ABSTRACT

The functional properties of venison and beef semimembranosus muscle stored at ?1.5C for 4 weeks were compared. Sarcoplasmic protein solubility (SPS), malondialdehyde (MDA) and reactive sulfhydryl (SH) contents were higher in venison compared with beef (P < 0.001). Cooked batter torsion stress, tensile strength, rigidity and yield were higher in beef compared with venison (P < 0.01). Venison and beef did not differ in total protein solubility (TPS), emulsion activity index (EAI) and emulsion stability (ES) (P > 0.05). TPS, EAI, ES, MDA, torsion stress and strain, tensile strength and extensibility in meats from both species increased, and SPS and SH decreased with chilled storage time (P < 0.01). Within the parameters of this study, chilled beef had a better manufacturing functionality compared with venison. Manufacturing functionality in meats from both species improved with chill storage time, but the improvement was more marked in beef compared with venison.

PRACTICAL APPLICATIONS

The following are some of the practical applications of this research: (1) processing parameters used to optimize the manufacturing functionality of beef are not suitable for venison because the latter tenderize much faster than beef with negative implications to manufacturing functionality; (2) the current practice of not vacuum packaging frozen manufacturing meat will have a more deleterious effect on the functionality of venison compared with beef because of the higher rate of lipid oxidation in venison; and (3) the best time to use chilled venison and beef for maximum functionality is at 2 or 3 weeks of storage at –1.5C.

The behaviour of spoilage and pathogenic microorganisms was evaluated after high-pressure treatment (600 MPa 6 min, 31 °C) and during chilled storage at 4 °C for up to 120 days of commercial meat products. The objective was to determine if this pressure treatment is a valid process to reduce the safety risks associated with Salmonella and Listeria monocytogenes, and if it effectively avoids or delays the growth of spoilage microorganisms during the chilled storage time evaluated. The meat products covered by this study were cooked meat products (sliced cooked ham, pH 6.25, aw 0.978), dry cured meat products (sliced dry cured ham, pH 5.81, aw 0.890), and raw marinated meats (sliced marinated beef loin, pH 5.88, aw 0.985). HPP at 600 MPa for 6 min was an efficient method for avoiding the growth of yeasts and Enterobacteriaceae with a potential to produce off-flavours and for delaying the growth of lactic acid bacteria as spoilage microorganisms. HPP reduced the safety risks associated with Salmonella and L. monocytogenes in sliced marinated beef loin.  相似文献

为了得到冷却猪肉新鲜度的变化规律,本研究以冷却猪肉里脊部分为研究对象,进行球蛋白沉淀实验、感官评价、pH值、水分含量、肉浸液以及肌肉表面颜色值测定。结果表明:球蛋白沉淀实验、pH值能够较好地反应肉品新鲜度的变化,色差分析符合一定的规律:肌肉表面色差测定中,20℃条件下,a*变化与贮藏时间显著相关(P<0.05),L*变化显著(P<0.05);4℃条件下,b*、C变化与贮藏时间极显著相关(P<0.01),L*值与pH值极显著相关(P<0.01);对于肉浸液,L*、b*、C、ΔE*均发生显著性变化(P<0.05),20℃条件下L*、b*、C、ΔE*与贮藏时间和pH值显著相关(P<0.05),而4℃条件下,L*、C、ΔE*与贮藏时间显著相关(P<0.05),L*、a*、b*、C、ΔE*值与pH值极显著相关(P<0.01);冷链过程中,当L*高于48.73、a*高于4.72、b*高于9.18时可认定冷却肉为新鲜肉。  相似文献

ABSTRACT: The selenium (Se) content (AOAC fluorometric method) of: 1) raw and cooked venison, squirrel, and beef from a low selenium region of the United States and 2) nonregion-raised beef was assessed and compared by region, species, and gender. For both raw and cooked meats, the Se content of venison was not different from region-raised beef (p > .05), and their contents were generally less than squirrel, which was less than nonregion-raised beef (p < .05). Gender and age did not influence Se content of the meats. Field-dressed weight did not affect Se content of deer, and antler size did not impact Se content of meat from male deer.  相似文献

