stabilisation and lower cooking loss and positively influenced the a* index of burgers at 4 °C. Clearly, the use of these mixtures should not be a substitute of good hygienic practices and optimal storage conditions.  相似文献

Gluten‐free (GF) sourdough was prepared from wheat sourdough and analysed both in fresh (GFS) and dried forms (DGFS). The gluten content in each GF sourdough sample was <20 mg kg?1. The dough leavening capacity and the properties of the bread samples were investigated and compared to those of bread prepared using bakery yeast (Saccharomyces cerevisiae). Two commercial rice‐based mixtures (different for the presence/absence of buckwheat flour) were used to prepare bread samples. In GFS, lactic acid bacteria (LAB) and yeasts were found in amounts corresponding to 108 and 107 CFU g?1, respectively, whereas both LAB and yeasts were detected in lower amounts (about 106 CFU g?1) in DGFS. When used in bread‐making, both GFS types produced significant dough acidification and exhibited good dough development during proofing, resulting in loaves with specific volume values between 3.00 and 4.12 mL g?1, values similar to those obtained for reference bread (3.05÷4.15 mL g?1). The use of GFS was effective in lowering the bread staling rate during storage for up to 7 days.  相似文献

In this study, the effect of acid whey on the physicochemical properties and nutritional value of non‐nitrite organic fermented sausage made from beef and tallow was investigated. Fermented sausage was prepared in three formulations: C (cured), S (salted) and SAW (salted with liquid acid whey). Each sample was analysed during the ripening process: at 0, 7, 14 and 21 days of ripening in a temperature of 16 °C. The obtained results indicated that the addition of acid whey improves physicochemical properties of organic dry‐fermented sausage without nitrite and its nutritional value. The application of acid whey resulted in a significantly lower pH and a higher lactic acid bacteria content in organic fermented sausage without nitrite than in the sample with curing salt (respectively, by 0.12 units and 0.66 log CFU g?1). Acid whey successfully protected against haem iron loss in salted sausage during ripening. The salted sample with acid whey addition was characterised by a higher PUFA content (6.41%) at the end of ripening as compared to the cured sample (4.91%) and salted sample (5.58%). The addition of acid whey improves organic dry‐fermented sausage without nitrite production and its nutritional value.  相似文献

In‐package sanitisation was developed using polylactic acid (PLA) films with allyl isothiocyanate (AIT) vapour. Tomatoes were artificially inoculated with Escherichia coli, Geotrichum candidum and Fusarium oxysporum and stored in clamshell boxes with the film fixed to the underside of the lid. The changes in bacterial and fungal populations and the quality of tomatoes during storage at 4 and 10 °C were evaluated. The results revealed that the film treatment (4 × 8 cm2 film in 1 L box) reduced the populations of inoculated bacteria and fungi on tomatoes by 2–3 log CFU g?1, and then significantly (P < 0.05) inhibited their growth during the 21‐day storage period at both temperatures. Tomatoes subject to film treatment had fewer changes in quality (colour, firmness, contents of total soluble solid, titratable acids and vitamin C) than the control samples during storage. The antimicrobial PLA film can be used for in‐package sanitisation to extend the shelf‐life of packaged tomatoes or similar perishable vegetables.  相似文献

The probiotic Lactobacillus acidophilus was encapsulated in biodegradable and biocompatible capsules prepared by ionic gelation between phytic acid (PA) and chitosan (CS) with an electrostatic extrusion method. Calcium carbonate (CaCO3) and starch were used as co‐encapsulants for improvement of capsule stability. Capsules were characterised and evaluated for survival of encapsulated L. acidophilus cells in simulated gastric fluid (SGF) and during refrigerated storage. Loading capacity values of PA‐CS capsules, PA‐CS‐starch capsules and PA‐CS‐CaCO3 capsules were 8.20, 8.12 and 7.81 log CFU g?1 of wet capsule, respectively. Capsules showed particle sizes of 1.3–1.5 mm and a uniform spherical shape. PA‐CS‐CaCO3 capsules were the most stable vehicles for the protection of probiotic cells against acidic damage, particularly at pH 1.5 and pH 2. L. acidophilus cells from PA‐CS‐CaCO3 capsules showed only a 0.64 log CFU reduction in numbers after 2 h in pH 1.5 SGF conditions. The numbers of L. acidophilus encapsulated in PA‐CS‐CaCO3 capsules were decreased by only 0.69 log CFU g?1, while PA‐CS capsules and PA‐CS‐starch capsule numbers were reduced by more than 1.45 log CFU g?1 after 4 weeks at 4 °C. Addition of calcium carbonate to PA‐CS capsules provided protection against acid injury via antacid and buffering effects for encapsulation of L. acidophilus.  相似文献