Spoilage of beef, lamb and venison by psychrophilic and psychrotrophic clostridial species renders meat unacceptable resulting in financial losses and reduced consumer confidence. A number of clostridial strains, including Clostridium algidicarnis, Clostridium algidixylanolyticum, Clostridium estertheticum, Clostridium frigidicarnis and Clostridium gasigenes, have been implicated in red meat spoilage. Unlike other spoilers, these clostridia are able to grow in anaerobic conditions and at chilled temperatures (some at ?1.5 °C the optimal storage temperature for chilled red meat). The spoilage they cause is characterised by softening of the meat, production of large amounts of drip (exudates), offensive odours and in the case of C. estertheticum and C. gasigenes production of gas. Spoilage occurs following the introduction of clostridial spores into vacuum packages during processing. Germination of spores is necessary for the growth of vegetative cells, which cause spoilage. Current mitigation strategies focus on good management practice within meat processing plants. However, this is not always sufficient to prevent spoilage. This review summarises the issues associated with meat spoilage because of psychrotolerant clostridia and discusses areas that require further study.  相似文献

Irradiation significantly decreased the redness of ground beef (P < 0.05), and the visible color of beef changed from a bright red to a green/brown, depending on the age of meat. Addition of ascorbic acid (0.1%, wt/ wt) in ground beef prior to irradiation prevented color changes in irradiated beef, and the effect of ascorbic acid became greater as the age of meat or storage time after irradiation increased. Ground beef with added ascorbic acid had significantly lower oxidation‐reduction potential than the control (P < 0.05), and the low oxidation‐reduction potential of meat helped maintain the heme pigments in reduced form. Sesamol +α‐tocopherol had no effect in stabilizing color of irradiated beef.  相似文献

Standard domestic refrigerators store food between 1 and 5C (33.8–41F). A manufacturer recently developed a refrigerator capable of storing food in the “ultra‐chilled region” (?3 to ?7C) and claimed that storage of fresh meat in this region better maintains quality. To understand quality in terms of chemical reaction rates, microbial growth and texture and flavor changes, three common consumer meat products – steak, ground beef patty and salmon – were stored for a selected period of time, as determined by microbial testing, in five refrigerator models with different environmental conditions (constant temperature and temperature fluctuation). At the end of the storage period, consumer panelists assessed the quality of the cooked samples by ranking them according to preference. In addition, instruments were used to measure the color and shear cutting force (for steak only) of each sample. Results from the consumer Ranking R‐Index Test indicate that panelists preferred samples stored under or near ultra‐chilled conditions rather than samples stored under standard refrigerated conditions. The ultra‐chilled samples not only had higher panelist rankings and more favorable comments, but also had lower microbial aerobic plate counts. The instrument readings, however, highly varied and did not correlate well with sensory data.  相似文献

BACKGROUND: The objective of this work was to study the post‐mortem evolution of potential biomarkers (µ‐calpain activity and proteolytic profile) of meat tenderisation in bovine longissimus dorsi (LD) muscle from several biotypes coming from two beef breeds (‘Asturiana de los Valles’ and ‘Asturiana de la Montaña’) and showing different levels of muscular hypertrophy (mh/mh, mh/+, + /+). RESULTS: LD samples were taken at 2, 12, 24 and 48 h and 3, 7, 14 and 21 days post‐mortem. The presence of muscular hypertrophy produced a faster rate of pH decline, faster exhaustion of µ‐calpain activity and earlier occurrence of proteolytic changes. Changes in the electrophoretic pattern of some peptides from sarcoplasmic (glyceraldehyde‐3‐phosphate dehydrogenase) and myofibrillar (troponin T and troponin I) muscle extracts within the first 24 h significantly correlated with meat toughness and allowed accurate discrimination of meat products into two groups: (1) fast tenderising meat, coming from mh‐biotypes, and (2) late tenderising meat, from normal (+/+) biotypes. CONCLUSION: Early monitoring (within 24 h after slaughter) of selected biomarkers in LD muscle allowed accurate prediction of ultimate meat toughness and could be used in the meat industry as a tool for early classification of beef into fast and late tenderising meat. The combined effects of injection, packaging (modified atmosphere packaging [MAP] with 70% O2/ 30% CO2 and vacuum packaging [VP]), storage temperature (‐1 °C and +4 °C), and storage time on the color, microbial and oxidative stability of beef and bison longissimus lumborum (LL) steaks were investigated. Beef LL steaks in MAP retained their bright red color longer than bison steaks. Bison steaks developed higher 2‐Thiobarbituric acid reactive substances (TBARS) during storage, and this might have influenced the resulting rapid loss of redness from the bloomed meat. Storage at ‐1 °C in MAP provided greater color stability and a longer storage life for both meat species studied. Injection of salt/phosphate had a beneficial effect on the color stability of steaks during retail display; however, this positive effect was more pronounced for bison steaks compared with those of beef. Steaks stored overnight under MAP before retail display maintained the highest a* values for up to 5 d compared with those stored under vacuum. MAP‐OV steaks generally maintained the highest OMB content for up to 5 d during retail display compared with those stored under vacuum. Nevertheless, OMB levels were significantly (P < 0.05) lower in bison steaks compared with those of beef irrespective of packaging treatments. Injected steaks and those stored at ‐1 °C had significantly (P < 0.05) higher OMB levels compared with non‐injected counterparts and those stored at +4 °C, respectively. MAP is an excellent option for short‐term storage due to its positive effects on meat color, but for longer storage, VP may be necessary. Storing meat under vacuum and then placing it under MAP just before retail display might be another option to increase shelf life.  相似文献

Summary The heat resistance of a four‐strain mixture of Escherichia coli O157:H7 was tested. The temperature range was 55–62.5 °C and the substrate was beef at pH 4.5 or 5.5, adjusted with either acetic or lactic acid. Inoculated meat, packaged in bags, was completely immersed in a circulating water bath and cooked to an internal temperature of 55, 58, 60, or 62.5 °C in 1 h, and then held for pre‐determined lengths of time. The surviving cell population was enumerated by spiral plating meat samples on tryptic soy agar overlaid with Sorbitol MacConkey agar. Regardless of the acidulant used to modify the pH, the D ‐values at all temperatures were significantly lower (P < 0.05) in ground beef at pH 4.5 as compared with the beef at pH 5.5. At the same pH levels, acetic acid rendered E. coli O157:H7 more sensitive to the lethal effect of heat. The analysis of covariance showed evidence of a significant acidulant and pH interaction on the slopes of the survivor curves at 55 °C. Based on the thermal‐death–time values, contaminated ground beef (pH 5.5/lactic acid) should be heated to an internal temperature of 55 °C for at least 116.3 min and beef (pH 4.5/acetic acid) for 64.8 min to achieve a 4‐log reduction of the pathogen. The heating time at 62.5 °C, to achieve the same level of reduction, was 4.4 and 2.6 min, respectively. Thermal‐death–time values from this study will assist the retail food processors in designing acceptance limits on critical control points that ensure safety of beef originally contaminated with E. coli O157:H7.  相似文献

为研究气调冰箱(氧分压为18.0%~18.5%)对冷藏肉类的保鲜效果,选取雪花牛肉、三文鱼和金枪鱼3种高价值肉类,置于气调冰箱中冷藏。以普通冰箱作为对照,对贮藏期间肉类表层细胞形态、汁液流失率、挥发性盐基氮(total volatile basic nitrogen,TVB-N)含量、硫代巴比妥酸反应物(thiobarbituric acid reactive substances,TBARs)值和菌落总数等指标进行定期监测。结果表明:相较于普通冰箱,气调冰箱显著降低了雪花牛肉、三文鱼和金枪鱼贮藏过程中的汁液流失率、TVB-N含量、TBARs值和菌落总数,延缓了3 种肉类贮藏过程中品质的降低,表明相较于普通冰箱,气调冰箱对冷藏雪花牛肉、三文鱼和金枪鱼具有更好的保鲜效果。综合分析各项评价指标发现,在使用气调冰箱冷藏肉类过程中,雪花牛肉应选用TVB-N含量作为判断保质期的指标,而三文鱼和金枪鱼应选用菌落总数作为判断保质期的指标。  相似文献