This study evaluated the effect of dry white mulberry and walnut paste (Gobdin, a traditional Turkish food) in probiotic yogurt on the survival of Lactobacillus acidophilus and yogurt properties. Six different yogurts were produced with 0%, 5% and 10% Gobdin using Lactobacillus bulgaricus + Streptococcus thermophilus and with 0%, 5% and 10% Gobdin using L. bulgaricus + S. thermophilus + L. acidophilus. The physical, chemical, microbiological and sensorial properties of the yogurts were evaluated based on storage at 4 ± 1 °C. Probiotic shelf life and the most suitable combinations were determined. The highest L. acidophilus count (8.65 log cfu g?1) was found in the 5% Gobdin‐supplemented yogurt on the 7th day of storage, while the lowest count (8.11 log cfu g?1) was found in the probiotic control yogurt on the 21st day. Although the L. acidophilus counts in the probiotic yogurts declined during storage, all values found throughout the 21‐day storage period were >8 log cfu g?1. This is above the level necessary to provide the desired therapeutic effect in probiotic products (106–107 cfu g?1). The highest overall acceptability score was obtained on the first day from the yogurt with 5% Gobdin. However, all yogurt samples had general acceptability scores between 7 and 8 points from a 9‐point maximum. Thus, this study determined that a new functional yogurt can be produced using L. acidophilus with 5% Gobdin.  相似文献

The effects of combination treatment with aqueous chlorine dioxide (ClO2) and ultraviolet‐C (UV‐C) on the quality of yams were examined. Yam samples were treated with distilled water, 50 ppm aqueous ClO2, 5 kJ m?2 UV‐C or a combination of 50 ppm aqueous ClO2 and 5 kJ m?2 UV‐C. The microbiological analysis of the yams after aqueous ClO2 treatment, UV‐C irradiation or combination treatment indicated significant reductions in the populations of pre‐existing microorganisms. In particular, the combination treatment reduced the populations of total aerobic bacteria, yeast and mould, and coliform bacteria in the yams by 3.2, 3.4 and 3.8 log CFU g?1, respectively. The combination treatment also maintained the colour of the yams during storage. Sensory evaluation results indicated that the qualities of the yams treated with the combination of aqueous ClO2 and UV‐C were better than those of the other treatments. These results clearly indicate that combination treatment with aqueous ClO2 and UV‐C could be useful in improving the microbial safety and extending the shelf life of the yams.  相似文献

The effects of electron beam irradiation on microbial inactivation and quality of noninoculated and inoculated (Listeria monocytogenes) kimchi pastes were examined. Kimchi paste samples were irradiated at doses of 2, 4, 6, 8 and 10 kGy and stored for 21 days at 4 °C. Irradiation (10 kGy) reduced the populations of total aerobic bacteria, lactic acid bacteria, and yeast and moulds in the samples by 1.72, 2.24 and 0.86 log CFU g?1, respectively, compared to the control. In particular, coliforms were not detected at 8 and 10 kGy, and the population of Lmonocytogenes in inoculated samples was significantly decreased by 2.67 log CFU g?1. Electron beam irradiation delayed the changes in O2 and CO2 concentrations, pH, acidity and reducing sugar content observed in kimchi paste during storage. These results suggest that electron beam irradiation can be used to improve the microbiological safety and shelf life of kimchi paste.  相似文献