ABSTRACT Vacuum‐packaged ground ostrich meat patties containing 2% sodium lactate (SL), 0.2% rosemary extract as oleoresin (RE), or their mixture (MIX) were evaluated and compared with control for their storage stability at 3 ± 1 °C in the dark by measuring pH, 2‐thiobarbituric acid‐reactive substance (TBARS) values, sample color (CIE L*, a*, b*, Hue and Chroma), and microbiological content. The pH values of ostrich patties, ranging from 6.03 to 6.13, were not affected by treatment (P < 0.05). At 9 d of storage, TBARS concentration for control samples containing no additives was 1.64 mg malonaldehyde/kg meat. Addition of RE to the ground ostrich meat inhibited lipid oxidation during storage at 3 ± 1 °C (P < 0.05). TBARS values of SL‐added samples were lower than control samples (P < 0.05); addition of SL also delayed the oxidation. It was found that RE had a protective effect on color, whereas addition of SL decreased CIE a* values (P < 0.05). SL, either alone or with RE, was effective in inhibiting total aerobic bacteria (TAB), coliforms, lactic acid bacteria (LAB), and Brochothrix thermosphacta in ostrich patties (P < 0.05) and provided a 2‐log reduction in microbial population during storage. In addition, RE did not have a significant effect on microbial growth at the concentration used in this study.  相似文献

A range of meat redness was created by mixing fresh, chilled ground chicken breast and ground beef in predetermined ratios. Samples were scored for visual redness under halogen (incandescent) and cool white fluorescent lighting. Instrumental color characteristics (L*, a*, b*, hue angle, chroma; illuminants A and F) and red color contributed by oxymyoglobin (percentage reflectance at 630 nm versus 580 nm) were determined. Correlation coefficients were determined between visual and instrumental evaluations. The a*, b*, and ΔR (630–580) were highly correlated to visual redness (halogen light: r = 0.99, -0.99, and 0.96, respectively; cool white fluorescent light: 0.98, -0.98, and 0.96, respectively). Regression analysis was conducted to develop equations to predict visual redness using instrumental color measures. In the 20% to 85% beef range, the regression curves were principally linear although the overall relationships (0–100% beef range) were cubic. Among the instrumental color parameters, a*, hue angle, and ΔR (630–580) could be used to predict visual redness for this model system.  相似文献

The influence of prerigor temperature and pH on muscle chemistry of the inside semimembranosus (ISM) and outside semimembranosus (OSM) in relation to initial color and color uniformity and stability was investigated. Cold‐boned ISM had a slower (p < 0.05) chill rate; faster (p < 0.05) pH decline; higher (p < 0.05) transmission values; and less (p < 0.05) metmyoglobin reducing ability, oxygen consumption, water holding capacity and color stability than the OSM. Cold‐boned steaks were 2‐toned in color and visually unacceptable at d 3 of display. Hot‐boned ISM and OSM chilled at the same rate and had similar pH declines, similar chemical characteristics and uniform stable color for 5 d of display. Chilling beef ISM faster should produce uniform stable color.  相似文献

BACKGROUND: Ergothioneine (ESH), a potent antioxidant, has been found in certain edible mushrooms. Our previous research showed that ESH extracted from the edible mushroom Flammulina velutipes has a positive effect on the colour stability of beef and tuna meat. The purpose of the present study was to compare the efficacy and applicability of ESH extracts prepared from different mushroom species as a colour stabilizer in fish meats. RESULTS: Levels of ESH higher than 2.8 mg mL?1 were found in extracts prepared from the fruiting bodies of F. velutipes, Lentinula edodes, Pleurotus cornucopiae and Pleurotus eryngii and the processing waste of F. velutipes. When 1 mL of each of the extracts was added to 100 g of minced bigeye tuna and yellowtail meats, the bright‐red colour remained after 5 and 2 days, respectively, of ice storage. The anti‐discoloration efficacy of 1 mL of the extracts prepared from 10 g of the fresh waste portion of F. velutipes was similar to that of its fruiting body or 0.5 g kg?1 of sodium ascorbate when added to 100 g of minced bigeye tuna meat under ice storage. CONCLUSION: The results of this study clearly showed that ESH prepared from different mushroom species stabilized the colour of fish meats, and the extract from the F. velutipes was the most effective. Ground beef chuck (15% fat) was packaged (500g) in vacuum bags, Saran WrapTM overwrapped with aluminum foil or polyvinyl chloride (PVC), exposed to retail display light (4°C) for 24 hr and then held frozen (?18°C) for 52 wk. Instrumental and visual color of PVC-packaged beef was affected most by display and by frozen storage. During frozen storage, as oxygen permeability of packaging material increased, TBA, visual brownness, and metmyoglobin increased while visual redness, acceptability, a* value, red color contributed by oxyrnyoglobin, and deoxymyoglobin decreased. Location on the meat block (exterior vs interior) affected (p<0.05) visual red and brown color, lightness, and acceptability, L*, a*, and b*, and TBA values.  相似文献

Historically, nitrite has been a component of meat‐curing additives for several centuries. In recent years the safety of nitrite as an additive in cured meats has been questioned mainly because of the possible formation of carcinogenic nitrosamines. Nitrite has many important functions in meat curing including its role in color development, flavor, antioxidant properties, and antimicrobial activity. The inhibition of Clostridium botulinum growth and toxin production is an especially important antimicrobial property of nitrite. This review discusses the effects of processing, curing ingredients (especially nitrite), and storage of cured meats in relation to the control of C. botulinum. If nitrite is eliminated from cured meats or the level of usage decreased, then alternatives for the antibotulinal function of nitrite need to be considered. Several potential alternatives including sorbates, parabens, and biological acidulants are discussed.  相似文献

Clostridium perfringens growth from a spore inoculum was investigated in vacuum-packaged, cook-in-bag ground beef that included 0.3% (w/w) sodium pyrophosphate, pH 5.5 or 7.0, and salt (sodium chloride) at 0 or 3% (w/w). The packages were processed to an internal temperature of 71.1C, ice chilled and stored at various temperatures. The total C. perfringens population was determined by plating diluted samples on tryptose-sulfite-cycloserine agar followed by anaerobic incubation for 48 h at 37C. At 28C, a combination of 3% salt and pH 5.5 was effective in delaying growth for 24 h. At 15C, growth occurred within 6 days in samples with pH 7.0, but was delayed until day 8 in the presence of 3% salt at pH 7.0. Vegetative cells were not observed even after 21 days 21 of storage at 15C in the presence 3% salt at pH 5.5. C. perfringens growth was not observed at 4C regardless of pH or salt levels. The D-values ranged from 23.33 min (3% salt, pH 7.0) to 13.99 min (3% salt, pH 5.5). Cyclic and static temperature abuse of refrigerated products for 12–15 h did not permit C. perfringens growth. However, temperature abuse of cook-in-bag beef products for periods longer than 15 h in the absence of salt led to growth of C. perfringens from a spore inoculum.  相似文献

制备了冬凌草甲素/壳聚糖(OR-CS)复合膜,考察了其对冰鲜鸡胸肉的保鲜效果。将复合膜覆盖于鸡胸肉表面,复合膜外再包被一层保鲜膜,4℃贮藏,检测贮藏过程中鸡胸肉的pH、色度、保水性、挥发性盐基氮(TVB-N值)、菌落总数、感官质量的变化。试验结果表明,通过OR-CS复合膜处理的冰鲜鸡胸肉能显著延缓贮藏期间的pH值、菌落总数、TVB-N含量和汁液损失率的上升。OR-CS复合膜包装组使冰鲜鸡胸肉的货架期由4 d(对照组)延长至9 d;此外,通过色差测定和感官评定,OR-CS包装组可以更好地保持冰鲜鸡胸肉的品质和色泽,在贮藏期间能有效延缓肉表面亮度的减弱,显著改善了肉的颜色、气味、黏度和弹性。  相似文献

In order to extend meat shelf-life, normal-pH and high-pH beef steaks were packaged under vacuum or in 100% C 0 2 atmosphere. Microbiological, colour (L*, a*, b*)
and reflectance (R630-R580 values) characteristics were measured.
After packaging under vacuum, Enterobacteriaceae, Brochothrix thermosphacta and Pseudomonas numbers were 10- to 100-fold greater on high-pH meat than on
normal-pH meat.
Packaging under C 0 2 improved the shelf-life of meat, particularly that of high-pH meat up to 42 days. For both high- and normal-pH meats, the bacterial flora was
composed only of lactic acid bacteria. Normal-pH meat in C 0 2 atmosphere and vacuum packaging had a purple colour. After C02-pack opening the meat colour
became bright red and R630- R580 measurements were high, whereas after opening of vacuum packaging R630-R580 decreased rapidly with increasing aerobic exposure.
High-pH meat became paler with increasing storage time in C02. Simultaneously R630-R580 values increased and the pH fell. In addition it lost less exudate and
oxidized less in air than the normal-pH meat under the same conditions.  相似文献
